Effects of Gamma Irradiation on Inhibition of Urease Activity and Fishy Smell in Mackerel (Scomber japonicus) during Refrigerated Storage

  • In this study, gamma-irradiated mackerel (Scomber japonicus) meat was stored in a refrigerator for 20 days to examine the physicochemical changes related to fishy smell. The effect of gamma irradiation on the inhibition of the activity of crude urease extracted from Vibrio parahaemolyticus was also evaluated. Increased levels of trimethylamine (TMA) and volatile basic nitrogen (VBN) content, which are the main components causing fishy smell, were significantly reduced by day 20 of storage after gamma irradiation, indicating that freshness was maintained during storage. The ammonia nitrogen contents of 3, 7, 10, and 20 kGy gamma-irradiated groups were significantly decreased by 6.5, 15.2, 17.4, and 23.9%, respectively, compared to non-irradiated groups on day 20 of storage. In addition, urease activity decreased in a gamma irradiation intensity-dependent manner. Volatile organic compounds (VOCs) were measured during the storage of gamma-irradiated mackerel meat. The contents of ethanol, 2-butanone, 3-methylbutanal, and trans-2-pentenal, which are known to cause off-flavors due to spoilage of fish, were significantly reduced by day 20 of storage. Therefore, gamma irradiation can be considered useful for inhibiting urease activity and reducing fishy smell during fish storage.

Anti-Atopic Activities of Sargassum horneri Hot Water Extracts in 2,4-Dinitrochlorobezene-Induced Mouse Models

  • Atopic dermatitis (AD) is a chronic inflammation associated with skin hypersensitivity caused by environmental factors. The objent of this study was to assess the hot water extracts of Sargassum horneri (SHHWE) on AD. AD was induced by spreading 2,4-dinitrochlorobenzene (DNCB) on the BALB/c mice. The efficacy of SHHWE was tested by observing the immunoglobulin E (IgE), cytokine, skin clinical severity score and cytokine secretions in concanavalin A (Con A)-stimulated splenocytes. The levels of interleukine (IL)-4, IL-5 and IgE, the pro-inflammatory cytokines that are closely related, were notably suppressed in a does-dependent manner by SHHWE, whereas the level of interferon γ (IFN-γ), the atopy-related Th1 cytokine inhibiting the production of Th2 cytokines, was increased. Therefore, these results show that SHHWE has a potent anti- inhibitory effect on AD and is highly valuable for cosmetic development.

감태 추출물이 지니는 Lipase 저해활성의 열 및 pH 안정성 (Inhibitory Effect of Ecklonia cava Extracts against Lipase Activity and Stability Effect of Temperature and pH on Their Activity)

  • 본 연구는 감태 추출물의 lipase 저해활성을 알아보고, 산업적으로 이용가능성을 확인하기 위해 열 및 pH에 대한 안정성을 실시하였다. 감태의 일반성분을 측정한 결과, 수분함량은 8.1%, 회분함량은 26.5%, 조지방 함량은 1.2%, 조단백 함량은 12.9%, 탄수화물의 함량은 51.4%로 나타났다. 감태 추출물의 색도 및 pH를 측정한 결과, 에탄올 추출물이 물 추출물에 비해 명도 및 황색도가 높고 적색도는 낮은 것으로 나타났으며, 에탄올 추출물과 물 추출물이 산성과 약산성을 띠는 것으로 나타났다. 감태 추출물을 5, 2.5 및 1 mg/mL의 농도로 lipase 저해활성을 측정한 결과, 에탄올 추출물에서는 59, 34 및 19%의 저해활성을 보여 물 추출물보다 높은 저해활성을 보였다. 높은 저해활성을 보인 감태 에탄올 추출물의 열 및 pH에 대한 안정성을 측정한 결과, $100^{\circ}C$에서 20분, $121^{\circ}C$에서 15분의 열처리에 의해 lipase 저해활성이 증가하는 것으로 나타났으며, pH 2~10의 모든 범위에서도 안정한 것을 확인할 수 있었다. 이상의 결과를 통해 lipase 저해활성을 지니는 감태 에탄올 추출물이 열 및 pH에 대해 높은 안정성을 가져 항비만 소재로 응용할 수 있을 것으로 사료된다.

식품산업에서 활용되는 식품안전 분석기술의 현황 (Food safety analytical techniques used in food industry)

  • Recently, the importance of analytical techniques related to food safety is emerging in the food industry due to changes in diet patterns, environmental changes, climate change and consumer's interest in food safety. In particular, food safety accidents in the food industry may cause economic losses such as media reports, product recalls, consumer distrust, and so on. Therefore, a systematic, proactive and comprehensive food safety management system is increasingly required to prevent food safety issues. Efforts to ensure the reliability of food safety are essential by introducing various analysis instruments such as LC, GC, ICP, LC/MS/MS, GC/MS/MS, ICP/MS, PCR, and RT-PCR. In addition, recent food safety analytical techniques used in food industry should be shifted paradigm by developing multi-component simultaneous analytical method, low cost with high efficient analytical method, and eco-friendly method.

  • Bread is an essential food consumed worldwide. Bread rapidly loses its desirable texture and flavor qualities associated with freshness through a process known as staling. The shelf life of bread is limited by this staling leading to economical losses in the range of one billion dollars per year. There are a number of mechanisms thought to be related to the staling process, such as water migration and redistribution, starch retrogradation, and gluten transformation. In this review, roles of water and water migration on bread staling are summarized and discussed.

감자 전분의 첨가가 수리미 혼합물 제조에서 3D 프린팅 적합성에 미치는 영향 (Effect of potato starch on suitability for 3D printing in golden threadfin bream (Nemipterus virgatus) surimi mixture preparation)

  • 본 연구에서는 3D 프린팅 카트리지로서 수리미 혼합물의 가능성을 확인하기 위하여 수리미 혼합물 제조 시 감자 전분 첨가에 따른 물성 변화와 냉장 저장 시 나타나는 물성 변화 및 관능평가를 측정하였다. 그 결과 색도 변화에서는 명도와 황색도의 경우 감자 전분 무첨가군이 냉장 저장 전과 후 모두 가장 높은 값을 보였고, 적색도와 색차의 경우 감자 전분 무첨가군이 냉장 저장 전과 후 모두 가장 낮은 값을 나타냈다. 적색도의 경우 0, 1, 3 wt% 첨가군에서 7일간 냉장 저장에 따른 유의한 감소가 확인되었고, 황색도의 경우 1, 2 wt% 첨가군에서 저장에 따른 유의간 감소를 보였다. 감자 전분 첨가에 따른 물성 변화에서는 경도와 검성이 감자 전분 첨가군이 무첨가군에 비해 증가하였다. 부착성, 탄력성, 응집성, 씹힘성 및 복원성에서는 감자 전분 첨가군과 무첨가군 사이에 유의적인 차이가 없었다. 냉장 저장에 따른 물성 변화에서 가열 후 7일 저장한 수리미 혼합물의 경우 저장 전 수리미 혼합물과 비교하여 유의적인 차이가 없었다. 가열 후 7일간 냉장 저장 후 튀긴 수리미 혼합물의 경우 경도, 검성, 씹힘성은 냉장 저장 전보다 감소하였고, 응집성, 복원성은 증가하는 결과를 확인하였다. 관능평가 결과, 감자전분의 함량이 증가함에 따라 냄새, 맛, 경도, 탄력성 및 종합적 호감도 등 전체적으로 증가하는 경향을 보였으나 유의한 변화는 없었다. 7일간 냉장 저장한 가열 수리미는 모든 항목에 있어서 감자 전분 함량의 증가에 따른 유의적인 차이가 확인되지 않았다. 또한 색깔을 제외한 나머지 항목에서는 냉장 저장에 따른 유의한 차이가 확인되지 않았다. 이러한 결과를 통해 감자 전분의 첨가가 수리미 혼합물의 맛과 냄새에 영향을 주지 않고, 냉장 저장 시에도 관능 평가 상 큰 영향을 주지 않는 것으로 확인되었다. 따라서 수리미 혼합물 제조 시 감자 전분의 첨가는 제품의 제조 및 냉장 보관 상 물성 및 품질에 영향을 주지 않는 것으로 확인된 바, 감자 전분이 3D프린팅용 수리미 제조 시 카트리지 소재로 적합하다고 사료된다.

Monitoring of the Sorbic Acid, Benzoic Acid and Sulfur Dioxide for Commonly Consumed Beverages, Snacks and Instant Ramens in Korea

  • This study was to investigate the sorbic acid, benzoic acid and sulfur dioxide in commonly consumed beverages, snacks and instant ramens in Korea. A total of 150 food samples including 50 beverages, 50 snacks and 50 instant ramens were examined using the Korea Food Code method. Sorbic and benzoic acid were analyzed by the HPLC method, whereas sulfur dioxide was measured by Monnier-Williams method. Our results indicated that benzoic acid was detected in six beverages samples, and its concentration was in the range of 3.08-11.94 mg/kg. The contents of both sorbic and benzoic acid in 50 beverage samples did not exceed the residue allowance standards set by the Ministry of Food and Drug Safety (MFDS). Sulfur dioxide was detected in 12 beverages samples, but its content was lower than the detection limit specified in the method by the Korea Food Code. On the other hand, sorbic acid was not detected all samples. These results provide a basic data regarding sorbic acid, benzoic acid and sulfur dioxide in commonly consumed beverages, snacks and instant ramens in Korea.

The level of food literacy and its association with food intake and obesity status among Seoul citizens: results from Seoul Food Survey 2021

  • BACKGROUND/OBJECTIVES: Food literacy (FL) is a crucial skill for selecting sustainable and healthy food options, necessitating the identification of vulnerable groups in the community using valid measurement tools. Identifying weak domains in FL is essential for enhancing the overall FL. This study examined the FL levels of Seoul citizens based on their sociodemographic characteristics and assessed the relationship between FL, food intake, and weight status. SUBJECTS/METHODS: This study utilized the data from the Seoul Food Survey, a cross-sectional study employing representative samples of Seoul citizens. Data collection occurred from September to October 2021, with 4,039 citizens aged 18 yrs and above participating in face-to-face surveys. Thirty-three FL items were assessed, comprising 14 items in the nutrition and safety (NS) domain, eight items in the cultural and relational (CR) domain, and 11 items in the socio-ecological (SE) domain. In addition, data on food intake sufficiency and obesity status were collected. The descriptive statistics, t-tests, analysis of variance, and logistic regression analysis were used for analysis. RESULTS: Men, students, young adults, older citizens, and people experiencing food insecurity had the lowest scores for all the FL domains. The highest quartile group of NS scores had a higher probability of consuming adequate servings of vegetables and fruits, with significant linear trends observed (P for trend < 0.05). In all three FL domains, the odds ratio for obesity was significantly lower in the groups with high FL scores (P < 0.05). CONCLUSIONS: A close relationship was observed between low FL, obesity, and food intake, even after controlling for other covariates. Vulnerable groups with low FL were also identified. Therefore, it is essential to develop programs to improve FL and the health and well-being of these groups.
