This study carried out to evaluate TMDI(theoretical maximum daily intake) and EDI(estimated daily intake) for Korean by using MRLs, food intake, residue data, and correction factors and compare with ADI(acceptable daily intake) in order to estimate the health risk based on the pesticide exposure.
A study was conducted to investigate nitrogen balance and to estimate daily nitrogen requirement in 43 Korean female college students students maintaining their usual diet and activity levels. Nitrogen intake and excretion were measured in two separate peroids about one month apart, each period lasting for 3 days. Nitrogen intake was assessed by duplicate portion analysis of diet, and N excretion in faces and urine were measured during the study period. Mean daily nitrogen intake level was 129.3mg/kg B.W and the apparent digestibility of nitrogen was 76%. Mean daily urinary nitrogen excretion was 113.5mg/kg BW. 895 of total nitrogen intake. Mean daily nitrogen balance of subjects was -14.5mg/kg BW. Mean daily requirements of nitrogen for 0 balance, calculated by regression analysis of N balance and energy-adjusted N intake. were 1) 197.mg/kg B.W with the present energy intake level of the study subjects. 2) 157mg/kg B.W when energy intake is sufficient to maintain energy balance, and 30 130mg/kg B.W. when energy intake is Korean RDA level for moderate activity. When energy intake level is sufficient to meet their requirement, daily protein requirement for 0 balance is about 1.0g/kg B.W. The results of this study indicate that nitrogen intake level of young female college students is not sufficient to meet their requirements, and they should increase protein intake together with increase in energy intake.
This study was designed to estimate the sodium intake of preschool children . To determine the sodium intake & excretion of preschool children in Korea, dietary behaviors, anthropometry, intakes of dietary nutrients, urinary sodium excretion and preference for salty foods were measured in 42 preschool children (male 26 , female 16, average6.5 years old) and their mothers. The results are summarized as follows. Mean daily urinary sodium excretion was 52.7 mEq(1,212.1mg). This value did not show remarkable change compared with the other studied that were accomplished in the similarage group for about the last ten years. And the subjects showed lower preference for salty taste than those of elementary school children and adults. Mean daily urinary sodium excretion were significantly correlated with the frequency of eating out (p<0.01), potassium intake(p<0.001) and urinary sodium to potassium excretion ratio(p<0.001). But there weren't any correlations with mean daily sodium intake, blood pressure, dietary nutrients intake and the preference for salty taste.

The purpose of this study was to estimate daily intake of manganese in Korean adults. Manganese intake was estimated through the use of the database of manganese content in frequently consumed Korean foods after first conducting anthropometric measurement and a survey on dietary intake with 354 Korean adults. Average age, height, weight and body mass index were 54.6 years, 165.7 cm, 67.2 kg and $24.5\;kg/m^2$ in males and 53.8 years, 153.7 cm, 59.1 kg and $24.9\;kg/m^2$ in females. The daily energy intakes of subjects were 1740.1 kcal in males and 1432.6 kcal in females. Male and female subjects recorded, respectively, 5.2 mg and 4.1 mg in manganese intake indicating that the male subjects consume more manganese (p<0.001). And they posted, respectively, 3.0 mg and 2.9 mg in manganese intake per 1000 kcal of energy consumption; it turned out that there was no significant difference. Daily manganese intake of both males and females posted, respectively, 148.8% and 135.2% of the adequate intake, and 8 males and 3 females surpassed the tolerable upper intake level. It is suggested that the study for accurate determination of manganese consumption needs to be more diversified based on the database of manganese content in Korean foods.
This study was carried out to estimate the dally intake of lead and the relationship among dietary In take, serum level, and urinary excretion of calcium In 30 healthy adults living In rural area of Korea (12 males and 18 females). Analyses for the nutritional status of the subjects were performed by 3-day dietary intake record, duplicated diet collection, 24-hour urine collection, and venous blood sampling. The results were as follows The mean daily intake of energy was 2,176.3kcal and 1,613.9kcal in males and (tamales of 20∼49years, and 1,914.8kcal and 1,517.9kcal in males and females of 50∼59years, respectively The ratio of carbohydrate : fat : protein was 73.4:13.6:13.0 in males and 76.4:10.3:13.3 In females. The mean daily intake of lead was 277.2Pg in males and 192.0ug in females. The mean daily intake, serum level, and urinary excretion of calcium were 491.1mg, 8.9mg/dl, and 80.7mg in males and 426.7mg, 8.8mg /dl, and 80.3mg in females, respectively. No significant correlation was found between the daily lead intake and the dietary intake, serum level, and urinary excretion of calcium. It was concluded that the daily lead intake was lower than the acceptable daily lead intake of FAO/WHO but a little higher than that of other investigations. And the daily lead intake was not level that relate to calcium status seriously.

Mean daily energy intake level calculated from diet records was 28.5 kcal/kgB.W(1, 476 kcal/day), and similar to the level of 27.8 kcal/kgB.W(1, 438 kcal/days) obtained from the chemical analysis of duplicate portions. Mean daily energy expenditure, calculated from activity records of each subject, was 34.6 kcal/kgB.W, or 1.39 times BMR, which corresponds to light activity level. Mean daily energy balance of subjects was -5.9 kcal/kgB.W. Mean daily requirement of energy, calculated from the activity records of the subjects, was 34.6 kcal/kgB.W, similar to the level of the Korean RDA for light activity level. The results of this study indicate that 1) the activity level of the study subjects corresponds to the sedentary level ; 2) present Korean RDA for energy for light activity is adequate for the subjects ; and 3) the subjects should increase their energy intake since they are largely in negative energy balance.
Three-day dietary records data from 237 college students(male 65, female 172) were used as the basis to estimate total dietary fiber(DF) intake of Korean adults & to investigate the major food sources of fiber. Mean daily DF intake of the subjects was 15.2$\pm$3.7g range being 7.5-34g When related to energy intake women consume more DF(7.7$\pm$1.5/1000kcal) than men(6.8$\pm$1.7g/1000kcal) Mean daily crude fiber(CF) intake of the subjects was 6.2$\pm$2.4g The mean DF:CF ratio for the subjects was 2.5$\pm$0.5 indicating that DF intake is 2-3 times of CF intakes The intakes of the two measures of fiber were highly correlated(r=0.791) The major food sources for DF in Korean are vegetables cereals and fruits and 14.3% respectively In comparision with limited international data on the DF intake by adults DF intake by the subjects was similar to those of developed countries. Present study indicates that DF intakes of the subjects are considerably lower than recommended level and they need to consume more DF than the present level.
This study was designed to estimate mean daily iron intake and its bioavailabi- lity and to assess nutrition knowledge for 144 pregnant women in the last trimester. Serum ferritin concentration was analyzed to estimate their iron stores. Dietary intakes of iron(heme iron and nonheme iron), the amounts of MPF(meat, poultry and fish) and ascorbic acid were assessed by modified 24-hr recall method. The food frequency questionnaire was used to assess subjects usual food consumption patterns. The mean value of serum ferritin was $21.3\pm{15.2ng/ml}$ and 26.4% of the pregnant women had a serum ferritin level <12ng/ml(i.e. depleted iron stores). The mean daily intake of total orin in the pregnant women was 56.5%(17.0mg) of RDA and heme iron intake was 0.94mg which was 5.5% of total iron intake. Total absorbable iron calculated by the method of Monsen was 2.41mg and bioavailability of dietary iron was 2.41%. Food frequency test score of meats group was positively correlated(r=0.443) with the bioaavailability of dietary iron. The mean score on the nutrition knowledge test of subjects was 12.76(out of a possible 20 points). These results indicate that the nutritional iron status may be improved by increasing either the amount of iron in the diet or its availability.
The purpose of this study was to estimate the daily manganese (Mn) intake of Korean children. This study was done using a three-day dietary intake survey of 257 Korean children (boys 123; girls 134). The Mn intake values were calculated based on a database that provides the Mn content of the frequently consumed Korean foods, alongside the food composition table provided by the Korean National Rural Living Science Institute. The average age, height, weight and body mass index of our subjects were 11.9 years, 155.4 cm, 48.9 kg and 20.2 kg/$m^2$ in boys and 11.9 years, 154.1 cm, 43.5 kg and 18.3 kg/$m^2$ in girls. The average daily energy intakes were 2,249.2 kcal in boys and 2,044.5 kcal in girls. Boys consumed significantly more Mn than girls, based on intake estimates of $4,585.3{\mu}g$ (117.6% of adequate intake) and $4,029.3{\mu}g$ (117.1% of adequate intake), respectively (P < 0.001). Boys had a Mn intake of $2,041.1{\mu}g$ per 1,000 kcal of energy consumption, whereas for girls this was at $1,983.9{\mu}g$ per 1,000 kcal. Neither group exceeded the tolerable upper intake level for Mn. The major food groups which contributed to Mn intake in our subjects were cereals (50.8%), vegetables (21.0%), seasonings (8.9%), and pulses (7.7%). Notably, boys derived a higher Mn intake through cereals and vegetable than did girls (P < 0.001, P < 0.05). The key food sources of Mn, in descending order, were rice, soybean curd, kimchi, black rice and cereals. We propose that the results of our study may be used as a basis for follow-up studies that examine the Mn intake of children.
This study aimed to estimate daily intake of anthocyanins and to identify major sources of anthocyanins in current Korean dietary patterns in order to implement dietary recommendations for the improvement of Korean health. Sixteen foods were selected based on the availability of food intake and reliable anthocyanin content. Food intake data from the Korea National Health and Nutrition Examination Survey 2014 and anthocyanin content data from earlier investigations were used to calculate the consumption of anthocyanins. Anthocyanin contents of 16 foods varied significantly and exhibited a range of 0~4,009 mg/100 g of fresh weight. Daily intake of anthocyanins was estimated to be 3.3 mg to 95.5 mg in Koreans. Of the 16 foods studied, the source contributing most to anthocyanin intake in the Korean population was plums (35.1%), followed by black beans (17.1%) and grapes (15.2%). These results indicate that major foods contributing to anthocyanin consumption in the Korean dietary pattern are fruits and grains.
