Meat Quality of Belly and Shoulder Loin According to Various Producing District (산지별 돈육 삼겹살과 목심의 품질특성)

  • This experiment was carried out to investigate characteristics of pork quality according to various producing district. The results of whole component analysis of pork according to diverse producing district were showed high level of fat content in Jeju island-belly and shoulder loin than other pork samples. And saturated fatty acid contents of Jeju island-belly and shoulder loin of pork were showed 46.6 and 41.6%, respectively, and unsaturated fatty acid contents of Jeju island-belly and shoulder loin of pork were showed 50.3 and 58.4%, respectively. Chungbuk-pork was relatively showed high level of cholesterol content than other pork samples. On the other hand, cholesterol contents of Jeju island-belly and shoulder loin of pork were showed 565.6 and 507.6 ${\mu}g/g$, respectively. Skatole contents of Jeju island-belly and shoulder loin of pork were showed low level(0.013 and 0.065 ${\mu}g/g$) than other pork samples. This results mean that Jeju island-belly and shoulder loin of pork have less order than other pork samples. The chewiness of texture that consumers feel the biggest difference in palatability of meat showed significantly high level(376.5 g) in Jeju island-belly of pork(p<0.05). This result represent that Jeju island-belly of pork have the best sense of the texture than other pork samples. $L^*$(lightness) value of ground pork was generally showed high value in belly than shoulder-loin of pork. However, $a^*$(redness) value of ground pork showed high value in shoulder-loin than belly of pork. And there was no significant difference in $b^*$(yellowness) value among the samples(p>0.05). The results of sensory test(taste, flavor, texture and palatability) from pork according to various producing district showed good flavor and palatability in Jeju island-belly of pork but there was no significant difference among the samples(p>0.05).

Effects of Dietary Beef Tallow, Soybean Oil and Squid Liver Oil on Growth and Body Composition of the Korean Rockfish Sebastes schlegeli, and Biochemical Changes with Starvation (사료 지질원으로 우지, 대두유 및 오징어 간유 첨가에 따른 조피볼락 Sebastes schlegeli의 성장 및 체성분 변화와 절식시 체내 대사)

  • The effects of different dietary lipids on growth, body chemical composition, and nutrient partition of the Korean rockfish (43 g of initial mean weight) were studied. Fish were fed three experimental diets containing 1) $4.5\%$ squid liver oil, 2) $1\%$ squid liver oil and $3.5\%$ beef tallow, and 3) $1\%$ squid liver oil and $3.5\%$ soybean oil. Growth and feed efficiency were detarmined during a 19-week feeding period at water temperature of $15.5^{\circ}C$, and at the end of which body chemical compositions were analyzed. Remained fish were fasted for 45 days, and four fish were taken at 6, 12 and 24 hours, and 3, 15 and 45 days after the fasting to determine tissue compositions and hematological changes. Growth, feed efficiency, protein and lipid retention efficiency, hepatosomatic index(HSI), viscerosomatic index (VSI), and chemical composition of whole body and dorsal muscle were not affected by the different dietary lipids. Liver moisture content of fish fed squid liver oil diet was higher than that of fish fed beef tallow or soybean oil diet. Liver lipid content of fish fed beef tallow diet was higher than that of fish fed the other diets. Fatty acid composition of dorsal muscle and liver were affected by the different dietary lipids ; high levels of 20 : 5n-3 and 22 : 6n-3 from fish fed the diet containing squid liver oil, 18 : 1 from fish fed the diet containing beef tallow, and high 18 : 2n-6 and 18 : 3n-3 from fish fed the diet containing soybean oil were observed. Both HSI and VSI of fish fed three diets decreased with time after the begining of starvation. Liver glycogen did not change during the first 15 days of starvation and decreased thereafter, and that was not affected by the different dietary lipids. Lipid and protein contents in the dorsal muscle of fish decreased up to 15 days of starvation and remained unchanged thereafter, these were not different from each other. Glucose, free fatty acid, triglyceride and phospholipid concentrations in Fish serum were varied for the first 15 days of starvation, after that the concentrations of fish serum remained relatively stable in all the treatment groups with prolonged starvation. The results indicate that Korean rockfish can utilize fish oil, animal fat or vegetable oil equally as energy source when n-3HUF A is adquate.

Effects of Addition of Perilla Leaf Powder and Carcass Grade on the Quality and Palatability of Pork Sausage (깻잎 분말 첨가와 도체등급이 돈육소시지의 품질 및 기호성에 미치는 영향)

  • This study was carried out to clarify the effect of addition of perilla leaf powder (PLP) and carcass grade on the quality and palatability of pork sausage. The chemical composition, pH, calorie, water holding capacity, surface color, textural properties and amino acid composition of the samples were determined, and sensory characteristics were evaluated. Moisture and crude ash were not different among sausage of four type. Crude fat of grade B sausage was higher than that of grade E sausage, and grade B sausage added PLP was higher than grade B sausage without PLP. Crude Protein of grade E sausage was higher than that of grade B sausage. The pH of grade E sausage added PLP was highest, and calorie of grade B sausage without PLP was highest among sausage of four type. Water holding capacity of grade B added and free PLP was significantly higher than grade I sausage. The residual nitrite of sausage added PLP was significantly lower than sausage without PLP. In case of Hunter's $L^{*}$, grade B sausage and free PLP sausage were significantly higher than grade E sausage and sausage added PLP, respectively. In case of Hunter' $a^{*}$, grade E sausage and free PLP sausage were significantly higher than grade B sausage and sausage added PLP. Hunter's $b^{*}$ of sausage added PLP was higher than that of free PLP sausage. Textural properties, hardness, springiness, cohesiveness and chewiness were significantly different among sausage of four type, but gumminess of grade E added PLP was lowest among sausage of four type. Total amino acid was not significantly different among sausage of four type. Sensory color and texture of grade B sausage were superior to grade I sausage, palatability of free PLP sausage was superior.sage was superior.

Effects of Seeding Dates and Growth Periods on the Growth Characteristics, Dry Matter Yield and Feed Value of Corn for Silage in Paddy Field (논토양에서 파종시기와 재배기간이 사일리지용 옥수수의 생육특성, 건물수량 및 사료적 가치에 미치는 영향)

  • This study was carried out to investigate the effects of the seeding dates and growth periods on the growth characteristics, dry matter yield and feed value of corn for silage in paddy field. The experimental design was arranged in a randomized block design with three replications. Treatments consisted of five seeding dates, 1 May (T1), 8 May (T2), 15 May (T3), 22 May (T4) and 29 May (T5). And harvesting time homologized by August 24. Therefore, growing periods were 115 days (T1), 108 days (T2), 101 days (T3), 94 days (T4) and 87 days (T5), respectively. In maturities at harvest time, T1, T2, T3, T4 and T5 were full dent, early dent, late dough, dough and early dough stage, respectively. Plant height and numbers of root system were highest in T5 (p<0.01), but leaf length was higher in T4 than others (p<0.05). Dead leaf, tip filling degree and ear circle were higher in T1 than others (p<0.05, 0.01). Leaf width, ear height, leaf number, ear length, stem diameter, stem hardness and brix were not significantly different among the treatments. Dry matter yield and TDN yield were higher in the order of T1 > T2 > T3 > T4 > T5 (p<0.01). Crude protein, crude ash, NDF, ADF and crude fiber were significantly higher in T4 (p<0.05, 0.01). But crude fat was the highest in T1, T3 was the lowest as compared to other treatments (p<0.01). Total EAA(essential amino acids) were higher in order of T4 > T3 > T1 > T2 > T5, and total NEAA (nonessential amino acids) were higher in order of T1 > T4 > T2 > T3 > T5, and total amino acids were higher in order of T4 > T1 > T3 > T2 > T5. But no significant differences were found among the treatments. TUFA (total unsaturated fatty acid) and TSFA (total saturated fatty acid) were in order of T1 > T2 > T3 > T5 > T4 (p<0.01). Minerals were the highest in T4 (4,721.25 mg/kg), and T2 (2,970.80 mg/kg) was the lowest as compared to other treatments (p<0.05). Based on the above results, seeding dates could be recommended as early May, and harvest times is yellow ripe stage for qualitative and quantitative production of corn for silage in rice paddy field soil.

Effect of Forage Feeding Level on the Milk Production Characteristics of Holstein Lactating Cows (조사료 급여 수준이 Holstein 착유우의 산유 특성에 미치는 영향)

  • This study was performed on two groups (10 cows) for primiparous Holstein lactating cows (av. 98 days in milk : DIM) which were divided into low forage diet (LF) and high forage diet (HF) groups based on forage : concentrate ratio (F : C ratio). The F : C ratios of LF and HF groups were 37:63 and 62:38, respectively. Concentrate intake was significantly higher in the LF group than the HF group whereas the HF group showed higher forage intake (12.9 kg) compared to the LF group (7.4 kg) (p<0.05). No significant difference was observed in total feed intake between the HF (20.9 kg) and LF (19.4 kg) group (p>0.05), but the HF group tended to be higher. CP, TDN and NEL intake showed no significant difference between the two groups (p>0.05). Though, there was no significant difference on actual milk between the two groups (26 vs. 23.9 kg/d, p>0.05), the LF group tended to be higher. 4% FCMs of LF and HF groups were 22.8 and 22.3 kg/d, respectively, and showed no significant difference (p>0.05). The HF group was higher in fat content and lower in MUN. C14:0, C16:0 and C16:1n7 of milk fatty acid were significantly higher in the HF group (p<0.05), but there were no differences in other milk fatty acids between the two groups. As a result, increasing high quality forage such as BIRG silage and hay in the diet will not only fulfill nutrient requirements but also reduce milk production.

Comparative Analysis of Nutrients and Hazardous Substances in Zophobas atratus Larvae (탈지 전, 후 아메리카왕거저리(Zophobas atratus) 유충의 영양성분 및 유해물질 비교분석)

  • The nutritional composition and optimal eating stage of the super mealworm, Zophobas atratus (Coleoptera : Tenebrionidae), were investigated to explore its use as a food ingredient. It was determined that 10th instar larvae were most suitable for eating in terms of nutritional value as well as economic aspects. To improve the quality of powder production, the nutritional value of 10th instar larvae before and after degreasing was analyzed. After drying the larvae powder, crude protein was the most abundant nutrient both before (52.3%) and after (60.6%) degreasing while crude fat measured 36.3% and 21.7% before and after degreasing, respectively. In terms of essential amino acids, leucine levels were highest and 1.3 times greater after degreasing (4.5%) than before (3.5%). Oleic acid, the highest unsaturated fatty acid in larvae, was 31.7% after degreasing which was 1.1 times higher than before (33.2%). Among various major minerals, potassium was most abundant and 1.4 times higher after degreasing (1267.0 mg/100 g) than before (879.3 mg/100 g). Harmful substances were 1.3 to 2.0 times lower in the degreased larvae, although mercury or pathogenic bacteria were not detected in either group. We therefore conclude that degreased Z. atratus larvae are more suitable for eating than before degreasing.

An Optimum Harvest Time for Making Grinded Silage of Barley and Wheat for Whole Crop (총체맥류 분쇄 사일리지 조제를 위한 적정 수확시기)

  • This study was carried out to investigate the optimal harvesting time, feed value and fermentation quality of barley and wheat for the making of chopped whole crop silage substitute for formula feed. As a result, the moisture content of barley and wheat decreased with a late harvest, and barley progressed faster than wheat. The plant height was similar with harvesting time, and the number of spikes decreased with prolonged period after heading. The dry matter yield and TDN yield of barley harvested at 35 and 40 days after heading were significantly higher than those at 30 days after heading and wheat was significantly higher at 40 and 45 days than at 35 day after heading(p<0.05). Crude protein content of barley and wheat were increased with later harvesting time, and crude fiber, crude fat and crude ash were slightly decreased, but not statistically significant. NDF and ADF content of barley decreased with later harvesting time, and those showed similar level in wheat. TDN content of barely was slightly increased but there was no difference in wheat. Comparing the effects of fermentation on feed value of chopped whole crop silage, the approximate compositions were slightly increased after fermentation, but the difference was not significant. Fermentations resulted in increasing the pH value of barley silage with late harvesting time, but decreasing the lactic acid content(p<0.05). A pH value of wheat silage showed similar level in different harvest time, and lactic acid content was decreased. Considering the quantity and quality of fermentation, barley and wheat can be used for making chopped silage of whole crop silage when they were harvested at 35 days and 40~45 days after heading, respectively.

Comparison of Cholesterol Contents and Fatty Acid Composition in M. longissimus of Hanwoo, Angus and Wagyu Crossbred Steers (한우, 앵거스 및 화우 교잡종의 등심내 콜레스테롤 함량 및 지방산 조성 비교)

  • Although beef provides high quality proteins as well as vitamins and minerals, its concentrations of saturated fatty acids and cholesterol give negative impression to some consumers on the other hand. Excess fat, especially cholesterol contents in beef is related with metabolic diseases such as atherosclerosis and hypertension. Unfortunately, the data for the relationship of marbling degree and cholesterol contents in Hanwoo beef is very limited. The objectives of the current study were to provide basic data about cholesterol contents in Hanwoo beef and to compare those among beef cattle breeds using 61 Hanwoo and 15 each of Angus and Wagyu crossbred steers. Samples were collected from M. longissimus area and cholesterol concentrations and fatty acid compositions were analyzed using gas chromatography. Cholesterol concentrations in Hanwoo beef ranged from 32.36 mg/100g to 75.42mg/100g depending on individuals. In Angus, cholesterol contents in lowest marbling degree of “Practically devoid” was 56.84mg/100g, whereas it was 72.85mg/100g in the highest marbling degree of “Abundant” showing increase in cholesterol concentrations as the marbling degree increases. For Wagyu crossbred steers, it was 69.23mg/100g and 78.93 mg/100g for marbling degree of “Practically devoid” and “Abundant”, respectively, showing similar cholesterol concentrations to Angus steers but still much higher than Hanwoo steers. The ratio of unsaturated fatty acids:saturated fatty acids for Hanwoo, Angus and Wagyu Crossbred were 1,48, 1.08 and 1.17, respectively. And the ratio of monounsaturated fatty acids : saturated fatty acids were 1.41, 1.03, and 1.10, respectively showing significantly higher ratios in Hanwoo steers. In conclusion, cholesterol contents and saturated fatty acids in M. longissimus of Hanwoo steers were significantly lower while unsaturated fatty acids were higher comparing to those in Angus or Wagyu Crossbred steers. Further studies, however, considering genetic backgrounds, feeding conditions, slaughtering age, number of samples and location of sampling of experimental animals are necessary.

Effects of Dietary Herbaceous Peat on In Vitro Fermentation and Milk Production in Dairy Cows (허브부식토의 사료내 첨가에 따른 In Vitro 발효특성과 젖소의 유생산성에 미치는 영향)

  • This study was conducted to determine effects of dietary herbaceous peat on in vitro fermentation and milk production in dairy cows. Ruminal pH, gas production, VFA (volatile fatty acid), Ammonia-N, and rumen degradability were examined by the addition of three times over 0, 1, and 5% herbaceous peat with substrate of timothy hay, and the change of rumen fermentation characteristics were evaluated. In 0, 3, 12 and 24 hours cultivation, all treatments did not show a significant difference but the control at 6 hours appeared significantly lower pH compared to 1 and 5% treatments (p<0.05). The gas production of the treatments significantly increased until 12 hours of cultivation compared to control (p<0.05), the rumen ammonia concentration showed a tendency to increase until 24 hours in all treatment groups, and there was no significant difference between treatments. About the rumen degradability, 5% treatment showed higher rumen degradability in all hours than control and 1% treatment (p<0.05). Meanwhile, for in vivo trial, 16 heads of Holstein lactation dairy cows were selected for experiment for four weeks in order to research the change of milk yield, milk compositions and change of somatic cell counts of lactation dairy cows by herbaceous peat feeding. The milk yield of vitamin C and herbaceous peat treatments (T3) was 25.0 kg but the control was 23.2 kg, herbaceous peat treatment (T1) was 23.1 kg, and vitamin C treatment (T2) was 23.4 kg, so there was linear increase effect of milk yield by T3. The partial significance of the milk (fat, milk protein, lactose, MUN and SNF) and change of somatic cell count before and after experiment by the control and treatments about change of milk and somatic cell counts (p<0.05) were recognized. About change of milk in the first half (1~2 weeks) and latter half (3~4 weeks) during four weeks of experiments period, the herbaceous peat supplement treatments showed a tendency of significant decrease of quality of milk protein and SNF. The control and treatments did not show significant change of blood nutrients (total protein, cholesterol, NEFA, BUN), liver function component (AST, GGT) and minerals (Ca, P, Mg) before and after experiment. In summary, it is judged that herbaceous peat feeding for lactation dairy cows would be recommendable based on the results of milk, somatic cell count physiologically.

Effect of Fish Oil Diet on Blood Pressure and Lipid Metabolism in Spontaneously Hypertensive Rat -Changes in Serum Lipid Status- (어유식이가 본태성고혈압쥐(SHR)혈압 및 지질대사에 미치는 영향 -혈청지질상태를 중심으로-)

  • The present study was designed to examine the effect of dietary fish oil on blood pressure and lipid status of serum. Weanling SHRs and normotensive Wistars were fed a diet containing 5%(w/w) mackerel oil(MO), soybean oil(SO) or beef tallow(BT) for 8 weeks. Growth rate was not significantly different among three dietary groups, but that of SHRs was silightly lower than that of Wistars. SHRs showed higher systolic blood pressure than Wistar rats from the beginning and become hypertensive (over 150mmHg) after 6 week s of feeding period. The MO group of SHRs showed the lowest blood pressure at the 8th week of feeding period but that of Wistars showed similar values with other groups. Tissue weights of liver, heart and kidney were not different amongdietary aroups in Wistars and SHRs. However, heart and kidney weights of SHRs were significantly higher than those of Wistars. Microscopic examination revealed that endomysium of heart tissue and urinary space of kidney were narrowed in SHRs. Serum total and HDL-cholesterol showed similar values among three different dietary fat groups but triglyceride levels were significantly low in MO groups. HDL-cholesterol levels of SHRs were lower than those of Wistars, as well as the fractions of total HDL, the sum of HDL and $HDL_{2+3}$, while VLDL fractions were higher in SHRs. MO groups had the lower values of $HDL_1,\;HDL_{2+3}$ratio than SO and BT groups. Major dietary fatty acids were more or less incorporated into serum phospholipid and triglyceride, resulting in the characteristic fatty acid profile of each dietary group. Incorporation of $C_{18:2}({\omega}_6)$ in SO groups were pronounced, but the degree of incorporation was lower in SHRs. In Mo groups, $C_{22:6}({\omega}_3)$ levels were inreased in triglyceride. It is suggested that these changes in serum lipid fatty acid composition are related to the different patterns of serum lipid by alteration of dietary fats.
