구소련(독립국가연합) 거주 한인들의 김치 이용 실태에 관한 조사(III) -김치재료- (A Research on Kimchi Culture for Koreans in CIS(III) -Materials of Kimchi-)

  • To investigate the materials in the preparation of kimchi for Koreans in the Commonwealth of Independent States(CIS) a survey was completed by 199 Koreans living in Moscow, Sahalin, Uzbekistan and Jazahstan, In the way to purvey the materials of Kimchi, the frequency to get all the materials of Kimchi in the markets is 74.7% on the whole and by regional groups the frequency is relatively high in Moscow and Kazahstan, For the main ingredients most respondents use Chinese cabbage, cabbage, or turnips. In general Chinese cabbage is used most, But the respondents who live in Moxcow and Kazahstan. For the main ingredients most respondents use Chinese cabbage, cabbage, or turnips. In general Chinese cabbage is used most, But the respondents who live in Moscow and Kazahstan. 쫴 are younger, or belong to higher emigrant generation, prefer cabbage kimchi. For the additional vegetables many respondents use carrots. For the seasonings, garlic, red pepper powder, and salt are added to Kimchi, but the use of ginger, whole seasame seed, and waxy rice paste is relatively low. The coriander, which is not added to kimchi in Korea, is used in Kimchi By above 80% of the respondents living in the three regions except Sahalin. It is considered to be due to the effect of the western dining cultural area. For the animal materials, 74.4% of the respondents add lightly salted fish to Kimchi and all toe respondents in Sahalin add salt-fermented sea food, the kind of which is mainly salt-fermented croaker. The reasons given for not adding salt-fermented seafood to Kimchi in the three regions except Sahalin, 59.9% of the respondents said it was because of the difficulty to purvey, 21.1% because of the fishy taste, and 16.8% because of not considering the addition of self-fermented sea food in Kimchi. The higher the emigrant generation of respondents, the less seasonings of strong flavor like garlic, red pepper powder, and salt-fermented sea food are used, and the more coriander is used. In the salting of Kimchi preparation, 97.8% of the respondents salt the main vegetables by soaking in brine and its concentration is controlled by experience.

Aspergillus kawacchii 코지를 이용한 홍게(Chionoecetes japonicus) 어간장의 제조 및 품질변화 (Quality Changes and Processing of Fermented Red Snow Crab Chionoecetes japonicus Sauce using Aspergillus kawachii koji)

  • This study investigated changes in the quality of fermented red snow crab Chionoecetes japonicus sauce with or without Aspergillus kawachii koji and added salt. Samples were divided into four groups depending on whether koji was added and the amount of salt: RC15, 15% added salt, no koji; RC20, 20% added salt, no koji; RK15, 15% salt plus 10% koji; and RK20, 20% salt plus 10% koji. The samples were fermented at 20±2℃ for 4 months. During the fermentation period, the moisture contents of the four types of sauce decreased while the crude ash and protein contents increased. The pH of the RK groups decreased and was lower than in the RC groups. The acidity of the RK groups increased and was higher than in the RC groups. Both the total nitrogen (TN) and amino nitrogen (AN) levels increased continuously and were higher in the RK groups than in the RC groups. The volatile basic nitrogen (VBN) content increased rapidly and was higher in the RC groups than in the RK groups. The color did not differ significantly among the four groups. The viable cell counts in the four groups increased and no coliforms were detected. The total free amino acid and glutamic acid contents were highest in the RK15 group and the main amino acids in RK15 were aspartic acid, glutamic acid, alanine, leucine, phenylalanine, and lysine. Overall acceptance was significantly higher for the RK groups than the RC groups and RK15 ranked highest among the four sauces. These results suggest that Aspergillus kawachii koji is beneficial for processing fish sauce made using red snow crab.

절임 고추장 종류가 다른 박대장아찌의 저온 저장 중 품질특성 (Quality Characteristics of Tongue Sole (Cynoglossus semilaevis) Jangajji with Different Types of Gochujang during Low Temperature Storage)

  • In this study, pH, $^{\circ}Brix$, salt concentration, sodium content, color, hardness, and sensory evaluations were measured during storage at low temperatures for 21 days after making tongue sole Jangajji with different types of Gochujang sauces. The pH was higher than those of samples not containing Maesil fermented liquor at all storage periods. The $^{\circ}Brix$ of the Maesil fermented liquor added samples was higher than that of the samples not added at the early stages of storage. On the other hand, there was no significant difference between the samples with and without Maesil fermented liquor at the later stages of storage. The sodium content was lower than that of the samples not containing Maesil fermented liquor. The lightness (L) was lower in the early stages of storage than those of the Maesil fermented liquor. In the late stage of storage, however, the lightness was higher than those of the samples not containing Maesil fermented liquor. The redness (a) of the GRWO sample group showed the highest value at all storage periods compared to the other sample groups. The yellowness (b) of the GRWO sample group was high at the early stages of storage. On the $21^{st}$ day of storage, however, the GRW sample group was significantly higher (p<0.01). The hardness results showed that the value of the later storage period was lower than that at the initial storage stage. The sensory evaluation showed that the Maesil fermented liquor reduced the spicy, salty, bitter, and unpleasant taste. As a result of the acceptance test, the GRWO and GRW samples were evaluated as the acceptance group with color, aroma, texture and overall acceptability compared to the brown rice Gochujang sample group.

근대시기 서양인 시각에서 본 조선음식과 음식문화 - 서양인 저술을 중심으로 - (Westerner's View of Korean Food in Modern Period - Centering on Analyzing Westerners' Books -)

  • The purpose of this study is to examine the Western perspective on the food and food culture of Modern Times in Korea (from the late of Joseon Dynasty until Japanese colonial era). Literature and written records were analyzed. This analysis revealed that the heart of the mill in this period involved rice, and that a common beverage was sungnyung made from boiled scorched rice (in contrast to tea as the common beverage in Japan or China). The most important subsidiary food in Joseon was vegetables, especially Kimchi. Westerners viewed Kimchi as a smell symbolizing Joseon and their meal times. Even though both Kimchi and cheese are fermented food, just like Westerners could not stand the smell of Kimchi, Koreans viewed the smell of cheese unpleasant. Westerners viewed German sauerkraut as Western food counterpart to Kimchi, as sauerkraut is also fermented food made of cabbage. Regarding the eating of dog meat in Joseon, most Westerners viewed it as brutal; however some interpreted it as a difference in food culture. In addition, the eating of raw fish and its intestines felt crude to Westerners. The biggest difference between Joseon's food and Western food was that Joseon had no dairy products and no sugar. The most highly preferred fruit for Westerners was the persimmon, and ginseng was already widely recognized and recorded as a medicinal plant. Joseon's desserts were also favorably evaluated. In contrast, the excessive gluttony, heavy drinking, and unsanitary conditions in Joseon were problems pointed out in many records.

김치류 및 절임류의 표준화에 관한 조사연구(調査硏究)(3) (Standardization of Kimchi and Related Products (3))

  • This study was conducted to investigate the standardization of kimchi and related products. There are about 339 kinds of kimchi and related products in Korea. Half of those various kimchi was 50% of the total products, and the other groups are in the order of Jangachi (high salted vegetable pickles, Saengchae (a salad type kimchi), Kakduki(reddish kimchi), Keotjulyi(nonfemented kimchi), Pickles, Seobakji (kimchi based on raddish, fish and other ingredients) and Shickgae (lactic fermented fish products). About 200 ingredients (chinese cabbage, raddish, cucumber, other vegetables, fruits, seaweeds, fish, meat etc.) were used for those products. Tongbaechu kimchi (whole headded chinese cabbage kimchi) and Possam kimchi (wraped kimchi with chinese cabbage leaves) were made by about 30 ingredients, respectively. Kakduki, Oyster-kakduki, Chonkak kimchi (kimchi based on small raddish with leaves) and Tongchimi (raddish kimchi with brine soup) were made by raddish and more than 10 ingredients, but the subsidiary ingerdients were less than that of chinese cabbage kimchi. Other products such as Yulmu kimchi and Oisobaki (a cucmber kimchi) were also dicussed.

젓갈 및 젓갈대용 부재료 첨가 김치의 유기산 및 핵산관련 물질의 함량 (The Contents of Organic Acids, Nucleotides and Their Related Compounds in Kimchi Prepared with Salted-Fermented Fish Products and Their Alternatives)

  • 젓갈류(멸치액젓, 멸치육젓, 저염멸치액젓, 저염까나리액젓 및 새우젓)와 젓갈대용물(굴 가수분해물, 명태육 가수분해물 및 청각 추출물)을 첨가하여 제조한 김치를 20, 10 및 $4^{\circ}C$에서 숙성 중 pH, 총산도를 측정하고 pH 4.2와 산도 $0.6{\sim}0.8%$를 고려한 온도별 적숙기에서의 유기산 및 핵산관련물질을 정량하였다. 그 결과, 젓갈류 첨가 김치의 온도별 숙성 중 pH는 적숙기까지 대체로 빠른 감소를 보인 반면 산도는 빠른 증가를 보였다. 시험구별 적숙기에서 acetic acid와 lactic acid는 0일차 대비 대체로 다소 높은 함량을 보였으며 malic acid는 $20^{\circ}C$에서, succinic acid는 $10^{\circ}C$에서 비교적 높은 함량이었다. ATP, ADP 및 AMP는 0일차 대비 대체로 낮거나 비슷한 수준인 반면, IMP 및 HxR은 숙성에 따라 다소 높은 함량을 보였다. 젓갈대용물 첨가 김치의 경우, pH 및 산도는 젓갈류 첨가 김치에서와 유사한 경향이었다. 시험구별 적숙기에서 acetic acid 및 lactic acid는 0일차 함량 대비 다소 높았고 malic acid는 증감하였으며 succinic acid는 0일차에서도 상당량 검출되었다. ATP 및 ADP는 굴 및 명태육 가수분해물 첨가구에서 0일차 대비 다소 높은 반면 다른 시험구에서는 대체로 다소 낮은 함량이었다. AMP도 $20^{\circ}C$$10^{\circ}C$ 숙성에서 ATP 및 ADP의 경우와 유사한 경향이었다. IMP는 대조구 및 청각추출물 첨가구에서 0일차 대비 대체로 낮은 함량인 반면 굴 및 명태육 가수분해물 첨가구는 대체로 높았다. HxR은, 대조구와 젓갈류 첨가구 및 굴가수분해물 첨가구에서 0일차 대비 대체로 높은 함량이었다. 결론적으로, 김치의 숙성시 숙성 온도와 젓갈류 및 젓갈대용물 등의 부재료가 김치의 숙성을 결정하는 주요 영향요인일 뿐만 아니라 김치의 정미성분으로서 유기산과 핵산관련물질의 함량패턴에도 영향을 미치는 것으로 나타났다.

양어 사료첨가제로서의 유산균 발효 개똥쑥의 항산화 및 항균활성 (Antioxidant and Antibacterial Activities of Lactobacillus-fermented Artemisia annua L. as a Potential Fish Feed Additive)

  • 최근 양어에서는 전염병, 환경오염, 어분 가격 상승 등으로 어려움을 가지고 있다. 본 연구는 쑥에서 분리한 L. plantarum SK3494를 이용하여 전통 약초인 개똥쑥을 발효시켜 in vitro 생리활성을 측정하고 어류용 사료첨가제로서의 가능성을 연구하였다. 개똥쑥의 발효시 유산균수는 9.38 log10 CFU/ml이며, pH는 4.1로 나타났다. 발효개똥쑥의 항산화활성은 DPPH 측정과 MAC-T 세포 내 과산화물 감소 실험에서 뛰어난 효과를 보였다. 발효개똥쑥은 어류 병원균인Photobacterium damselae subsp. damselae와 Vibrio ichthyoenteri에 대하여 강한 항균활성을 나타내었다. 따라서 유산균을 이용한 개똥쑥 발효물은 양식용 사료첨가제로써 가능성을 가지고 있는 것으로 판단되었다.

  • 수산자원의 기능특성 해명을 위한 연구의 일환으로 전통수산발효식품으로 널리 이용되고 있는 멸치젓갈에 함유되어 있는 angiotensin-I 전환효소저해물질을 추출하여 gel 여과에 의하여 분리된 획분들의 작용 및 특성에 대해서 살펴보았다. 그 결과를 요약하면 다음과 같다. 1. ACE 저해물질의 추출 조건을 검토하기 위하여 가장 높은 ACE 저해효과를 나타내는 숙성 60일차의 멸치젓갈을 ethanol 및 acetone의 농도를 각각 10, 25, 50 및 $80\%$로 하여 추출하였을 때 ethanol 농도가 $50\%$인 획분이 가장 우수한 저해효과를 나타내었다. 2. 멸치젓갈 숙성중 시료액의 $50\%$ ethanol 가용성 peptide-nitrogen 함량 및 ACE 저해효과는 아미노 질소 함량이 최고치에 달하는 숙성 60일차에 최대값을 나타내다가 그 후 다소 감소하는 경향을 나타내었다. 3. Gel 여과에 의한 멸치젓갈의 획분별 ACE 저해효과를 검토한 결과, 획분 C 및 D가 가장 높은 ACE 저해작용을 나타내어 이들을 rechromatography하여 분리한 단일 획분인 C'와 D'획분의 $IC_{50}$은 각각 97, $65{\mu}g$로 나타났다. 4. 분리한 단일 획분인 C'와 D'획분의 아미노산 조성은 다소 차이가 있었으며, C'획분은 threonine, glutamic acid 및 lysine의 함량이 많은 것으로 나타났으며, D'획분은 serine과 proline의 함량이 많은 것으로 나타났다.

  • This study was investigated traditional food utilization actual conditions of Gwangju and Chollanamdo. Frequency of main meal ice plain white rice, boiled rice and cereals, bean-mixed rice, gruel Dakjuk, winter squash porridge, sesame porridge, noodles by noodles cut out with a kitchen knife, noodles with assorted mixtures, soup with dough flakes order frequency much have. Soup ate much beanpaste soup, soup cooked with dried radish leaves, seaweed soup, broth by power-pot soup, hot shredded beef soup, loach soup order. Pot stew soybean paste stew and kimchi stew, beef casserole bean curd beef casserole and small octopus beef casserole often eat. Kimchi ate much cabbage kimchi, radish kimchi, radish cube kimchi, dish of dried slices of radish by sesame leaf dish of dried slices of radish, pickled garlics, Maneuljjong dish of dried slices of radish order. Salted sea foods that eat often were salted anchovies, tiny salted shrimps, Gejang order, and soy sauce were toenjang, korean hot pepper paste, bean-paste soup prepared with around fermented soy beans order, and laver fried kelp, tangle fried kelp, green perilla leaf fried kelp order to fried kelp, and it was bean sprouts, bracken herbs, fragrant edible wild aster herbs order to herbs. It is Ssukgatmuchim, squid debt saliva, Jabanmuchim's order that season, hard-boiled food is beef boiled in soy sauce, mackerel radish hard-boiled food, order of bean curd hard-boiled food, panbroiling ate often by order of Kimchi panbroiling, red pepper anchovy panbroiling, pork panbroiling. Steamed dish is egg steamed dish, fish steamed dish, steamed short-ribs order, fried fish egg speech, by Gimchijeon, Pajeon order, meat roasted with seasoning ate often by laver meat roasted with seasoning, hair-tail meat roasted with seasoning, mackerel meat roasted with seasoning order. Minced raw meat are small octopus raw that live, beef dish of minced raw beef, Hongeohoe order, rice cake is cake made from g1u1ions rice, Seolgitteok, songpyon order, dessert ate often by fermented rice Punch, cinnamon flavored persimmon punch, Kangjung order.

부재료가 김치의 품질 특성에 미치는 영향 (Effects of Ingredients on the Its Quality Characteristics during Kimchi Fermentation)

  • 중심합성계획(central composite design)과 반응표면 분석법(response surface analysis)을 이용하여 절임 배추 100g 당 부재료인 마늘(0∼2%), 파(0∼4%), 생강(0∼1.4%) 및 젓갈류(0∼2%)를 독립 변수로 하여 pH, 적정산도, 젖산균 수, 색도 및 관능적 특성을 조사한 후 상품 김치의 품질 특성에 영향을 주는 요인을 분석하였다. 그 결과 본 연구에 이용한 김치 부재료의 첨가량이 발효 단계별로 pH, 적정산도, 젖산균 수 등의 변화에 있어서 전통적인 김치 발효 형태를 보였다. 김치 부재료를 독립변수(independent variables)로 하고, 각각의 품질 특성을 종속변수(dependent variables)로 하여 분석한 결과, 독립 변수 마늘(X$_1$)-생강(X$_2$) 조합구는 발효 전반에 거쳐 pH,적정산도 및 관능 특성 중 색도, 전체적인 기호도와 상관성이 높은 반면, 마늘(X$_1$)-파(X$_3$),또는 생강(X$_2$)-파(X$_3$) 조합구는 각각의 품질 특성 항목과 상관성이 낮게 나타났다. 반면에 젓갈류의 경우 관능검사의 텍스쳐 항목을 제외하고는 상관 계수 0.8이상이었다. 한편 젓갈의 결과를 반응표면 분석에 의하여 회귀분석 하여 도시한 결과, 발효 단계 별로 차이는 있지만, 전반적으로 젓갈류 첨가량이 많을수록 적정 산도, 젖산균 수, 붉은색과 황색을 나타내는 a, b값이 높았다 전체적인 기호도는 김치 제조 직후에는 젓갈 첨가량이 증가할수록 높게 평가하였으나, 발효가 진행됨에 따라 젓갈 함량 1.0%에서 가장 높은 점수로 평가하였다
