A Study on the Comparative Analysis of Scent and Oleic Acid of Different Part of Horse and Beef Meat (말고기와 쇠고기의 부위별 향기와 올레산 비교 분석 연구)

  • Horse meat is a low-fat and high-protein food with more essential amino acids and less fat than other meat, but the horse meat has not been popularized in Korea due to stereotypes about horse meat. In this study, a comparative analysis of horse meat and beef was conducted using electronic nose device and gas chromatography, and as a result, there was no significant difference in the scent. However, the oleic acid content of beef is significantly higher than that of horse meat(p<0.05). Therefore, the possibility of popularizing horse meat processed products in the domestic meat processing market is expected to be sufficient.

Assessment of cutting time on nutrient values, in vitro fermentation and methane production among three ryegrass cultivars

  • Objective: The 3×3 factorial arrangement was used to investigate if either high water-soluble carbohydrates (WSC) cultivars or suitable time of day that the grass cut could improve nutrient values and in vitro fermentation characteristics. Methods: The 3 cultivars were mowed at 3 diurnal time points and included a benchmark WSC ryegrass cultivar 'Premium', and 2 high WSC cultivars AberAvon and AberMagic, which contained, on average, 157, 173, and 193 g/kg dry matter (DM) of WSC, and 36.0, 36.5, and 34.1 g/kg DM of N during 7th regrowth stage, respectively. The fermentation jars were run at 39℃ with gas production recorded and sampled at 2, 5, 8, 11, 14, 17, 22, 28, 36, and 48 h. The rumen liquid was collected from 3 rumen fistulated cows grazing on ryegrass pasture. Results: High WSC cultivars had significantly greater WSC content, in vitro DM digestibility (IVDMD) and total gas production (TGP), and lower lag time than Premium cultivar. Methane production for AberMagic cultivar containing lower N concentration was marginally lower than that for AberAvon and Premium cultivars. Grass cut at Noon or PM contained greater WSC concentration, IVDMD and TGP, and lower N and neutral detergent fiber (NDF) contents, but CH4 production was also increased, compared to grass cut in AM. Meanwhile, the effects of diurnal cutting time were influenced by cultivars, such as in vitro CH4 production for AberMagic was not affected by cutting time. The IVDMD and gas production per unit of DM incubated were positively related to WSC concentration, WSC/N and WSC/NDF, respectively, and negatively related to N and NDF concentrations. Conclusion: These results imply either grass cut in Noon or PM or high WSC cultivars could improve nutrient values, IVDMD and in vitro TGP, and that AberMagic cultivar has a slightly lower CH4 production compared to AberAvon and Premium. Further study is necessary to determine whether the increase of CH4 production response incurred by shifting from AM cutting to Noon and/or PM cutting could be compensated for by high daily gain from increased WSC concentration and DM digestibility.

Lactic Acid Bacteria from Gamecock and Goat Originating from Phitsanulok, Thailand: Isolation, Identification, Technological Properties and Probiotic Potential

  • From independent swab samples of the cloaca of indigenous gamecocks (CIG), anus of healthy baby goats (AHG), and vagina of goats (VG) originating from Phitsanulok, Thailand, a total of 263 isolates of lactic acid bacteria (LAB) were collected. Only three isolates, designated C707, G502, and V202, isolated from CIG, AHG, and VG, respectively, exhibited an excellent inhibitory zone diameter against foodborne pathogenic bacteria when evaluated by agar spot test. Isolates C707 and G502 were identified as Enterococcus faecium, whereas V202 was identified as Pediococcus acidilactici, based on 16S rRNA sequence analysis. When foodborne pathogenic bacteria were co-cultured with chosen LAB in mixed BHI-MRS broth at 39℃, their growth was suppressed. These LAB were found to be capable of surviving in simulated stomach conditions. Only the isolate G502 was able to survive in the conditions of simulated intestinal juice. This research suggests that selected LAB could be used as a food/feed supplement to reduce foodborne pathogenic bacteria and improve the safety of animal-based food or feed.

Situation and Outlook of the U.S. Organic Produce and Foods (미국의 유기농식품 -현황과 전망)

  • This paper aims to provide quite recent information on the organic industry in the U.S. Major focuses are on the development of cultivation and marketing of fresh and processed organic produce and foods, newly enforced certification program, consumers' purchasing behaviors toward organic foods, and social survey results administered to the organic farmers in the U.S. The U.S. recorded 8 billion dollars' sale of organic foods in 2000, which was the largest in the world and showed 23% growth compared to the previous year. Yet the organic industry is still a niche market, occupying merely 1.5% of total food sale amount. The natural foods markets have not been so concentrated in the U.S., but it is changing and a few wholesale mart such as Whole Foods is emerging. Recent introduction of new certification program provide unified and sole standard at the federal level to which every certifier needs to adjust itself in order to be acceredited by the government. According to a social survey, consumers purchase organic foods because they concern about health, they stick to their own modes of life favoring natural foods, and so on. Another social survey shows that most organic farmers sell their produces to wholesalers, distributers, or producer coop, and direct sale to visitors at their own farm comprises of about 8 percent of their organic land.

  • This paper suggests smart agricultural diffusion strategy through advanced ICT technology. Today, the world is threatened by environmental pollution and traditional warming due to global warming, and the decrease in agricultural workers due to low fertility and aging is expected to bring social problems to future food resources. The convergence of ICT technology and agriculture is not a labor-intensive primary industry, but a new paradigm that includes cultivation, manufacturing and services. It is urgent to spread smart farm technology that can supply stable food with low labor force. In this paper, we review the current state of smart farm technology, analyze the impediments to diffusion, and present the direction of smart agricultural development in the future by upgrading ICT technology.

Effect of High Vanillin Treatment on Storage Quality of Fresh-cut Apples

  • The effect of post-cut vanillin treatment at high concentrations on changes of quality and microorganism in fresh-cut apples was studied. Apples (Malus domestica Borkh. cv. Fuji) were sliced, treated by dipping in different vanillin solution, 0, 40, 80, and 120 mM, packed in polyethylene bag, and then stored for up to 3 weeks at $4^{\circ}C$. Changes in total aerobic bacteria, yeast and molds, browning, soluble solids, and titratable acidity during storage were investigated. Growth of total aerobic bacteria throughout storage was strongly inhibited by vanillin regardless of treatment concentrations. Growth of yeast and molds was inhibited by vanillin of all concentrations until 2 weeks of storage. Levels of browning index, soluble solids, and titratable acidity were not significant difference among the treatment conditions until 2 weeks of storage. However, when stored for 3 weeks, browning index increased more at 80 or 120 mM vanillin, while soluble solids and titratable acidity more be decreased by 120 mM vanillin as compared with other treatment conditions. These results show that the usage of vanillin in processing of fresh-cut apples had a limitation for maintaining quality.

  • Securing food safety, natural and social environmental protection, and activation of rural communities are some of challenging tasks for the 21st century. National consensus on agriculture as a basic and public industry would be needed to solve these challenging tasks. Agricultural policy and extension education should be focused on encouraging farmers to achieve better production and management by developing their motivation and ability. Systematic and organizational efforts to make a better environment for farming and farm management should be the major target of agricultural policy and extension services in the future. To meet changing needs of farmer, agricultural extension services should change programs, functions, information sources, and methods of delivery to adopt experiential learning for farmers. Functions for consultation, suggestion and organization should be extended and advisory services for farmers should be emphasized by providing extension education.

A Forecasting on the Market Size of Korean Solar Salt (한국 식용 천일염 시장규모 전망에 관한 연구)

  • This paper contains material of the supply-demand forecasting of solar salt for food in Korea. The solar salt was granted admission for food by the act of salt management in 2007. So, the yearly statistics of solar salt for food are not enough to forecast the supply-demand unsing econometrics. However, the related industry become interested in market size of the solar salt for food and the growth potential of the market. This study deal with the supply-demand forecasting of solar salt for food in light of industry of solar salt, consumption trends, export-import quantity, etc. This research results indicate that the production quantity will be 222-384 thousand MT, the export quantity will be 498-565 thousand MT, the export quantity will be 2.67-3.62 thousand MT, the consumption quantity will be 767-996 thousand MT.

  • The purpose of this study is to examine the tendency of certified organic cosmetics market and the certification standards and regulations they are under, compare one of the most commonly used COSMOS-standard AISBL with the Korea Ministry of Food and Drug Safety (MFDS) organic cosmetic standard regulation. And then examining their differences and any potential issues is to present suggestions to be made as data for certification standard for natural & organic cosmetics in Korea regulation. This contents of study will be used as good research and development to promote the sustainable growth of the natural & organic cosmetic ingredients which have been grown by organic farmers certified. Also certified organic ingredients may help to growth the organic industry. I believe these are actual comparative for application to develop of natural and organic cosmetics in Korea as well the strengthening of the competitiveness of organic cosmetics certified in the world.
