Developments and Trends in Fisheries Processing: Value-Added Product Development and Total Resource Utilization

  • Changing concepts in fishery science increasingly are recognizing depletion of traditional stocks, utilization of alternate(non-traditional) species, demand for high quality products, and a total resource utilization approach. Innovative practices are occurring in fisheries processing wherein solid and liquid discharges are no longer treated as 'waste,' but rather as valuable feedstocks for recovery of a variety of value-added ('value enhanced') by-products. Among these are protein hydrolysates, soluble proteins and amino acids, proteolytic enzymes, flavor and flavor extracts, pigments, and biopolymers such as chitosan. Properties and applications of this deacetylated derivative of chitin are noted. Crustacean processing by-products are discussed in terms of their serving as materials for generation of natural flavors and flavor extracts, and products such as fish sauces using contemporary enzymatic techniques. Various food and feed applications of fisheries processing by-products are illustrated with increased usage seen in formulated diets for an expanding aquaculture market. Examples are given of aquaculture becoming increasingly significant in global fisheries resource projections. Critical issues in the international seafood industry Include those of seafood quality, processing quality assurance (HACCP), and recognition of the nutritional and health-related properties of fisheries products. A variety of current seafood processing research is discussed, including that of alternate fish species for surimi manufacture and formulation of value-added seafood products from crawfish and blue crab processing operations. Increasing emphasis is being placed on international aspects of global fisheries and the role of aquaculture in such considerations. Coupled with the need for the aquatic food industry to develop innovative seafood products for the 21st century is that of total resource utilization. Contemporary approaches in seafood processing recognize the need to discard the traditional concept of processing 'waste' and adapt a more realistic, and economically sound, approach of usable by-products for food and feed application. For example, in a period of declining natural fishery resources it is no longer feasible to discard fish frames following fillet removal when a significant amount of residual valuable flesh is present that can be readily recovered and properly utilized in a variety of mince-based formulated seafood products.

  • The objective of this study is to develop an inventory model for the inventory management of a stocking point which sells processed fisheries products. The study, first of all, sets up fisheries processing companies, food companies, apparel companies, pharmaceutical companies and electronic and electrical companies as a population. Then, a comparative study is empirically applied to obtain the inventory characteristics of final products by industry through a survey of a sample selected by a random sampling procedure. The major inventory characteristics of processed fisheries products obtained from the above analysis can be summarized as follows : 1) The major demand characteristics of processed fisheries products is to have wide seasonal fluctuations because the supply of raw materials (i.e., fisheries products) heavily depends on the productive capacity of nature. 2) It has found that fisheries processing companies are the worst in inventory management among the various industries selected in the sample. However, the self-rating of inventory management system by inventory managers of companies shows that the fisheries processing companies are relatively higher than the other companies. 3) The portion of inventory holding cost out of inventory relevant cost is very high for processed fisheries products compared with final products of the other industries. 4) Processed fisheries products are distributed to final consumers through roughly two distribution echelons and take a parallel type inventory system for their distribution structure. In order to develop an inventory model which reflects the inventory characteristics of processed fisheries products mentioned in the above, an inventory model with partial backorders is developed under the situation of stochastic lead time under the consideration of the inventory characteristics of processed fisheries products and then an iterative solution method is provided for the model. Then this study analyzes sensitivity for the standard deviation of lead time in the model by numerical examples.

해조류 부산물의 유효이용을 위한 산업화방향 연구 (Study on Industralization Strategy for Efficient Reuse of Seaweed By-products)

  • Seaweed by-products have been dumped into the sea and induced marine pollution. However, they can be recycled as a valuable natural resources. Approximately 240,000 tons of sea mustard and kelp by-products were estimated to be producted during the last three years. The estimate corresponds 6.7% of the total production of marine aquaculture and 14.9% of the total production of seaweeds. When adding up the by-products from fish and mollusks, approximately 1,000,000 tons of fisheries by-products were thrown out into the sea every year. A three-step strategy is required for the industralization of fisheries by-products. The first step is the construction of the processing foundation of by-products, the second is its food industralization, and the third is its recycling as raw biomaterials. The stable supply of raw materials is the prerequisite for the industralization. Thus, it is necessary to construct the refuse logistics around chief production districts and to build the processing facility and frozen storage of by-products. Cooperation among private enterprises and government investment for research and development is required the second and third steps.

멸치액젓잔사 추출물을 이용한 조미소재 개발 (Development of a Seasoning Sauce Using Hot Water Extracts from Anchovy Engraulis japonica Fish Sauce Processing By-products)

  • We developed a seasoning sauce using hot water extracts from anchovy Engraulis japonica fish sauce processing by-products. A temperature of 121℃ was maintained for 120 min and the resulting amino acid content, salinity, and pH were 183.6 mg/100 g, 6.86, and 17.4 g/100 g, respectively. Radish juice, sea tangle Saccharina japonica extract, and mushroom Lentinula edodes were added to improve the flavor. The glutamic acid content of the extract mixed with 10% sea tangle extract was 88.87 mg/100 g and the 5'-GMP (guanine 5'-monophosphate) content of the extract mixed with 10% mushroom extract was 9.67 mg/ g. This study was conducted to determine optimal processing conditions for seasoned products using response surface methodology (RSM). The optimal conditions for X1 (sea tangle extract concentration) and X2 (mushroom extract concentration) were 15.0% and 5.0%, respectively, and the predicted values of the multiple response optimal conditions were Y1 (5'-GMP: 17.36 mg/100 g) and Y2 (glutamic acid: 157.35 mg/100 g). Under the optimal conditions, the experimental values of Y1 and Y2 were 17.32 mg/g and 155.36 mg/100 g, respectively, which are similar to the predicted values. We confirmed the feasibility of developing a seasoning sauce using hot water extract from anchovy fish sauce processing by-products and additives.

Overview of Fisheries Resources in Namibia

  • Off the 1,572 km long coastline of Namibia lies known as the Benguela upwelling system, a very rich source of marine life supporting traditional and modern forms of fishery. Commercial fishing and fish processing is one of the fastest-growing sectors of the Namibian economy in terms of employment, export earnings, and contribution to GDP. The fishing industry has grown to the extent that it is currently Namibia's second biggest export earner of foreign currency after mining (90% of national output is marketed for export). In 2005, Namibia harvested about 552,164 tonnes of fish. The final value of processed products (export value) that year was around US$ 376.0 million. Besides the marine captured fisheries, Namibia also has a small but vibrant aquaculture sector. Inland captured fisheries exist in the north-east and north-west of Namibia where as commercial freshwater aquaculture of tilapia and catfish is also undertaken. The inland fisheries are mainly subsistence based and typically labour intensive, with low catch per unit effort. However the subsistence fisheries from these regions play a significant role in the lives of rural community. The domestic market for marine fish products is extremely limited due to the small size of the population (2 million). The fishing industry is a source of considerable employment for many Namibians. Huge potential to increase production exists in Namibia, unpolluted high quality marine waters, high natural primary productivity of the seawater, availability of inexpensive fish by-products from established fish processing sector for inclusion in wet aqua-feeds and well-established processing, packaging and marketing systems due to the marine capture fisheries that can be adopted for aquaculture purpose.

바이오소재 활용을 위한 국내 수산가공부산물의 통계 현황 연구 (A Study on the Statistical Status of By-products from Korean Seafood processing for Utilization of Biomaterials)

  • By-products from fisheries produced in Korea are of the same industrial material as imported raw materials and are valuable resources for marine bioindustries. Securing raw materials for the mass production of functional materials is one of the main objectives for marine bioindustrial development. The use of fishery by-products as raw materials is anticipated to increase rapidly as the biomarket is growing into a promising industry. In this study, data were acquired from an open-source environment to perform exploratory data analysis, and various visualization methods were used to compare fishery production to the production of marine processed products in the year 2020. This study suggested that the amount of seafood processing, types of processing items, and areas where fishery processing residue is generated, should be able to secure hygienic raw material supply in large quantities. Thus far, it has been found that the Gyeonggi-do and Busan province, where HACCP-certified processing facilities are concentrated, and the local government Seafood Cluster and the Smart Aquaculture Cluster are at the forefront of stable, mass production of raw materials.

  • This study aims to examine factors affecting the seafood processing business of primary cooperatives. For this purpose, I divided primary cooperatives that participate to seafood processing business into three group by sales scale. And then analyzed survey results for the four items that might be affecting the seafood processing business, type of seafood processing methods, HACCP certification status, distribution channels, processing difficulties during project implementation, etc. The result offers four implications. First, It is desirable to reduce the burden of the initial investment by leveraging the consignment process at the initial entry to seafood processing business. Second, HACCP certification is essential factor in order to promote seafood processing business as a long-term economic business. Third, To the steady growth of the seafood processing business, it is important to secure fixed large customers, as well as a individual customer. Fourth, For the continued growth of the seafood processing business it should be approached differently by way of sales, when the National Federation of Fisheries Cooperatives support to primary cooperatives.

제주 수산가공부산물 유래 기능성 소재 탐색 (Development of Bioactive Substances from Fishery Processing by-products in Jeju)

  • In this study, we investigated the bioactive substances of the Alcalase hydrolysate obtained from fishery processing by-products in Jeju by measuring bioactivities including radical scavenging acitivty, cytoprotective activity against 2,2-azobis-(2-amidino-propane) dihydrochloride (AAPH), and ACE inhibitory activity. This study is important because of utilization of unused fishery processing by-products in Jeju. The Alcalase hydrolysate was prepared through the hot water extraction and enzymatic hydrolysis, and then further separation of the Alcalase hydrolysate was performed by ultrafiltration using 10 kDa molecular weight cut-off membrane. The Alcalase hydrolysate showed the relatively higher DPPH and peroxyl radical scavenging activity ($IC_{50}$ value; 1.30 mg/ml and 0.888 mg/ml, respectively). Also, the Alcalase hydrolysate showed the ACE inhibitory activity with 1.87 mg/ml of $IC_{50}$ value. These biological activities are increased over 1.2 or 2.5 times through the ultrafiltration of the Alcalase hydrolysate. Therefore, the Alcalase hydrolysate obtained from fishery processing by-products in Jeju and the different molecular weight fractions should be given consideration for food and cosmetics ingredient. Furthermore, this research on the utility of fishery processing by-products might be a useful tool into the industry.

국내시판 수산물통조림의 지방산조성 (Fatty Acid Composition of Canned Fish and Shellfish Products on Korean Market)

  • 수산식품의 가공 및 저장 중 지질성분의 변화에 대한 일련의 연구로서 현재 국내에서 시판되고 있는 14종류의 어패류통조림제품의 지방산조성을 분석하였다. 각 수산물통조림의 조지방함량은 참치기름담금통조림이 15.2%, 굴훈제기름담금통조림이 11.2%로서 함량이 많았고 그외 보일드, 토마토소오스담금, 조미어류통조림은 $4.8{\sim}7.8%$, 패류통조림은 $1.3{\sim}3.3%$ 범위였다. 지방산조성은 제품에 따라 상당한 차이를 보이고 있으나 전반적으로 폴리엔산의 조성비가 $34.5{\sim}61.4%$로 많이 함유되어 있었고 패류통조림이 어류통조림에 비해 그 조성비가 다소 높았다. 다음으로 포화산, 모노엔산 순이었고, palmitic, palmitoleic, olelc, eicosapentaenoic, docosahexaenoic acid 등이 주요구성지방산이었다. 참치기름담금 및 굴훈제기름 담금통조림의 경우 면실유에서 이행된 linoleic acid가 전체지방산의 48.2%, 34.5%를 차지하고 있었다. 수산물통조림은 제조 중 고온가열처리를 받아 지질성분이 산화 및 열분해되었음에도 불구하고 전반적으로 폴리엔산의 조성비가 높았고 eicosapentaenoic aicd, docosahexaenoic acid 같은 고도불포화지방산이 상당량 잔존해 있었다.

Antioxidant and angiotensin I-converting enzyme inhibitory activities of northern shrimp (Pandalus borealis) by-products hydrolysate by enzymatic hydrolysis

  • In the present study, we investigated to the antioxidant and angiotensin I-converting enzyme (ACE) inhibitory activities of the northern shrimp (Pandalus borealis) by-products (PBB) hydrolysates prepared by enzymatic hydrolysis. The antioxidant and ACE inhibitory activities of five enzymatic hydrolysates (alcalase, protamex, flavourzyme, papain, and trypsin) of PBB were evaluated by the 2, 2'-azino-bis [3-ethylbenzothiazoline-6-sulfonic acid] ($ABTS^+$) radical scavenging and superoxide dismutase (SOD)-like activities, reducing power and Li's method for ACE inhibitory activity. Of these PBB hydrolysates, the protamex hydrolysate exhibited the most potent ACE inhibitory activity with $IC_{50}$ value of $0.08{\pm}0.00mg/mL$. The PBB protamex hydrolysate was fractionated by two ultrafiltration membranes with 3 and 10 kDa (below 3 kDa, between 3 and 10 kDa, and above 10 kDa). These three fractions were evaluated for the total amino acids composition, antioxidant, and ACE inhibitory activities. Among these fractions, the < 3 kDa and 3-10 kDa fractions showed more potent $ABTS^+$ radical scavenging activity than that of > 10 kDa fraction, while the > 10 kDa fraction exhibited the significant reducing power than others. In addition, 3-10 kDa and > 10 kDa fractions showed the significant ACE inhibitory activity. These results suggested that the high molecular weight enzymatic hydrolysate derived from PBB could be used for control oxidative stress and prevent hypertension.
