Meal skipping habits and nutritional status among Ghanaian students living in Korea

  • Purpose: The consistent rise in the number of foreign students in Korea demands an accurate and detailed investigation into their dietary practices and nutritional status. For these international students, assimilation into new cultures can be stressful. The influence this process may have on dietary behaviors as well as overall health cannot be overlooked. Methods: The researchers in this study sought to investigate the nutritional status and dietary practices of Ghanaian students studying in Korea. A total of 81 Ghanaian male students with an average age of $29.4{\pm}4.0years$ were sampled between May and June 2016. Investigations were carried out on the general characteristics of the participants, their daily food and nutrient intakes using a 24-h dietary recall method, meal skipping practices, and the nutritional quality of their diets based on their meal skipping habits. Results: The study revealed that the daily nutrient intake of subjects did not fully meet the daily recommended nutrient intake (RNI) established by Ghanaian Ministry of Health and the World Health Organization (WHO) and Food and Agriculture Organization (FAO), particularly for energy, calcium, iron, zinc, and vitamin B2 requirements. The Nutrient Adequacy Ratio (NAR) for calcium was very low, posing a deficiency risk to the participants. Meal skipping practices among participants changed significantly after arriving in Korea. The study also compared the diet quality indicators (Nutrient Adequacy Ratio and Mean Adequacy Ratio) of those who skipped meals ${\geq}7times/week$ with those who skipped meals < 7 times/week. Participants who skipped meals ${\geq}7times/week$ were shown to have lower dietary intakes of vitamins B1 and B2 than those who skipped meals < 7 times/week. Conclusion: Ultimately, the study found that meal skipping among Ghanaian students was common, and their daily nutrient intakes did not meet the set dietary standards. Those who skipped meals ${\geq}7times/week$ had lower dietary intakes of vitamins B1 and B2 than those who skipped meals < 7 times/week. Based on our study findings, we recommend that nutrition education should be organized for the Ghanaian student community in Korea using our results as a template to draw up a nutrition program that is culturally appropriate.

Nutritional status and the role of diabetes mellitus in hemodialysis patients

  • This study was aimed to investigate the nutritional status and the role of diabetes mellitus in hemodialysis (HD) patients. Anthropometric, biochemical, and dietary assessments for HD 110 patients (46 males and 64 females) were conducted. Mean body mass index (BMI) was $22.1\;kg/m^2$ and prevalence of underweight (BMI<$18.5\;kg/m^2$) was 12%. The hypoalbuminemia (<3.5 g/dl) was found in 15.5% of the subject, and hypocholesterolemia (<150 mg/dl) in 46.4%. About half (50.9%) patients had anemia (hemoglobin: <11.0 g/dL). High prevalence of hyperphosphatemia (66.4%) and hyperkalemia (43.5%) was also observed. More than 60 percent of subjects were below the recommended intake levels of energy (30-35 kcal/kg IBW) and protein (1.2 g/kg IBW). The proportions of subjects taking less than estimated average requirements for calcium, vitamin $B_1$, vitamin $B_2$, vitamin C, and folate were more than 50%, whereas, about 20% of the subjects were above the recommended intake of phosphorus and potassium. Diabetes mellitus was the main cause of ESRD (45.5%). The diabetic ESRD patients showed higher HMI and less HD adequacy than nondiabetic patients. Diabetic patients also showed lower HDL-cholesterol levels. Diabetic ESRD patients had less energy from fat and a greater percentage of calories from carbohydrates. In conclusion, active nutrition monitoring is needed to improve the nutritional status of HD patients. A follow-up study is needed to document a causal relation between diabetes and its impact on morbidity and mortality in ESRD patients.

Nutritional Status of Korean Middle-age Adults according to Breakfast Frequency - Based on the 2015 Korean National Health and Nutrition Examination Survey - (중년성인의 아침식사 섭취빈도에 따른 영양상태 평가 - 2015년 국민건강영양조사 자료를 이용 -)

  • In this study, we have analyzed the 2015 KNHANES VI to understand the nutritional and health status of Korean middle-age adults from the perspective of frequency of eating breakfast. Those that eat breakfast five to seven times a week were 76.3 percent (male) and 72.7 percent (female). Frequency of eating lunch and dinner, and eating out was significantly higher among male subjects. The higher the frequency of eating breakfast, the higher the frequency of eating lunch, dinner and eating out. Female subjects that ate breakfast five to seven times a week had lower height and weight compared with other groups, but there was no significant difference of BMI and waist circumference among the four groups. Adults that eat breakfast five to seven times a week had consumed more carbohydrates, dietary fiber, phosphorus, potassium and vitamin C regardless of gender, which validates the nutritional benefits of eating meals regularly. Male adults that ate breakfast five to seven times a week revealed lower levels of diastolic blood pressure and LDL-cholesterol compared with other groups, which validates eating breakfast regularly was beneficial to their health. In conclusion, it is necessary to eat regular meals daily relative to the nutritional status and health of Korean middle-age adults.

A Study on the Computerized Nutrition Counseling Program by Food Intake and Exercise Amount Checking (식사 및 운동종목에 대한 영양상담 프로그램 개발 연구)

  • The purpose of this study was to develop a software system for computer nutrition counseling based on food intake and level of exercise measurements. Various software programs were developed using Powerbuilder 5.0 and categorized according to their function: 1) inputting general data including age, sex, weight, height, degree of acitivity and exercise amount of individuals, 2) inputting food intake based upon a 24-hour dietary recall method, 3) calculating energy and general nutrient intake and evaluating dietary status with respect to the Korean recommended dietary allowances, 4) calculating dietary intake of fatty acids, 5) calculating PUFA : MUFA : SFA and $\omega$6 :$\omega$3 ratios, 6) reporting the results of nutrient analysis, and 7) assessing the nutritional status of individuals and practicing nutrition education. This study provides various information on the assessment of nutritional status.

A Study on Health-related Lifestyle, Dietary Habits, Nutritional Knowledge and Food Intake of the Elder in Gyeong-gi Area (일부 노인들의 건강관련 생활습관, 식습관, 영양지식 및 식품섭취에 관한 비교 연구)

  • This study was designed to provide the basic data of an effective nutrition education for desirable lifestyle and dietary habits to improve the nutritional status for the elderly by investigating health-related lifestyle, dietary habits, nutritional knowledge, and food intake of the elderly. The subjects included 58 elderly men and 146 elderly women. 35.8% had no more than an elementary school education. Most subjects (54.4%) were widows/widowers. Most subjects (71.0%) made over 150,000 won. 52.5% of subjects lived in houses. Smoking, drinking, exercise, the average sleeping time were significantly difference between the gender (p<0.05). In terms of dietary habits, our results showed that 80.9% of respondent eat regularly meals, including breakfast (83.5%). Both sexes prefer soft and salty food. Women enjoys more spicy and salty food compared with men and then shows meaningful difference (p<0.05). Their favorite meals are soup, stew, salad and boiled vegetables. Compared to women, men have a higher rate of correct answers about questions related to nutrition knowledge as showing significantly difference (p<0.05). In a study of dietary habits, they take in carbohydrates with the highest percentage and following by vegetables and fruits. The amount of meat, first and egg they eat is more than the previously. Eating meat is higher men as showing significant difference (p<0.05). In summary, nutritional status for the elderly shows healthy lifestyle and diet about half of those and most them try to live healthy life in future. It is hope that the elderly may need to learn proper nutrition knowledge for healthy lifestyle and nutrition education and counseling for building up healthy lifestyle and desirable dietary habits. Furthermore, it is necessary to start work to establish a baseline nutritious evaluation for the elderly and at a time to study the development of standard eating tool proven reliability and validity, consequently to provide a basic framework for the evaluation of nutritional status.

  • Clinical and epidemiologic data point to a causal interrelationship between nutritional deficiency and infectious illness. Both are major contributors to childhood morbidity and mortality, particulary in underprivileged population groups. Protein-calorie malnutrition depress a variety of immune funtions. Delayed hypersensitivity and number of T-lymphocytes are consistently reduced. The interrelationship between nutritional status and immune response was studied in 80 children aged under 6 years. According to the anthropometric assessment based on weight for height for age, 36 children were classified as normal, 22 as morderate malnutrition, and 22 as severe malnutrition. The following determinations were made : hemeglobin, hematocrit, serum albumin, immunoglobulin G, complement 3, and WBC levels. Results indicate that levels of Hb, Hct, serum albumin, and C3 concentration were decreased in moderate and severe malnutrition children. However, levels of IgG and WBC were not affected by the nutritional status. It is suggested that nutritional status has more profound effects on complement system than humoral immunity.

A Screening Tool for Identifying High-Risk Pregnant Women of Fe Deficiency Anemia : Process I (임신부의 철분 영양 잠재위험집단의 조기선별을 위한 스크리닝 도구의 개발 I)

  • Iron deficiency anemia is a worldwide public health problem relevant to unsound nutritional practice. While the prevalence of iron deficiency anemia is very common among pregnant women, appropriate nutritional service programs to improve the iron status are lacking in Korea. In an attempt to develop a nutritional screening tool to separate the high-risk subjects of iron deficiency, we carried out a nutritional survey for 115 Korean pregnant women whose gestational age ranged from 13 to 24 weeks. Each subject was interviewed with questionnaires for general characteristics and dietary habits. Food intake was measured by 24-hour recap method and 2 day record. Fasting blood was drawn for measuring hemoglobin and serum ferritin. It appeared that half of the pregnant women belonged to the anemia group and had insufficient dietary habits to provide adequate amounts of dietary iron. The first gravida and the working women had better hematological iron indicators than the second or more gravida and the housewives. It also appeared that women who had bigger family size and lower BMI in pre-pregnancy had poorer iron status. Among the food consumption habits, fruit dependent dietary habit was related to poor iron status. Sufficiently consumed green leafy vegetable and appropriate amount of food before morning sickness were positive factors of iron stares. Our results indicated that parity, BMI, current job, family size, food habits including consumption of fruits, green & yellow vegetables, and food habits before the onset of morning sickness are significant factors to contribute the Fe deficiency anemia during pregnancy.

Dietary intake and nutritional status of Korean children and adolescents: a review of national survey data

  • In Korea, several national cross-sectional surveys monitor the diet, nutritional status, and health status of children. This continual dedicated national surveillance system contributes to the identification of nutritional and health issues, establishment of public health policies, and development of nutrition recommendations. This paper provides recent information about the Korea National Health and Nutrition Examination Survey and the Korean Youth Risk Behavior Web-based Survey and describes key nationwide survey findings published in the last 5 years on infant feeding practices and the dietary intake and nutritional status of Korean infants, children, and adolescents. There have been increasing trends in children, and teenagers who skip breakfast, eat fast food, consume sugary drinks, have vitamin D deficiency, and are obese. This review will inform pediatricians, nutritionists, and other health care practitioners who track children's growth and development. It may also help researchers and policymakers identify diet-related policies and strategies for chronic disease prevention in Korean infants, children, and adolescents.

A Comparative Study on the Dietary Attitudes and Nutritional Status of Preschool Children in Different Income Levels in Busan (부산 시내 일부 지역의 소득수준별 학령전 아동의 식생활 태도 및 영양상태에 관한 비교)

  • This study was carried out to investigate the dietary attitudes and nutritional status of preschool children in different income levels in Busan. The survey was conducted from November 1 to November 30, 2004 by questionnaires mid data analyzed by the SPSS program. The results are summarized as follows: The Kaup index of the upper income class group was higher than that of the other income classes. In the middle income class group, nutrition knowledge scores were higher than in any other income class. Sixty-four point nine percent of the upper income class children, 25.7% of the middle income class children and 15.7% of the low income class children had nutrition education experiences. Intake of protein was higher than that of the Korean recommended dietary allowances (RDAs) for children. In the upper income class group, intake of calcium was higher than in any other income class. Intakes of calcium and iron were lower than those of the RDAs in all children. Dietary attitude had positive correlation with frequency of breakfast, time for outdoor activity, and height and weight, and had negative correlation with frequency of fast food and time for watching television. Frequency of snack had positive correlation with frequency of fast food and time for watching television, but frequency of breakfast had negative correlation with those. These results indicate that nutrition education programs linking parents to children should be carried out to improve their nutritional status.

Evaluation of Dietary Quality and Nutritional Status based on Nutrition Quotient and Health Functional Food Intake in the Korea Elderly (노인의 건강기능식품 섭취 실태와 영양지수를 이용한 식사의 질 및 영양 평가)

  • This study aim to evaluate dietary quality and nutritional status according to the consumption of health functional food using Nutrition Quotient for Korean elderly (NQ-E) for 288 elderly people attending senior welfare centers in Gyeonggi-do. The questionnaire consisted of items about general information, health functional food, and Nutrition Quotient for Korean elderly (NQ-E). Chi-squared test, Fisher's exact tests, and Analysis of Covariance (ANCOVA) were performed using the SAS program ver. 9.4. Among the male and female subjects, the female subjects consumed more health functional food. The results of the dietary quality and nutritional status difference according to the intake of health functional food showed significant differences only in the areas of variety and abstinence among nutrition quotient factors for men, while no significant differences were observed in any of the nutrition quotient factors for women. In conclusion, focused-nutrition education program and useful guideline is needed for promoting adequate consumption of health functional foods in elderly.
