Effect of PE Film Thickness on MA (Modified Atmosphere) Storage of Strawberry (Polyethylene Film 두께에 따른 딸기의 MA(Modified Atmosphere) 저장 효과)

  • This study was conducted to investigate the effect of various polyethylene (PE) film packaging on the quality of strawberry during storage at low temperature. Gas composition in film was changed rapidly at early stage of storage and then kept at the level of 5~10% $CO_2$and 1~3% $O_2$. Weight loss and decay rate were low at 0.08mm PE film packed strawberries. Titratable acidity, pH and soluble solids were changed slightly during storage but its large difference according to film thickness was not observed. Decrease of flesh firm-ness and a value was restrained by PE film packaging. Free sugar of strawberry was composed of glucose and fructose in similar content and it was decreased a little during storage but the difference according to film thickness was not observed. The organic acids in strawberry were citric acid, malic acid, succinic acid, ascorbir acid, oxalic acid, tartaric acid and pyruvic acid and the major organic acid was citric acid. The contents of citric acid, malic acid, succinir acid and ascorbic acid were decreased and oxalic acid and tartaric arid were not changed during storage but pyruvic acid was increased in early stage and then decreased. These changes of organic acid were slight in packaged with 0.08mm PE film strawberry.

Effects of ${\kappa}-Carrageenan$-Based Film Packaging on Moisture Loss and Lipid Oxidation of Mackerel Mince (${\kappa}-Carrageenan$ 필름을 사용하여 포장한 고등어육의 수분 손실 및 지방 산화)

  • ${\kappa}-Carrageenan-based$ film prepared by mixing 2% ${\kappa}-carrageenan$, 0.1% KCl, 0.75% polyethylene glycol, and 0.75% glycerol was examined to be used as a potential packaging material for mackerel mince for preventing moisture loss and lipid oxidation. Mackerel mince patties were vacuum-packaged with the film and stored at $20^{\circ}C,\;10^{\circ}C,\;0^{\circ}C,\;and\;-15^{\circ}C$; nonpackaged patties were also stored at $0^{\circ}C$. Weight reduction, peroxide value (PV), and thiobarbituric acid (TBA) value were measured during storage. The packaged or nonpackaged samples stored at $20^{\circ}C,\;10^{\circ}C,\;and\;0^{\circ}C$ showed a 60% weight reduction between 2 and 15 days of storage, while the weight reduction of the samples stored at $-15^{\circ}C$ was about 3% after 25 days. The nonpackaged samples stored at $0^{\circ}C$ showed a steady increase in lipid oxidation with the PV reaching 23 mequivalent peroxide (PO)/㎏ on day 20 and with the TBA value at 0.4 mole malonaldehyde (MA)/g on day 5. The PV and TBA values of the samples vacuum-packaged with the carrageenan-based film were below 2 mequivalent PO/㎏ and below 0.1 mole MA/g, respectively, regardless of storage temperature throughout the storage of 28 days.

Quality Changes in Brined Baechu Cabbage using Different Types of Polyethylene Film, and Salt Content during Storage (절임배추 저장 중 폴리에틸렌 포장필름 종류와 소금 절임 농도에 따른 품질변화)

  • Korean Baechu cabbage(known as Chinese cabbage) brined in 0%, 5% and 10% (all w/v) salt solutions were packed using high-density polyethylene film (HDPE-film), low-density polyethylene film (LDPE-film), or Mirafresh film (MF-film, US patent No. 5972815), and stored at 4C for 4 weeks. Changes in pH and salinity, and microorganism counts (lactic acid bacteria and total bacteria), were investigated. There was no significant difference in the pH change in cabbage stored using various films when the vegetables were not salted. However, the pH was most stable in Baechu cabbage prepared using 10% salt solution. Cabbage treated with 0%, 5%, and 10% salt showed salinity values of 0.83%, 1.17% and 1.62%(all w/w), respectively, after 4 weeks of storage by LDPE-film. When cabbage was treated with the highest concentration of salt solution, the count of lactic acid bacteria increased but that of total bacteria decreased. The pH from pH 6.10 to pH 4.32, pH 5.68, and pH 5.92 in brined cabbage packed in HDPE-film, LDPE-film, and MF-film, respectively, after 4 weeks. When MF-film was used, the pH showed the greatest stability of all films tested, regardless of the concentration of salt solution employed in brining. The counts of lactic acid bacteria and total bacteria increased by all tested films during storage. Cabbage packed by MF-film showed the lowest increase in bacterial counts. In conclusion, MF-film was found to be the most effective packaging material for Baechu cabbage and brining in 10% salt solution was optimal to enhance the shelf life of the vegetable. LDPE-film was more effective than was HDPE-film for storage of brined cabbage.

Extending the Shelf-life of Yukwa Using Secondary Packaging (이차포장을 통한 유과의 저장성 연장)

  • This study aimed at improving the packaging technology of Yukwa to improve the quality and extend the shelflife using secondary packaging. After packaging the Yukwa using an OPP film, P2, P3, and P4 packaging materials were applied secondarily. Various films including (1) P1: OPP (oriented polypropylene), (2) P2: P1+OPP/LLDPE (linear low density polyethylene), (3) P3: P1+PET (polyethylene terephthalate)/NY (nylon)/CPP (cast polypropylene) and (4) P4: P1+PET/AL (aluminum)/NY/CPP (P4) were used for packaging Yukwa. The experiment was conducted at $25^{\circ}C$ for 12 weeks. P1 showed the highest acid value score (1.26 mg KOH/g), and P3 had the highest peroxide value score (32.91 meq/kg) among all packaging groups. Nevertheless, these values did not exceed the guideline values of 2.0 g KOH/g and 40 meq/kg specified in the Korean food code. The overall color difference showed a tendency for decreasing Hunter 'L' values and increasing 'a' and 'b' values; however, no noticeable difference in the outer appearance was observed in any of the packaging treatments except in the P1 for greater than 10 weeks of storage. Some texture defects were observed in the Yukwa when the moisture contents dropped below 5%. The P4 packaging treatment had the lowest moisture permeability and showed the least rheological deterioration change, followed by P3 and P2. In conclusion, the use of a secondary packaging with less gas and moisture permeability was more effective for maintaining the quality and extending the shelf-life of Yukwa than other types of packaging material.

Development of Minimal Processing Technology for Korean Fruit and Vegetables (과실 및 채소의 신선편의 식품화 개발기술에 관한 연구)

  • The purpose of this study was to investigate the effectiveness of various quality preservative treatments for extending shelf life and maintaining good quality of minimally processed fruit and vegetables produced in Korea. To determine the suitable treatments for delaying quality deterioration, fresh Asian pears and Chinese cabbages were sliced and treated with various quality preservatives (1% CaCl$_2$, 1% NaCl, 3% sucrose, 1% Ca-lactate, 1% vitamin C, 0.05% chitosan +1% vitamin C, 0.1% Sporix+1% vitamin C, hot water (60$\^{C}$), 0.2% L-cysteine), packed with polyethylene film (60㎛-thick), and stored at 4$\^{C}$/0$\^{C}$ or 20$\^{C}$. Various biological and sensory tests were performed to evaluate the quality changes in minimally processed products. Results indicated that Chinese cabbages treated with 1% CaCl$_2$ at 4, and 1% CaCl$_2$ and 1% NaCl at 20$\^{C}$ were most effective in maintaining the quality and minimizing the biochemical changes during storage. For sliced Asian pears, 0.2% L-cysteine and 1% NaCl treatments were effective to reduce browning, and 1% CaCl$_2$ treatment was the most effective to prevent softening during storage at 20$\^{C}$ and 0$\^{C}$. Modified atmosphere packaging of Pleurotus ostreatus and Lentinus edodes had a significantly different shelf life depending on packaging material, packaging thickness and storage temperature. Sealed packaging with polyethylene film (60㎛-thick) for two kinds of mushrooms maintained a good quality with an extended shelf life by 30-50% at 20$\^{C}$ and by 30-130% at 0$\^{C}$. To minimize the quality deterioration which appeared in the condition of polyethylene film packaging, quality preservatives such as KMnO$_4$ and KHSO$_2$+K$_2$S$_2$O$\_$5/ for SO$_2$ generation were added inside of mushroom packaging. The best condition for maintaining good quality longer was packaging with polyethylene film+SO$_2$ which showed 5080% extended shelf life for both Pleurotus ostreatus and Lentinus edodes at 20$\^{C}$ and 0$\^{C}$.

Effects of Packaging Film Application and CA Storage on Changes of Quality Characteristics in 'Hongro' and 'Gamhong' Apples (신육성 사과 '홍로', '감홍' 품종의 포장재 적용과 CA 저장에 따른 품질 변화에 미치는 영향)

  • 'Hongro' and 'Gamhong' apples grown at the Gochang-si in the southern part of Korea were harvested on September in 2002 for storage study. Each cultivar was divided into two groups of maturity based on the harvested date. Immature fruits were harvested 10 days early compared to fruits having proper maturity. This study was conducted to evaluate quality the change of 'Hongro' and 'Gamhong' apples newly bred by different storage methods with PE film package and CA conditions. A typical climacteric respiration pattern was observed in new variety 'Hongro' and 'Gamhong' apples stored at room temperature. The results indicated that fresh quality of the stored fruits in CA condition was better than that in other treatments during storage. Qualities of apples were least changed at CA storage of 3% $CO_2$ and 1% $O_2$. CA storage was effective in maintaining the freshness of 'Hongro' and 'Gamhong' for 16 weeks.

Waterborne Core-shell Pressure Sensitive Adhesive (PSA) Based on Polymeric Nano-dispersant (고분자 분산제를 이용한 Core-shell 수성 감압점착제)

  • An environmentally friendly water-based pressure sensitive adhesive (PSA) was designed in an attempt to replace the solvent-based adhesive for dry lamination used in flexible food packaging films. Instead of using a low molecular weight surfactant, which may have variable material properties, a high molecular weight dispersant was used for emulsification. A polymeric nano-dispersant (PND) was synthesized using solution polymerization, and it was used as a micelle seed in the surfactant, resulting in the synthesis of a core/shell grafted acrylic adhesive. The shell and core exhibited different $T_g$ values, so that the initial adhesion strength and holding power were complemented by the film's flexibility, which is required to provide good adhesion of thin films. Results showed that the PSA designed in this study using the PND instead of traditional low molecular weight surfactant had adhesive properties applicable to the flexible packaging with appropriate tack.

Effect of Packaging Films on Quality of 의Chuichung의 Cucumbers during Storage (포장재가 의취청의 오이의 저장 중 품질에 미치는 영향)

  • To investigate the effects of packaging films (functional MA films/FC30, FC50, MA film/0.03 mm LDPE, corrugated paperboard box/control) weight loss, firmness, total ascorbic acid, chlorophill and overall appearence were evaluated. Weight loss of cucumbers packed with FC30 and FC50 at 2$0^{\circ}C$ after 7 days were 1.0 and 0.6%, that of the control was 2.9%, those of LDPE was 0.5%. The firmness of FC30 and FC50 at 2 $0^{\circ}C$ after 7 days were 1.0 and 0.6%, that of the control was 2.9%, those of LDPE was 0.5%. The firmness of FC30-, FC50 and LD was higher than that of the control. Total ascorbic acid contents (TAA) of cucumbers packed with control, LD, FC30 and FC50 box were 9.96, 10.86, 11.37 and 11.29 mg% after 7 days. TAA of FC box was 10% higher than that of the control. Chlorophill content of FC boxes wase 16% higher than of the control. Overall appearence of cucumber packed with FC boxes was better than that of the control.

Effect of Packaging and Loading Conditions on the Quality of Late Autumn Chinese Cabbage during Cold Storage (포장 및 적입 방법이 늦가을배추의 저온저장 중 품질에 미치는 영향)

  • To extend the freshness of late autumn Chinese cabbage, the packaging and loading effects on the quality were investigated during cold storage. Judging from overall quality during storage period, late autumn Chinese cabbage could be stored by 3 months at 0$\^{C}$ cold storage. However, late autumn Chinese cabbage was not acceptable for long-term storage because of its marketability and the storage cost. Among 3 packaging methods(PP-net, carton and plastic container) for stored Chinese cabbage, plastic container and carton were more effective than PP-net packaging for the freshness prolongation. Gas composition in the plastic bags during storage was not significantly different among packaging conditions and O$_2$ and CO$_2$ concentrations were 13∼18% and 0.75∼7.48%, respectively, MAP with plastic film was effective for the quality retention because of low oxygen composition and high humidity condition in the bags.

A Study on Distribution and Packaging Status of Korean Cut Flowers (국내 절화류의 유통 및 포장 실태조사)

  • Pusan, Kwanagju, Yangjae Floriculture Auction Market to packaging and distribution status of cut flowers in Korean markets from October, 1997 to Feburuary, 1998 this study was surveyed. In case of packaging, the inner packaging materials was used almost used news papers and polyethylene films, the outer box was double wall corrugated paperboard box. Plastic container box was a few. The using shape of box was A-1 type, bending materials was PP film and OPP tape. There was whole sale and retail in all Korean markets in case of distribution. The distribution route was three, the one was farmers through consignments in Seoul to consummers, it was 42% of total distribution volume. The other was auction market in Yangjae, the distribution volume was 18%. The last was distributed in farmers and provincial markets by the dealers, the volume was 40%. All farmers and officers want to applicate the standard regulation of packaging box, but dealers were not.
