식사형태와 식사능력에 따른 요양병원 여자 노인 환자의 영양섭취조사 (Nutrition Status of Elderly Female Patients in Long-term Care Hospital according to Meal Types and Eating Ability)

  • Objectives: This study was carried out to determine nutritional status of elderly patients in a long-term care hospital according to meal type and eating ability. Methods: Subjects were 47 female patients aged over 65 ($79.3{\pm}7.1$ years) who resided in a long-term care hospital in Seoul. Thirty seven patients who ate diet orally were grouped according to meal type (27 general diet and 10 soft diet) and eating ability (26 eating by oneself and 11 eaten with help) and 10 were on tube feeding. Nutritional status was determined by food consumption and mid-arm circumference. Results: The mean adequacy ratios (MARs) of 12 nutrients (protein, calcium, phosphorus, zinc, vitamin A, vitamin $B_1$, vitamin $B_2$, vitamin $B_6$, niacin, folic acid, vitamin C) were 0.687 for general diet, 0.565 for soft diet, 0.680 for eating by oneself and 0.677 for eaten with help, which were significantly lower than 0.982 for tube feeding (p < 0.05 or p < 0.01). The patients on tube feeding had significantly lower % arm circumference compared to those who ate general diet (84.0% vs. 95.4%, respectively, p < 0.05). Nutrients intakes, nutrient adequacy ratio (NAR) and index of nutritional quality (INQ) were not different between meal types as well as eating ability. The most insufficiently consumed nutrients by the patients on diet were folic acid, vitamin $B_2$, and calcium (NAR 0.334~0.453, 0.515~ 0.539, and 0.516~0.533, respectively). Conclusions: The results suggested that regardless of meal type or eating ability, the subjects who were on diets in this study might have inadequate intake of folic acid as well as vitamin $B_2$, and calcium, which need to be reflected on menu planning. The measurement of mid-arm circumference presented more risk of malnutrition of patients on tube feeding than those on diets, despite apparently better nutrient consumption.

경상남도 일부지역 향토음식의 조리표준화 및 영양분석 (Recipe Standardization and Nutrient Analysis of Native Local Foods in Gyeongsangnamdo Region)

  • 본 연구는 서구식의 확대와 향토음식의 감소 내지 부재현상이 증가하고 있는 현재 우리 고유의 향토음식의 보존$.$전승과 함께 향토음식의 영양학적 평가를 통하여 국민 건강증진에 일익을 담당할 수 있을 것에 목적을 두고 경상남도 일부지역의 향토음식인 은어밥, 애지찜, 기장어묵을 면접조사와 실험조리를 통하여 조리법을 표준화하고 영양성분을 분석하였으며, 그 결과는 다음과 같다. 3종의 향토음식의 관능평가는 5점 척도법에 의하였고, 애지찜의 냄새항목이 3점 이상인 패널요원의 비율이 66.7%로 설정기준을 충족하지 못하였으나 은어밥, 기장어묵의 각 5항목과 애지찜의 4항목(냄새항목외)은 설정기준을 만족하였다. 은어 밥의 전반적인 기호도는 3.9∼4.0(수용도 93.3%)로 높았고, 5항목의 관능검사 평균점수는 은어밥이 3.8(수용도 90.7%), 애지찜이, 3.2(수용도 77.3%)이었고, 기장어묵은 3.6(수용도 80.0%)이었다. 향토음식 1인분의 에너지는 은어밥이 468㎉(1/3RDA의 56%), 애지찜은 210 ㎉(1/3RDA의 2%), 기장어묵은 168 ㎉ (RDA의 20%)이었으며, 은어밥은 단백질ㆍ철급원식품, 애지찜은 철분 및 엽산급원식품, 기장어묵은 아연을 비롯한 비타민 A, B$_{6}$, 엽산의 급원음식이며, 저에너지음식이었다. 3종의 향토음식의 아미노산 조성은 glutamic acid, aspartic acid, arginine이 가장 높았고, 3종중 은어밥은 애지찜, 기장어묵에 비해서 모든 아미노산 조성이 매우 높았다. 또, 구성 지방산은 총지방산 함량은 기장어묵이 가장 높았고, 애지찜이 가장 낮았으며, P/M/S(포화지방산/단일불포화지방산/포화지방산) 비율은 기장어묵(1:1:0.7), 애지찜 (2:1:1)로 나타났다. 서구식 섭취경향으로 인한 만성 질환이 증대하고 있는 현재 향토음식은 건강식으로 부각되고 있으므로 향토음식의 표준조리법과 영양성분에 대한 자료는 향토음식의 보전전승을 위하여 학교급식의 메뉴로 이용 보급되어 어린이가 선호하는 패스트푸드가 최근 부각되고 있는 슬로푸드인 고유의 향토음식으로 변화된다면 이것이 국민건강증진 및 우리음식문화 발전의 틀이 되고 나아가 음식의 국제화시대에 부응하는 건강식. 의 메뉴가 되길 바란다.

  • 염산 산성(1∼4N) 용액에서 Zr(IV)-XO 착물의 흡광도가 옥살산의 첨가량에 반비례하는 현상을 이용하여 미량의 옥살산을 정량하는 방법을 확립하였다. 말산, 말론산, 말레산, 후마르산, 숙신산, 엽산, 글루타민산은 옥살산량의 100배가 공존하여도 미량의 옥살산을 정량하는 데 방해하지 않지만 타르타르산과 시트르산은 옥살산 보다 많으면 방해한다.

  • 태국으로부터 발효원료 수입된 Tapioca chips에 부착된 사상균과 곡자, 공기, 식물의 잎으로부터 적색색소를 생산하는 미생물을 분리하여 그 배양조건을 검토하였다. 분리한 균수는 Eumycetes중 균사에 septa를 가지는 Ascomycetes과의 Monascus sp.로 동정되었다. 최적 적색색소 생산의 배지조성분은 탄소원으로 Tapioca chips powder 3.5%, 질소원으로 $NaNO_3$ 0.2%, amino acid 중 L-arginine, L-glutamic acid, L-proline 0.3%, vitamin 중 folic acid, niacin 1 $\mu\textrm{g}$/mι. 무기염류로 $MnO_2$ 0.001% 첨가가 효과적이었고 배양온도 $32~33^{\circ}C,$ pH 6.5, 배양기간 4일, 배지용량 100/500mι, 진탕배양(180rpm)의 조건하에서 적색색소 생산이 잘 되었다.

  • Omega-3 fatty acids (eicosapentaenoic acid [EPA] and docosahexaenoic acid [DHA]) may be beneficial for the primary and secondary prevention of cardiovascular events (CVEs), especially in patients with myocardial infarction or heart failure with reduced ejection fraction. For this purpose, one to two seafood meals per week is preferentially recommended. Omega-3 fatty acids with a high-dose EPA formula (4 g/day) may be more effective than EPA+DHA mixed supplements for the secondary prevention of CVE. Krill oil also contains omega-3 fatty acids, but at a much lower dose compared to fish oil. Supplemental vitamins and minerals have not shown the preventive effects on CVE in prospective, and randomized clinical trials, except for one Chinese study showing the stroke prevention effects of folic acid. The clinical benefit of chelation therapy in reducing CVEs is uncertain.

수용성비타민과 지용성비타민의 가열에 대한 안정성 (The Stability of Water-soluble and Fat-soluble vitamin in milk by Heat treatments)

  • This study was conducted to investigate the thermal stability of water-soluble and fat-soluble vitamins dissolved in water and milk by various heat treatments. Vitamin samples were prepared by dissolving them in water and milk at various concentrations, and were heat treated for 30 min at 65$\^{C}$, 15 sec at 85$\^{C}$, 5 sec at 100$\^{C}$, 121$\^{C}$ at 15 min, the levels of residual vitamin were measured by using HPLC. Milk samples were fortified with vitamins before and after UHT treatment. As heating over 100$\^{C}$, riboflavin in water were destructed more than 92% but fortified in milk showed less than 20% destruction, suggesting that riboflavin was protected by milk components. Also retinol heated ever 100$\^{C}$ was more stable in milk than in water. L-Ascorbic acid and cholecalciferol(D$_3$) showed a similar destruction rate in water and in fortified milk. L-ascorbic acid was easily destructed by UHT treatment. Destruction of thiamin and tocopherol was increased in fortified milk. Among tour capsulated water-soluble vitamins, L-ascorbic acid was much more stable compared with powder form. Nicotinic acid and folic acid either in capsule or powder form showed a slight destruction by heat treatment. The results suggested that the fortification of unstable vitamins such as L-ascorbic acid, thiamin, tocopherol and cholecalciferol(D$_3$) should be made in milk after heat treatment.

Europium-Enoxacin Complex as Fluorescence Probe for the Determination of Folic Acid in Pharmaceutical and Biological Samples

  • A simple, rapid and sensitive spectrofluorometric method was developed for the determination of folic acid (FA), based on its quenching effect on the fluorescence intensity of enoxacin (ENX)-europium ($Eu^{3+}$) complex as a fluorescent probe. Fluorometric interaction between ENX-$Eu^{3+}$ complex and FA was studied using UV-visible and fluorescence spectroscopy. The quenched fluorescence intensity at an emission wavelength of 614 nm was proportional to the concentration of FA. Optimum conditions for the determination of FA were investigated. Under optimal conditions, the reduced fluorescence intensity at 614 nm was responded linearly with the concentration of FA. The linearity was maintained in the range of $1.25{\times}10^{-9}$ to $1.50{\times}10^{-7}$ M (R = 0.9986) with the limit of detection ($3S_b/m$) (where $S_b$ is the standard deviation of blank and m is the slop of linear calibration curve) of $6.94{\times}10^{-10}$ M. The relative standard deviation (RSD) for 9 repeated measurements of $1.0{\times}10^{-9}$ M FA was 1.42%. This method was simple, cost effective, and relatively free of interference from coexisting substances. Successful determinations of FA in pharmaceutical formulation and biological samples with the developed method were demonstrated.

중년 여성의 식사섭취 상태와 갱년기 증상 관련 요인 분석 (The Analysis of the Dietary Factors Related to Climacteric Symptoms in Middle-aged Women)

  • The purpose of this study was to investigate the dietary intakes in middle-aged women(pre and postmenopausal) and relation to climacteric symptoms. We conducted the anthropometric measurements, climacteric symptoms survey, and dietary intake to assess the nutrient intakes. Also, dietary quality indices were evaluated. The subjects, over 40 years old, were 168 middle aged women(pre=74, postmenopausal=94), mean age was $48.9{\pm}3.6yr$. The anthropometric measurements showed that 59% of subjects were overweight and obese. Climacteric symptoms that were answered 'yes' in 50% plus in the subjects, were dry eyes, forgetfulness, difficult concentration, large joint pain(shoulder), fatique, backache, dry skin, joint pain(ankle and knee), dry mouth, dizziness, depression and lonesomeness, snore, morning stiffness, and hot flash. Some symptoms showed significant difference between pre and postmenopausal groups. The average energy intake was 1602.1 Kcal, which was 82% of the Korean EER. The subjects had lower vitamin A, riboflavin, folic acid, Fe, Zn and Ca intake than Korean RI. The lowest nutrient intake was Ca. The mean of food intake was 1294.2 g and MAR of diet quality indices was 0.83. In relation to dietary factors with climacteric symptoms, significant correlations have been found between total protein, animal protein, lipid, cholesterol and niacin intake and 'fatique', energy, carbohydrate, thiamin, vitamin B6, folic acid, vitamin C, Na, K and Fe intake and 'dry skin', Ca intake and 'difficult concentration'. Our results indicate that dietary factors(food and nutrients intake, INQ, NAR, MAR) may effect the prevention and reduction of some climacteric symptoms in middle aged women.

염산의 항비타민제인 9-Methyl Folate가 흰쥐의 엽산대사에 미치는 영향 (9-Methyl Folate, an Antagonist of Folic Acid : Ist Effect on the Metabolism of Folic Acid in the Rat)

  • 엽산의 항비타민제인 9-methyl folate가 흰 쥐의 엽산 대사에 미치는 영향을 조사하기 위하여, Sprague-dawley 암컷 쥐를 엽산 결핍식이군, 대조군, x-methyl folate 투여군으로 나누어 실험하였다. 9-methyl folate는 실험동물에게 엽산 결핍증을 유발시키는 x-methyl folate의 성분 가운데 주된 항비타민제이며, 본 실험에서는 식이 1kg당 5g의 x-methyl folate를 첨가하였다. x-methyl folate를 실험동물에게 먹였을 때 히스티딘의 산화속도와 간장내의 엽산 농도가 크게 저하되었으며, $[^{3}H]folate$를 복강에 투여한 후 24시간 내에 간장에 보유되는 엽산의 양도 x-methyl folate 투여군에 있어 유의적인 감소를 보였다. 이 실험 결과에서 9-methyl folate는 흰 쥐에 있어 엽산이 간으로 유입되어 보유되는 과정을 저해하므로써 간장 내의 엽산의 양을 저하시키며, 그 결과 히스티딘의 산화속도도 저하된 것으로 보인다.

Sorting and Function of the Human Folate Receptor Is Independent of the Caveolin Expression in Fisher Rat Thyroid Epithelial Cells

  • Caveolae are small, flask-shaped, non-clathrin coated invaginations of the plasma membrane of many mammalian cells. Caveolae have a coat that includes caveolin. They have been implicated in numerous cellular processes, including potocytosis. Since the human folate receptor (hFR) and other glycosyl-phosphatidylinositol (GPI)-tailed proteins have been co-localized to caveolae, we studied the caveolin role in the hFR function by transfecting hFR and/or caveolin cDNA into Fischer rat thyroid epithelial (FRT) cells that normally do not express detectable levels of either protein. We isolated and characterized stable clones as follows: they express (1) high levels of caveolin alone, (2) hFR and caveolin, or (3) hFR alone. We discovered that hFR is correctly processed, sorted, and anchored by a GPI tail to the plasma membrane in FRT cells. No difference in the total folic acid binding or cell surface folic acid binding activity were found between the FRT cells that were transfected with hFR, or cells that were transfected with hFR and caveolin. The hFR that was expressed on the cell surface of clones that were transfected with hFR was also sensitive to phosphatidylinositol-specific phospholipase C (PI-PLC) release, and incorporated radiolabeled ethanolamine that supports the attachment of a GPI-tail on hFR. We conclude that the processing, sorting, and function of hFR is independent on the caveolin expression in FRT cells.
