In Korea, food balance sheet and national nutrition survey have been conducted in parallel by Central Government for several decades. However, the gap between the two statistics became larger to reach an intolerable level in recent years, likely due to the limitation of dietary survey method in spite of the drastic change in dietary habits after industrialization and urbanization during last three decades. The currently available data from national nutrition survey was optimized by taking in to account of the food balance sheet. Adjusted consumption data for individual food items during the period of 1991-95 were given in tabular forms for groups of cereals potatoes sugars & sweets, legumes, nuts & seeds, fruits, vegetables, meats, eggs, dairy products oils & fats and fishery foods. Conversion factors of processed foods including wheat products, soybean products, Kimchi and dairy products into their raw materials were tentatively proposed. Great differences between supply data and intake data of food commodities were pointed out to be likely due to the seasonal variation and ignorance of processed foods and dining-out in the national nutrition survey. It is recommended to utilize these optimized food intake data as the nationally-representative one until new data from the national health and nutrition survey undertaken after modified procedures since 1998 are obtained and verified in future.

The Fukushima nuclear power plant (NPP) accident caused by the East Japan Earthquake in 2011 and the recent increase in the frequency of earthquakes in Korea have caused safety concerns regarding radionuclide exposure. In addition, the Tokyo Electric Power Company (TEPCO) in Japan recently decided to release radionuclide-contaminated water from Fukushima's NPP into the Pacific Ocean, raising public concerns that the possibility of radionuclide contamination through both domestic- and foreign fishery products is increasing. Although many studies have been conducted on the input of artificial radionuclides into the Pacific after the Fukushima NPP accident, studies on the distribution and accumulation of artificial radionuclides in marine products from East Asia are lacking. Therefore, in this study, we attempted to explore recent research on the distribution of artificial radionuclides (e.g., 137Cs, 239+240Pu, 90Sr, and etc.) in marine products from Korean seas after the Fukushima NPP accident. In addition, we also discuss future research directions as it is necessary to prepare for likely radiation accidents in the future around Korea associated with the new nuclear facilities planned by 2030 in China and owing to the discharge of radionuclide-contaminated water from the Fukushima NPP.

This study analyzed the characteristics of emergy inputs from environmental sources that are essential in maintaining ecological processes and providing ecosystems services of the tidal flat ecosystems in Korea. Environmental sources provided a total of $4.98{\times}10^{21}sej/yr$ of emergy to the tidal flats of Korea. The emergy inputs from environmental sources were worth 1,141 billion ₩/yr. This is the value of environmental conditions that are the basis of ecosystem services provided by the tidal flat ecosystems. The emergy input per hectare to regional tidal flats decreased along the coastline from northwest to southeast, with the highest input in the Incheon-Gyeonggi area in the central western part of the Korean coast and the lowest input in the Busan area in the southeastern end. This reflects the general distribution pattern of the magnitude of tidal ranges along the Korean coast. There was no a clear-cut relationship between emergy inputs per unit area and fishery production(expressed in emergy quantity) per unit area. However, tidal flats in the west coast with higher emery inputs per unit area produced more fishery products than those in the south coast with lower emergy inputs, suggesting a possibility that the emergy inputs could be used for the rapid evaluation and comparison of the potential for ecosystem service provision by individual tidal flats.

The food components of fish (skipjack tuna, yellowfin tuna, bluefin tuna, conger eel, salmon, Spanish mackerel, armored weasel-fish) frames and their hot-water extracts were investigated to explore their possibilities as resources for fish Gomatang. According to the results of volatile basic nitrogen and heavy metal, bluefin tuna and salmon frames were below the safety limits suggested by Codex Code. Thus, bluefin tuna and salmon frames appeared to be safe as basic ingredients for fish Gomtang. The major components of all hot-water extracts from fish frames were nitrogenous component. According to the results of extractive nitrogen and sensory evaluations of hot-water extracts from fish frames, the salmon frame was a good raw material as a basic ingredient of fish Gomtang. The calcium and phosphorus contents of hot-water extracts from salmon frame were 18.0 mg/100mL and 33.1 mg/100mL, respectively.
To support business decision making, interests and efforts to analyze and use transaction data in different perspectives are increasing. Such efforts are not only limited to customer management or marketing, but also used for monitoring and detecting fraud transactions. Fraud transactions are evolving into various patterns by taking advantage of information technology. To reflect the evolution of fraud transactions, there are many efforts on fraud detection methods and advanced application systems in order to improve the accuracy and ease of fraud detection. As a case of fraud detection, this study aims to provide effective fraud detection methods for auction exception agricultural products in the largest Korean agricultural wholesale market. Auction exception products policy exists to complement auction-based trades in agricultural wholesale market. That is, most trades on agricultural products are performed by auction; however, specific products are assigned as auction exception products when total volumes of products are relatively small, the number of wholesalers is small, or there are difficulties for wholesalers to purchase the products. However, auction exception products policy makes several problems on fairness and transparency of transaction, which requires help of fraud detection. In this study, to generate fraud detection rules, real huge agricultural products trade transaction data from 2008 to 2010 in the market are analyzed, which increase more than 1 million transactions and 1 billion US dollar in transaction volume. Agricultural transaction data has unique characteristics such as frequent changes in supply volumes and turbulent time-dependent changes in price. Since this was the first trial to identify fraud transactions in this domain, there was no training data set for supervised learning. So, fraud detection rules are generated using outlier detection approach. We assume that outlier transactions have more possibility of fraud transactions than normal transactions. The outlier transactions are identified to compare daily average unit price, weekly average unit price, and quarterly average unit price of product items. Also quarterly averages unit price of product items of the specific wholesalers are used to identify outlier transactions. The reliability of generated fraud detection rules are confirmed by domain experts. To determine whether a transaction is fraudulent or not, normal distribution and normalized Z-value concept are applied. That is, a unit price of a transaction is transformed to Z-value to calculate the occurrence probability when we approximate the distribution of unit prices to normal distribution. The modified Z-value of the unit price in the transaction is used rather than using the original Z-value of it. The reason is that in the case of auction exception agricultural products, Z-values are influenced by outlier fraud transactions themselves because the number of wholesalers is small. The modified Z-values are called Self-Eliminated Z-scores because they are calculated excluding the unit price of the specific transaction which is subject to check whether it is fraud transaction or not. To show the usefulness of the proposed approach, a prototype of fraud transaction detection system is developed using Delphi. The system consists of five main menus and related submenus. First functionalities of the system is to import transaction databases. Next important functions are to set up fraud detection parameters. By changing fraud detection parameters, system users can control the number of potential fraud transactions. Execution functions provide fraud detection results which are found based on fraud detection parameters. The potential fraud transactions can be viewed on screen or exported as files. The study is an initial trial to identify fraud transactions in Auction Exception Agricultural Products. There are still many remained research topics of the issue. First, the scope of analysis data was limited due to the availability of data. It is necessary to include more data on transactions, wholesalers, and producers to detect fraud transactions more accurately. Next, we need to extend the scope of fraud transaction detection to fishery products. Also there are many possibilities to apply different data mining techniques for fraud detection. For example, time series approach is a potential technique to apply the problem. Even though outlier transactions are detected based on unit prices of transactions, however it is possible to derive fraud detection rules based on transaction volumes.

This study was to investigate the recognition level of food safety from high school students(264 male, 276 female) in Chuncheon area using questionnaires. The results of the survey are summarized as follows : Regarding the general consciousness of the conditions of food safety, the proportion of the students who worry about it is higher, while 40.0% respond they are not concerned with it. The information pertinent to food safety was usually acquired from the mass media. As a fundamental reason responsible for the food safety accidents, they pointed out deficient sense of responsibility of the personnels who produce, distribute, and sell food products. As the most problematic materials threatening food safety, they pointed out heavy metals(24.8%), and subsequent responses were environmental hormones(24.4%), food additives(17.0%). The foods, for which they are most concerned about residual pesticides, were vegetables and fruits. High proportion of the students perceived that agricultural products are not safe from residual pesticides, and most of the students(92.4%) thought that residual pesticides are bad for their health. The examination on the food safety influenced by heavy metals reveals that 87.4% of the students thought the materials do influence food safety. As the food kind that is likely to be most polluted by heavy metals, they pointed out fishery products. The highest concern about processed food stuffs was the food additives. Most of the students thought that the containers of processed foods may be toxical. 25% of the students are more seriously considering food safety when they buy foods. High proportion of the students who responded they confirm safety-related matters at the time of food purchase thought much of food safety, while high proportion of those who didn't confirm those matters lay a great importance on the taste.
This study investigated the cosmetic effects of enzymatic hydrolytes of an aquatic by-product, fish skin. The skins of olive flounder Paralichthys olivaceus (PO) and Alaska pollock Gadus chalcogrammus (AP) were hydrolyzed using pepsin, Alcalase, and Protemax. Three enzymatic hydrolytes were obtained and the inhibitory effects of these hydrolytes on the aging-related enzymes tyrosinase, elastase, and collagenase were determined. The results indicated that the pepsin hydrolytes of PO and PA had stronger activities than the other hydrolytes. PO and PA also significantly reduced the intracellular reactive oxygen species levels in and improved the viability of H2O2-treated Vero cells; decreased nitric oxide production by and increased the cell viability of lipopolysaccharide-treated RAW 264.7 cells; and reduced intracellular reactive oxygen species levels and improved the viability of ultraviolet B irradiated HaCaT cells and human dermal fibroblasts. Furthermore, PO and PA remarkably reduced the intra- and extracellular melanin contents of alpha-melanocyte-stimulating hormone-stimulated B16F10 cells. These results demonstrate that PO and PA have potential for use in the cosmetic industry.

Trimethylamine (TMA) is a nitrogen-based aliphatic organic compound. It is a major odorous component of fish and fishery products and is often used as an indicator of fish quality. The efficacy of TMA removal by various yeast strains was investigated. The five yeast strains found to be most effective in removing TMA were isolated from fermented foods and were identified as Saccharomyces cerevisiae based on biochemical and 18S rRNA sequence analyses. These strains were designated as S. cerevisiae SK1511, SK1512, SK1513, SK1514 and SK1515. Yeast cultures were treated with a TMA solution (0.3%, v/v), and the level of TMA reduction was analyzed by headspace gas chromatography. The five S. cerevisiae strains removed 32.02-50.34% of the TMA from the solution. This study is the first to demonstrate TMA reduction by microbial treatment.

As the consumption of fishery products continues to increase, aquaculture industry has emerged instead of fishing industry facing limitations of fish stock resources. Recently, smart fish farming industry has rapidly developed through convergence with 4th Industrial Revolution technology. Accordingly, it is important to derive a future model of smart fish farming platforms in order to secure the superiority of the aquaculture industry and the technology standard hegemony. In this study, the future direction of smart fish farm platform was derived through the analysis of environment related to politics, economy, society, and technology related to smart fish farming by applying PEST methodology of macro-environment analysis. It is expected that it will help the public and industrial circles in planning and implementing related projects by including the entire process of value chain of aquaculture industry of breeding, production, management and distribution, and by presenting advanced models based on artificial intelligence and digital twin.
Imitation fish roe (IFR) based on calcium alginate hydrogels (CAG) can be heat treated for sterilization and salted to prolong the shelf life. However, these processes change the physical properties of IFR, and it is necessary to minimize these changes. In this study, we investigated the effects of xanthan gum (XG) treatment on the quality and stability of IFR. Both non-XG and XG-treated IFRs were treated with boiling water (95℃), sodium chloride (0.5-2.0%, w/v), and autoclaving. The non-XG treated IFR shrunk slightly after the boiling water and autoclaving processes. By comparison, shrinkage of the XG-treated IFR after autoclaving was significantly reduced. The sphericity of the non-XG treated IFR was reduced by the boiling water, sodium chloride, and autoclaving treatment. However, the sphericity of the XG-treated IFR was maintained by 90% or more, preserving the IFR shape at a level visually recognized as spherical. In addition, unlike the non-XG treated IFR, the XG-treated IFR showed high rupture strength even after the salt and heat treatments. Our findings provide useful information for the industrialization of IFR based on CAG with heat and salt treatments.
