This research aims to propose an ergonomic design process for hip protector based on previous studies, existing products, multidisciplinary experts opinion, and wearing test. The elderly are more likely to suffer a hip fracture when they fall due to their physical changes in skeletal form, muscle quantity, bone density, and joint movement. A hip protector is an effective product to prevent hip fractures in the elderly but it also has a problem in that it is uncomfortable. Therefore there is a high chance that it won't be able to prevent hip fractures properly. Since the comfort of a hip protector is one of the most critical elements in preventing a hip fracture, we need to keep improving the hip protector for mobility and usability. Based on the previous studies and limitations of current hip protector products, we need to come up with an optimal design for the Korean elderly. First, knowledge has to be built relating to the ergonomic design of the hip protector considering body shape and size analysis using 3D-scan data, and biomechanical analysis on hip fracture. Second, we need to develop a design process including hip protector pattern design, and wearing evaluation with virtual system. Third, we suggest to reevaluate and verify the design procedure from impact evaluation using testing simulator, virtual evaluation of impact, to wearing comfort and usability evaluation. This design process presented in this study would be expected to contribute to the development of ergonomic hip protector which is suitable for the Korean elderly.
The purpose of the study was to examine Korean elderly women's attitudes toward fashion and to determine formal jacket designs preferred by them. The subjects of the study were older than 50 years who will become aging population in 2014. For data collection, interview investigated 200 copies of questionnaire were collected, and available data used final analysis were 174 volumes. As the results of the principal components factor analysis, it revealed 4 attitudinal factors including cautious attitude, fashion-conscious attitude, ostentatious attitude, and easy-conscious attitude. The subjects divided into two groups, highly involved group and lowly involved group, for each factor. As the result of preference differences by the degree of each attitude, it revealed that the attitudes toward fashion products would significantly influence elderly women's jacket design preferences. The results of the study show that they are a diverse group whose consumer needs and wants vary dramatically and give initial information to assist designing appropriate formal jacket for elderly women.
The purpose of the study was to compare the satisfaction level on hospital meal size and actual intake rate of hospital foods between elderly and middle aged patients. Sixty one middle aged and one hundered thirty two elderly patients were surveyed on the foods served in the hospital-rice, soup, meat/fish, vegetable, kimchi and daily products. Compared to the middle aged patients, the more elderly thought the serving size of rice was too big(p<0.05), and those of soup, meat/fish and kimchi tended to be too big. There was no difference in the satisfaction level on the serving size of vegetable dish between two age groups. In actual intake rates of hospital meal there were no significant differences between the elderly and middle aged patients. However, the elderly male ate significantly(p<0.05) less amount of rice than the middle aged male and the elderly female ate significantly(p<0.01) less amount of meat/fish then the middle aged female. Satisfaction levels and actual intake rates were significantly correlated in all food items.
The present study was performed to evaluate dietary behavior, food intake, and satisfaction with food-related life regarding the elderly residing in different regions of Korea. The survey was conducted on 631 individuals over 55 years old in either urban or rural areas. The survey was carried out using a questionnaire including dietary behavior, mini dietary assessment, and a food frequency questionnaire. The average age of the rural elderly was higher than that of the urban elderly whereas, education level and economic status were higher in the urban elderly compared to the rural elderly. The intake of dairy products, meats, instant foods, snacks, and the use of nutrient supplementation were significantly higher in the urban elderly than those of the rural elderly (p = 0.000). The intake of vegetables was significantly higher in the rural elderly (p = 0000). Furthermore, the rural elderly were more satisfied with food-related life and had better balanced diets than those of the urban elderly. Taken together, the results of this study revealed that customized nutritional management and education for adequate meals in different regions should be developed and provided in order to improve the quality of healthy living for the elderly.
Horse meat is nutritionally adequate to the elderly, but it has a comparatively hard texture in contrast to most of the food. In practice, the meat intake in the elderly is generally bated because the relatively difficult texture of the meat can diminish mastication. Thus, strategies are being developed to produce meat products remanding detracted mastication exertion and possibly exalt ingestion and nutritional stand, in the elderly. Hence, the effects of enzymes on textural characteristics of horse meat were studied, because they have well-known favorable efficacy on the meat tenderness by causing important demotion of the myo-fibrillar protein and collagen. Four treatments namely, papain, bromelin, pepsin, and pancreatin, alongside one control were invoked to the horse meat. Their effects on the texture parameters were determined. All the above enzymatic treatments significantly reduced hardness and resilience (p<0.001). These results present opportunities to produce essential fatty acids fortified horse meat with soft texture and satisfied technological characteristics. The intake of the essential fatty acids intensified horse meat could aid the elderly to get their aimed essential fatty acid demands. Results also suggest that horse meat tenderized through enzymatic processing stand for auspicious options for the comprehension of texture-revised diets in the elderly population.
A dietary survey was conducted using 24-hour recall method in 80 male elementary school children, 83 high school students, 87 adults and 98 elderly people over 65 years of age to discuss food and nutrient intakes among different age groups. In observing food intake by age groups, the percentage of plant foods to total food intake was significantly higher in the elderly than other groups and that of animal foods was the highest in the children. The children consumed significantly higher amounts of milk and dairy products. Carbohydrate energy percent in the elderly people was 68.0%, significantly higher than other age groups. All age groups consumed Ca below Korean RDA and especially, 65.1% of the adolescents and 68.4% of the elderly consumed below 75% of RDA. Nutrient adequacy ratio (NAR) of most nutrients was lowest in the elderly. Mean adequacy ratio (MAR), an index of overall dietary quality, was 0.94 for the children, 0.84 for the adolescents, 0.84 for the adults, and 0.73 for the elderly. The above results suggest that food and nutrient intakes have been differently affected with advancing age, and overall dietary quality of the elderly people is lower than that of other age groups. In order to investigate dietary risk factors for hypertension in th elderly, dietary intakes and dietary habits of 405 elderly subjects, aged 60-94, were assessed by the questionnaire, anthropometric measurement and a 24-hour dietary recall. The prevalence of definite (>95mmHg for diastolic or>160mmHg for systeolic blood pressue) and borderline(90-95mmHg for diastolic or 140-160mmHg for systolic blood pressure) hypertensive subjects 33.3% and 19.3%, respectively. The distribution of the subjects for Body Mass Index(BMI), waist-hip ratio, and alcohol consumption were significantly different among definite, borderline, and normal groups(p<0.05). The distribution of the subjects for smoking, exercise, and preference of salty food were not significantly different among definite, borderline, and normal groups(p>0.05). From the generalized logistic regression analysis of the risk factors for the hypertension, the subjects with over 27 of BMI had significantly higher risk of hypertension. Alcohol consumption and preference of salty food were significant risk factors of hypertension in the elderly. Dietary risk factors for the hypertension that had significant relationship to the hypertension were intakes of potassium, calcium, phosphate, sodium, vitamin B1, niacin, and folate. There was no significant difference of consumption frequencies of food and dish among definite, borderline, and normal groups(p>0.05). The amount of intakes for cereals and grain product, bean and their products, eggs were significantly different among definite, borderline, and normal groups(p<0.05). In summary, the amount of dietary intakes to hypertension in elderly population. Longitudinal studies for dietary risk factors on incidence of hypertension are needed in general population, especially in the elderly.
The purpose of this study was to analyze the satisfaction level on hospital foods in elderly and middle aged patients. The subjects were selected among the patients treated in the Inha University hospital during July of 1999. One hundred thirty five elderly patients aged over sixty(68 men, 67 women) and sixty five patients aged in forties(35 men, 30 women) were surveyed through questionnaires in terms of satisfaction level on hospital foods and the food preferences. Satisfaction on general taste, saltiness, serving temperature, appearance, texture and variety of hospital foods was not significantly different according to age. However, elderly men showed significantly higher satisfaction level than elderly women in terms of general taste of hospital foods(p<0.01). The preferences of cooking method for meat, fish, vegetable and the preferred kinds of kimchi and milk & milk products were not significantly different between the two age groups. However, elderly women significantly preferred sauted meat to broiled meat compared to elderly men(p<0.05).

This is a pilot study to survey the general demand of senior-assistive necessities before a standardization system for senior-assistive necessities is developed as well as to describe health professionals' opinions about the demand and quality of Oriental medical aids and necessities for daily living for the elderly. This is a descriptive survey in which 29 health professionals are questioned, using structured questionnaires based on ISO 9999. The questionnaires were developed by 7 expert conduction standardization system of senior-assistive products in Korea. The data is analyzed by descriptive statistics. The result is as follows : First, with regard to the demand for all of the items in Oriental medical aids for the elderly, the demand of cupping glasses is the highest, followed by instrument used to apply heat treatment, massage equipment, thermo-therapeutic mattress, and heat or ice packs. With regard to the demand for all of the items for the necessities for daily living for the elderly, chairs are the highest, followed by rolling chairs, beds for health, and heigh adjustable beds. Second, with regard to quality of Oriental medical aids, ${\ulcorner}$aids for hair care${\lrcorner}$ are the best, whereas ${\ulcorner}$aids for boiling Oriental medicine${\lrcorner}$ are the worst. In quality of the necessities for daily living, ${\ulcorner}$chairs${\lrcorner}$ are the best, whereas ${\ulcorner}$beds${\lrcorner}$ are the worst. Above all, this result shows that with ${\ulcorner}$aids for heat or cold treatment${\lrcorner}$, there is relatively high demand and low quaily of Oriental medical aids, and with ${\ulcorner}$Beds${\lrcorner}$, there is relatively high demand and low quality. Therefore, aids for heat or cold treatment and beds in th necessities for daily living are required to be developed for standardization of senior-assistive necessities.
