Development of Prediction Model of Groundwater Pollution based on Food Available Water and Validation in Small Watersheds (식품용수 수질자료를 이용한 지하수 오염 예측 모델 개발 및 소규모 유역에서의 검증)

  • Groundwater is used in many areas in food industry such as food manufacturing, food processing, cooking, and liquor industry etc. in Korea. As groundwater occupies a large portion of food industry, it is necessary to predict deterioration of water quality to ensure the safety of food water since using undrinkable groundwater has a ripple effect that can cause great harm or anxiety to food users. In this study, spatiotemporal data aggregation method was used in order to obtain spatially representative data, which enable prediction of groundwater quality change in a small watershed. In addition, a highly reliable predictive model was developed to estimate long-term changes in groundwater quality by applying a non-parametric segmented regression technique. Two pilot watersheds were selected where a large number of companies use groundwater for food water, and the appropriateness of the model was assessed by comparing the model-produced values with those obtained by actual measurements. The result of this study can contribute to establishing a customized food water management system utilizing big data that respond quickly, accurately, and preemptively to changes in groundwater quality and pollution. It is also expected to contribute to the improvement of food safety management.

Fat replacers among low calorie food ingredients (저열량 식품 소재 중 지방 대체재)

  • Fat replacers are divided into three categories. These include carbohydrate-based, protein-based and fat-based replacers. Carbohydrate-based replacers occupy half of the fat replacers market. The main ingredients of carbohydrate-based are gums, starch, modified starch, cellulose and fiber. The functional properties of fat replacers are to retain moisture, to retard staling, to provide mouthfeel and texture, to emulsify, to stabilize emulsion, and to reduce fat. Using these functionalities, fat replacers are used in various foods such as baked goods, salad dressing, sauces, meat products, dairy products, frying foods, bakery, and confectionery. Success factors of fat replacers in the market are sensory equivalent, texture and safety as food ingredients.

A study for the utilization of ready-prepared foodservice system concept to the Korean hospital foodservice operations (병원급식에서 Ready-Prepared Foodservice System 이용에 관한 연구)

  • Here is a research on hospital foodservice system, when korea traditional food of pyeon yuk and bin dae deok were used by ready-prepared foodservice system, it was estimated the preservations of microbiological quality and sensory quality. All data collection was replicated three times. The results were as following; 1. In time and temperature data, two menu items were needed internal temperature below $7^{\circ}C$ in a cooling stage, and in the case of cook/chill storage, the days were shortened within weeks, and the holding time must be possiblely minimized. Finally foods were served sanitary. 2. In view of microbiological safety, in the case of cook/chill storage as $0{\sim}4^{\circ}C$ the days must be shortened within 2 weeks and its was possible to store until 6 weeks in $-20{\sim}-23.3^{\circ}C$. So to preserve pre-cooked food longly, it was effective to freeze them quickly by using vacuum package and to reheat them by a microwave oven before serving and to serve lastly in microbiological quality. 3. Hospital ready-prepared foodservice system with food storage in plastic bags, biochemical test of C. Perfingens C. botulinum and Salmonella were not detected. 4. By using of a microwave oven, it had effects of thawing, reheating and sterilizing of chilled and frozen foods in a short time. 5. Sensory evaluations were made by a 10-member panel using five scoring tests. Because sensory of quality was lowered in the case of chilled storage, it was possible to serve foods within 2 weeks. Texture and aroma were preserved by cook/frozen system and usually there was no significance from 4 weeks until 6 weeks, but considering of the objects, it was good to store until 4 weeks in sensory quality.

A Study on Safety Management for Senior-Friendly Medical Devices (고령친화 의료기기의 안전관리방안 연구)

  • The number of items and the market size of the senior-friendly medical devices are rapidly increasing, and it is necessary to come up with a safety management plan for senior-friendly medical devices. We searched and analyzed the definition and policy of senior-friendly medical device, and classified medical device items of the Ministry of Food and Drug Safety, calculated market sizes and manufacturing export import results by classification, and investigated the current state of senior-friendly industry and the fields of its culture. In order to prepare a safety management plan, we reduce the number of items that need to be managed intensively by extracting 69 items for administration, that are substantially harmful to the elderly. As specific safety management plans of items for administration, we propose plans for introductions of readability-enhanced labeling, QR codes for cautions and manuals, universal design mandatory, UDI code system with considering a balanced viewpoint of the industry development.

A Study on Occupational Safety and Health among Child Care Workers : An Empirical Investigation (돌봄 서비스 종사자의 안전보건 실태와 개선방안 고찰 : 어린이집 보육교사를 중심으로)

  • The purpose of this study is to investigated occupational accidents of child care worker. We surveyed 392 childcare worker to investigate their experience of occupational accidents. Fifteen percent of the respondents from occupational accdients survey for child care workers reported that they had experienced more than one occupational accident, but mostly did not claim Occupational Safety and Health Insurance. We suggested policy tasks to improve system for protecting child care workers.

The regulatory system for imported-cargo radiation monitoring in Korea and a proposal for its improvement

  • To protect people and the environment from environmental radiation, the Act on Protective Action Guidelines against Radiation in the Natural Environment was formulated in Korea in 2011. This law regulates matters related to radiation safety that can be encountered in life. In accordance with this law, radiation monitoring equipment is operated at major airports and ports across the country, ensuring radiation monitoring of imported cargo. Currently, six ministries conduct radiation monitoring of imported cargo: the Nuclear Safety and Security Commission; the Korea Customs Service; the Ministry of Food and Drug Safety; the Ministry of Environment; the Ministry of Agriculture, Food and Rural Affairs; and the Korea Forest Service. Each ministry designates the relevant cargo items for radiation monitoring. The objective of this study was to comprehensively review the Korean radiation monitoring system for imported cargo and identify the areas and scopes of improvement. This paper also proposes a new law and an integrated supervision plan, which involves establishing a dedicated department to enhance the efficiency and professionalism of the national radiation monitoring system for imported cargo. The review will contribute to the development of a more sophisticated national radiation monitoring system for imported cargo.

Effective Strategies to Reduce Sodium Intake among Consumers: Pork Cutlet Sauce as a Model Food System

  • This study assessed effective strategies to reduce the sodium intake among consumers using pork cutlet sauce as a model food system. Original pork cutlet sauce and sodium-reduced sauce (29% reduced by a salt substitute) were analyzed to characterize the sensory properties using descriptive analysis. The effects of sodium-reduction of the sauce, consumer type (nutrition teachers vs. general consumers), information related to the sodium content, serving method, and consumer's health, taste and sodium-related attitudes on the consumer's preference, perception, and intake of the sauce were analyzed using a consumer test. In descriptive analysis, the original and sodium-reduced sauce showed similar sensory characteristics but did not differ in saltiness. In the consumer test, there were no significant differences in the overall preference levels between the two sauces. On the other hand, there were significant differences in preference and perception between nutrition teachers and general consumer groups, which were due largely to their age as well as the health and sodium-related attitudes and nutritional knowledge differences. Sodium-reduced information decreased the perceived saltiness intensity. In addition, reducing sodium intake by serving pork cutlet sauce in a bottle can be an effective strategy because this serving method increased the acceptance and induced the smaller intake of sauce.

Survey of Planting System and Pesticide Spray Method on Apple Orchards in Korea (국내 사과원의 재배형태 및 농약 살포방법 조사)

  • A survey was conducted to research on planting system and pesticide spray methods including spray volume, sprayer types, and spray nozzles used in apple orchards. The survey was deployed to 395 farmers in 17 cities and towns including 7 regions which are major producers of apple via interview. Major apple varieties were Fuji (79.2%) and Hongro (50.9%) and high density planting system was mainly used in apple orchards (distance between rows: 4.0-4.5 m (73.1%); planting distance: 1.5-3.5 m (88.6%); canopy height: 3.0-4.5 m (88.2%)). The percentages of sprayer types were 77.6% and 22.1% for speed sprayer (airblast sprayer) and power sprayer, respectively. Spray volumes per 10a were 250-300 L in April, the month of spraying the lowest volume, and 300-400 L in June-August, the months of spraying the highest volume. Significant difference in spray volumes were not observed between conventional planting and high density planting, but regional spray volume showed significant difference. The main nozzles used by apple farmers using power sprayers were super jet nozzle (45%), super wide nozzle (26%), and 2-3 vertical head nozzle (25%). The results will helpful to establish practical agrochemicals management policy including suggestion of pesticide spray volume and evaluation of pesticide residue data and efficacy data.

A Study for the Purchase Status of the Imported Agricultural Products and Consumers' Recognition of the Labelling for the Country of Origin in Youngnam Region (수입 농산몰의 구입실태 및 원산지표시제의 인식도에 관한 연구 -영남지역 소비자를 중심으로-)

  • The consumers' purchase experiences of some imported agricultural products (rice, sesame, garlic, onion, jujube, red pepper, oak mushroom, apple, dried persimmon) and their consciousness for the labelling of the country of origin for agricultural products in Youngnam region were examined in this study. The sample consisted of 438 women who lived in Taegu, Pusan and other cities of Kyungpook and Kyungnam, and the self-administered questionnaire for the survey was used. The main reasons to purchase the imported agricultural products were the wide distribution and low price of them. Most of the consumers were concerned about safety of the imported agricultural products but only a few people experienced unsatisfaction of the products. The price, quality, package, container, label, and safety of the examined products were evaluated worse than those of the domestic products. Generally, although they suffered unsatisfaction, the consumers did not complain because they wanted to avoid troublesome work, which means the consumers did not assert their rights. Some people did not know the labelling system for the country of origin and the place to charge the market violating it. Therefore, it will be necessary for the consumers to receive education about the labelling system for the country of origin and the compensation criteria for consumers' grievances and damages. The current labelling method for the country of origin generally met the consumers' preference but the consumers wanted to improve the position and color of the label. Most consumers could not differentiate the imported products from the domestic products. The results obtained from the survey suggest consumer education for the labelling system for the country of origin and the compensation criteria should be activated through various ways such as mass media and consumer organizations.

Seasonal Change in the Quality Characteristics of Commercial Kimchi (국내 유통 김치의 계절별 품질특성 변화)

  • This study evaluated the physicochemical and microbial quality characteristic of seasonal commercial kimchi for hygienic safety levels. The pH of seasonal commercial kimchi was 3.84-6.36 and the titratable acidity and salinity of the samples were 0.21-1.16 and 1.19-1.54%, respectively. The content of nitrate and nitrite in the commercial kimchi were lower in the spring and summer, which was affected by acidic condition of the kimchi depending on fermentation. Heavy metal contents in commercial kimchi are not an issue because they were detected only at very low levels. The total aerobic bacteria and coliforms counts ranged from 5.25 to 8.44 Log CFU/g and 0.00 to 5.08 Log CFU/g, respectively. The total aerobic bacteria and coliforms were detected more in summer than in the other seasons. E. coli was detected in three of the samples tested. Food-borne pathogens were not detected in any of the samples except for B. cereus. B. cereus was detected in the fall in more than 70% of samples. These results suggest that commercial kimchi distributed in the fall maintain the quality properties and the microbiological safety of kimchi compared to the other seasons. Therefore, further studies as an effective distribution system for the particular seasons will be needed to guarantee the hygienic safety levels of commercial kimchi required by the consumers.
