감귤피를 먹이지 않은 개량흑돼지 고기$(T_0)$와 성장기와 비육기에 감귤피를 각각 $6\%$ 및 $10\%$ 먹인 개량흑돼지 고기$(T_1)$를 첨가하여 식이를 제조하고 흰쥐에 급여했을 때에, 두식이 사이에 횐쥐의 증체량, 식이섭취량, 식이효율, 장기(간, 신장, 비장, 부고환 지방)무게, 혈청의 지질함량 중 총 지질, 인지질, 중성지질, 총콜레스테롤 및 HDL-콜레스테롤, 간의 총 지질과 중성지질 함량, 그리고 혈청의 단백질, 혈당, 혈색소 함량 및 효소($\gamma-GTP$, ALT, AST, ALP)활성은 모두 유의적 차이를 보이지 않아서 감귤피 첨가 사료를 먹인 돼지고기의 영향이 없었다. 그러나 간의 콜레스테롤 함량과 혈청의 LDL-콜레스테롤 함량은 감귤피 급여구가 유의적으로 낮게 나타나서(p<0.05) 지질대사의 개선 효과를 기대할 수 있었다.
The objective of this study was to investigate the effect of dietary supplementation with thiazolidinedione (TZD) on growth performance and meat quality of finishing pigs. In Experiment 1, 80 castrated finishing pigs (Large White${\times}$Landrace, BW = 54.34 kg) were randomly assigned to 2 treatments with 5 replicates of 8 pigs each. The experimental pigs in the 2 groups were respectively fed with a diet with or without a TZD supplementation (15 mg/kg). In Experiment 2, 80 castrated finishing pigs (Large White${\times}$Landrace, BW = 71.46 kg) were divided into 2 treatments as designed in Experiment 1, moreover, carcass evaluations were performed. The results from Experiment 1 showed that TZD supplementation could significantly decreased the average daily feed intake (ADFI) (p<0.05) during 0 to 28 d, without impairing the average daily gain (ADG) (p>0.05). In Experiment 2, the ADG was significantly increased by TZD supplementation during 14 to 28 d and 0 to 28 d (p<0.05) and the feed:gain ratio (F:G) was significantly decreased by TZD supplementation during 0 to 28 d (p<0.05). Compared with the control group, TZD group had significantly higher serum triglyceride (TG) concentration at 28h and serum high-density lipoprotein (HDL) levels at 14 d (p<0.05). Moreover, there was an apparent improvement in the marbling score (p<0.10) and intramuscular fat (IMF) content (p<0.10) of the longissimus dorsi muscle in pigs treated by TZD supplementation. Real-time RT-PCR analyses demonstrated that pigs of TZD group had higher mRNA abundance of $PPAR{\gamma}$ coactivator 1 (PGC-1) (p<0.05) and fatty acid-binding protein 3 (FABP3) (p<0.05) than pigs of control group. Taken together, these results suggested that dietary TZD supplementation could improve growth performance and increase the IMF content of finishing pigs through regulating the serum parameters and genes mRNA abundance involved in fat metabolism.
본 실험은 저항생제 수준에서 스테비아와 숯의 급여가 돼지의 도체 및 육질특성에 미치는 영향을 구명하고자 수행하였다. 시험구는 일반 기본사료를 기초로 하여 T1(대조구, 기본사료 + 비육전후기 항생제), T2(기본사료 + 0.3% 스테비아 + 0.3% 숯 + 비육전후기 항생제) 및 T3(기본사료 + 0.3% 스테비아 + 0.3% 숯 + 비육전기 항생제)로 나누어 실시하였고, 항생제(oxytetracycline, OTC) 수준은 기존 첨가 수준(110 ppm)의 50%인 55 ppm으로 첨가하였다. 저항생제 돈육생산 가능성을 위하여 비육후기 무항생제 처리를 하였다. 숯과 스테비아, 항생제를 각기 다르게 급여한 돼지의 도체특성에서 A등급 출현율은 T3에서 59%로 가장 높게 나타났으며, 등지방 두께는 T2에서 높게 나타났다. 도체장도 T2에서 높은 수준을 나타내었다. 일반성분에서는 모든 처리구에서 유사한 수준을 나타냈다. 육질특성에서 pH는 모든 처리구에서 정상의 범위를 나타내었으며, 보수력은 T3에서 다소 높은 수준이었다. 육즙손실은 T2에서 높은 육즙손실량을 나타내었으며, 가열감량에서도 T2에서 유의적으로 높은 수준을 나타내었다. 전단력은 실험군 간에 차이가 없었다. 육색에서 명도는 T2가 높은 수준이었으며, 근육 내 총콜레스테롤 함량은 T1에서 유의적으로 높은 수준을 나타내었다. 주관적판정에서 T3가 다소 높은 마블링 점수를 나타내었고, 관능검사에서는 T1이 전체기호도에서 다소 높은 점수를 나타내었다. 이상의 결과에서 스테비아와 숯을 먹인 비육후기 무항생제 급여구(T3)가 대조구(T1)와 스테비아와 숯을 먹인 비육전후기 항생제 급여구(T2)와 비교 시 도체 및 육질특성에서 유사한 결과를 나타내는 것으로 보아, 스테비아와 숯이 항생제 대체효과가 있는 것으로 생각되며 저항생제 돈육생산이 가능할 것으로 사료된다.
본 실험은 스테비아와 숯의 급여가 돼지의 육질 및 저장특성에 미치는 영향을 구명하고자 수행하였다. 시험구는 일반기초사료 급여구(T1)를 대조구로 하여, 스테비아 0.3%(T2)와 0.6% 급여구(T3), 숯 0.3%(T4)와 0.6% 급여구(T5), 스테비아 0.3%와 숯 0.3% 홉합급여구(T6) 및 스테비아 0.6%와 숯 0.6% 혼합급여구(T7)로 하여 등심육의 제반 육질특성을 조사하였다. 일반성분은 T6에서 단백질과 지방의 함량이 다른 처리구들보다 높은 수준이었다. pH에서는 T4처리구에서 높은 수준을 나타내었으며, 보수력에서는 T6처리구에서 높은 수준을 나타내었다. 육즙손실은 T5처리구에서 높은 육즙손실량을 나타내었으며, 가열감량에서는 T1과 T6처리구에서 높은 수준을 나타내었다. 그외 전단력에서는 T2처리구에서 높은 수준을 나타내었다. 육색에서는 T2와 T6에서 다른 처리구들보다 낮은 명도값을 나타내었으며, T1, T5, T6처리구에서 높은 적색도를 나타내었고, T3처리구와 T5처리구에서 높은 황색도를 나타내었다. 근육 내 콜레스테롤 함량에서는 T7처리구에서 높은 수준을 나타내었다. 주관적 판정과 관능검사에서는 T6 처리구에서 우수한 성적을 나타내었다. 저장특성의 처리구별 비교에서는 TBA가는 T4처리구가 0 일에 높은 수준을 나타냈으며, 7일에서는 T3처리구가 높은 수준을 나타내었다. 한편 VBN 함량과 총미생물수에서는 냉장저장 기간 동안 각 처리구 모두 가식범위의 수준이었다. 이상의 결과에서 스테비아 0.3%+숯 0.3%의 혼합처리구(T6)가 대조구와 다른 처리구와 비교 시 육질특성이 우수하며 저장특성에서도 우수한 수준을 나타내는 것으로 사료되었다.
This study was conducted to evaluate the effect of fermented food waste (FFW) supplementation on growth, nutrient digestibility and pork quality of growing pigs. A total of 48 crossbred pigs were assigned to four treatments in a randomized complete block (RCB) design. Treatments were 1) Control (basal), 2) FFW 2% (basal+2%FFW), 3) FFW 4% (basal+4%FFW) and 4) FFW 6% (basal+6%FFW). Diets were formulated based on corn-soybean meal and the FFW products were provided to weaning, growing and finishing periods. During the whole experimental period, FFW treatment groups showed similar ADG, ADFI and G:F ratios (P>.10) compared to control group. However, In the finishing period, pigs fed 6% FFW tended to be lower ADG than other dietary treatments (P=0.13) resulting in lower final weight. All pigs showed inconsistent blood urea nitrogen (BUN) concentrations pattern. In metabolic trial, nutrient digestibility was not affected by the supplementation of FFW. The pork quality was affected by the supplementation of FFW based upon pork pH, lipid peroxidation (TBARS) and meat color analysis. These results suggested that utilization of fermented food waste to growing pig's diet reduce production cost without any detrimental effect on pork quality when it was provided at low level.

This study estimated the effect of exposure to propiconazole through implementation and residues in finishing pigs. We analyzed the expression of fibrosis-related genes and performed histological analysis of the blood, liver, kidney, muscle, ileum, and fat tissues. The animals were exposed for 28 d to different concentrations of propiconazole (0.09, 0.44, 0.88, 4.41, and 8.82 mg/kg bw/d). Quantitative, gene expression, and histological analyses in tissues were performed using liquid chromatography mass spectrometry, real-time PCR, and Masson's trichrome staining, respectively. Final body weight did not differ among groups. However, genes involved in fibrosis were significantly differentially regulated in response to propiconazole concentrations. Glucose, alanine aminotransferase, and total bilirubin levels were significantly increased compared with those in the control group, while alkaline phosphatase level was decreased (p<0.05) after exposure to propiconazole. The residue limits of propiconazole were increased in the finishing phase at 4.41 and 8.82 mg/kg bw/d. The liver, kidney, and ileum showed blue staining after propiconazole treatment, confirmed by Masson's trichrome staining. In conclusion, these findings suggest that propiconazole exposure disturbs the expression of fibrosis-related genes. This study on dietary propiconazole in pigs can provide a basis for determining maximum residue limits and a better understanding of metabolism in pigs and meat products.
To investigate the effect of feeding the fermented food wastes (FFW) on meat quality, twenty pigs produced from four treatments with different mixing rates of FFW [100% concentrate (control), 25% replacement with FFW (25% FFW), 50% replacement with FFW (50% FFW) and 100% fermented food wastes (100% FFW)] were slaughtered. Carcass characteristics were differentiated if FFW replacement rate was higher than 50%. The proximate compositions of hams and loins in control pigs were not different from (p>0.05) those of the FFW replacements, regardless of mixing rate of FFW replacement. Drip loss of pork loin increased (p<0.05) with increased rate of FFW replacement. Hunter color values were affected (p<0.05) by the FFW replacement and storage time, while not significantly changed (p>0.05) when replaced with lower than 25% FFW. With replacing more than 50% FFW, redness values tended to be decreased, while yellowness values increased. Aerobic plate counts (APC) were rapidly increased 12 d for the control and 8 d for FFW replacement, and microbial stability seemed to be lowered when the rate of FFW replacement rate was more than 50%. These results indicated that the replacement of concentrate diets with FFW was still nutritious feedstuffs for pig diet, however, no more than 50% FFW replacement was recommended to have similar effect to those with the control (100% concentrate).
Objective: In most retail centers, primal pork cuts for sale are usually prepared into retail-ready slices and overwrapped with air-permeable plastic film. Also, meat of Korean native black pig (KNP) is reputed for its superior quality, however, its shelf life during retail display has not been studied. Thus, the objective of this study was to evaluate shelf life of prepackaged retail-ready KNP belly and shoulder butt slices during refrigerated display. Methods: Bellies and shoulder butt obtained at 24 h post-mortem from finishing KNP were used. Each belly or shoulder butt was manually cut into 1.5 cm-thick slices. The slices in each cut type were randomly taken and placed on white foam tray (2 slices/tray) overwrapped with polyvinyl chloride film. The retail-ready packages were then placed in a retail display cabinet at 4℃. Shelf life and sensory quality of the samples were evaluated on day 1, 3, 6, 9, 12, and 15 of display. Results: The shoulder butt reached the upper limit (20 mg/100 g) of volatile basic nitrogen for fresh meat after 9 days while, the belly remained within this limit throughout the display time (15 days). Both the cuts reached a thiobarbituric acid reactive substances level of above 0.5 mg malondialdehyde/kg after 9 days. The a* (redness) values remained unchanged during first 9 days in both cuts (p>0.05). After 9 days, off-flavor was not found in either cut, but higher off-flavor intensity was found in shoulder butt after 12 days. The shoulder butt was unacceptable for overall eating quality after 12 days while, belly still was acceptable after 12 days. Conclusion: The belly showed a longer shelf life compared to the shoulder butt, and a shelf life of 9 and 12 days is recommended for the prepackaged retail-ready KNP shoulder butt and belly slices, respectively.
본 연구는 비육돈 사료내 lysine 및 leucine 수준과 그들간의 상호작용이 성장 및 육질특성에 미치는 효과를 구명하기 위하여 수행하였다. 공시동물은 일령이 비슷하고 체중이 75.5±2kg인 3원교잡종 36두를 공시하였다. 처리구는 사료 중 lysine 함량 2수준(0.45%, 0.75%)과 leucine 함량 3수준(1.0%, 2.0%, 3.0%)의 2×3 요인실험으로, 처리 당 3반복, 반복당 2두씩 완전임의배치하였다. 일당증체량은 요인 및 처리간 차이를 보이지 않았으나, 일당사료섭취량 및 사료요구율은 lysine 0.45% 수준의 사료를 섭취한 시험구가 lysine 0.75% 수준의 사료를 섭취한 시험구보다 유의적으로 높았다(P<0.05). 거래 정육율은 lysine 0.45% 수준의 사료를 섭취한 시험구가 lysine 0.75% 수준의 사료를 섭취한 시험구보다 유의적으로 낮았으나(P<0.05), 기타 도체특성에서는 요인 및 처리간 차이를 보이지 않았다. 상강도(marbling score)는 lysine 0.45% 수준의 사료를 섭취한 시험구가 lysine 0.75% 수준의 사료를 섭취한 시험구보다 유의적으로 높았으나(P<0.05), 기타 육질특성에서는 요인 및 처리간 차이를 보이지 않았다. Leucine 수준에 따른 성장, 도체 및 육질특성에 있어 황색도를 나타내는 Hunter b* 값이 leucine 수준이 증가함에 따라 유의적으로 높게 나타났으나(P<0.05), 기타 조사항목에서는 요인 및 처리간 차이를 보이지 않았다. 결론적으로 비육후기에 저 lysine 사료를 급여 시 기호성이 높은 고 상강도의 돈육생산이 가능할 것으로 사료된다. 그러나 고 leucine 사료는 근내지방이나 상강도를 증가시키지 않는다.
본 시험은 발효산삼배양액 분말 및 배양산삼 분말 급여에 따른 돼지 생산성과 혈액, 도체 및 육질 특성에 관하여 조사하였다. 시험동물은 2원 교잡종(Landrace×Yorkshire) 육성비육돈 36두를 공시하였으며, 개시체중은 65.81±2.02kg 이였다. 시험사료는 기초사료를 대조구로 설정하였고, 처리구 1(T1)은 기초사료의 lupin 2.5%를 발효산삼배양액 분말로 배합하였고, 처리구 2(T2)는 기초사료의 lupin 0.2%를 배양산삼 분말로 배합하였다. 시험구는 암수 동일한 비율로 각 처리구당 4마리씩 3반복으로 완전임의 배치하여 실시하였다. 생산성에서 일당 증체량은 유의적인 차이가 나타내지 않았다. 사료섭취량은 대조구보다 처리구인 T1과 T2가 유의적으로 낮았다(P<0.05). 사료요구율은 시험구간에 유의적인 차이가 없었다.혈장의 생화학적 조성에서 total protein은 T1이 대조구보다 유의적으로 높았다(P<0.05). Blood urea nitrogen은 시험구간에 유의적인 차이는 없었다. Glucose와 albumin은 T1이 다른 시험구에 비하여 유의적으로 높았다(P<0.05). Calcium은 T1이 대조구보다 유의적으로 높았고(P<0.05), inorganic phosphate는 T1이 다른 시험구에 비하여 유의적으로 높았다(P<0.05).혈장의 지질 구성물의 조성에 있어서 triglyceride는 T1이 다른 시험구에 비하여 유의적으로 높았다(P<0.05). Total cholesterol은 시험구간에 유의적인 차이는 없었으나, HDL cholesterol은 T1이 대조구에 비하여 유의적으로 높았다(P<0.05).도체 및 육질 특성에서 도체중량, 도체율, 정육율, 등지방두께는 시험구간에 유의적인 차이가 없었다. 그리고 고기내 수분과 조지방도 시험구간에 유의적인 차이는 나타내지 않았다.이상의 결과를 종합하면, 발효산삼배양액 분말 및 배양산삼 분말 급여는 돼지의 생산성, 도체 및 육질 특성에는 영향을 주지 않았고, 혈장의 구성물질의 변화에 영향을 주었다. 따라서 본 연구에 이용한 발효산삼배양액 분말 및 배양산삼 분말은 돼지 사료 원료로서 이용 가능성을 확인할 수 있었다.

제 16 조 (서비스 이용제한)
① 당 사이트는 회원이 서비스 이용내용에 있어서 본 약관 제 11조 내용을 위반하거나, 다음 각 호에 해당하는
경우 서비스 이용을 제한할 수 있습니다.
- 2년 이상 서비스를 이용한 적이 없는 경우
- 기타 정상적인 서비스 운영에 방해가 될 경우
② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
