Food safety is a term broadly applied to food quality that may adversely affect human health. These include zoonotic diseases and acute and chronic effects of ingesting natural and human-made xenobiotics. There are two major areas of concern over the presence of residues of antibiotics in animal-derived foodstuffs with regard to human health. The first is allergic reactions. Some antibiotics, such as penicillins can evoke allergic reactions even though small amounts of them are ingested or exposed by parenteral routes. The second is development of antibiotic resistance in gut bacteria of human. Recently multi-resistant pneumococcal, glycopeptide-resistant enterococci and gram negative bacteria with extended-spectrum $\beta$-lactamases have spread all over the world, and are now a serious therapeutic problem in human. Although it is evident that drugs are required in the efficient production of meat, milk and eggs, their indiscriminate use should never be substituted for hygienic management of farm. Drug should be used only when they are required. In addition to veterinary drugs, environmental contaminants that were contaminated in feed, water and air can make residues in animal products. Mycotoxins, heavy metals, pesticides, herbicides and other chemicals derived from industries can be harmful both to animal and human health. Most of organic contaminants, such as dioxin, PCBs and DDT, and metals are persistent in environment and biological organisms and can be accumulated in fat and hard tissues. Some of them are suspected to have endocrine disrupting, carcinogenic, teratogenic, immunodepressive and nervous effects. The governmental agencies concerned make efforts to prevent residue problems; approval of drugs including withdrawal times of each preparation of drugs, establishment of tolerances, guidelines regarding drug use and sanitation enforcement of livestock products. National residue program is conducted to audit the status of the chemical residues in foods. Recently HACCP has been introduced to promote food safety from farm to table by reducing hazardous biological, chemical and physical factors. Animal Production Food Safety Program, Quality Assurance Programs, Food Animal Residue Avoidance Databank are para- or non-governmental activities ensuring food safety. This topic will cover classification and usage or sources of chemical residues, their adverse effects, and chemical residue status of some countries. Issues are expanded to residue detection methodologies, toxicological and pharmacokinetic backgrounds of MRL and withdrawal time establishments, and the importance of non-governmental activities with regard to reducing chemical residues in food.

MRI signals are significantly reduced by the magnetic field inhomogenity result from human body itself being consisted of various materials like air, fat, muscle, bone and blood vessels. In this study we used silicon which is tissue equivalent to compensate wound body shapes. Objects were eight adults who do not have any special symptoms. Feet were scanned because of their complicated structures and consequently signal reduction occurs a lot. Thirty images were acquired from the middle of arcus pedis longitudinalis including five distal phalanges parallel to the line connecting metatarsal bone and phalanges. SNR data from bones and soft tissues were compared before and after sticking silion between toes and paired t test was performed. It was came out that SNR data from bone and soft tissue were both significantly higher after applying silicon on both T1 and T2 weighted images and it was statistically meaningful having positive corelation. As a result, this study dramatically increases SNR without affecting object by increasing the object volume inside the surface coil.
Fat and fatty acids in muscle and adipose tissues are among the major factors influencing meat quality particularly nutritional value and palatability. The present study was carried out to examine the effects of supplementing inorganic selenium (Se), iodine (I) and a combination of both on fatty acid compositions in serum, and supraspinatus (SS), longissimus lumborum (LL), and semitendinosus (ST) muscles in goats. Twenty-four, 7 to 8 months old, Kacang male goats with a mean live weight of $22.00{\pm}1.17kg$ were individually and randomly assigned into four groups of six animals each for 100 d of feeding prior to slaughter. The animals were offered the same concentrate (basal) diet as 1% of body weight with ad libitum amount of fresh guinea grass. The four groups were as follows: T1 (control) - basal diet without supplementation; T2 - basal diet with 0.6 mg Se/kg DM; T3 - basal diet with 0.6 mg I/kg DM; T4 - basal diet with combination of 0.6 mg Se/kg DM and 0.6 mg I/kg DM. The major fatty acids (FAs) detected in the serum were palmitic (C16:0), stearic (C18:0), oleic (C18:1n9) and linoleic (C18:2n-6), while the major FAs in the selected muscles were C16:0, C18:0 and C18:1n9 acids. The main polyunsaturated fatty acids (PUFA) detected in muscles and serum were (CI8:2n-6), linolenic acid (C18:3n-3), and arachidonic acid (C20:4n-6). No significant differences (p>0.05) were observed in the concentration of total saturated fatty acids (SFA) among the four groups. PUFA concentrations in the goats supplemented with Se (T2) were significantly higher (p<0.05) than the goats of the control group (T1). The PUFA: SFA ratio was significantly higher in the animals supplemented with dietary Se (T2) than those of control ones (T1). It is concluded that dietary supplementation of inorganic Se increased the unsaturated fatty acids in muscle. The supplementation of iodine with or without Se had negligible effects on muscle fatty acid content of Kacang crossbred male goats.

This study was designed to evaluate the effect of a rice-based diet on body weight and serum lipid levels. Thirty male C57BL/6 mice were randomly divided into three groups and fed a high-fat diet (HFD), rice-based diet (RD), or bread-based diet (BD) for five weeks. Our results showed that the RD group had a significantly lower final body weight, although there was no significant difference in daily food intake among the groups. There was a reduction in body weight gains, adipose tissues weight, and adipocyte size of epididymal adipose tissue in the RD group (p<0.05). Also, serum triglycerides and total cholesterol in the RD group were significantly decreased compared to the BD group. RD also reduced fasting glucose and insulin levels. These results indicate that the intake of RD attenuates increases in body weight and serum lipid concentrations in mice, suggesting its benefits for the dietary control of obesity and hyperlipidemia.
The purpose of this study was to investigate the effects of Bacillus polyfermenticus KJS-2 (B. polyfermenticus KJS-2) and Angelica gigas Nakai extracts (AGNE) on hyperlipidermia. The purity of the major decursin and decursinol angelate (D/DA) in the AGNE were analyzed at 78%. Increased concentrations of AGNE (0.1-20 mg/ml) showed a higher 3-hydroxy-3-methylglutaryl (HMG)-CoA reductase inhibition activity. Endospore-forming B. polyfermenticus KJS-2 ($1{\times}10^9CFU/ml$) exhibited good bile tolerance (0.3 mm) on an agar plate. An animal study was carried out using different groups, including a normal control, positive control (atorvastatin), negative control (triton WR-1339), AGNE group, B. polyfermenticus KJS-2 group, AGNE + B. polyfermenticus KJS-2 group, and Atorvastatin + AGNE + B. polyfermenticus KJS-2 group to determine the effect of hyperlipidemia. There were no significant changes in body weight, kidney weight, or liver weight except for the liver weight of the triton WR-1339-treated group. Groups with AGNE and B. polyfermenticus KJS-2 had increased HDL-cholesterol and decreased total cholesterol and triglycerides. The liver histopathological results also showed that all AGNE and B. polyfermenticus KJS-2-treated groups contained lower fat accumulation in the liver tissues. The findings of this study verified that AGNE and Endospore-forming B. polyfermenticus KJS-2 combination materials have a hyperlipidemic effect.
In order to investigate the effect of dietary fatty acids on lipids metabolism in adipose pads and superficial pectoral muscle of chicks, the present, experiment was carried out using signle comb White Leghorn male chicks fed a fat-free diet and diets containing margaric, stearic or linoleic acids. Total lipids of tissues were extracted with a chlorofrom-methanol solution. The lipid components were fractionated by thin layer chromatography and the fatty acid distribution of lipid fractions was determined by gas liquid chromatography. The neck adipose pads contained 34-62% total lipids, in which triglycerides, were dominant, being 97-98%. Margaric, stearic and linoleic acids were distributed at a relatively high rate in the adipose tissue when the corresponding acids were fed, and margaric acid feeding lowered palmitoleic acid distribution and linoleic acid feeding elevated stearic acid distribution. The wet superficial pectoral muscle contained 1.3-1.7% total lipids, of which 77-79% was phospholipids and 11-13% was free cholesterol. When margaric acid was fed, margaric and heptadecenoic acids appeared in the muscle lipids. When linoleic acid was fed, this acid was significantly highly distributed in every muscle lipid fractions, whereas, when stearic acid fed no elevation of stearic acid distribution was observed. In the muscle phospholipids, oleic acid was significantly highly distributed in the stearic acid fed chicks, and the linoleic acid feeding signigicantly lowered the distribution value of palmitic and oleic acids, but elevated the distribution value of stearic acid. And the linoleic acid feeding lowered the distribution value of eicosatrienoic acid and elevated the distribution value of arachidonic acid.

Finding alternative feeds, such as sesame hulls and Prosopis juliflora species can attenuate difficulties of feed shortage and reduce the cost of animal feed in arid and semi-arid countries. Thirty-two Black male kids with similar initial weights (BW = $16.7{\pm}0.80\;kg$) and $120{\pm}5\;d$ of age, were used to evaluate the effect of replacing barley grains and soybean meal with Prosopis juliflora pods (PJP) and sesame hulls (SH) on growth performance, digestibility and carcass and meat characteristics. Kids were equally divided into four dietary treatment groups for an 84-d fattening period. Treatment diets had similar crude protein (CP) and metabolizable energy (ME). The treatment groups were: (T1) no PJP nor SH, (T2) 10% PJP and 20% SH, (T3) 15% PJP and 15% SH, and (T4) 20% PJP and 10% SH. A tendency was detected (p<0.08) for dry matter (DM), crude protein (CP), organic matter (OM) and neutral detergent fiber (NDF) intakes that were greater for T2 than T3 and T4 while T1 was not different from all other treatment groups. Ether extract (EE) intake was the greatest (p<0.05) for T2 and the lowest for T1. Acid detergent fiber (ADF) intake was greater (p<0.05) for T2 than T1 while T3 and T4 were intermediate. Final live weight, average daily gain (ADG) and feed conversion ratio (FCR) were comparable among different treatment groups. Digestibility of DM, OM, CP, NDF and ADF were similar among all treatment groups, however, EE digestibility was the lowest (p<0.05) for T1 when compared to other treatments. In addition, nitrogen intake, nitrogen in urine and retained and retention percentages were similar among all treatment groups. However, N loss in feces was higher (p<0.05) for T2 than T3 and T4 while T1 was intermediate. No differences were observed among treatment groups with respect to fasting live weight, hot and cold carcass weights, dressing-out percentages, mesenteric fat, visceral organs, carcass cuts percentages and carcass linear dimensions. No differences were also observed for dissected loin, leg, rack and shoulder tissues except in the total bone % for loin cuts and in the meat to bone ratio for rack cuts. T3 has the greatest total bone % and the lowest meat to bone ratio when compared to all other treatment groups. No differences were observed between treatment groups in all quality characteristics of the longissimus muscle. The present study demonstrates the potential of using PJP and SH for growing kids without adverse effects on growth performance, carcass characteristics and meat quality.

BACKGROUND/OBJECTIVES: Recently, anthocyanins have been reported to have various biological activities. Furthermore, anthocyanin-rich purple corn extract (PCE) ameliorated insulin resistance and reduced diabetes-associated mesanginal fibrosis and inflammation, suggesting that it may have benefits for the prevention of diabetes and diabetes complications. In this study, we determined the anthocyanins and non-anthocyanin component of PCE by HPLC-ESI-MS and investigated its anti-diabetic activity and mechanisms using C57BL/KsJ db/db mice. MATERIALS/METHODS: The db/db mice were divided into four groups: diabetic control group (DC), 10 or 50 mg/kg PCE (PCE 10 or PCE 50), or 10 mg/kg pinitol (pinitol 10) and treated with drugs once per day for 8 weeks. During the experiment, body weight and blood glucose levels were measured every week. At the end of treatment, we measured several diabetic parameters. RESULTS: Compared to the DC group, Fasting blood glucose levels were 68% lower in PCE 50 group and 51% lower in the pinitol 10 group. Furthermore, the PCE 50 group showed 2-fold increased C-peptide and adiponectin levels and 20% decreased HbA1c levels, than in the DC group. In pancreatic islets morphology, the PCE- or pinitol-treated mice showed significant prevention of pancreatic ${\beta}$-cell damage and higher insulin content. Microarray analyses results indicating that gene and protein expressions associated with glycolysis and fatty acid metabolism in liver and fat tissues. In addition, purple corn extract increased the phosphorylation of AMP-activated protein kinase (AMPK) and decreased phosphoenolpyruvate carboxykinase (PEPCK), glucose 6-phosphatase (G6pase) genes in liver, and also increased glucose transporter 4 (GLUT4) expressions in skeletal muscle. CONCLUSIONS: Our results suggested that PCE exerted anti-diabetic effects through protection of pancreatic ${\beta}$-cells, increase of insulin secretion and AMPK activation in the liver of C57BL/KsJ db/db mice.
An experimental study was done on rabbits to observe the effects of several anticlonorchial drugs on the pathology of the liver infested with Clonorchis sinensis. After two months of infestation with Clonorchis sinensis by giving $400{\sim}500$ metacercariae by mouth, hexachlorophene, chloroquine 2,2' methylenebis (3,4,6 trichlorophenoxy acetic acid) and Hetol were administered orally and follow up macro-and microscopic studies of the liver pathology were done in 2 to 3 days, one month, 2 months and 3 months after the completion of medications. The results obtained in this study are as follows: 1. In both groups which were administered hexachlorophene piperazine 20mg/kg for seven days or 8mg/kg for 18 days, the macroscopic findings of the liver after 3 months revealed only minimal changes of the color and consistency The histopathological findings were the reduction of fibrosis, pseudolobulation, proliferation and adenomatous hyperplasia of bile ducts, and regeneration of liver parenchyma. 2. In groups which were administered chloroquine phosphate 20mg/kg for 18 days or 40mg/kg for 5 days, and also in groups which were administered dithiazanine iodide 30mg/kg for 18 days or 60mg/kg for 5 days, no significant findings of recovery were observed either macroscopically or microscopically. 3. In the group which was given 20mg/kg of 2,2' methylenebis(3,4,6 trichlorophenoxy acetic acid) for 5 days, prominent healing of the damaged tissues was observed after 2 months, revealing the decrease of fibrous tissue, caliber of bile ducts and adenomatous hyperplasia of the epitherial cells of the bile ducts, and regenerationof liver parenchyma. 4. In the group which was given Hetol 200mg/kg for 5 days, swelling, congestion and eddish-brown discoloration of the liver were noted macroscopically after 3 days of completion of drug administration. Hemorrhage, congestion, necrosis and degeneration of the parenchyma were observed microscopically After 10 days, liver appeared almost normal macroscopically, but marked fat degeneration was noted microscopically. After 2 months, the liver was almost normal in gross appearence with only slight atrophy and also marked healing was observed microscopically, i. e. decrease of fibrous tissue and reduction of the previously enlarged bile duct and the regeneration of the liver parenchyma.
