가열 및 저장조건에 따른 호박즙의 이화학적 성분변화 (Changes in Physicochemical Components of Stewed Pumpkin Juice Heated and Stored under Different Conditions)

  • This study was designed to determine the most suitable manufacturing conditions of stewed pumpkin juice(SPJ) in terms of nutrition and taste. Well ripened pumpkin was heated for 3, 4, 5, 6 and 7 hours in a pressure cooker and then extracted and packed in retort pouches. These were kept at 4$^{\circ}C$ and 28$^{\circ}C$ for 30 days, respectively and changes of the physicochemical components of SPJ were investigated. The free amino acid compositions of pumpkin and SPJ occupied asparagine, aspartic acid, glutamine, arginine and serine in increasing order of abundance. Except SPJ heated for 3 hours, SPJ stored at 28$^{\circ}C$ had the most abundant free amino acids, followed by SPJ stored at 4$^{\circ}C$, and SPJ not stored. The fatty acid composition of pumpkin occupied behenic acid, erucic acid, palmitic acid, linoleic acid, heneicosanoic aicd, in order of abundance. When SPJ was heated over 3 hours, palmitic acid and linolenic acid decreased greatly. SPJ stored at 4$^{\circ}C$ and 28$^{\circ}C$ increased contents of saturated fatty acids such as behenic acid, palmitic acid than SPJ not stored. As SPJ was heated for a long time, carotenoid was mostly destroyed and the Hunter "L", "a" and "b" values of SPJ decreased. Among the mineral constituents of SPJ, Na and Ca were dominantly occupied. It was found that the range of the total visible cell count was 3~4CFU/ml from the SPJ which was heated for 3 hours and it increased by 1$\times$109CFU/ml when the SPJ was stored at 28$^{\circ}C$. It seems that the contamination by microorganism have occurred at packing process. In sensory evaluation, the SPJ which was heated for 5 hours had the highest scores in overall preference, sweet smell and sweetness.ce, sweet smell and sweetness.

  • The Unani System of Medicine (USM) is one of the traditional systems of medicine that deals with plants. Plants are large source of medicine. JIRJEER (Eruca sativa) is one of the plant origin drugs, has been used for various therapeutic purposes in USM. It contains Erucic acid (major contain), oleic acid, linoleic acid, saturated Fatty acids, Flavonoids, Phenolics, Glucosinolate, Vitamin C and Carotenoids. These active constituents are responsible for their actions described in Unani classical literature such as Muqqawwi-e-bah (Aphrodisiac), Muwallid-e-mani (Spermatomatogenic), Daf-e-sumoom (Antidote), Kasir-e-riyah (Carminative), Jaali (Cleanser/Detergent), Mudirr-e-bawl (Diuretic) wo Mudirr-e-hayd (Emmenogoggue), Muhammir (Rubefacient), Hazim (Digestive), Mulaiyan (Laxative), Muzliq-e-mani (Lubricant), Muddir-e-shir (Galactopoietic), Mufattih-e-Sudad (Deobstruent), Musakhin (Analgesic), Mulattif (Demulcent), Mufattit-i-hasah (Lithotriptic) and whole plant is considered as aphrodisiac. This is a review paper which discusses morphology, pharmacological action, ethno-medicinal and therapeutic uses of this medicinal plant in perspective of Unani medicine. This review has been done through online searches of databases such as PubMed, Google Scholar, Embase, science direct and hand search for classical textbook available in different libraries. It concluded that JIRJEER (Eruca sativa) is one of the best herbal medicines in treatment of Antiulcer, Antibacterial, Fertility, Hepato-protective, Hyperlipidemic, Antioxidant, Antihypertensive, Anti-inflammatory and Anti-edema, Nephro-protective, Antidiabetic, Antifungal and Anticancer properties.

Changes in the Total Lipid, Neutral Lipid, Phospholipid and Fatty Acid Composition of Phospholipid Fractions during Pastirma Processing, a Dry-Cured Meat Product

  • Pastirma is a dry-cured meat product, produced from whole beef or water buffalo muscles. This study was carried out to investigate the effect of production stages (raw meat, after curing, after $2^{nd}$ drying and pastirma) on the total lipid, neutral lipid, phospholipid and fatty acid composition of phospholipid fraction of pastirma produced from beef M. Longissimus dorsi muscles. The pH and colour ($L^*$, $a^*$ and $b^*$) analyses were also performed in raw meat and pastirma. It was found that pastirma production stages had significant effects (p<0.01) on the total amounts of lipid, neutral lipid and phospholipid, and the highest amounts of lipid, neutral lipid and phospholipid were detected in pastirma. In pastirma, neutral lipid ratio was determined as $79.33{\pm}2.06%$ and phospholipid ratio as $20.67{\pm}2.06%$. Phospholipids was proportionately lower in pastirma than raw meat. Pastirma production stages affected pentadecanoic acid (15:1) (p<0.01), linoleic acid (18:2n-6) (p<0.05), ${\gamma}-linoleic$ acid (18:3n-6) (p<0.05), erucic acid (22:1n-9) (p<0.05), docosapentaenoic acid (22:5n-6) (p<0.05), total unsaturated fatty acid (${\Sigma}USFA$) (p<0.05) and total saturated fatty acid (${\Sigma}SFA$) (p<0.05) ratios of phospholipid fraction and also the moisture content (p<0.01). Pastirma process also affected pH and colour ($L^*$, $a^*$ and $b^*$) values (p<0.01), and these values were higher in pastirma than raw meat.

한국 전통수산발효식품의 연구 및 개발 - 갈게(Helice tridens tientsinensis)장의 화학적 성분 (Research and Development on the Traditional Fishery fermented Foods - Chemical composition of Helice tridens tientsinensis preserved in Brine -)

  • 갈게(Helice tridens tientsinensis)를 이용하여 만든 게장은 우리의 식생활에 밀접하게 접근되어 있으나 이에 관련된 연구는 미비한 실정이며 지역마다 게장을 만드는데 필요한 장에 여러 가지 양념류가 첨가되어 있어 게장 본래의 화학적 성분 조성을 밝히기 쉽지 않을 것으로 사료된다. 본 연구에서는 갈게장의 식품학적 가치를 밝히고자 갈게 생육질의 화학적 성분 조성과 염지한 갈게장을 $5^{\circ}C$에 저장하여 저장일수(10, 16, 20, 25, 29, 55, 61, 67)에 따른 화학성분의 변화량을 측정한 결과를 요약하면 다음과 같다. 1. 갈게 생육질의 일반성분 함량을 보면 수분(77.12%), 회분(1.96%), 조단백질(18.93%), 조지방(0.26%)이었으나 저장기간 중 수분과 조단백질 함량은 감소하는 경향을 보인 반면 회분과 조지방의 함량은 수분 함량의 감소에 따라 상대적으로 그 함량이 증가하는 경향을 나타내었다. 2. 갈게 생육질의 휘발성 염기질소량은 갈게는 6.56mg/100g로 나타났으며, $5^{\circ}C$에서 저장한 갈게장은 55일 경과 후에도 23.72mg/100g로 신선도를 유지하였으나 저장 61일 후에는 VBN이 31.6mg/100g로 초기부패 상태였다. 따라서 갈게장의 저장은 $5^{\circ}C$에서 55일까지만 가능함을 알 수 있다. 3. 갈게 생육질의 유리아미노산 함량을 보면 arginine(1140.88mg/100g), alanine (311.26mg/100g), proline(214.63mg/100g), serine (113.56mg/100g), taurine(90.80mg/100g)의 순서로 정량되었으며, 갈게장에서는 이들 아미노산의 함량이 저장기간 (10, 16, 20, 25, 29, 55, 61, 67일)중에 대체로 그 함량이 증가하였다. 특히 갈게장을 $5^{\circ}C$에서 55일 저장하였을 때 aspartic acid, glutamic acid, glycine, arginine, threonine, tyrosine, valine, methionine, lysine, isoleucine, leucine 등의 증가율이 높았다. 4. 갈게 생육질의 지방산은 erucic acid (27.37 area%) 함량이 가장 많았으며 그 다음으로 pentadecenoic acid(19.44 area%), oleic acid(17.68 area%), palmitic acid (11.00 area%), stearic acid(6.89 area%), elaidic acid(6.15 area%) 순이었으나 갈게장은 지방산의 종류에 따라 양적변화에 적은 차이는 있었지만 대체로 갈게 생육질 중의 지방산의 함량과 큰 차이는 없었다. 그러나 갈게 생육질보다 palmitoleic acid, heneicosanoic acid 등 불포화지방산은 갈게장이 비교적 많았다.

유채의 $F_1$ 종자 생산시 종자친과 화분친의 재식비 및 등숙시기별 종자의 지방산 분석 (Effect of Planting Ratio of Male Sterility (MS) and Restorer Line (RL) on Fatty Acid Content and Composition during Seed Filling Period in $F_1$ Seed of Brassica napus L.)

  • 이 실험의 목적은 유채 $F_1$ 종자 생산시 종자친과 화분친의 재식비 및 수확시기별 종자의 지방산 함량에 영향을 미치는지 알아보고자 실험을 수행하였다. 안정적인 종자 생산을 위해, 두 가지의 실험을 노지에서 수행하였다. 실험 1은 $F_1$ 종자 생산을 위한 종자친과 화분친의 재식 비별(4:2, 10:2, 10:1)로 정식하였고 유채 개화 후 40, 45, 50, 55, 60에 지방산 함량을 조사하였다. 실험 2는 $F_2$ 종자의 개화 후 등숙시기별로 종자를 수확하여 지방산을 분석하였다. 실험의 결과, 종자친과 화분친 재식비에 따른 등숙시기별 유채 종자의 지방산 조성 및 함량은 차이를 보여 주었으나 지방산의 오염 정도 척도인 erucic acid는 재식비에 따라 영향을 미치지 않았다. 종자친과 화분친의 비에서 얻어진 $F_1$$F_2$ 종자 비에서 palmitic acid, stearic acid과 linoleic acid은 등숙 시기에 따라 감소하였다. 그러나 oleic acid는 두 실험 모두에서 개화 후 55일까지 상대적으로 증가하였지만, 개화후 60일째 영향을 미치지 않았다. 지방산 생합성 관련 유전자인 SAD, FAD1 및 FAD2의 발현양상도 등숙 시기별 지방산 조성 및 함량과 일치하였다. 이런 결과는 종자친과 화분친의 비에 따른 재식비과 $F_2$종자의 비에 따른 지방산 조성이 큰 문제가 되지 않음을 보여주므로 $F_1$ 종자의 안정적인 생산을 위해 종자친의 파종비는 늘리고 화분친비를 줄이면 유채 종자 생산량이 높아질 것으로 사료가 된다.

Effect of Planting Date and Plant Density on Yield and Quality of Industrial Rapeseed in Spring Sowing

  • In spring, to determine the optimal planting date and plant density of rapeseed in southern areas of Korea. $Taiwan^{\#1}$ variety for spring sowing, the highest yielding variety was grown under five different planting date and plant density. Yield components such as plant height, ear length, number of seedling stand per $m^2$, number of per ear and seed set percentage were highest at the plots with Mar. 5 of planting date and 50/20cm drilling of plant density. Yield of seed, oil, gas and 1,000 grains weight and erucic acid content were highest at the Mar. 5 of planting date and 50/20cm drilling of plant density. Judging from the results reported above, at optimum planting date and plant density of rapeseed seemed too be Mar. 5 of planting date and 50/20cm plant density in spring sowing.

식이지방이 흰쥐의 혈청 지질상태 및 조직 지방산분포에 미치는 영향 (Effect of Dietary Fat and Oils on Serum Lipid Status and Fatty Acid Composition in Tissues of Rat)

  • In order to establish tissue lipid status in animal on feeding of various dietary fat and oils, each group of rats was fed a semisynthetic diet containing 10%(w/w) mackerel oil (MO), eel oil (EO), soybean oil (SO), rapeseed oil (RO) or beef tallow (BT) for 1, 2 and 4 weeks, After each feeding period, levels of cholesterol, triglyceride and phospholipid were measured in serum. Fatty acid ${\leftarrow}$ composition was also investigated in serum and tissue lipids. Levels of total serum cholesterol were lower but HDL-cholesterol were higher in fish oil groups, which resulted in significantly higher ratio of HDL to total cholesterol in the fish oil groups. Fish oil groups, in general, also had lower levels of serum triglyceride and phospholipid than other groups, but S0 group maintained as low phospholipid levrl as fish oil groups. Fatty acid composition of dietary fat was reflected in all the tissues investigated but with varying degrees. Very long chain fatty acids, specific components exclusively found in fish oils were most well reflected in liver and relatively well in serum, whereas linoleic acid and erucic acid of SO and RO in the diet were better shown up in heart and adipose tissue. It attracted a particular attention that major proportions of long chain monoenoic acids $(C_{22:1})$ occurring both in MO and RO were detected separately in liver and heart plus adipose tissue, the result of which strongly indicates that there is a significant difference in metabolism between isomers $(C_{22:1}\;w\;11\;and\;C_{22:1}\;w\;9,\;respectively)$. It is suggested from this study that differences in lipid status as well as in the levels of serum lipids result from uniqueness in metabolism of each different fatty acid and give rise to distinguishable change in serum lipoprotein pattern, followed by diet with different fat sources.

유채 품질 평가 현황과 전망 (Prospect and Situation of Quality Improvement in Oilseed rape)

  • Rapeseed(Brassica napus L.) is an important oil crop as a vegetable oil, concentrated feed and industrial materials. The name "canola" was registered in 1979 by the Western Canadian Oilseed Crushers Association to describe "double-low" varieties. Double low indicates that the processed oil contains less than 2% erucic-acid and the meal less than 3mg/g of glucosinolates. Today annual worldwide production of rapeseed is approximately 35 million tons on 24 million hectares. China accounts for 33% of the world production and the European Economic Community for nearly 32%. Canola ranks 3rd in production among the world's oilseed crops following soybeans, sunflowers, peanuts and cottonseed. The recent advances in genomics and in gene function studies has allowed us to understand the detailed genetic basis of many complex traits, such as flowering time, height, and disease resistance. The manipulation of seed oil content via transgene insertion has been one of the earliest successful applications of modern biotechnology in agriculture. For example, the first transgenic crop with a modified seed composition to be approved for unrestricted commercial cultivation in the US was a lauric oil, rape-seed, grown in 1995. There were also some significant early successes, mostly notably the achievement of 40% to 60% lauric acid content in rapeseed oil, which normally accumulates little or no lauric acid. The name "$\textrm{Laurical}^{TM}$" was registered in 1995 by Calgene Inc. Nevertheless, attempts to achieve high levels of other novel fatty acids in seed oils have met with much less success and there have been several reports that the presence of novel fatty acids in transgenic plants can sometimes lead to the induction of catabolic pathways which break down the novel fatty acid, i.e. the plant recognizes the "strange" fatty acid and, far from tolerating it, may even actively eliminate it from the seed oil. It is likely that, in the future, transgenic oil crops and newly domesticated oil crops will both be developed in order to provide the increased amount and diversity of oils which will be required for both edible and industrial use. It is important that we recognize that both approaches have both positive and negative points. It will be a combination of these two strategies that is most likely to supply the increasing demands for plant oils in the 21st century and beyond.ant oils in the 21st century and beyond.

발아에 의한 유채의 일반성분, 지방산 및 무기물의 조성변화 (Study on the Chemical Change of General Composition, Fatty Acids and Minerals of Rapeseed during Germination)

  • 유채박의 활용성을 높이기 위하여 발아에 따른 일반성분, 지방산, 무기물의 함량변화를 측정한 결과는 다음과 같다. 유채의 백립중은 발아 72시간후에 최초 무게의 두배가 되었으며 이때 자엽이 출현하였다. 발아에 따라 수분과 조회분은 큰 변화가 없었으나 조단백질과 가용성무질소물의 함량은 감소하는 경향을 나타내었다. 발아전 시료의 지방산 조성은 oleic, erucic, linoleic, linolenic acid가 각각 24.6, 15.5, 10.6, 9.5%이었으며 stearic, palmitic, arachidic acid가 각각 1.0, 2.4, 5.3%이었다. 발아후 96시간까지는 각 지방산 함량이 모두 조금씩 감소하다가 120시간에는 증가하는 경향을 나타내었으며 지방산간의 차이는 별로 없었다. 발아전 시료의 무기물 함량은 인, 칼슘, 마그네슘, 아연, 망간, 구리, 철이 각각 6367, 3068, 2667, 80.3, 26.5, 15.9, 94.4ppm이었고 나트륨은 극히 미량이 검출되었다. 발아에 따른 무기물 함량은 초기에 서서히 감소하다가 120시간에 약간 증가하는 경향을 나타내었으며, 철의 경우 48시간에 급격히 증가하다가 감소하는 경향을 나타내었다.

꽁치(Cololabis saira) 과메기의 지질산화 및 biogenic amine 생성에 건조조건이 미치는 영향 (Effect of Drying Conditions on Biogenic Amine Production and Lipid Oxidation in Semi-dried Pacific Saury Cololabis saira, Guamegi)

  • This study reviewed the effect of the drying conditions on the production of biogenic amines and lipid oxidation in semi-dried Pacific saury Cololabis saira or Guamegi. The moisture content of the Guamegi ranged from $32.71{\pm}2.37$ to $45.9{\pm}2.60$ g/100 g. The respective ranges of the acid value (AV) and peroxide value (POV) were $1.39{\pm}0.40$ to $15.79{\pm}0.47$ mg KOH/g and $76.14{\pm}2.19$ to $282.84{\pm}2.34$ meq/kg on drying for 3 days. The AV and POV increased for up to 3 days of drying and the values differed according to the amount of sunlight and temperature. However, lipid oxidation was reduced in Guamegi manufactured using a cold-air drying method. The fatty acid composition and the biogenic amine content in Guamegi during drying did not differ significantly with the drying method or drying date. The main saturated, monoene and polyene fatty acids were palmitic acid, eicosenoic & erucic acids, and eicosapentaenoic & docosahexaenoic acids, respectively. At 16.67 to 71.89 mg/kg, the histamine content was higher than that of other biogenic amines and it increased significantly during drying. In conclusion, this study showed that the packaging and drying conditions of Guamegi products need to be improved to inhibit lipid oxidation and biogenic amine formation.
