The consumption of a wide variety of food groups is considered one of the key components of nutritional adequacy. The 2005 Dietary Guidelines for Koreans includes the consumption of a variety of foods from diverse food groups as a component of a normal diet. A survey was conducted to evaluate the relationship between the dietary diversity of food groups and nutrient intake in elderly patients (age 65 and above) at a rural area in Korea (Inje). 296 subjects (111 male and 185 female) were probed in a 3 day 24-recall dietary survey. Subjects were grouped according to food group intake frequency, based on six food groups (grain, meat/fish/legume/egg, vegetable, fat/oil, dairy, fruit). Nutritional quality was evaluated according to the numbers of nutrients under EAR (Estimated Average Requirements), and MAR (mean adequacy ratios). The frequency of elderly subjects consuming a meat/fish/legumes/egg food group less than once per day was 29.4%. The frequency of elderly subjects consuming fat/oil food group less than once per day was 65.8%. The percentage of subjects who did not eat dairy food was 88.8%, and that of subjects who did not eat fruit was 57.5%. A stepwise multiple regression analysis was used to develop models relating nutritional quality to possible food group intake frequency factors. Using the number of nutrients under EAR as a dependent variable, the meat/fish/legume/egg food group intake frequency explained 9.9% of variance, followed by the grain group, fat/oil group, dairy group, and vegetable and fruit group (Model $R^2$=0.260). For mean nutrient adequacy ratio as a dependent variable, the model $R^2$ was 0.326. The results of this study suggest that a highly varied diet in elderly might be associated with better nutritional quality, as assessed by nutrient intake. Accordingly, dietary guidelines should take into consideration nutritional characteristics in order to improve intake from all major food groups and to provide a variety of foods in the diet.
This study investigated the effects of stocking density on the growth of the mandarin fish Siniperca scherzeri, in small (1-year old, 50.2 g/fish) and large (2-years old, 173.1 g/fish) size (age) groups. Small and large fish groups were fed pelleted diets twice daily for 10 and 15 weeks, respectively. In the small group, at the end of the feeding, the weight gain of fish at a density of $4kg/m^3$ was lower than that of fish at densities of 3, 2 and $1kg/m^3$. However, fish stocking density did not affect feed efficiency. The daily feed intake of fish at a density of $4kg/m^3$ was lower than that fish at densities of 3, 2 and $1kg/m^3$. In the large fish group, the weight gain of fish at a density of $4.5kg/m^3$ was higher than that of fish at densities of 6, 3 and $1.5kg/m^3$. Again, fish stocking density did not affect feed efficiency. The daily feed intake of fish at a density of $4.5kg/m^3$ was higher than that of fish at densities of 6, 3 and $1.5kg/m^3$. Based on these results, the optimum stocking density for small (50.2 g/fish) and large (173.1 g/fish) mandarin fish is 3 and $4.5kg/m^3$, respectively.
The purpose of this study was to investigate the sodium intake of office workers using 24-hour urine analysis and to analyze the correlation matrix between variables. The sodium intake of the subjects (n = 137), based on a 24-hr sodium excretion period, was male (n = 56) 6072.4 mg and female (n = 81) 5,168.2 mg. Urinary sodium excretion showed significant positive correlation with BMI, frequency of eating out, expenditure of eating out, salty taste assessment and high-salt dietary behavior. Analysis of urinary sodium excretion showed significant positive correlation with intake frequencies of cabbage kimchi, broiled fish, feast noodle and rice with leaf wraps. Based on the results of multiple regression, urinary sodium excretion was found to be related to intake frequencies of cabbage kimchi, broiled fish, rice with leaf wraps and high score of high-salt dietary behavior.
The purpose of this study was to Investigate the response of fasting serum glucose and basal insulin to dietary omega-3 fatty fish in normal subjects. Nineteen healthy female volunteer subjects were divided into two groups, depending on fish preference test. Low ap3 fatty acid group for 7 days received a experimental Inlet containing mackeral fish 100g. Calorie intake was 1780 kcal /day. The average 4ally u-3 fatty acid consumption from fish was 3.87g /day (1.03g EPA, 2.849 DHA) . High n-3 fatty acid group was given 7.74g maine u-3 fatty acid (200g mackeral fish) consisting of 2.06g EP45.68g DHA. Calorie intake was 1815 local /day Fasting blond serum glucose, insulin levels were measured at baseline, 7days after experimental diet. In the beginning the levels of fasting serum glucose, basal insulin were not different between both groups. There were no significant changes in fasting serum glucose, insulin levels by experimental diets. These data indicate that marine ar3 fatty acid consumption have no deleterious effect on glycemic control in normal subjects.

Trace metals concentrations in the tissue of edible marine fish (4 species), olive flounder (Paralichthys olivaceus), Korean rockfish (Sebastes schlegelii), file fish (Stephanolepis cirrhifer) and abbysal searobin (Lepidotrigla abyssalis), collected near the Yongho wharf in Busan were determined to assess the potential human health risk (HRA) of trace metals by fish consumption. Levels of Li, Cr, Ni, Cu, Zn, As, Cd, and Pb in the fish tissue were $0.005{\pm}0.009$, $0.77{\pm}0.30$, $0.29{\pm}0.34$, $0.49{\pm}0.14$, $15.96{\pm}2.52$, $10.62{\pm}4.67$, $0.001{\pm}0.002$, and $0.045{\pm}0.06mg/kgdw$ respectively. The estimated daily intakes of Cu and Zn and the estimated weekly intakes of As, Cd, and Pb from the fish collected near the Yongho wharf were 0.0032, 0.054-0.18% of PMTDI (provisional maximum tolerable daily intake) and 13, 0.0041, 0.020% of PTWI (provisional tolerable weekly intake) which were set to evaluate the food safeties by the JFCFA (The Joint FAO/WHO Expert Committee on Food Additives). Lifetime cancer risk and target hazard for local residents due to those fish consumption were found to be negligible.
Limited studies are available concerning the effect of heavy metal exposure on cardiovascular diseases. As environmental pollution increases, food contamination, including heavy metal contamination of fish, also increases. However, researches based on the intake of heavy metals, cardiovascular disease, and fish intakes are inconclusive. We assessed an association of heavy metal exposure with cardiovascular disease and fish intake in a nationally representative group of general Korean adults. We used data from the combined 2008-2010 Korean National Health and Nutrition Examination Survey (KNHANES), and analyzed the data of 5,139 Koreans who participated in KNHANES. All participants were older than 20 years, and were diagnosed with stroke, ischemic heart disease, or hypertension. The mean blood cadmium, lead concentration, and mercury concentration of subjects were $1.07{\pm}0.01{\mu}g/L$, $2.49{\pm}0.02{\mu}g/dL$, and $5.19{\pm}0.08{\mu}g/L$, respectively. We used the survey logistic regression model to account for the complex sample design of the cardiovascular disease risk in order to estimate the odds ratios (OR). After adjusting for age, education, income, alcohol, smoking, and BMI, the increase of serum cadmium in blood was associated with the increase in the prevalence of hypertension. Further, the increase in blood cadmium concentration was associated with the increase of both systolic blood pressure (SBP) and diastolic blood pressure (DBP). Although higher fish intakes were significantly associated with higher blood mercury concentration (p for trend < 0.0001), fish intakes did not affect either blood cadmium or lead concentration. Comparing the highest fish intake group with the lowest intake group, the OR of hypertension was 0.31 (95% CI: 0.19-0.59) in the crude model for total fish. However, these associations were no longer significant after the adjustment for potential confounding factors. In conclusion, cadmium in blood was associated with an increased risk of hypertension in the general Korean adult population. However, we found no evidence of a clear relationship between cardiovascular disease and frequency of fish consumption.
The middle school subjects were 65.8% girls and 34.2% boys. Seniors were most abundant at 56.3%. The most abundant location was Gyeonggi-do (54.7%), and 69.3% of subjects were living with 4?5 family members. Approximately 56% of the mothers had graduated from high school, and 58.1% were unemployed. The mother most often prepared the food (78.4%), fish was eaten mostly in the home, and taste was the most important factor (62.6%). The preferred home food menu was fish because it is healthy, and the main cause for disliking the school meal service was poor quality dishes compared to a home cooked meal. The acceptance and type of fish were proportional. Rice was the most favored dish to eat with fish and scored 3.97, the highest rank. Approximately 50% answered that fish was nutritious, and a significant difference was observed regarding the mother's educational background (p<0.05). Students who never had a lecture about fish answered that fish was not nutritious, which showed a significant difference with education (p<0.05). Approximately 44% of students ate fish 2?3 times per week, and male students showed a significantly higher intake of fish than female students (p<0.05). The poorly educated disliked fish the most, and the higher frequency intake of fish resulted in a significantly higher percentile (p<0.001).
The effects of feeding frequency on the growth, food consumption, body composition, and hematological response of the Korean rockfish Sebastes schlegelii were investigated for 77 days at ambient water temperatures (17.2-24.5℃) in a sea cage in Tongyeong, Korea. Three replicate groups of fish were hand-fed to satiation with a commercial diet in one of four different feeding frequency trials (one meal every 2 days, and one, two and three meals per day). At the end of the experiment, the mean weight gain, specific growth rate, and daily feed intake of fish fed one and two meals per day were significantly higher than those of fish fed one meal every 2 days or three meals per day. The feed efficiency of the fish fed three meals per day was significantly lower than that of the fish in the other groups. The glucose concentration of fish fed one meal every 2 days was significantly higher than that of the other groups. We conclude that the optimum feeding frequency for improving the growth of Korean rockfish weighing 100-200 g reared in sea cages is one meal per day under our experimental conditions.
Mercury and methylmercury concentrations were measured in 225 marine fish samples purchased from retail markets in 5 major Korean cities in 2005. The results showed that the concentrations of mercury and methylmercury ranged from 0.006-0.455 (mean=$0.054{\pm}0.025$) mg/kg and 0.004-0.120 (mean=$0.021{\pm}0.008$) mg/kg, respectively, in fish caught from the coastal waters of the Korean Peninsula. The concentrations in deep-sea fish including tuna ranged from 0.066-2.315 (mean=$0.095{\pm}0.640$) mg/kg for mercury and 0.027-0.897 (mean=$0.281{\pm}0.182$) mg/kg for methylmercury. The estimated weekly intakes (EWIs) of mercury and methylmercury reached 3.92 and 4.70% of the provisional tolerable weekly intakes (PTWI), respectively. Consequently, the levels of mercury and methylmercury in marine fish from current retail markets do not pose any significant health risks for Koreans.
This study was conducted to evaluate the chemical hazards of 74 kinds of commercial anchovy fish sauce in Korea by measuring their biogenic amine content. The biogenic amines detected in commercial anchovy fish sauce were tryptamine, putrescine, cadaverine, tyramine, spermidine, spermine, and histamine. Among them, histamine content was the highest with an average of 1,439.62±812.62 mg/kg. Excessive intake of histamine could result in chemical food poisoning characterized by high blood pressure, headache, and diarrhea. Accordingly, by simulating histamine exposure (repetition=10,000 times) based on the daily intake of 0.969 g of domestic anchovy fish sauce, we found that the estimated average histamine exposure was 24.49±55.48 ㎍/kg bw/day and that the margins of exposure (MOE) value were 139.18 at 1% and 66,141.07 at 95% of 10,000 simulations (9,500 times). As such, it was confirmed that 9,500 out of 10,000 simulations of MOE analysis significantly exceeded MOE 10. Therefore, the risk of exposure to histamine from ingestion of commercial anchovy fish sauce is approximately very low.
