신선식품 콜드체인 EPS 패키징 시스템의 택배 유통환경 계측 (Measurement of Delivery Service Environment for Cold Chain EPS Packaging System of Fresh Food)

  • The food cold chain refers to a technology and distribution supply chain applied to maintain a constant temperature suitable for the product from production (harvest) to delivery to consumers. In particular, in Korea, the insulation material used in the food cold chain is mostly EPS (Expanded Polystyrene), which is used as a transport container for various food cold chains. However, according to the government's eco-friendly policy, companies charge environmental contributions to the use of EPS, but due to its low price and convenience of handling, it is still used as a container for delivering food. In this study, in order to measure the domestic delivery environment of general refrigerated foods, changes in impact, temperature, and humidity during transport of the EPS packaging system containing foods and ice pack refrigerants were measured. As a result, there were 2?3 sections in which a high impact force of 40 G or more was generated during transport. This can cause damage to the product and EPS container. The difference in temperature and humidity changes by parcel transport routes is more than 30%, so it is necessary to present accurate standards for the domestic cold chain distribution environment. As a result of microbial experiments. the transportation period had a dominant effect on the increase in total viable count and E. coli count.

시판액젓의 품질평가 (Quality Evaluation of Commercial Salted and Fermented Fish Sauces)

  • 시판 액젓류에 대해 객관적이고 과학적인 품질평가방법 및 품질 표준화를 위한 기초자료를 제시하고자 현재 시중에 시판되고 있는 멸치액젓 19종과 까나리액젓 23종에 대하여 이화학적 및 관능적 특성을 분석하여 품질을 파악하고, 액젓류의 관능적 특성과 품질지표와의 상관성을 비교 검토하였다. 수분의 경우 멸치액젓은 규격에 적합한 것으로 나타났으나 까나리액젓은 1종이 수산전통식품 품목별 품질기준을 초과하였다. 식염 농도의 경우 일부 제품에서 높은 식염함량을 나타내 국내 품질규격에 적합하지 않는 고식염 제품들이 제조되고 있음을 알수 있었다. pH, 회분, 비중, 순추출물, 휘발성염기질소, 총질소 및 아미노산질소함량은 제조회사별로 다양하게 나타나 품질에 상당한 차이를 보였으며 이들 중 총질소 및 아미노산질소함량이 식품공전규격이나 수산전통식품 품목별 품질기준에 미달인 제품이 멸치액젓 2종, 까나리액젓 3종이었으며, 멸치액젓에 국한한 한국산업규격인 총질소 1.2% 이상에 미달인 제품은 모두 4종으로 나타나 품질에 상당한 차이가 있는 것으로 나타났다. 관능검사와의 상관관계에서 현재 규격기준인 총질소와 아미노산질소 및 비중, 순추출물, 고형분, 휘발성염기질소가 상관성이 큰 것으로 나타나 품질평가 기준의 지표로 활용 가능할 것으로 판단된다.

미생물을 이용한 액상소멸방식의 음식물쓰레기 처리 (Slurry Phase Decomposition of Food Waste by Using Various Microorganisms)

  • 이 연구는 발생원내에서 다양한 미생물을 이용하여 음식물쓰레기를 액상소멸하는 감량방법에 관한 것이다. 실험에 사용된 반응기는 미생물이 담지된 목질재료의 woodchip과 스폰지가 함께 사용되었고, 일정한 주기로 음식물쓰레기가 섞이게 하는 교반장치로 구성되었다. 실험기간 100일 동안 음식물쓰레기의 무게변화는 누적된 총 음식물쓰레기량 대비하여 약 99%까지 감소하였다. 잔류된 약 1%는 음식물쓰레기내에 내재된 생물유래의 난분해성 물질(cellulose, hemicellulose, lignin 등)이 축적된 결과로 생각된다. 실험기간 동안 발생된 폐수의 성상 변화로 pH는 실험 초기 약 3.3에서 24시간 후에 약 5.8로 점차 증가한 반면, 염분, COD, BOD, SS, T-N 및 T-P의 농도는 점차적으로 감소하는 것으로 나타났다. 음식물쓰레기의 소멸반응이 진행됨에 따라 7종의 다양한 미생물들을 동정하였으며, 소멸반응 초기의 미생물 개체수는 약 $3.3{\times}10^4$ cell/mL이었고 15 일 후에는 약 $5.1{\times}10^6$ cell/mL로 대체로 일정한 개체수를 유지하여 소멸반응이 안정화된 것으로 생각되었다. 이들 실험 결과는 음식물쓰레기의 감량화뿐만 아니라, 미생물에 의한 유기물 분해도 동시에 이루어지고 있는 것으로 판단된다.

생태 친화적 기능성식품 선택과 관련된 소비자 특성 분석 (Consumer Characteristics Related with Choice of Eco-Friendly Functional Food)

  • 최근 들어 환경에 대한 소비자들의 높아진 관심으로 인해 식생활과 지속가능한 소비의 중요성이 부각되고 있어 기능성식품 사용과 환경에 대한 관심의 연관성에 대해 소비자 반응을 파악할 필요성이 증가하고 있다. 본 연구는 식품과 관련된 소비자의 라이프스타일에 따라 시장을 세분화하여 생태친화적 기능성 식품 브랜드인 스피룰리나에 대한 소비자 행동을 분석하였다. 분석 결과, 식생활 라이프스타일에 따라 3개의 소비자유형(식생활 고관여형, 식생활 안전추구형, 식생활 편의추구형)으로 분류되었으며, 유형별 기능성 식품의 소비행동은 유의한 차이가 있는 것으로 나타났다. 더 나아가서 기능성식품에 대한 긍정적인 태도와 환경에 대한 관심은 스피룰리나의 구매의도를 증가시켜 실제 구매행동으로 연계되는 것으로 나타났으며, 환경 관여도가 높은 소비자들은 기능성 식품에 대해 좀 더 호의적인 태도를 보이는 것으로 나타났다. 따라서 생태친화적 기능성 식품의 시장 확대를 위해서는 시장을 세분화하여 환경적 관여도가 높은 소비자를 발견하고 표적화한 뒤 친환경 제품 마케팅 전략을 추진함으로써 관련 식품에 대한 소비자 인지도를 높일 필요가 있을 것이다.

Family Mealtime Environments of 11-12 Year-old Children in the Incheon Area

  • This study was performed to describe the perceptions of the family mealtime environment in preadolescents, and to determine the frequency of family meals and whether the mealtime environment is associated with nutrient intake. Surveys and 24-hour dietary recalls were completed by 197 children, ages 11 to 12, in elementary schools in the Incheon area. We assessed family meal frequency and the perceptions of the family meal environment with respect to priority, atmosphere, and family mealtime structure. The subject response frequencies and correlations among perceptions of the family mealtime environment, as well as the frequency of family meals and nutrient intake, were analyzed. Having a greater priority for family meals was associated with an increased frequency of family mealtimes. An enjoyable family meal environment was positively correlated with increases in nutrient intake. From the results of this study, we suggest that consideration be placed on opportunities to design nutrition promotion strategies that target families and their children, with respect to promoting family mealtimes and overcoming the barriers to having family meals.

서울.경기지역 도시락 제조업체의 구조 및 생산 실태조사 (Assessment of the Working Environment, Production and Transportation Practices for the Packaged Meal(Dosirak) Manufacturing Establishments in Seoul City and Kyungki-do Province)

  • 34 packaged meal (Dosirak) manufacturing establishments were assessed in terms of working environment, production and transportation practices. Questionnaires and facility check-lists were developed. Most establishments were small in business, and production personnel as well as production facilities were insufficient compared with production capacity of establishments. Mean production capacity for packaged meals in terms of optimum and maximum levels were 6,500 and 15,166 meals in large sized establishments; 2,662 and 8,301 in medium; and 2,112, and 4,733 in small respectively. Those figures indicate potentially hazardous practices in production especially in small and medium sized establishments. Most meals were produced to order. Transportation facility and kitchen space were assessed as insufficient.

서울시 초등학교 영양사의 직무중요도 및 직무만족도 분석 (Job Importance and Job Satisfaction among Elementary School Foodservice dietitians in Seoul)

  • The facts of job satisfaction and their perceived importance among elementary school foodservice dietitians were assessed. The survey instrument consisted of three parts: the job satisfaction survey was used to measure facets of job satisfaction and the level of total satisfaction; perceived importance questions for corresponding job facets; and demographic items. A survey of school food service operations was undertaken and detailed information was collected from 170 dietitians. The collected data were processed using the SPSS package program for descriptive analysis and analysis of valiance. School foodservice dietitians' importance and satisfactions scores on their job and working environment were 4.25 and 2.83, respectively. The respondents rated the subscales of 'communication' and 'nature of work' the highest and the subscales of 'pay' and 'working environment' the lowest The results of facet satisfaction scores and corresponding perceived importance scores were paired to be plotted on the Importance-Performance Analysis Grid. IPA grid was used to provide a strategy for food service managers to counteract dietitian dissatisfaction.

Carbonyl Emissions during Food Decay from Kimchi, Fish, and Salted Fish

  • In this study, the emissions of carbonyl compounds as offensive odorants were measured using three food types (Kimchi, fresh fish, and salted fish) as a function of time. Odor samples for each food type, collected at 0, 1, 3, 7, and 14 days, were analyzed by high performance liquid chromatography (HPLC). Only three kinds of carbonyl compounds were quantified above their respective detection limits: formaldehyde, acetaldehyde, and acetone. The emission patterns of these compounds were distinguishable from each other. Formaldehyde tends to peak at the beginning and decrease through time with unique patterns. Conversely, acetaldehyde and acetone seem to increase gradually through time. The results showed that relative patterns of carbonyl emissions were more distinguishable by compound type rather than food type.

The water-energy-food resources and environment: Evidence from selected SAARC countries

  • The objective of the study is to examine the relationship between water resources, energy demand, food production, and environmental pollutants in selected SAARC nations, namely, Bangladesh, India, Pakistan, and Sri Lanka, during the period of 1990-2016. The results show that water, energy, and food (WEF) resources substantially affected air quality in the form of high mass carbon emissions, fossil fuel energy demand, methane discharges, nitrous oxide emissions, and greenhouse gas emissions in these countries. Food production and food deficit largely increase $CO_2$ emissions due to unsustainable production and malnutrition, while land use under cereal production increases $CH_4$ and $N_2O$ emissions. Electricity production escalates $CO_2$ emissions and fossil emissions across countries. The results support the carbon EKC hypothesis, while monotonic increasing function exists in case of fossil fuel energy. The study emphasizes the need to ensure environmental sustainability agenda by adopting cleaner production technologies in WEF resources.
