General Survey of Detection Methods for Irradiated Foods

  • The development of detection techniques is needed, in order for regulating authorities to determine whether or not a particular food sample has been irradiated, and label it accordingly so that a consumer's free choice can be exercised. The chemical and physical changes brought about in foods by practical doses of irradiation are very small, and therefore very sensitive methods are required. A number of promising approaches have been developed and evaluated. These include chemical, physical and biological methods ranging from the very simple to highly sophisticated techniques.

한국 상용 식품중의 히스타민 함량에 관한 연구 (Analysis on the Contents of Histamine in Korean Foods)

  • The purpose of this report is to present a list of Korean foods containing histamine, that is known to cause food allergy and chronic urticaria. For the measurement of histamine in foods, the application of spectrofluorimeter is used. Among the food groups, sea foods (mackerel, pacific saury, spanish mackerel, anchovy, hair, tail, tuna) contain most high amount of histamine, and the contents of see weeds (sea mustard, laverare) are also high. Milk and milk products (mozzarella cheese, yogurt) contain more histamine than animal meats. Plant foods like cereals, vegetables or fruits contain much less histamine than other food groups, except spinach. The contents of dried sesame, sesame oil, and mugicha, green tea, ginseng tea, mayonnaise, tomato ketchup are relatively high. This paper will be used as a fundamental guideline in planning dietary management of allergy and for the operational plans for the future nutrition education intervention. Because the foods rich in histamine may cause allergy-like syptoms, it may be reqoiled to label the foods containing histamine.

시판 레토르트식품의 지방함량 조사 - 조지방, 포화지방, 트랜스지방산 중심으로 - (A Study on Fat Content in Commercial Retort Foods - Crude Fat, Saturated Fatty Acid and Trans Fatty Acid -)

  • 본 연구는 레토르트식품의 조지방, 포화지방, 트랜스지방의 영양성분 표시 값과 분석 값을 비교하여 소비자에게 신뢰성 있는 영양정보를 제공하는지를 확인하기 위해 카레류 21건, 짜장류 16건, 짜장 및 카레를 제외한 소스류 17건, 즉석조리식품 16건을 서울 및 경기지역을 중심으로 수거하여 식품공전에 따라 분석하였으며 그 결과는 다음과 같다. 레토르트식품의 지방성분 함량 분포는 조지방 $0.47{\pm}0.42{\sim}17.41{\pm}0.41g/100g$, 포화지방 $0.24{\pm}0.02{\sim}7.60{\pm}0.40g/100g$, 트랜스지방 $0.00{\pm}0.00{\sim}0.46{\pm}0.05g/100g$의 범위를 보였으며, 이는 제품에 표시된 영양성분 함량 대비 각각 최대 회수율 값이 조지방(119.7%), 포화지방(119%), 트랜스지방(90%)로 모두 120%미만의 결과이며 레토르트 70건이 허용 오차 기준을 준수하고 있었다. 이상의 결과를 종합해 보면 레토르트식품에 표시된 조지방, 포화지방, 트랜스지방 함량은 소비자에게 신뢰성 있는 영양정보를 제공하고 있음을 확인하였으며, 현재 한국의 비만 유병률이 31~32%인 시점에서 소비자들이 식품에 표시된 조지방, 포화지방, 트랜스지방 함량을 확인하여 구매한다면 건강에 적합한 식품을 선택할 수 있을 것으로 판단된다. 또한 지속적으로 의무영양표시 식품을 대상으로 제품에 표시된 영양표시의 기준이 준수되고 있는 지에 대한 영양성분 함량 표시 조사 연구가 필요하다고 본다.

수입 농산몰의 구입실태 및 원산지표시제의 인식도에 관한 연구 -영남지역 소비자를 중심으로- (A Study for the Purchase Status of the Imported Agricultural Products and Consumers' Recognition of the Labelling for the Country of Origin in Youngnam Region)

  • The consumers' purchase experiences of some imported agricultural products (rice, sesame, garlic, onion, jujube, red pepper, oak mushroom, apple, dried persimmon) and their consciousness for the labelling of the country of origin for agricultural products in Youngnam region were examined in this study. The sample consisted of 438 women who lived in Taegu, Pusan and other cities of Kyungpook and Kyungnam, and the self-administered questionnaire for the survey was used. The main reasons to purchase the imported agricultural products were the wide distribution and low price of them. Most of the consumers were concerned about safety of the imported agricultural products but only a few people experienced unsatisfaction of the products. The price, quality, package, container, label, and safety of the examined products were evaluated worse than those of the domestic products. Generally, although they suffered unsatisfaction, the consumers did not complain because they wanted to avoid troublesome work, which means the consumers did not assert their rights. Some people did not know the labelling system for the country of origin and the place to charge the market violating it. Therefore, it will be necessary for the consumers to receive education about the labelling system for the country of origin and the compensation criteria for consumers' grievances and damages. The current labelling method for the country of origin generally met the consumers' preference but the consumers wanted to improve the position and color of the label. Most consumers could not differentiate the imported products from the domestic products. The results obtained from the survey suggest consumer education for the labelling system for the country of origin and the compensation criteria should be activated through various ways such as mass media and consumer organizations.

식중독 세균 검출에 있어서 리포좀의 이용 가능성 (Feasibility Study on the Use of Liposomes for Detecting Food-borne Pathogenic Bacteria)

  • 식중독 세균 검출에 있어서 리포좀의 이용 가능성을 병원성 식중독 세균인 E. coli O157:H7을 대상으로 검토하였다. 리포좀의 표면에 E. coli O157:H7을 인식하는 항체를 공유결합시키고 리포좀의 내부 수용액상에는 형광 표지물질인 sulforhodamine B를 포집시켰다. 이렇게 합성된 면역리포좀이 진단시약으로써의 기능을 하는지 알아보기 위해 두 가지 분석 방법을 적용하였다. 첫번째 방법으로써, test-strip을 이용한 분석은 E. coli O157:H7의 존재 유무를 test-strip 상에 나타난 분석 신호을 육안으로 관찰하는 것으로써 E. coli O157:H7 존재시 분석 신호가 저하되는 것을 원리로하였다. 이 방법은 고가의 실험 장비가 필요하지 않아 현장적용성이 용이한 장점이 있다. 두번째 방법은, IMS 후 목표 세균에 결합되어 있는 리포좀을 파괴시켜 나오는 형광도의 세기를 측정하는 방법으로 이때는 형광도의 강도와 E. coli O157:H7 세균 수와 비례적 관계가 나타났다. 상기의 두 방법에서 얻은 결과는, 리포좀을 E. coli O157:H7 검출에 응용할 수 있는 가능성을 제시하며 추후에 식품 적용 실험이 요구된다.

국내 농약 제품표지 내용 및 유독성 표시의 적절성 (Appropriateness of Labelling Practice for Pesticides in Korea)

  • Purpose: The morbidity of pesticides are largely related with accidental ingestion in human. The four principal ideals of clarity, completeness, conformity and consistency of label are important to make a correct usage and prevent unnecessary health risk. The aim of this study is to evaluate the appropriateness of pesticides labelling practice in Korea. Methods: The photographic label images of pesticide products were gathered through visiting thirteen manufacturers that produce pesticide products in Korea. We scored labelling practice by guidelines of Food and Agriculture Organization of the United Nations in 1995. Results: From August 2005 to November 2005, we gathered 1,296 label images of pesticide and $58.3{\%}$ (755/1,296) of images were scored by check lists for reviewing label content. The average score of four check list categories was $71.9{\pm}2.2$. Each categorical score were $91.7{\pm}0.9$ for the information appearing on the label, $31.3{\pm}0.0$ for safety precaution, $77.7{\pm}2.0$ for instructions for use, $87.0{\pm}8.7$ for general configurations. In safety precaution, the sentence of keeping locked up the product and two mandatory safety pictograms were missed in all label images. In general configurations category, there was score difference in product package types between bottle and bag container ($85.1{\pm}9.0$ vs. $90.3{\pm}7.2$, p < 0.01). Conclusion: Although there was no comparable previous data, the score of safety precaution was lowest than other categories because the two mandatory safety pictograms and locked up warning sentence were missed. In general configurations, the colour contrast was more inappropriate in the labels on bottle than bag container.

ARCS 동기유발 전략을 적용한 가정과 식품표시 수업이 중학생의 학습동기와 식품표시에 대한 인식 및 활용도에 미치는 효과 (The Effects of the Food Labeling Home Economics Instruction applying ARCS Motivation Teaching Strategy on Middle School Students' Learning Motivation, Recognition and Use of Food Labels)

  • 본 연구의 목적은 중학교 기술 가정 교과의 식품표시와 관련된 수업을 ARCS 동기유발전략을 적용하여 개발한 후 이 수업이 학습동기와 식품표시에 대한 인식과 활용에 효과를 주는지 검증하는데 있다. 본 연구의 목적을 달성하기 위해 ARCS 동기유발 전략을 적용한 식품표시 관련 가정과 수업의 교수 학습 과정안을 총 4차시 개발하였고, 사전-사후 실험설계를 사용하여, 실험집단 4학급은 ARCS 동기유발전략을 적용한 수업을, 비교집단 3학급은 강의식 수업을 적용하여 실험집단과 비교집단의 사전 점수와 사후 점수를 비교하였다. 불성실하게 응답한 7부를 제외한 203부를 대상으로 SPSS Win 12.0을 이용하여 공변량분석(ANCOVA)을 실시하였다. 본 연구의 결과는 다음과 같다. 첫째, ARCS 동기유발전략을 적용한 식품표시 관련 가정과 수업의 교수 학습 과정안과 학습자료, 교사용 참고자료를 4개의 학습주제(영양성분표시, 식품첨가물, 유전자조작과 방사선조사식품, 식품품질인증표시)별로 개발하였다. 둘째, 학습동기에 대한 실험에서 사전 학습동기를 통제한 공변량 분석을 실시한 결과, ARCS 동기유발수업을 받은 실험집단과 강의식 수업을 받은 비교집단의 학습동기와 동기유발요소(주의집중, 관련성, 자신감, 만족감) 모두에서 유의미한 차이를 보였다. 셋째, 사전 식품표시에 대한 인식을 통제한 공변량 분석을 실시한 결과, 사후 식품표시에 대한 인식 검사에서 식품표시에 대한 인식이 수업방법에 따라 실험집단과 비교집단 간에 유의한 차이를 보였다. 그리고 식품표시에 대한 인식 하위영역인 식품표시사항 이해도와 식품표시 실생활 도움 및 교육필요도에서도 모두 유의한 차이를 보였다. 넷째, 사전 식품표시 활용도를 통제한 공변량 분석을 실시한 결과, 식품표시 활용도에 대한 사후 식품표시 활용도는 수업방법에 따라 실험집단과 비교집단간에 유의한 차이를 보였다. 그리고 식품표시 활용도 하위영역인 식품표시사항 활용도와 식품선택시 활용도 모두에서도 유의한 차이를 보였다.

영양표시 제도에 대한 여성소비자 인식에 관한 연구 (A Study on the Awareness of Female-Consumers for Nutrition Labeling System)

  • This study had carried out to investigate the usage status of customer, the positive effects and problems, and the most important items of the nutrition labeling at purchasing the food etc. on the current nutrition labeling system in order to establish the customer-centric nutrition labeling system. Survey was carried out by questionnaire method that is targeted on adult female above 20 years old in Seoul and Kyeongnam area from May to June, 2004. For the experience of checking the nutrition label of the processed domestic and imported processed food, 82% and 75.4% of the respondents were replied 'have checked' respectively. For the positive effects due to enforcement of the nutrition labeling system, the respondents agreed highly with 'easy to compare with other products' and 'improve the products quality'. For the problems of the nutrition labeling system, the respondents agreed highly with 'different criteria for each product' and 'incendiary purchasing due to false or exaggerated labeling', and gave the higher scale for the positive effects than the problems relatively. For the necessity of the nutrition labeling system, 96.2% of the respondents were replied 'necessary', and it was indicated a significant difference on age and marital status(p<.01). For the price rising due to enforcement of the nutrition labeling system, 55.2% of respondents agreed, and it was indicated a very significant difference on age and monthly income(p<.001). For the most important nutrition labeling items at purchasing the food, the respondents were replied 'total calorie' on most of the food, and in addition, they checked carefully the lipid, cholesterol, protein, Ca, and Fe.

Who has to take legal responsibility for retailer brand foods, manufacturers or retailers?

  • As a marketing vehicle to survive in intensified retailing competition, retailer brand development has been adopted by retailers in Korea. As evidence, the retailer brand share of a major retailer, Tesco Korea, has grown from 20% in 2007 to 22.8% in the first half of 2008. It means that retailers have provided more and more retailer brand foods for customers. With the growing accessibility to retailer brand foods, it would be expected that the number of retailer brand food claims will increase. Customers have increasingly exposed to a variety of marketing activities conducted by retailers. When buying the retailer brand foods, customers tend to be affected by marketing activities of retailers. Despite the fact that customers trust retailers and then, buy their brand foods, in case of food accidents caused by production process, customers have to seek compensation from a retailer brand supplier. Of course, a retailer tends to shift its responsibility to its suppliers. Accordingly, it is not easy for customers to solve food claims. The research, therefore, aims at exploring the relationship between the buying-decision processes of retailer brand customers and which side takes legal responsibility for food claims. To effectively achieve the research aim, the author adopted a quantitative and a qualitative research technique, in order to supplement the disadvantages of each method. Before field research, based on the developed research model, the author pre-tested questionnaire with 10 samples, amended, and handed out to 400 samples. Amongst them, 316 questionnaires are available. For a focus group interview, 9 participants were recruited, who are students, housewives, and full-time workers, aged from 20s to 40s. Through the focus group interview as well as the questionnaire results, it was found that most customers were influenced by a retailer or store image in a customer's mind, retailer reputation and promotional activities. Surprisingly, customers think that the name of a retailer is a more important factor than who produces retailer brand foods, even though many customers check a retailer brand supplier, when making a buying-decision. Rather than retailer brand suppliers, customers trust retailers. That is why they purchase retailer brands. Nevertheless, production-related food claims is not involved with retailers. In fact, it would be difficult for customers to distinguish whether a food claim is related to selling or manufacturing processes. Based on research results, from a customer perspective, the research suggests that the government should require retailers to take the whole responsibility for retailer brand food claims, preventing retailers from passing the buck to retailer brand suppliers. In case of food claims, in order for customers to easily get the compensation, it is necessary to reconsider the current system. If so, retailers have to fully get involved in retailer brand production stage, and further, the customer awareness of retailer brands will be improved than ever before. Retailers cannot help taking care of the whole processes of retailer brand development, because of responsibility. As a result, the process to seek compensation for food claims might become easier, and further, the protection of customer right might be improved.
