  • Ecological studies have indicated that the essential fatty acids in maternal and umbilical cord blood samples are associated with gestational length and birth weight. The objectives of this study were to examine serum fatty acid concentration, particularly $\omega$3 fatty acids, in maternal and umbilical cord blood and to investigate the relationship of serum fatty acid levels in the blood of the mother and of the umbilical cord. Subjects consisted of 30 full-term and 30 pre-term mothers and neonates of both groups. Serum levels of fatty acids were measured by gas chromatography. The concentration of total saturated fatty acids in pre-term pregnant women was significantly higher than that of the full-term group (p<0.05), however, the maternal level of $\omega$3 fatty acids in the pre-term group was significantly lower than that of the full-term pregnant women (p<0.05), Moreover, the concentrations of $\alpha$-linolenic acid and eicosapentaenoic acid in full-term pregnant women were significantly higher than those of the pre-term group. In umbilical cord blood, the levels of total $\omega$3 fatty acid and arachidonic acid were significantly lower in the pre-term group than in the full-term group (p<0.05). Based on the coefficient of correlation between serum fatty acids in the mother and the umbilical cord, it turned out that in the full-term group, the newborn's umbilical cord serum fatty acids were not influenced by the levels of serum fatty acids in the mother. However, in the pre-term group, it seems to have positive correlations in terms of the levels of SFA, MUFA, PUFA and $\alpha$-linolenic acid. This study suggests that a lower status of $\omega$3 fatty acids in maternal and umbilical cord blood probably is a risk factor for pre-term birth.

관상동맥질환자의 혈청 지방산 조성에 관한 연구 (Serum Fatty Acids in Patients with Angiographically-Documented Coronary Artery Disease)

  • To study the relation between serum fatty acids and coronary artery disease(CAD), 194 subjects were randomly selected and divided into three groups(control, single vessel disease group(SVD), muliple vessel disease group(MVD)) according to the angiographic results. Total serum levels of fatty acids and serum phospholipid(PL)-fatty acids(FAs)were analysed using gas chromatography and their associations with CAD were examined. Different patterns of total serum fatty acid levels were found in men and women. Levels of most fatty acids of SVD and MVD were significantly lower in men, while those of MVD were significantly higher in women. In terms of PL-FAs in both men and women, the levels of PL-FAs follow the order of control < SVD < MVD and in women, the difference was significant. Various ratio(including ratios denoting the activites of desaturase and elongase) of total serum-and PL-FAs were similar in the three groups. In the relation of serum fatty acids to serum lipid profiles, PUFA & LDL showed a negative correlation, while, SFA & LDL-cholesterol and PUFA and HDL-cholesterol showed positive correlatons. correlations. Systolic blood pressure and alcohol intake levels negatively affected the levels of serum LA, AA, EPA and DHA in the risk factor analysis. These findings are consistent with other evidence indicating that fatty acid compositions are changed in CAD, especially on the concentration base and the change was related to the severity of the disease. Therefore, for the purpose of disease prevention and therapeutic use, balanced intakes of various fatty acids must be seriously considered.

쌀가루로 제조한 쌀 쿠키의 품질 특성 (Quality Characteristics of Rice Cookies using Rice Flour)

  • The author made rice cookies using 100% rice and measured their density, spreadability, color, hardness, and fatty acid contents. The density was not significantly different between wheat cookies and the rice cookies made here; however, the density of dough tended to be higher in the rice cookies. Spreadability tended to be lower in rice cookies than wheat cookies. Regarding the color of rice cookies, L, indicating brightness, was found to be higher in rice cookies than in wheat cookies, and a, indicating redness, was found to be lower in rice cookies than in wheat cookies. B, indicating yellowness, was not significantly different between wheat cookies and rice cookies, and hardness tended to be lower in rice cookies. Regarding fatty acid contents, saturated fatty acids such as myristic acids, palmitic acids, and stearic acids were found in rice cookies; However, the contents of saturated fatty acids tended to be lower in rice cookies than in wheat cookies. The monounsaturated fatty acids found in rice cookies were mainly oleic acids, and the polyunsaturated fatty acids found in them were linoleic acid, and these were found more in rice cookies than in wheat cookies. Concerning essential fatty acids such as linoleic acids, linolenic acids, or arachidonic acids, they were found more in cookies made of rice powder than in those made of wheat powder.

Regional Difference in Fatty Acid Content of Korean Shellfish

  • Regional variation in the fatty acid content of shellfish was investigated on 5 species of Korean shellfish including murex shell, ark shell, jack-knife clam, orient hard clam, and little neck clam that were originated from 2 geographically different regions in Korea (Region 1: South coast, $34-35^{\circ}N$, $127-129^{\circ}E$; Region 2: West coast, $36-38^{\circ}N$, $126-127^{\circ}E$). Significant regional difference in total fatty acids content was observed in murex shell and little neck clam (p<0.01), but not in the other species of shellfish. The contents of saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids including n-3 and n-6 fatty acids were appreciably higher in murex shell from Region 2 and in little neck clam from Region 1 than the shellfish originated from their counterpart areas (p<0.05). Nevertheless, relative percentages of the fatty acids remained constant within same species regardless of geographic regions or species. Considering the facts of that the fish/shellfish are unique sources of n-3 fatty acids and a little neck clam is the most-consumed shellfish in Korea, n-3 fatty acids intake might vary with the habitat of the shellfish that Koreans consume.

Anti-Inflammatory Effect of Asterias amurensis Fatty Acids through NF-κB and MAPK Pathways against LPS-Stimulated RAW264.7 Cells

  • Asterias amurensis (starfish) is a marine organism that is harmful to the fishing industry, but is also a potential source of functional materials. The present study was conducted to analyze the profiles of fatty acids extracted from A. amurensis tissues and their anti-inflammatory effects on RAW264.7 macrophage cells. In different tissues, the component ratios of saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids differed; particularly, polyunsaturated fatty acids such as dihomo-gamma-linolenic acid (20:3n-6) and eicosapentaenoic acid (20:5n-3) were considerably different. In lipopolysaccharide-stimulated RAW264.7 cells, fatty acids from A. amurensis skin, gonads, and digestive glands exhibited anti-inflammatory activities by reducing nitric oxide production and inducing nitric oxide synthase gene expression. Asterias amurensis fatty acids effectively suppressed the expression of inflammatory cytokines such as tumor necrosis $factor-{\alpha}$, interleukin-$1{\beta}$, and interleukin-6 in lipopolysaccharide-stimulated cells. Cyclooxygenase-2 and prostaglandin $E_2$, which are critical inflammation biomarkers, were also significantly suppressed. Furthermore, A. amurensis fatty acids reduced the phosphorylation of nuclear $factor-{\kappa}B$ p-65, p38, extracellular signal-related kinase 1/2, and c-Jun N-terminal kinase, indicating that these fatty acids ameliorated inflammation through the nuclear $factor-{\kappa}B$ and mitogen-activated protein kinase pathways. These results provide insight into the anti-inflammatory mechanism of A. amurensis fatty acids on immune cells and suggest that the species is a potential source of anti-inflammatory molecules.

일부 대학생의 지방산 섭취량과 섭취지방산의 w3, w6계 지방산 및 P/M/S 비율에 관한 연구 (A Study on w6/w3 and P/M/S Ratios of Fatty Acids Ingested by University Students)

  • The purpose of this study was to estimate the intake of individual fatty acid and eventually to contribute to the establishment of dietary guidelines and recommendations of fatty acids for the Koreans. The subjects consisted of female college students aged 20 to 29 years old. Their dietary intake was assessed twice. in summer and in winter, by means of a 24-hour dietary recall method. Food models and other measuring tools were also used. Concentrations of serm total triglyceride, total cholesterol and HDL-& LDL-cholesterol were measured. The subjects consumed 12.3g of polyunsaturated fatty acids, 14.3g of monounsaturated fatty acids and 14.99g of saturated fatty acids per day The ratios of polyunsaturated/saturated fatty acids( P/S) and polyunsaturatedimonounsaturatedi saturated fatty acids (P/M/S) taken by the subjects were 0.8/1.0 and 0.8/l.0/l.0, respectively. The ratio of w61w3 fatty acids was found to be 8.3/l.0. All of these values seem to fall in the desirable range. The percentages of total calorie from carbohydrate. fat and protein were 59.4%, 23.4% and 17.2%, respectively. The concentrations of serum total triglyceride, total cholesterol. HDL-cholesterol and LDL-cholesterol were 59.3ms/dl, 192.7mg/dl, and 59.0mg/dl, and 121.9mg/dl., respectively.

Fatty Acid Profiles of Marine Benthic Microorganisms Isolated from the Continental Slope of Bay of Bengal: A Possible Implications in the Benthic Food Web

  • Marine bacteria, actionmycetes and fungal strains were isolated from continental slope sediment of the Bay of Bengal and studied for fatty acid profile to investigate their involvement in the benthic food-web. Fifteen different saturated and unsaturated fatty acids from bacterial isolates, 14 from actinomycetes and fungal isolates were detected. The total unsaturated fatty acids in bacterial isolates ranged from 11.85 to 37.26%, while the saturated fatty acid ranged between 42.34 and 80.74%. In actinomycetes isolates, total unsaturated fatty acids varied from 27.86 to 38.85% and saturated fatty acids ranged from 35.29 to 51.25%. In fungal isolates unsaturated fatty acids ranged between 44.62 and 65.52% while saturated FA ranged from 20.80 to 46.30%. The higher percentages of unsaturated fatty acids from the microbial isolates are helpful in anticipating the active participation in the benthic food-web of Bay of Bengal.

Membrane Lipids of a Marine Ciliate Protozoan Uronema marinum

  • Lipid composition and fatty acid composition were characterized in the membrane of a marine ciliate protozoan (Uronema marinum). Phospholipids accounted for 70% of total lipid, and the remainder was neutral lipids. Total phospholipids were separated as phosphatidylcholine $(24.26\%)$, phosphatidylethanolamine $(22.21\%)$, phosphatidylinositol $(6.14\%)$, phosphatidyl­serne $(5.11\%)$, cardiolipin $(3.07\%)$ and unidentified phospholipids $(28.72\%)$ through high performance liquid chromatography (HPLC). Fatty acid composition of neutral lipids and phospholipids was determined by gas chromatography (GC), based solely on comparision of retention times. In neutral lipids, the most abundant fatty acid group was monounsaturated fatty acid $(48.3\% of total fatty acids)$ with oleic acid (18:1) and nervonic acid (24:1). Saturated fatty acids comprised $29.6\%$ of total fatty acids, with palmitic acid (16:0), stearic acid (18:0) ane myristic acid (14:0), and polyunsaturated fatty acid accounted for $33.0\%$ with $Di-homo-\gamma-linolenic$ acid (20:3) and linoleic acid (18:2). Wherease phospholipids predominantly contained the fatty acid group in the following order: polyunsaturated fatty acids $(52.7\%\;of\;total\;fatty\;acids)$ with linoleic acid (18:2) and $\gamma-linolenic$ acid (18:3) > monounsaturated fatty acids $(28.5\%\;of\;total\;fatty\;acids)$ with oleic acid (18:1) and palmitoleic acid (16:1) > saturated fatty acids $(25.5\%\;of\;total\;fatty\;acids)$ with palmitic acid (16:0), stearic acid (18:0) and myristic acid (14:0).

  • There is increasing awareness of the devastating socio-economic cost of cardiovascular disease. As a result there have been a lot of extensive researches both on basic mechanisms involved and on the areas of epidemiology and clinical trials. Now it is being generally accepted that dietary n-3 fatty acids abundant in marine products, may reduce the incidence of cadiovascular disease. Fish oil . with its complement of n-3 fatty acids, has been shown the have diverse and sometimes potent actions on cells of the blood and vasculature, which may explain some of its positive effects on vascular disease. However, the appropriate intake of n-3 fatty acids has not been established. This may vary with desired effects, the duration of ingestion, the type of seafood or fish oil and amount of other fatty acids, especially n-6 fatty acid being consumed in the diet. Although the beneficial effects have been extensively studied, little is known about potential adverse effects with excessive intake of n-3 fatty acids. Thus, it is needed to study on the possible unfavorable effects including genetic effects.

  • A study was carried out to investigate the effect of palm oil supplementation on the growth, carcass composition and fatty acid distributions of the broilers fed isonitrogenous and isocaloric diets. This study showed that palm oil supplementation increased feed consumption, weight gain and nitrogen intake. Feed conversion improved at higher fat inclusions, but not significant. Male birds consumed significantly more feed than females resulting in significant increase in energy consumption and weight gain. Increaseing fat content in the ME:P constant diet did not produce significant difference in the fat content of the chicken. Fatty acids content of the diet exert varying effects of the composition and distribution of fatty acids in muscles of the chicken. The fatty acids found in larger amount in the breast and thigh muscles were palmitic, oleic and linoleic. The fatty acids of the breast and thigh muscles were found to correspond the fatty acids of the diets. There were no differences in the fatty acids distribution patterns between the sexes.
