A Study on the Effects of Employees' Emotional Labor on Customer Orientation and Business Performance in Restaurants (레스토랑 종사원의 감정노동이 고객지향성 및 기업성과에 미치는 영향에 관한 연구)

  • The recent increase in the percentage of services industries has dominated in the entire industry. Emotional feeling of service workers is consequently indispensable in service industries in order to facilitate the progression of the service delivery process. In most circumstances, the emotional labor of service in service industries has been increasingly recognized. Although many studies related to emotional labor have been conducted, a precedent study will be needed to find positive factors such as customer orientation and business performance of restaurant employees accompanying emotional labor. This study attempted to practical meaning to food service companies by inquiring into such as positive effects of employee's emotional labor on the customer orientation and business performance. For this purpose, this study established hypotheses and deduced results using literature research and empirical analyses, and found implications to the service companies. The results of this study showed that the higher the emotional labor of the restaurant employees gets, the lower customer-orientation becomes, and the higher the customer-orientation of restaurant employees gets, the higher the performance of the company becomes.

  • Fermented materials have been used for long time around the world and have been researched according to the excellent effect in the part of medical and food industry. However, when such materials are applied on skin, because of the skin barrier, the most effective ingredients are poorly absorbed. The absorption of the skin is exceedingly limited and the method of increasing skin absorption needs special procedures. The micro-needle therapy is a method used to improve the absorption of drug (solution) in the skin which is called "natural skin rejuvenation therapy". This therapy uses micro-needle which is equipped with very thin, delicate needles smaller than a 0.07 mm thick hair. During this therapy, the micro-needle makes small holes and helps absorb the solution into the skin. This is a very excellent therapy in skin absorption. It can be used in wide regions of the skin without any side effects and no recovery time. In 2007, the micro-needle is permitted to personal care. However, the solutions have not yet been developed professionally, and such skill is needed.

Comparing Nutrition Knowledge, Eating Habits, and Neonatal Health Status of Primipara for Pregnant Women of Advanced Maternal Age Compared to Those of Younger Ages (고령 초산모와 비고령 초산모의 임신영양지식, 식습관 및 신생아 건강상태 비교)

  • Purpose: The aim of this study was to examine differences in nutrition knowledge, eating habits during pregnancy, and neonatal health status between primipara for pregnant women of advanced maternal age in comparison to those under the age of 35. Methods: This study used a comparative survey design. Data were collected through self-report questionnaires and patients medical records. A total of 127 participants, mothers after delivery were recruited from metropolitan city B. Results: Primipara in advanced maternal age (n=32) reported significantly higher scores of eating habits (Z=-2.96, p=.003) than younger ages (n=95). There were no significant differences in scores of pregnancy nutrition knowledge (Z=-0.44, p=.660), duration of gestation (Z=-0.28, p=.778), neonatal birth height (Z=-0.10, p=.924), neonatal birth weight (Z=-0.28, p=.777), Apgar score 1 minute (Z=-0.53, p=.599) and 5 minutes (Z=-0.23, p=.816) between two groups. Conclusion: It concludes that age is not the obstacle to the best nutritional status of women and their newborns.

Effects of Temperature on the Rheology of Lecithin/CaCl2 Organogels (Lecithin/CaCl2 유기젤의 온도 영향에 대한 유변학적 연구)

  • Lecithin, a zwitterionic phospholipid, forms spherical reverse micelles in organic solvents such as decane. The addition of multivalent ions like calcium chloride to lecithin organosols induces the transformation of organosols into organogels. A variety of applications of such organogels were found in gelation of fuels, food processing and drug delivery. Here, we investigated the effect of temperature on their rheological properties. In particular, the organogels showed a distinct melting temperature (${\sim}95^{\circ}C$) and their elastic properties decreased with increasing temperature. This is maybe due to the fact that the electrostatic interaction between lecithin and calcium chloride could be weaken with increasing temperature.

  • DA-125, a new anthracycline antitumor antibiotic, was at dose levels of 0, 0.1, 0.3 and 1.0 mg/kg/day administered intravenously to pregnant Sprague-Dawley rats during the organogenetic period. Two-third of dams per group were subjected to caesarean section on day 20 of pregnancy and the remaining 10 dams per group were allowed to deliver. Effects of test substance on dams, embryonal development of Fl fetuses, as well as growth, behaviour and mating performance of Fl offspring were examined. 1. At 1 mg/kg, one out of the 10 dams showed difficult delivery. A decrease in food consumption, a loss in body weight and a decrease of spleen weight were found in this dose level group. At 0.3 mg/kg, difficult deliverys were observed in two out of the 10 dams. 2. At 1 mg/kg, an increased resorption rate and a decreased fetal weight were found. In addition, various types of external, visceral and skeletal malformations occurred at an incidence of 11.9, 41.8 and 14.5%, respectively. 3. At 1 mg/kg, body weight reduction, small eyeball, hydrocephalus and atrophy of sexual organs were observed in Fl offspring. One male pup receiving 0.3 mg/kg died on day 2 of lactation. The results show that the no-effect dose levels (NOELs) for dams and Fl offspring are 0.1 mg/kg/day and NOEL for Fl fetuses is 0.3 mg/kg/day.

Development and Evaluation of an Elementary School Nutrition Education Program to Prevent Breakfast Skipping (아침결식 예방을 위한 초등학교 영양교육 프로그램의 개발 및 평가)

  • The purpose of this study was to develop and evaluate a nutrition education program to prevent breakfast skipping for elementary school children. Subjects were 102 5th grade students (51 boys, 51 girls) as the "education group" and 200 5th grade students (102 boys, 98 girls) as the "non-education group." The nutrition education program consisted of 4 lessons over an 8-week period. Teaching materials, including flash animation, panel, PowerPoint, and a bingo game, were developed for this education program. After education, there was significant increase in the percentage of students who had eaten breakfast every day, understood that breakfast has a great effect on health, and will eat breakfast every day in the education group compared to non-education group. Parents' positive behavior toward daily breakfast preparation and the percentage of parents who had their children eat breakfast every day increased significantly. The students of the education group responded positively to the questions of the benefit and importance of nutrition education. The flash animation received high marks, especially in terms of understanding of contents, content clarity, emphasis of the core content, delivery of necessary knowledge, and applicability of breakfast. This study shows the effectiveness of a 4-lesson nutrition education taught during an 8-week time period to induce changes in recognizing the importance of breakfast and in behavior toward breakfast consumption.

Continuous Production of Immunoliposomes using a Microvalve-controlled Microfluidic Device (μFD)

  • Immunoliposomes (antibody-conjugated liposomes) are highly useful as both a drug carrier in drug delivery and as a reporting probe in immunodiagnostics. However, antibody conjugation is lengthy and cumbersome, because this includes several steps such as derivatization of the antibody, conjugation of the derivatized antibody to liposomes, and separation of the unbound antibodies from immunoliposomes. Recently, liposome preparation steps have simplified by using microfluidic devices (${\mu}FDs$) where liposomes are formed when a stream of lipids in solvent is hydrodynamically focused between two oblique buffer streams in a microchannel. Herein, we report a simple method for the production of immunoliposomes (rabbit IgG-conjugated liposomes) using microvalve-controlled ${\mu}FD$. The presence of antibody on the liposome was verified by observing the binding of immunoliposomes to rabbit IgG on the surface. The results suggest that immunoliposomes can be easily prepared through sequential mixing of antibody, conjugation reagents, preformed liposomes using microvalve-controlled ${\mu}FD$.

The Prenatal Management in the Oriental Medicine (한방측면에서 본 임신부의 영양관리)

  • The changes of mental activities and the normal life during the pregnancy have a direct and indirect influences not only on the maternal health but also on the physiological function of the fetus. In the oriental medicine, many attentions have been ordered during the pregnancy. And they called these attentions and managements during the pregnancy as 'Tia-jiao(胎敎)'. The Tia-jiao, that is the prenatal culture, means 'educations for the fetus', so it is a hygienic conception for the pregnacy and the delivery. About this, many oriental gynecologic texts contained various contents such as the prohibitions against food(Shi-ji 食忌), the attentions on the mental activities(Yang-xing-ging 養性情), the notions on the normal life(Qi-ju-ji 起居忌), the cautions against drugs(Yao-ji 藥忌), the instructions for the treatments, the preventions against abortion(Gu-tia-liang-fa 固胎良法). The Tai-jiao can be divided two categories. The one is the behaviors and mental attitudes which can induce the good characters, and the other is the intake of foods and drugs which can grow the healthy body. According to the transitions of the generation, the economies, the societies, and the cultures have been changed. Through the pursuits of the intelligent babies have been remained, all conceptions and recognitions have also been altered. Therefore the ways to the prenatal culture must be changed, The reviewing the old and learning now, and doing the appropriate Tia-jiao in the modern times may be the best way to get the good babies.

Improved High-Performance Liquid Chromatographic Method for the Determination of N-vanillyl-n-nonivamide(nonivamide) in Korean Hot Peppers (HPLC 법에 의한 국산 고추에 함유되어 있는 Nonivamide의 신규 분석법 개발)

  • We report a novel HPLC method for analyzing the capsaicinoids and nonivamide. The following conditions were used: a total column and column temperature of $3^{\circ}C$, a detection wavelength of 280 nm, an eluent containing acetonitrile : 0.5% formic acid(31:69, v/v). The experimental data was compared with standard nonivamide and capsaicin. The results showed that nonivamide was eluted in 96.7 minutes with a recovery ratio of 96.5% after adding known nonivamide. In addition, the detection limit for nonivamide was 18.6 ng. The capsaicinoids from Korean pepper were extracted (after blooming 60th) from 3 breeds cultivated in Korea, Buchon, Chungyang and Hanbando. and crisis it analyzed sympathizes the nonivamide in the result nonivamide from the Buchon and the Chungyang which are not detected from the Hanbando $0.16{\sim}0.24{\mu}g/g$ it detects with very small amount it contains it confirmed the each capsaicinoid with the HPLC and the LC-MS. These results are expected contribute to the quality control of various product processes, which includes product delivery inspection as well as examining the capsaicinoids present in the product for possible medicine manufacture and various foodstuff, and the nonivamide content, which may be a feed for various manufacturing processes involving chemical synthesis.

  • In Korea, the position of health among the sectors of everyday life lies behind the others. The inhabitants don't consider health so important and immediate as food and shelter. Primarily, it seemed more important for them to eat something and to educate their children than to secure health. Under this situations we must take into consideration their health status and health problems in terms of the social system. Health cannot be maintaned by itself. It inter acts with a set of social conditions such as income, knowledge about health, health institution, health insurance, social class, culture and etc. But the community health projects which have carried out in Korea since the beginning of 1970s focused mainly on the medical care and medical delivery itself regardless the background of health care. According to the existing results of socio-epidemiological and medico-sociological researches, a set of social conditions has a great effect on the inhabitants' health status and health care. So, such conditions will be considered primarily in Korea University Health Project. This paper is prepared as a preliminary step for such a program. In this paper we mainly inquired into the relationship between health and the attitudes of inhabitants.
