Zinc status and dietary quality of type 2 diabetic patients: implication of physical activity level

  • The purpose of this study was to analyze the relationships among zinc status, diet quality, glycemic control and self-rated physical activity level of type 2 diabetic patients. Dietary intakes for two non-consecutive days were measured by 24-hour recall method for seventy-six diabetic patients. Fasting blood glucose and HbA1c were measured for the assessment of glycemic control. We evaluated the extent of dietary adequacy by the percentage of subjects with a dietary intake of a nutrient less than the estimated average requirement(EAR), the dietary diversity score(DDS) and the dietary variety score(DVS). Zinc status was assessed from serum levels and urinary excretion. Dietary inadequacy was serious for five nutrients: riboflavin, calcium, thiamin, zinc and vitamin C. Dietary intakes from the meat, fish, and egg food groups and the milk food group were below the recommended level.   • Feeding habits of released Sebastes inermis obtained in daily and monthly collections from August 2007 to December 2007 in coastal waters off Jam Island in Jinhae Bay, Korea were assessed. A total 151 individuals of S. inermis (6.3-9.7 cm TL) were recaptured during the study period. Initial food intake of released S. inermis occurred within three days of released. Stomach content index increased with time, however, the percentage of stomachs devoid of contents decreased. Sebastes inermis mainly consumed gammarid and caprellid amphipods, gastropods and mysids. Diet also included small quantities of bivalves, shrimps, copepods and ostracods. Amphipods were mainly consumed at all size groups and consumption of gastropods, bivalves and shrimps increased with increasing fish size.

  • Veterinary drugs are widely used to protect production-related diseases and promote the growth of farmed fish. The use of large amounts of veterinary drugs may have potential risk and cause adverse effects on both humans and the environment. In this study, we developed risk-based ranking based on a scoring system to be applied in the national residue program. In this approach, the following three factors of veterinary drugs that may occur as residues in fishery products were considered: potency (acceptable daily intake), usage (number of dose and withdrawal period), and residue occurrence. The overall ranking score was calculated using the following equation: potency × usage (sum of the number of sales and withdrawal period) × residue occurrence. The veterinary drugs that were assigned high score by applying this approach were enrofloxacin, amoxicillin, oxolinic acid, erythromycin, and trimethoprim. The risk-based approach for monitoring veterinary drugs can provide a reliable inspection priority in fishery products. The developed ranking system can be applied in web-based systems and residuemonitoring programs and to ensure safe management of fishery products in Korea.

  • Ten college women were treated with either corn oil(CO< as a source of C18:2, $\omega$6) or fish oil concentrates(FO, as a source of C20:5+C22:6, $\omega$3) with experimental diet for 7 days and then returned to normal home made diet. Kinetic changes of plasma and RBC lipids, tocopherol, MDA levels and hemolysis were observed at day-0, -3, -7, -8, -10, -14 and -21 of experimental periods. Plasma and RBC tocopherol contents were significantly increased at day-3 and -7 by tocopherol tocopherol supplement in dietary oil, but there was no significant difference between CO and FO diet with large dose of tocopherol supplement. After stop experimental regimen at day-7, plasma tocopherol content was sustained at high level until day-10 but drastically decreased at day-14 and remained at low level at day-21. However, RBC tocopherol level was not greatly responded to the dietary intake of tocopherol and was varied in the very narrow range. MDa levels of plasma and RBC were not responded in the same way as tocopherol content of plasma. MDa content of RBC was very low compared to that of plasma. RBC hemolysis by incubation in hypotonic solution was negatively correlated to plasma tocopherol level and was not correlated to the level of MDa in either plasma or RBC. There were no significant change in the levels of plasma cholesterol, HDL-chol, triglyceride, phospholipid, and lipoprotein pattern throught experimental periods.

Beneficiaries' Satisfaction, Menu Preference and Dietary Habits of Lunch-box Program Provided to Low-income Families (결식아동에 제공되는 도시락 지원 수혜자의 만족도, 메뉴 기호도 및 식습관 조사)

  • Information regarding the status of lunch box service for children and juveniles from nutritionally vulnerable families is limited and has not been assessed from the view of beneficiaries. Therefore, this study intended to determine the satisfaction, current status, menu preferences, and dietary habits of recipients served lunch-box meals from Pocheon city. There were 41 subjects from primary schools and 73 from secondary schools. Although 94.8% answered that the foods were generally helpful, as much as 28.9% replied that the amount of food provided was too little. Only 77.2% answered that they eat the foods always or usually, 29.5% answered that they throw away leftover foods, and only 71.9% recycled empty containers, suggesting the need for instruction regarding how to deal with leftover foods and containers. Food preferences were high for deep-fried foods and meats and low for fish and vegetables, and that for vegetable egg rolls was relatively high, suggesting the need to increase vegetable intake. Adherences to guidelines regarding street foods was the lowest in both elementary and secondary school students, suggesting that the contents of nutrition education for these students should include materials to improve dietary habits, along with increasing the consumption of milk.

A Study on Utilization of Japanese Consumers and the Present Condition of Northeast Asia Processed Eels (장어 시판제품에 대한 동북아시아의 가공현황 및 일본인 소비자의 구매실태 조사)

  • This study investigated the current processing degree and ingredients of sauce on the packaging of the commercial eel products made in Northeast Asia (Korea, Japan, China and Taiwan) and surveyedthe perception of nutritional functionality and purchasing pattern of Japanese consumers for the processed eels. The results are considered as a useful aid for preparation of processed eel products. The commercial eel products, purchased at a department store, supermarket and discount market, were divided by processing method, package quantity, storage method and sauce ingredients. The processing method was indicated in many different ways in each country, such as sauce ingredients and intake method. A questionnaire survey was conducted on 105 Japanese consumers (male 43, female 62) visiting Korea. Of the respondents, 44% answered and the major reasons for purchasing processed eel products were as a side dish for meals. The results for this factor were significantly different in relation to age (p <0.05). The degree of perceptions of functional excellence about processed eel products was well known (37%), some (49%), and seldom (14%). The results for this factor were significantly different in relation to age (p <0.001). Seventy-five percent of the respondents had experienced processed eel products. The type of purchase of the respondents was highest for vinegared rice and fish (47%), followed by freezing (33%), canning (5%), and dried food (4%), in that order.

EFFECT OF DIETARY LIPIDS ON LIVER, SERUM AND EGG YOLK CHOLESTEROL CONTENTS OF LAYING HENS

  • The effect of dietary lipid factors (plant and animal oil, cholesterol and ${\beta}$-sitosterol) on the liver, serum, and egg yolk cholesterol levels of the laying hen was studied. Single Comb White Leghorn laying hens, at 28 weeks of age, were fed two basal diets containing 8.0% soybean oil or 8.0% fish oil, with or without supplemental cholesterol (1.0%), ${\beta}$-sitosterol (2.0%) or combinations of both. Restricting caloric intake resulted in significantly (p<.05) decreased egg production and the total amount of cholesterol excreted via the egg was significantly (p<.05) different among treatment groups. Cholesterol supplementation to the two basal diets resulted in a significant elevation of liver, serum and egg yolk cholesterol levels. The addition of ${\beta}$-sitosterol lowered the cholesterol levels in liver and serum, while increased in the egg yolk (SO + ST, FO + ST). The anticholesterogenic effect of dietary ${\beta}$-sitosterol was not clearly exhibited in this study.

Effect of Feeding Date Pits on Milk Production, Composition and Blood Parameters of Lactating Ardi Goats

  • Twenty Ardi lactating goats were used to investigate the effect of substituting 10%, 15%, and 20% of concentrate feed with date pits on milk production, composition, and blood parameters. Four isocaloric and isonitrogenous dietary treatments were used. Four levels (0% [control], 10%, 15%, and 20%) of date pits were used to replace concentrate feed. The forages to concentrate ratio used was 60 to 40. Dry matter intake (DMI) of goats fed diets containing 10% and 15% date pits was significantly (p<0.05) higher than those fed diets containing 0% and 20%. However, goats fed a diet containing 20% date pits were significantly (p<0.05) lower in DMI compared to those fed control diet. The protein percent was significantly higher for goats fed control diet compared to the other dietary treatments. Total solids percent was significantly the lowest for goats fed diet supplemented with 10% date pits. Goats fed a diet containing 20% date pits was significantly (p<0.05) higher in the total protein compared to those fed a diet containing 10%. In addition, goats fed a diet containing 15% date pits exhibited no significant differences in the total protein percent compared to those fed a diet containing 20% date pits. Triglyceride was significantly higher for goats fed diets containing 10% and 20% date pits compared to those fed 15% date pits. Results obtained in the present study suggest that date pits can be added up to 20% of the concentrate feeds into lactating Ardi goat diets without negative effects on their productive performance.

Feeding Frequency Affects Early Larva Growth and Survival Rate in Eel Anguilla japonica (뱀장어(Anguilla japonica) 자어 먹이공급 횟수가 초기 자어 성장 및 생존율에 미치는 영향)

  • Eel Anguilla japonica is an economically important inland culture fish species in East Asian countries, particularly in Korea, Japan, China, and Taiwan. In this study, the effects of feeding frequency on larval growth and survival rate were investigated. Eel larvae (average length, 6 mm) were fed a slurry-type diet containing shark eggs three, five, seven, or nine times per day. Survival rates differed significantly among the four experimental groups. Feeding frequencies of at least five and seven times a day were required until 15 and 30 days after hatching, respectively, to maintain an acceptable survival rate. Leptocephalus growth improved with increased feeding frequency until 15 days after hatching. The results suggest that providing an opportunity for early food intake enhances eel survival and growth in the early leptocephalus stage.

Growth Performance and Digestive Characteristics of Starry Flounder Platichthys stellatus on the Moist and Extruded Pellets (습사료와 부상사료에 대한 강도다리(Platichthys stellatus)의 성장과 소화 특성)

  • A study was carried out to observe the effects of feed types on the growth, feed preference, and enteric feed transition rate of juvenile starry flounder, Platichthys stellatus for 45 days. Fifty fish (avg. 135 g) were stocked each in replication, and fed a commercial extruded pellet diet (EP, 45% protein) and a moist pellet diet (MP, 65% raw mackerel+35% feed powder in wet basis), respectively. The MP presented the higher performance than that of the EP on the feed efficiency ($68.3{\pm}0.9%$ for EP and $92.3{\pm}4.3%$ for MP) and the specific growth rate ($1.07{\pm}0.07$ for the EP and $1.20{\pm}0.05%$ for the MP). In contrast, the EP showed the higher feed preference in terms of the daily feed intake ($1.57{\pm}0.08%$ for the EP and $1.30{\pm}0.01$ for the MP) and the ad libitum feeding rate after a fast of 72 hours (1.73% for the EP and 1.35% for the MP). The feed transition rate through intestinal canals decreased exponentially in both the EP and the MP, showing the faster transition rate with the EP. In the result, starry flounder appeared to have the better feed preference to the EP, but have the higher feed efficiency and growth performance to the MP.
