경기 북부지역의 관광자원으로서 향토음식에 대한 고찰 (A Report on Utilizing Local Food as Tourism Resource of Northern Gyong-gi Province)

  • Gyong-gi province has been the political, social, economical center of Korea since the three Kingdom period, Koryo, Chosun dynasty. As a result, the area enjoys abundant local food culture. However, due to the truce line going through the province, it was divided into northern and southern region. Development of the northern Gyong-gi province has been restricted because of security and defence reasons. So, even though it has kept abundant local food heritage compared to other regions. local food products have not been fully developed. Furthermore, as bed towns of Seoul and new towns are constructed in this region, traditional and local culture has been vanished gradually and the regional uniqueness is disappearing. This report focuses on identifying unique local foods of northern Gyong-gj province where tourist site development is limited and finding out how to utilize these as international tourism resource in the 21$\^$th/ century, the era of reunified Korea. Now, we need to seek ways to overcome the current difficulties and utilize the heritage of food culture and develop It in a form that suits the taste of modern consumers.

재배방법이 다른 미나리의 항세균 활성 (Antibacterial Activities in Watercress(Oenanthe javanica D.C.) Cultivated with Different Culture Methods)

  • Antibacterial activities in each part of watercress(Oenanthe javanica D.C.) grown under different culture conditions were measured to determine the possibility to use watercress as a resource to develop the antibacterial substance. The leaves of watercress were extracted with methanol and the methanol extract was further fractionated with various organic solvents. Antibacterial activities against Shigella dysenteriae ATCC 9361 in all fractions were determined according to the agar diffusion method using paper disc. Methanol extract of watercress leaves was more effectively inhibited the growth of the tested bacteria than the extracts of roots or stems at the concentration of 0.5 g eq./disc, and the extract of watercress from Hwasoon was the most effective one as compared to others. Phenolic and neutral fractions fractionated from methanol extract of watercress had a considerable inhibiting activity on the growth of the bacteria, but acidic and basic fractions did not show any inhibitory effect. Minimum inhibitory concentrations of phenolic and neutral fractions against Shigella dysenteriae ATCC 9361 were $400\;{\mu}g/disc$ and $550\;{\mu}g/disc$, respectively.

Effect of Culture Conditions on Canthaxanthin Production by Dietzia natronolimnaea HS-1

  • This study investigated the effects of various culture parameters (carbon sources, temperature, initial pH of culture, NaCl concentration, and light) on the growth and canthaxanthin production by Dietzia natronolimnaea HS-1. The results showed that the most effective carbon source for growth and canthaxantin production was glucose, and the best pH and temperature were 7 and $31^{\circ}C$, respectively. In addition, the biomass and canthaxanthin production increased in a medium without NaCl and in the presence of light. Under the optimized conditions, the maximum biomass, total carotenoid, and canthaxanthin production were $6.12{\pm}0.21g/l,\;4.51{\pm}0.20mg/l,\;and\;4.28{\pm}0.15mg/l$, respectively, in an Erlenmeyer flask system, yet increased to 7.25 g/l, 5.48 mg/l, and 5.29 mg/l, respectively, in a batch fermenter system.

A study on changes in the food service industry about keyword before and after COVID-19 using big data

  • In this study, keywords from representative online portal sites such as NAVER, Google, and Youtube were collected based on text mining analysis technique using TEXTOM to check the changes in the restaurant industry before and after COVID-19. The collection keywords were selected as dining out, food service industry, and dining out culture. For the collected data, the top 30 words were derived, respectively, through the refinement process. In addition, comparative analysis was conducted by defining data from 2018 to 2019 before COVID-19, and from 2020 to 2021 after COVID-19. As a result, 8272 keywords before COVID-19 and 9654 keywords after COVID-19, a total of 17926 keywords, were derived. In order for the food service industry to develop after the COVID-19 pandemic, it is necessary to commercialize the recipes of restaurants to revitalize the distribution of home-use food products that replace home-cooked meals such as meal kits. Due to the social distancing caused by COVID-19, the dining out culture has changed and the trend has changed, and it has been confirmed that the consumption culture has changed to eating and delivering at home more safely than visiting restaurants. In addition, it has been confirmed that the consumption culture of existing consumers is changing to a trend of cooking at home rather than visiting restaurants.

서울지역 초등학생들의 학교 급식 만족도 연구(반찬류) (A Study on Children's Satisfaction with Food Service in Elementary Schools in Seoul Area(Side Dishes))

  • The purpose of this study is to investigate children's satisfaction with side dishes served in elementary school food service program in Seoul area. Two hundreds and thirty two children participated in this study through a questionnaire developed by the researchers. Conclusion drawn from the results of this study is that there seems no significant problems in school food service program since children are generally satisfied with food provided by school. However, minor problems such as hot and salty food, inappropriate temperature of warm dishes, and excessive amount of food, need to be improved through a newly developed menu, cooking method, and food distribution method.

TV 시청 동기가 식문화 프로그램 시청 선호도 및 시청의도에 미치는 영향 - 식문화 관여도의 조절효과를 중심으로 - (Effects of Viewing Motivations on Viewing Preferences and Viewing Intentions of Television Food Programs)

  • The current study investigated the relative effects of viewing motivations on viewing preferences and viewing intentions of television food programs. Data collection was conducted by administering a survey to television food program viewers both on and offline. Viewing motivations were categorized as 'information' 'entertainment', 'pass-time', 'companionship', 'relaxation', and 'social interaction'. 'Information' and 'entertainment' proved to be the most important motivational factors affecting viewing preferences for television food programs. 'Information' and 'social interactions' were the strongest predictors of viewing intentions of television food programs. However, 'pass-time' had a negative influence on both viewing preferences and viewing intentions of television food programs. Furthermore, the results of study verified the moderating effects of food involvement in these relations.

식생활라이프스타일을 적용한 한식 시장세분화전략 (Korean Food Market Segmentation Strategies and Applied Food-related Lifestyles)

  • This study divided consumer food-related lifestyles into five types: health-oriented, convenience-oriented, safety-oriented, economics-oriented, and taste-oriented. According to this grouping, we separated the lifestyles into low-interest, safety and economics-oriented, taste-oriented, and high-interest. The results showed that the safety and economics-oriented group was the largest, whereas the taste-oriented group was the smallest. The results also showed that Korean food consumer behavior and satisfaction differed significantly among the groups, and that the high-interest food-related life group exhibited the highest satisfaction. This study is significant because it segmented the local Korean food market, applied food-related lifestyles, and examined submarket characteristics.

제주도(濟州島) 향토음식(鄕土飮食) (Traditional Foods of Che Ju Do)

  • Traditional foods of Che Ju Do, an island located on south sea of Korean peninsula, were composed of moutaineous and coastal food. According to the review of historical records and evidences, ancestors of Che Ju Do island had consumed starchy root or marine food such as arrow root, bracken root, kelp, crab and so on. There are more than 500 kinds of traditional foods in Che Ju island, but most of them were poorly processed or cooked compared to that of the continent of the peninsula.

  • Korean peoples have been the god of 'Cho-Wang' and believed the god that control the food in the kitchen and well-being of home. There were many charms related to the kitchen. The striation of 'Kama' was especially peculier in the charms. The word of 'Kama' means hair striation of head and also means cooking kettle. Other charms related to food were also reviewed.
