Development of an Evidence-based Nutritional Intervention Protocol for Adolescent Athletes

  • [Purpose] Effective nutritional intervention can help reduce the risk of nutritional problems and improve athletic performance in adolescents. The five A's (assess, advise, agree, assist, and arrange) model is widely used as the theoretical framework for advice on nutrition, smoking, drinking, and physical activity and it recommends that practitioners in primary health care promote behavior change to facilitate positive outcomes. This model has also been useful in understanding the underlying processes of behavior change. This study aimed to develop both a novel evidence-based nutritional intervention protocol, rooted in sound nutritional theory, and a customizable nutritional intervention program to support sustainable healthy eating, enhance nutrient intake, and improve athletic performance in adolescent athletes. [Methods] In this study, we adapted the 5 A's behavioral change model and motivational interview to develop a theoretical framework to help adolescent athletes change their behavior and achieve their goals. [Results] During each step of the 5 A's protocol, a customized nutritional intervention protocol was developed by nutrition experts for each of adolescent athletes. Each plan was developed to improve the eating habits of adolescent athletes through group education and counseling. All nutritional counseling sessions were designed to enable participants to apply nutritional knowledge and practical action plans to their training and competition conditions to enable each of them to achieve individual athletic goals and facilitate self-management. [Conclusion] A theoretical and evidence-based nutritional intervention protocol was developed to identify and address obstacles to healthy dietary habits in adolescent athletes. This could be used as the basis for further studies aimed at improving nutrient intake and athletic performance in adolescent athletes.

The Present State and Problems of Hotel Buffet Styled Restaurant -II. A Survey of Ecology in Food and Nutrition of Some Urban Females Dining in Hotel Buffet Styled Restaurant- (호텔 뷔페음식(飮食)에 관(關)한 실태조사(實態調査) -제(弟) 2보(報). 여성(女性)들의 뷔페식당(食堂)에서의 끽식행동(喫食行動)에 관(關)한 연구(硏究)-)

  • An eating behavior research was done with 50 females at a buffet styled restaurant during their lunch time. Of the respondents, 52.0% were professional and 54.0% were graduate school graduates. Of the respondents, 58.0% of the company were friends and 24.0% were relatives. The average time period of eating was $93.0{\pm}23.4$ minutes. The average frequency of taking food was $4.0{\pm}1.1$ and the average frequency of taking food after satiety was $1.4{\pm}0.8$. It is significant that lower frequency of food consumption was directly proportional to the age groups of respondents. The average selected food items were $30.4{\pm}7.1$ out of 175 and the average weight of the consumed food was $995.0{\pm}240.9$ g. The older age group chose a similar number of food items, but the amount of each food item was considerably less than younger. So the younger the age group was, the more they ate. The average food items at one time was $7.1{\pm}2.2$ and the average food weight time was $233.7{\pm}69.7$ g. The percentage of respondents who evaluated themselves as 'ate too much' was 70.0% and those who evaluate themselves 'ate properly' was 14.0%. Most of them were satisfied with the buffet service. The average of number of food items consumed by respondents before cooking was $50.5{\pm}8.9$. The consumption of calories and nutrients was compared with the Korean Daily Recommended Dietary Allowances. The consumed calories were 60.9% of RDAs, protein 104.4%, calcium 77.1%, iron 129.8%, vitamin A 66.5%, thiamin 96.0%, riboflavin 95.7%, niacin126.6% and ascorbic acid 112.3%. This data exceeded 1/3 of the Korean Daily RDAs tremendously and tells us extreme overeating. The energy ratio of carbohydrate: fat: protein was 51.6: 29.9: 18.5. Caloric consumption of animal food was 27.9% and the consumption rate of the other nutrients from animal food was considerably high. But the consumption rate of vitamin A was 90.9% from vegetable groups. Accoding to this study, buffet service gives some advantages. It gives customers an good opportunity to vary their food intake, which enhances eating experiences and can cause an improvemont of food habits. But overeating is a problem. Therefore, we think it is necessary for those women who have influence over their family's food selection, to have nutrition education about a desirable order of eating a meal, food selection, and health problems due to overeating at buffet styled restaurant. There should be some improvement in the management of buffet service. For example, proper temperature, texture, and freshness of the food should be maintained. Prevention of mixed food smells should be considered as well. To lower the price it is desirable to reduce the number of similar items and to use seasonal food as much as possible. A buffet styled restaurant with less food items with cheaper prices is recommended. Various traditional food should be developed for the menu items. We expect buffet services to be sutable to maintain good health and to be popular to any eater.

A Study on Jeju High School Students' Health Perception and Health Promotion Behavior (제주지역 고등학생의 건강지각과 건강증진 행위에 관한 연구)

  • The purpose of this study was to provide basic data necessary for creating a more successful health enhancement program, health education and health policy which can enhance health management abilities and enable a healthy school life by examining relations between high school students' health perception, who are in early adolescence, and their health promotion behavior. The subjects in this study were 813 students from 8 high schools on Jeju Island. The collected data were analyzed with t-test and one-way ANOVA through questionnaires by researcher on the basis of advance research. The findings of this study were as belows : 1. When general characteristics were considered, health perception was more significantly affected by those who were boys, whose family income was on a higher level, who scored better in school, whose parents were more concerned about their children's health, and who had experiences of being hospitalized. Especially, the more parents were concerned about their children's health, the higher the child's self-confidence on health(p<.05), anxiety on health(p<.05), practicality on disease prevention(p<.05), self-confidence on future health(p<.01), health care ability(p<.01), and family roles on health(p<.05). The less parents were concerned about their children's health, the higher the child's anxiety on disease(p<.01) and uncertainty on future health(p<.01). 2. When students' health promotion behavior was concerned, in the area of Eating Habits, having regular meals(72.9%), moderate consumption of meat(89.7%) and a balanced diet(64%) were common, whereas having a regular breakfast(37.4%) and eating vegetables and fruits(43.6%) were rare. In the area of Exercise, all subareas such as exercising 3 or 4 times a week(76.7%), more than one hour of exercise at a time(74.9%), a short distance walk(51.8%), exercise within one hour after meals(87%), and whether wanning up or not(88.6%) were above average. In the area of Personal Hygiene, all subareas such as drinking boiled water(57.3%), washing hands after using the bathroom(71%), brushing teeth after eating(42.4%), washing up after going out(50.3%), and washing hair and taking a frequent bath(77.2%) were rare. In the area of Control of Personal Relations, consulting personal problems with family(78.7%) had a positive response, whereas meeting someone new(59.8%), maintaining sound relations with the opposite sex(47.3%), having respect for one's opinion(51.5%), and maintaining peaceful relations with people(58.4%) had rare negative results. In the area of Stress Management, not being competitive(69.4%), releasing problems(62.4%) and sleeping soundly(66.2%) were common, whereas having your own ways to relieve stress(46.8%) and having your own dreams and hopes(58.5%) were rare. 3. When general characteristics were considered, as far as relations of health promotion behavior were concerned, the boys were significantly different in the area of Eating Habits(p<0.01) and Exercise(p<0.01), and the girls were in the area of Personal Hygiene. As family economic status was high and parents were concerned about their children's health, the entire areas of health promotion behavior were significantly different. Whether or not they were hospitalized made no significant difference in statistics. 4. When their regions were considered, it comparing city to town, there was no statistically significant difference in health perception and relations of health promotion behavior according to general characteristics. As seen in the results above, high school students' level of health perception and level of practicing health promotion behavior were generally low. In conclusion, by enhancing health perception, a plan for activating health education, which can implement positive health promotion behavior, should be made.

The Related Factors Influencing on Self-rated Health Level of Middle-aged Women (일부 중년여성의 주관적 건강상태에 영향을 미치는 요인 분석)

  • This survey of 836 midlife women ($51.0{\pm}4.0$ yrs) was undertaken by exclusively a face to face interview by well-trained interviewers guarantying data collection of higher quality. This survey data was analyzed using the SPSS program. The main purpose of this study was to describe the factors affecting self-rated health status, including dietary habits and physical mental social factors. In the self-rated health status of a 'good' group, age was lower (p < 0.05), monthly income was higher (p < 0.01), dietary habits score (p < 0.001) and appetite (p < 0.001) and the degree of movement (p < 0.001) and life satisfaction (p < 0.001), marital intimacy (p < 0.001) and relationship satisfaction with their children (p < 0.001) were significantly higher than the 'bad' group. The level of depression (p < 0.001) and severe feeling of menopausal symptoms (p < 0.001) were significantly higher in the 'poor' group. The results of correlation analysis demonstrated that educational level (r = 0.069, p < 0.05), income (r = 0.157, p < 0.001), eating habits (r = 0.235, p < 0.001), appetite (r = 0.263, p < 0.001), life satisfaction (r = 0.197, p < 0.001), marital intimacy (r = 0.167, p < 0.001), child relationship satisfaction (r = 0.149, p < 0.001), positive attitude toward menopause (r = 0.070, p < 0.05) showed a positive correlation, but depression (r = -0.122, p < 0.001) and menopausal symptoms (r = -0.292, p < 0.001) showed a negative association with self-rated health status. The predictable factors affecting the self-rated health status of middle-aged women were examined by multiple regression analysis. The 'menopausal symptoms - physical discomfort' was the most important variables followed by the 'appetite', 'eating habits', 'menopause symptoms - sensory problems', 'BMI', 'positive attitude toward menopause' and 'high marital intimacy'. These results showed that the 'appetite' and 'eating habits' are important factors affecting the self-rated health status. Therefore, a program of dietary education must be considered for the effective health education and counseling of middle-aged women.

The Evaluation Study on Eating Behavior and Dietary Quality of Elderly People Residing in Samcheok According to Age Group (삼척지역 성인 및 노인 남녀의 연령별 식행동과 식사의 질 평가)

  • The purpose of this study was to evaluate the eating behaviors and dietary quality of various aged adults. This study conducted through questionnaire and dietary survey by 24-hr recall to 850 adults residing in Samcheok. Subjects were divided into four groups according to the age in male and female, which included 20~29 yrs group (male n = 94, female n = 66), 30~49 yrs group (male n = 201, female n = 216), 50~64 yrs group (male n = 88, female n = 96), and $\geq65$ yrs group (n = 46, female n = 43). In male, 20~29 yrs group had a larger proportion of subjects who skipped breakfast, lunch and dinner compared to other groups (p < 0.001, p < 0.05, p < 0.01). The daily food and energy intakes in $\geq50$ yrs group were significantly lower than those of < 50 yrs. Protein and fat intakes of 20~29 yrs group were significantly higher than those of the other groups. But ND (Nutrient Density) of minerals as like calcium, iron and plant iron in 20~29 yrs group were significantly lower than those of other groups. The KDDS (Korean's Dietary Diversity Score) of 20~29 yrs group, 30~49 yrs group, 50~64 yrs group and $\geq65$ yrs group in male were 4.1, 3.8, 3.7 and 3.5 respectively and there was significant difference (p < 0.001). In female, skipping breakfast and dinner were significantly higher in 20~29 yrs group than in other groups (p < 0.001, p < 0.001). And the use of nutrient supplementation was higher in 30~49 yrs group than that of other groups (p < 0.05). The daily energy intakes was higher in 20~49 yrs group than that of $\geq65$ yrs group. The ND (Nutrient Density) of animal protein, vitamins A and $B_1$ in 20~29 yrs group were significantly lower than those of other groups. The KDDS of 20~29 yrs group, 30~49 yrs group, 50~64 yrs group and $\geq65$ yrs group in female were 4.0, 3.9, 3.9 and 3.6 respectively and $\geq65$ yrs group was significant lower than other groups. According to these results, $\geq65$ yrs and 20~29 yrs group had more dietary habit problems and poor nutrition status than 30~64 yrs group. The results of this study revealed that nutritional management and education for adequate meals should be emphasized in adults and elderly.

Latent Profile Analysis of PTSD symptoms and PTG among Adults in South Korea: the Differences in Binge Eating, Non-Suicidal Self-Injury, and Problem Drinking Behaviors (잠재프로파일분석(LPA)을 활용한 PTSD 증상과 외상 후 성장 수준의 양상: 폭식, 비자살적 자해, 문제성 음주행동에서의 차이)

  • The present study examined patterns of co-occurrence between DSM-5 posttraumatic stress disorder(PTSD) symptoms and posttraumatic growth(PTG) among Korean populations(n= 860). Latent profile analysis was used to identify subclasses and suggested that the 3-class model fit best: (1) Low PTSD/Mild PTG group (2) Low PTSD/High PTG group; (3) High PTSD/High PTG group. Class membership was predicted by demographic variables, social isolation, and frequency of traumatic experiences. Classes also differed with respect to self-destructive behaviors(binge eating, non-suicidal self-injury, and problem drinking). These findings contribute to future research about the coexisting patterns of PTSD and PTG, and to identify high-risk individuals who suffer from trauma-related problems in clinical practice.

Test of Validity and Reliability of the Adolescent Mental Problem Questionnaire for Korean High School Students (고등학생용 정신건강 및 문제행동 선별질문지(AMPQ)의 타당도 및 신뢰도 검증)

  • Purpose: This study was done to test the validity and reliability of the Adolescent Mental Problem Questionnaire (AMPQ) for Korean high school students. Methods: The AMPQ was designed to assess adolescents', mental health status and problem behavior (Ahn, 2006). A methodological study design was used with exploratory factor analysis, Pearson's correlation coefficients, and a fitness of the modified model for validity. Also, Cronbach's alpha coefficients and alternative-form method for reliability were used. AMPQ was tested with a sample of 36,313 high school students. The participants consisted of 18,701 males and 17,612 females. Results: Seven factors were extracted through factor analysis: 'Psychiatric problems', 'Delinquency', 'Academic troubles', 'Family problems', 'Hazardous behavior', 'Harmful circumstance', 'Eating problems'. These factors explained 51.1% of the total variance. The fitness of the modified model was good ($X^2$=38,413.76, Goodness of Fit Index [GFI]=.94, Adjusted Goodness of Fit Index [AGFI]=.93, Comparative Fit Index [CFI]=.95, Root Mean Square Error of Approximation [RMSEA]=.05), and concurrent validity with Korea-Youth Self-Report [K-YSR] was .63. Cronbach's alpha coefficient of the 31 items was .85. Conclusion: The results of present study suggest that the modified AMPQ instrument may be useful for efficiently assessing mental health status and problem behavior in late adolescent, high school students.

A study on the development of automatic feeding system in an inland aquafarm (육상양식장용 자동 먹이 공급 시스템 개발에 관한 연구)

  • These days our coasts have been damaged by the polluted water resulting from the construction of industry on the shore, increasing population and urbanization. The destruction of ecosystem has induced many problems to aquaculture such that it raises the production cost of aquatic products for eating. For solving these problems aquafarm has been moving to the land. This paper intends to describe the automatic feeding system for the inland fish farm. An existent automatic feeding system has problems such that feed quantity is not accurate and feed itself is broken by feed motor. But a proposed system in this paper is more accurate than the existent system in view of feed quantity by using the combination of valve and load-sell. Resultantly, the system can safely transfer feed to inland nursery tank. Through several experiments using a real system, the effectiveness of the proposed system is verified under all conditions.

Examination about the Television's Role of Nutrition Education through Content Analysis of Nutrition-related Programs (영양관련 프로그램의 내용분석을 통한 텔레비전의 영양교육적 역할의 검토)

  • In order to examine the television(TV)'s role of nutrition education and the nutritional interests and problems of the general public in the 1990s, a comtents analysis was done on two nutrition-related TV programs, a regular round-table talk show and a newscast. Broadcast from January 1993 to July 1997 and from January 1997 to July f1997, respectively. Nutrition-related information was classified into five categories. Food and nutrient(39.5%) and diseases(34.7%) were most frequently telecasted, which were followed by food habits and general health(13.0%), traditional dishes and cookery(8.2%), and food sanitation and safety(4.6%). In becoming the latest year, some trends in the issues displayed increased telecasts about disease, dish and cookery, and food safety, while the telecasting of food and nutrient decreased. The contents about the relations hip between life-style(including diet) and chronic degenerative diseases and the importance of balanced diets and regualr meals for health promotion became particularly emphasized. Overall, two TV programs provided the public with positive, practical, and sometimes practive nutrition education messages for improving eating life and health care. They also raised the public's awareness of the nutritional importance of Korean staple foods such as rice, kimchi, seaweed, and soysauce, and they sometimes satified the audience's curiosities by introducing Korean food culture or foods of Buddhist priests. When the accident of food toxicity occurred concrete information about how to manage it was rapidly given to the public. In addition they played a role in food balance policy by telecasting over-product foods such as garlic and onion. However some negative points appeared. Telecasts on milk and its products and diabetes mellitus showed the least frequently. These shows should be broadcast more often considering the present nutrition and health problems in Korea. Some functions or effects of foods were mostly explained by only physicians of Chinese medicine. Sometimes misinformed, unclear, overemphasized, biased, or unfair information was televised to the public. If these problems could be solved through the sincere cooperation between nutrition faculty and TV produces, become televison could a more complete and effective medium for educating the public about nutrition.

Problems Encountered in Analyzing the Market Size, Purchase, and Consumption of HMR in the Republic of Korea (국내 가정간편식의 시장 규모, 구매 및 섭취 실태 분석의 문제점)

  • Objectives: This study examined the problems encountered when analyzing the market size, purchase, and consumption of HMR (home meal replacements) in the Republic of Korea. Methods: The macro data relevant to the market size and purchase status of HMR were critically summarized. The micro data retrieved from the 2019 & 2020 Korea National Health and Nutrition Examination Survey (KNHANES) were analyzed to understand the consumption of HMR. Results: The Korea Agro-Fisheries & Food Trade Corporation and the Ministry of Food and Drug Administration reported the market size of HMR, whereas the Korean Rural Economic Institute and the Rural Development Administration reported the purchase expense and frequencies of HMR. Since the values on the market size and purchase status were calculated or surveyed using different scopes of HMR, there have been reliability issues for the data presented. Additionally, lack of consensus on the use of Korean terms corresponding to HMR was found to be a problem. To examine the consumption of HMR, analysis of the food intake data from KNHANES presented results with very low validity due to the inappropriate survey and coding scheme not reflecting the inclusion of new food types. Conclusions: Several problematic discrepancies were encountered in the statistics on HMR. The fundamental cause of these problems was the absence of agreement on the scope of HMR and the Korean terms corresponding to it. Considering the increasing importance of HMR in Korean diets, urgent cooperative efforts are required between the government and academia to derive an agreed Korean term and establish the scope of HMR.
