Comparison of Production Performance and Egg Quality Characteristics of Five Strains of Korean Native Chickens

  • The production performance and egg quality traits among five strains of Korean native chickens (KNC) were evaluated in conventional cages. A total of 240 KNC were housed in a controlled environment. Each strain had 12 replicates with 4 chickens per cage. Feed intake, body weights, egg production and egg quality were measured at 24, 28 and 32 of weeks. Egg quality parameters were analyzed using 150 eggs. Results indicated significant (P<0.05) difference in average body weights, egg production and egg weight among five strains of KNC. In contrast, KNC strains effect was non-significant (P>0.05) for feed efficiency. The difference among those KNC strains on egg shell color, egg shell strength and egg shell density were not different (P>0.05) at the age of week 24 while it was significant (P<0.05) at the age of week 28 and 32. There was no effect (P>0.05) on egg length and egg shape index from five strains of KNC. The significant difference (P<0.05) was observed in egg width with KNC strains during early ages (week 24 and 28) and it was not significant (P>0.05) at the age of 32 weeks. Regarding internal quality parameters, albumen height and Haugh unit were significantly (P<0.05) affected with KNC strains while the effect on yolk color was not significant (P>0.05). Based on the egg weight and the production performance, GS-10 KNC strain was superior when compared with the other strains.

실용산란계의 산란연령이 계란의 품질에 미치는 영향 (The Effect of Hen Age on Egg Quality in Commercial Layer)

  • 계란의 품질은 소비자와 생산자 모두에게 매우 중요한 요소이다. 계란의 품질에 영향을 미치는 요소로 닭의 품종, 산란연령, 계란의 보관 온도와 저장기간, 보관 습도, 산란 계절 및 사료 등이 있다. 본 연구는 닭의 산란연령과 계란의 저장기간이 난질에 미치는 영향을 알아보기 위해 시행되었다. 본 시험은 하이라인 브라운 실용산란계가 생산한 총 700개의 계란을 대상으로 2개의 산란연령(30주령 및 60주령)과 4개의 저장기간(0, 10, 20, 30일), 총 8처리에 대해 분석하였다. 계란의 품질 평가기준으로 난중, 난각색, 난각두께, 난각밀도, 난백높이, 호우유니트(HU), 난황색, 난황 및 난백의 pH와 점도를 측정하였다. 실험결과, 산란연령 및 계란의 저장기간은 거의 모든 계란의 내 외부 난질지표에 유의한 영향을 미쳤다. 산란연령이 증가함에 따라 생산된 계란의 난각두께, 난백높이, HU, 난황색, 난황과 난백의 pH 및 난황점도는 유의하게 감소하였다. 한편, 난각색에 있어서는 60주령에 생산된 계란이 30주령에 생산된 계란보다 옅은 난각색을 나타내었다. 또한, 계란의 저장기간이 증가함에 따라 난중, 난각중, 난각두께, 난각밀도, 난백높이, HU 및 난백점도는 감소하였고, 반면 난황색과 난황과 난백의 pH는 증가하였다. 더불어 난각두께, 난백높이, 난황색, 난황 및 난백의 pH와 점도는 계란의 저장기간과 산란연령 간 상호작용의 효과가 있는 것으로 나타났다. 대표적 난질의 지표로 볼 수 있는 난각두께, 난백높이 및 HU가 60주령에 생산된 계란이 30주령에 산란한 알에 비해 유의하게 낮게 나타났다. 따라서 산란연령이 증가하고 계란의 저장기간이 길어짐에 따라 난질저하가 일어나게 된다. 결론적으로, 본 연구에서 신선란의 경우, 산란연령이 계란의 품질에 영향을 미치는 주된 요인인 반면, 보관란의 경우 저장기간이 난질에 영향을 미치는 결정적 요인임을 시사하고 있다.

한국 남해안의 멸치(Engraulis japornicus) 난자치어 수송에 관한 연구 (A Study on the Transport of Anchovy Engraulis japornicus Egg-larvae in the South Sea of Korea)

  • To understand the transport of anchovy egg-larvae, an integrated model consisting of a hydrodynamic model and a three-dimensional Lagrangian diffusion model was used for the anchovy Engraulis japornicus egg-larvae trace. Fist, in order to determine the circulation characteristics of the South Sea of Korea, residual flow according to tide, density and wind effect was investigated. In offshore regions, tide-induced residual current tends to flow eastward during the spring tide and westward during the neap tide. Residual flow is irregular due to the bottom topography in the coastal area. No special tendency was apparent in the open sea. Especially, the flow in the offshore regions showed results similar to that of the Tsushima Warm Current. The transport of anchovy egg-larvae is decided the physical properties of sea water. It is estimated that anchovy eggs spawned near the Jeju Island travels offshore, rather than to coastal areas, and grow in the front area between the coastal sea and offshore regions.

Effect of dietary octacosanol concentration extracted from triticale sprout on laying performance, egg quality, and blood parameters of laying hens

  • This study was conducted to investigate the effect of dietary supplementation of octacosanol (OCT) extracted from triticale sprout on laying performance, egg quality, and blood parameters of laying hens. A total of 192, Hyline brown laying hens aged 43 weeks were divided into 4 dietary groups of 48 birds each and they were randomly subjected to one of the experimental diets containing OCT at the levels of none, 10, 20, and 30 mg/kg of diet. All birds were fed with isoenergetic and isonitrogenous mash diets for 6 weeks. The result showed that hens supplemented with 20 and 30 mg/kg OCT in diet significantly increased (p < 0.05) egg production than those fed with the basal diet. OCT concentration in the egg yolk of hens fed with 20 and 30 mg/kg OCT was significantly higher than in those fed the control diet. Hens fed 20 and 30 mg/kg OCT exhibited greater high-density lipoprotein (HDL) cholesterol and interleukin (IL) concentrations and reduced serum concentrations of cholesterol and triglyceride compared to those fed with 0 and 10 mg/kg OCT. This study indicates that supplementing the diet of laying hens with 20 and 30 mg/kg of OCT can improve the performance, egg quality, and health status of laying hens.

Association between Egg Consumption and Metabolic Disease

  • The effect of high egg intake on metabolic syndrome (MetS), a major risk factor for cardiovascular disease (CVD), has not been clearly elucidated. This study was conducted to review the literature related to egg consumption and the risk of metabolic disease as well as to examine the association between high egg intake and MetS in Korean adults. A literature review was conducted using published papers in PubMed and EMBASE through December 2017. We have reviewed 26 articles, which were associated with egg consumption and metabolic diseases, and found that the results were controversial. Therefore, we analyzed data from 23,993 Korean adults aged 19 yrs and older. MetS was defined based on criteria from the Adult Treatment Panel III. Egg consumption of 4-6 times/wk and 1 time/day were significantly associated with reduced prevalence of MetS (Odds ratio (OR)=0.82; 95% Confidence interval (CI)=0.71-0.95 for 4-6 times/wk, OR=0.83; 95% CI=0.69-0.99 for 1 time/day) compared to those who consumed eggs less than once monthly. However, consuming two or more eggs per day was not associated with MetS. As for the components of MetS, an egg intake of once daily decreased the prevalence of abdominal obesity and an intake of 2-7 eggs weekly was shown to prevent a reduction in the high-density lipoprotein cholesterol levels. This study suggests that while consuming eggs 4-7 times weekly is associated with a lower prevalence of MetS, consuming two or more eggs daily is not associated with a reduced risk for MetS.

케이지 내 사육밀도가 산란종계의 생산성 및 생리적 반응에 미치는 영향 (Effects of Stocking Density on Performance and Physiological Responses of Egg-type Breeder Laying Hens in Cages)

  • 본 연구는 산란종계를 케이지 내 사육밀도 수준이 다르게 배치하였을 때 생산성 및 생리적인 반응에 미치는 영향을 규명하기 위한 목적으로 실시하였다. 총 264수의 Hy-Line Brown 산란종계를 4처리 3반복 반복당 22수 (♀20, ♂2)로 나누어 사육밀도를 수당 980 $\textrm{cm}^2$, 735 $\textrm{cm}^2$, 640 $\textrm{cm}^2$ 및 560 $\textrm{cm}^2$ 수준으로 설험사료를 12주간 급여하여 산란종계의 생산성, 난질 및 난각질, 수정율과 부화율을 측정하였다. 사양실험 종료시 생체중 측정치의 평균에 해당하는 개체를 처리구별로 9수씩 선발하여 우모 상태를 측정하였고, 처리구별로 6수씩 선발하여 혈청 내 ND 및 IB 항체역가를 측정하였다 .생산성, 난각강도, Haungh unit, 수정율 및 부화율에는 처리간의 차이가 없었고, 난각두께는 실험 7∼12 주에서 있어서 640 $\textrm{cm}^2$/bird 처리구가 유의적으로 (P<0.05) 낮은 수치를 나타내었지만 전체적인 실험기간으로 볼 때 처리간의 차이는 나타나지 않았다 .ND 항체역가는 처리간의 차이가 없었고 ,IB항체역가는 사육밀도가 가장 낮은 980 $\textrm{cm}^2$/bird 처리구에서 유의하게 (P<0.05) 높은 수치를 나타내었다. 우모상태는 사육 밀도가 가장 높은 560 $\textrm{cm}^2$/bird 처리구에서 유의하게 (P<0.01) 낮은 결과가 나타났으며, 또한 사육밀도 수준이 증가할수록 우모 상태는 유의하게 (P<0.01) 감소하는 결과가 관찰되었다 본 연구결과 케이지 내 사육밀도의 적절한 증가는 산란종계의 생산성은 차이가 없었다. 그러나 사육밀도의 증가는 물리적인 자극으로부터 개체들에게 더 많은 스트레스를 유발시켜 폐사율을 높일 수 있는 열악한 환경을 조성할 수 있음을 시사하였다.

난백과 난황에서 Salmonella Enteritidis 와 Salmonella Typhimurium 수 변화 비교연구 (Comparative Study of Change in Salmonella Enteritidis and Salmonella Typhimurium Populations in Egg white and Yolk)

  • 본 연구는 계란을 난백과 난황으로 분리하여, 액란 상태에서 8, 10, 15, 25, $35^{\circ}C$의 보관온도가 S. Enteritidis와 S. Typhimurium 두 혈청 형의 증식 또는 사멸패턴에 미치는 영향을 비교 분석하였다. 난백에서는 8, 10, 15, $35^{\circ}C$에서 두 혈청 형 모두 감소하였으나 $25^{\circ}C$에서는 두 혈청 형 모두 증식 하여 상온에서의 관리에 대한 주의가 필요한 것으로 나타났다. 반면 10, 15, 25, $35^{\circ}C$ 난황에서는 두 혈청 형 모두 성장하였으나 $8^{\circ}C$에서는 감소하여 유통 판매시 난황으로 준비된 액란을 냉장온도로 철저하게 관리해야 할 것으로 판단된다. 난황에서 증식한 S. Enteritidis와 S. Typhimurium의 성장곡선을 Modified Gompertz model에 적용하여 산출된 유도기(LT)와 최대증식속도(SGR) 및 최대개체군밀도(MPD)값을 Davey model과 Square-root model 및 Polynomial second order model을 이용하여 각각 온도의 영향을 나타내는 2차 모델을 개발하였다. 모든 온도에서 S. Enteritidis가 S. Typhimurium보다 유도기가 짧고 최대증식속도가 빠르게 나타나 액란 제품에서의 S. Enteritidis에 대한 위험성이 더 큰 것으로 나타났다.

Consumption of Water-Soluble Egg Yolk Extract on Growth Rate, Changes in Blood Cholesterol Levels, and Immune Modulation in BALB/c Mice

  • Egg consumption has been limited to avoid cardiovascular diseases such as atherosclerosis and hyperlipidemia, because the yolk contains high levels of cholesterol. This study was conducted to evaluate the effect of the water-soluble component of egg-yolk on the growth efficiency, immune modulation, and changes in serum lipid levels in BALB/c mice. A total 5 wk old 120 BALB/c male mice were divided into 4 groups and were fed 0, 2, 10, and 20 mg/d water-soluble egg yolk extract (WSEYE) for 5 wk. Water-soluble egg yolk extract (WSEYE) uptake resulted in a significant reduction in daily weight gain and feed efficiency rate (FER). The mouse groups treated with 2 and 20 mg/d WSEYE showed a significant increase in populations of monocytes at the third wk and B-lymphocyte activity at the fifth wk. In addition, WSEYE uptake did not influence serum immunoglobulin E levels. In serum lipid-profile studies, treatment of WSEYE did not alter total cholesterol and low-density lipoprotein levels; however, blood triglyceride levels were significantly diminished in mice treated with 2 mg/d at the third wk (p<0.05), and the level of high-density lipoprotein was significantly increased in the mice group treated with 2 and 10 mg/d WSEYE after 5 wk (p<0.05). Taken together, the data demonstrate the beneficial effects of WSEYE in the diet on immune modulation and serum lipid profiles in mouse models; therefore, this study suggests that ingestion of water-soluble fraction of egg yolk might not be related to the increased risk of heart disease, but can be an excellent candidate for maintaining health.

Effects of Egg White Consumption on Allergy, Immune Modulation, and Blood Cholesterol Levels in BALB/c Mice

  • We previously demonstrated that water-soluble egg yolk extract is not related to elevation of serum immunoglobulin E, which can initiate allergic reactions; however, it increases the level of high density lipoprotein (HDL)-cholesterol and the activity of B lymphocytes. In this study, egg white (EW) was fed to BALB/c mice to determine its influence on growth efficiency, immune modulation, and changes in serum lipid levels. A total of 50 five-wk-old BALB/c male mice were divided into 5 groups, 4 of which were fed 0, 10, 50, or 100 mg/d EW for 4 wk. Mice with an uptake of 10, 50 and 100 mg/d EW showed no significant changes in daily weight gain, feed efficiency rate, or populations of white blood cells. However, the activities of both B and T lymphocytes were significantly increased in all three EW groups at the final week of treatment. Interestingly, serum levels immunoglobulin E were not altered by EW consumption, but the IgG level was significantly increased in the 100 mg/d EW group. Serum lipid profile analyses showed no significant changes in total cholesterol, HDL, low density lipoprotein, or triglyceride levels by EW consumption. Taken together, these data demonstrate that consumption of EW promotes immune cell activities and the upregulation of serum IgG levels. However, we found no changes in serum lipid profiles and IgE levels. Therefore, our study suggests that consumption of EW might not be related to the risk of food allergy, but could be an excellent candidate for the maintenance of physiological homeostasis.

해삼, Stichopus japonicus 유생의 성장과 생존에 미치는 먹이 및 수용밀도의 영향 (Influence of Food and Density on the Growth and Survival of Sea Cucumber, Stichopus japonicus)

  • 해삼의 인공종묘생산 기술개발을 위한 생물학적 기초자료로 이용하고자 산란유발, 유생발달 과정, 유생 사육시 먹이와수용밀도에 관한 시험을 실시한 결과는 다음과 같다. 산란유발은 수온자극에서 6.0~17.5%의 반응이 있었으며, 간출자극에서는 1.4~4.0%로 낮은 반응률을 보였다. 산란량은 50~500만개였고, 수정률은 84.0~96.0%였으며, 부화율은 71.4~84.6%로 나타났다. 해삼의 수정난은 $154{\mu}m$이며, 난발생은 수온 $23^{circ)C$에서 수정후 2시간 10분만에 4세포기, 3시간 40분이 지나면 16세포기로 되며, 14시간 30분 후에는 포배기로 되면서 부화하였다. 그 이후 3일째에는 auricularia 유생으로 되었고, 11일째에는 doliolaria 유생, 15일째에 pentactula 유생으로 변태하였다. 유생의 먹이로는 Chaetoceros calcitrans와 Pav-lova lutheri가 적당한 것으로 나타났으나, 이 중 Chaetoceros calcitrans는 변태가 빠르고 생존율도 높아 해삼 유생의 먹이로 가장 좋았으며, 유생 사육을 위한 최적 밀도는 2개체/ml 이하를 유지하는 것이 좋은 것으로 나타났다.
