시판용 요구르트와 Lactobacillus acidophilus 요구르트의 생화학적 활성의 비교 (Comparison of the Biochemical Activities of Commercial Yogurts and Lactobacillus acidophilus-containing Yogurt)

  • Lactobacillus spp.같은 유산균은 탄수화물을 발효하여 ATP를 생성하며, 시판되는 요구르트 생산에 이용되고 있다. Lactobacillus spp.는 장관계 건강에 유익한 균으로, 특히 Lactobacillus acidophilus를 함유하는 요구르트는 대장암 초기단계를 예방하는 효과가 있는 것으로 나타나 관심이 모아지고 있다. 본 연구에서는 고형 요구르트와 액상 요구르트, 그리고 Lactobacillus acidophilus 세 그룹의 유산균을 배양하였다. 먼저 Lactobacillus spp.의 최적의 배양조건을 조사하였고 세 그룹의 생장능과 젖산생성을 비교하기 위해 혼탁도와 pH를 측정하였다. 배양 상층액의 젖산을 비교하기 위해 HPLC를 시행하였으며 Staphylococcus aureus와 Escherichia coli에 대한 항균력을 측정하였다. Lactobacillus spp.의 최적의 배양조건은 $25^{\circ}C$의 온도로 MRS배지에서 24시간 배양이었다. 혼탁도와 젖산 생성은 L. acidophilus가 가장 높았고 액상 요구르트, 고형 요구르트 순으로 나타났다. Paper disk법을 이용한 항균력 시험에서는 S. aureus에 대해서는 세 그룹 모두 항균력이 없었으며 E. coli에 대해서는 L. acidophilus에서 1.8 mm의 억제대를 보였다. 이 연구결과로 L. acidophilus는 높은 젖산 생성 능력과 항균력을 가지고 있음을 확인하였다.

가족 내 자녀 구성에 따른 가정주부들의 가족에 대한 비만 관련 변인 인지 (Housewives' Perception on Obesity Related Variables of Family According to Child Composition of Household)

  • 가족 내 아동 구성에 따라 가정주부들이 가족들의 비만 관련 변인을 어떻게 인지하는지 조사되었다. 90명의 가정주부가 자신과 가족들에 대한 사회인구 정보, 체중인지, 식습관행동인지, 신체활동인지를 묻는 설문지에 응답하였다. 이들은 가족의 아동 구성에 근거하여 세 그룹; 아들만 있는 가정(BO), 딸만 있는 가정(GO), 아들 딸 모두 있는 가정(BG), 으로 편성되었다. BO의 아들들은 GO의 딸들에 비해 높은 수치의 신장, 체중, WHR을 보였으나(p <.05), 이 두 그룹 간에 BMI와 허리둘레는 차이가 없었다. BO의 엄마들은 아들들이 활동적이라고 인지한 반면 GO의 엄마들은 딸들이 비활동적이라고 인지하였다(p <.05). GO의 딸들은 BO의 아들들이나 BG의 딸들에 비해 덜 규칙적인 식사를 하였다. 일반적으로 가정주부들은 가족구성원의 체중을 BMI 및 허리둘레와 연관되어 인지하였다. 엄마의 BMI 가 증가할수록 BO의 아들의 BMI는 동반 상승하였으나(p <.05), 다른 그룹에서는 나타나지 않았다. 칼로리 섭취와 신체활동 권장에 대한 엄마의 인지는 신체형태에 근거하지 않았다. 이 결과들은 가정주부들이 가족 내 아동 구성에 따라 비만 관련 변인을 다르게 인지함을 제시하고 있다.

조리 과정 중 시래기의 항산화 활성 및 항균 활성 비교 (Comparison of Antioxidant and Antimicrobial Activities in Siraegi (Dried Radish Greens) according to Cooking Process)

  • 본 실험에서는 조리과정(non-blanched, blanched, seasoned) 중 시래기의 항산화 관련 물질 함량과 항산화 활성 및 항균활성의 변화를 측정하여 한식 고유의 조리법인 나물의 우수성을 알리고자 하였다. 80% ethanol에 추출한 시래기의 수율은 무친 후가 7.55%로 가장 높았으며, 데치기 전이 4.91%를 나타내었고, 데친 후가 0.33%로 가장 낮은 수율을 보였다. 총 폴리페놀 함량은 3.57~129.85 mg GAE/100 g FW 범위로 무친 후 시래기가 $129.85{\pm}0.62mg$ GAE/100 g FW로 가장 높게 나타났으며, 총 플라보노이드 함량에서도 무친 후가 $35.56{\pm}1.19mg$ CHE/100 g FW로 가장 높은 함량을 나타냈다. 4가지의 항산화 실험(DPPH assay, ABTS assay, FRAP assay, Reducing power) 결과, 무친 후 > 데치기 전 > 데친 후 순으로 높은 활성을 보였다. 항균 활성 측정 결과, 데치기 전 시래기에서만 활성이 나타났는데, B. cereus와 E. cloacae 두 균에 대해서 농도 의존적으로 항균 활성을 나타냈고, E. coli와 P. aeruginosa 두 균에 대해서는 10 mg/disc의 농도에서만 각각 9.25 mm, 9 mm의 clear zone을 생성하였다. 상관관계 분석 결과, 총 폴리페놀과 총 플라보노이드 함량이 증가할수록 radical 소거 활성 및 환원력의 활성이 증가하여 시래기에 함유된 총 폴리페놀 및 플라보노이드 함량이 항산화 활성에 중요한 영향을 미치는 것으로 사료된다. 따라서 항균 활성 측면에서는 시래기를 조리하지 않고 섭취하는 것이 좋으나, 건조 나물을 섭취하기 위해서는 특성상 반드시 불린 후 조리하는 작업이 필요하다. 또한 무치거나 조리하는 과정에서 갖은 양념이 첨가되어 항산화 효능이 증가하므로 시래기를 섭취할 경우, 가능하면 장시간 물에 삶는 조리법은 피하고, 무치는 조리법을 사용하는 것이 건강에 이로울 것으로 사료된다.

어머니의 비만 스트레스와 어머니 및 유아 자녀의 비만도, 식품 섭취 및 활동량에 대한 연구 (Obesity-related Stress, Food Group Intake, and Physical Activity in Mothers and Their Children)

  • The mother's obesity-related stress and it's association with obesity, food intake, and physical activity in both mothers and their children were determined. Based on self-reports from 470 mothers, obesity stress of mothers were scored by using a five-point Likert scale; only low and high stress scores were used in this study. The perceptions of mothers' weights and their children's weights, mothers' Body Mass Indices (BMI), and preschoolers' Weight-Length Indices (WLI)(%) were also determined. The obesity stress of mothers was significantly associated with the mothers' BMI (high stress: $23.5{\pm}2.4$ vs. low stress: $19.6{\pm}1.7$, p<0.05), but not with their children's obesity. Mothers with a high obesity stress reported a higher percentage of family history of obesity (62.1% vs. 38.3%, p<0.001) than mothers with low obesity stress. Compared to mothers with low obesity stress, mothers with high stress had lower correct-perceptions about their weights (p<0.05) but higher correct-perceptions for their children's weights. Almost 54.5% of mothers with high stress reported watching television 2 or more extra hours per day, compared with 32.2% of mothers with low stress (p<0.05). More children of mothers with high stress had long hours of daily TV viewing than children of mothers with low stress (36.0% vs. 15.3%, $X^2=10.491$, p<0.05). Mothers with high stress reported lower intake of protein-rich foods (p=0.01) and vegetables (p=0.039), but a higher intake of snacks (p=0.009), compared to mothers with low stress. More children of mothers with high stress reported eating high fat snacks or high sugar snacks everyday, but this was not statistically significant. In conclusion, high obesity stress in mothers were greatly associated with their BMI and their inactive life style, including long TV viewing hours per day and unbalanced food intakes, which can lead their children becoming inactive and obese. Special attention is recommended for overstressed mothers and their children, especially those who enjoy long hours of TV viewing.

여성의 출산 후 체중변화와 생활양식 (Body Weight Changes and Lifestyle in Women within 1 year after Childbirth)

  • Purpose: Gestational weight gain and prepregnancy body weight are important factors of childbirth outcomes, which further cause obesity, metabolic diseases, or psychological problems later in women's lives. Changes in diet, westernized lifestyle, traditional postpartum care, and childbirth at older age are thought to be threats to proper weight management in Korean women of reproductive age. Public health and antenatal care need to focus on the proper body weight management of women by carefully planning pregnancy to postpartum periods. Purpose: This study explored the body weight changes from pregnancy to postpartum and the related characteristics in women within 12 months after childbirth. Methods: A cross-sectional, retrospective study was conducted with 102 Korean women within 12 months after childbirth. Data were collected using an online survey system, and a structured questionnaire available for electronic self-administration was modified to include demographics, obstetrical history, and body weight at 6 time points. The International Physical Activity Questionnaire and Eating Habit Measurement instruments were also used in data collection. A professional survey agency recruited the participants, and data were automatically saved and then analyzed. Results: The average age of the participants was 33.8 years, 48% were housewives and were well-educated. Seventy-two percent of the participants were primiparas and 82% had breastfed their babies. The body mass index (BMI) ranged from 17.3 to 27.8, indicating that 21.5% of the participants were overweight or obese. The mean gestational weight gain was 11.8 kg, and weight loss was apparent during the first 3 months postpartum. The mean decline in weight was 3.4 kg at one year after childbirth. Women wanted to lose 5.6 kg (range: 3~20 kg), however 44% of them reported that they had not engaged in any weight control efforts. Further, 72% of them reported having engaged in a low level of physical activity. Body weight was not associated with women's characteristics, physical activity score, and diet. Conclusion: Women's awareness of gestational weight gain, lifestyle modification, and the risk of prolonged weight retention should be promoted through the antenatal and women's healthcare systems. As pregnancy and childbirth are critical events that affect women's health, integrative education to ensure healthy transition to life after delivery is required.

태음조위탕의 적용이 태음인 비만여대생의 신체조성, 혈청지질농도 및 혈중 항산화 효소에 미치는 효과 (Effect of Taeeumjoweetang on the Body Composition, Serum Lipid Level and Antioxidant Enzyme Activity of Obese Female College Students)

  • 1. Objectives: Though the eating habits have improved and the living method has become convenient according to the economic growth thanks to the modern industrialization, because of the lack of exercise, obesity, wrong eating habits and stress etc, various symptoms of disease of adults are on the rise. This is the phenomenon that happens as the eating life has become life in the West along with the inundation of the western culture in our society. In this perspective, there has been many various clinical research that's been proceeded so far about the physical constitution and obesity, but there has been little research on the objective analysis of the clinical research about the alimentotherapy using taeeumjoweetang. 2. Methods: In this research we have checked the weights, fat rates, fat weight, abdominal fat rate, blood pressure, and BMI over the objects of the women that were diagnosed as lunisolar system as their physical constitution, and assessed the paramecium lipid, in-blood antioxidation enzyme and the damage of oxidization in the urine by physical constitution-specific of the body shapes that were determined by BMI. The statistical analysis of the current research was processed by using of SPSS 17.0 program. We have figure out statistical amounts such as the arithmetic average, average deviation rate and percentage number. Fro the verification of he significancy of each elements, we have used the paired t-test, ANOVA, Chi-square test at the level of p<0.05. 3. Results and Conclusions: Their characteristics are age $21.20{\pm}1.35$, height $160.30{\pm}6.11cm$, weight $64.66{\pm}8.72kg$, fat rates are $35.97{\pm}4.87%$, fat amount $23.40{\pm}5.48$, abdominal fat rate $0.823{\pm}0.03$, BMI $25.12{\pm}2.79kg/m^2$, and systolic blood pressure $111.60{\pm}10.28mmHg$ and diastolic blood pressure $68.60{\pm}7.43mmHg$ and we have let them take the medicine twice a day for 8 weeks. The clinical result for the Cholesterol, Triglyceride, HDL-cholesterol, LDL-cholesterol, SGOT, SGPT, of the object people was that for the function of the liver, the result of the SGOT and SGPT test was $17.16{\pm}3.05$, $15.00{\pm}2.99IU/L$, which was a decrease, and had statistical meaning, but for the SGOT, though the figure reduced to $11.92{\pm}4.61$, $10.80{\pm}3.07$, it had no statistical meaning. For the whole cholesterol level, the figure reduced to $169.00{\pm}19.95$, $160.08{\pm}22.52$ mg/dL and had statistical significance(p<0.05). Neuter fat number, Triglyceride has slightly increased to $67.52{\pm}36.32$, $68.08{\pm}47.33$ mg/dL but did not have any statistical meaning. The antioxdant enzyme marker standard marker, SOD has increased to $2.52{\pm}0.73$, $2.86{\pm}0.60U/ml$, and had statistical significance(p<0.01). Catalase also increased by $0.63{\pm}0.18$, $1.07{\pm}0.25mmol/ml$ and had statistical meaning(p<0.01). GPx also increased to $204.76{\pm}32.64$ nmol/ml and had statistical meaning(p<0.01). But, for the Total antioxidant, though it has raised to $1.51{\pm}0.26$, $1.57{\pm}0.17nmol/{\mu}l$, it did not have any statistical meaning. MDA of oxidative stress marker has decreased to $1.70{\pm}0.68{\mu}g/ml$, $1.21{\pm}0.50{\mu}g/m$ and had statistical significance(p<0.01). 8-OHdG also decreased $3.35{\pm}0.95ng/ml$, $2.21{\pm}0.50ng/ml$ and had statistical meaning(p<0.01). In this research, we have analyzed the various markers relating to BFM and changes in oxidative enzyme in blood by takingtaeeumjoweetang. Taeeumjoweetang has the positive effect on inbody antioxidant system and reducing the content of cholesterol, which is proven to help losing weight and improving hyperlipidemia statistically. With this research, we hope to improve the lifestyle of those who are either obese or need to manage their dietary habits, and also to become the touchstone of integrating Oriental Medicine with the science of food & nutrition.

제7기 (2016-2018년) 국민건강영양조사 자료를 이용한 식생활평가지수 준수와 대사증후군 위험요소 및 대사증후군 발생 관계 연구 (Benefits of adherence to the Korea Healthy Eating Index on the risk factors and incidence of the metabolic syndrome: analysis of the 7th (2016-2018) Korea National Health and Nutrition Examination Survey)

  • 본 연구는 제7기 (2016-2018) 국민건강영양조사자료를 이용하여, KHEI 점수와 대사증후군 위험요소 및 대사증후군의 발생 관련성을 연구하고자 하였다. 연구대상자는 제7기 국민건강영양조사 참여자 중 20-59세의 성인으로 연구에 이용한 변수의 결측치가 없는 8,345명을 최종대상으로 분석하였다. KHEI의 총 평균은 100점 만점에 61.06점, 남성의 총 평균은 59.63점, 여성의 총 평균은 62.50점으로 여성이 남성보다 유의적으로 KHEI 총 평균이 높았다. KHEI의 3개 영역 중 '권고하는 식품 및 적정성 평가영역'과 '절제영역'에서 여성이 남성보다 유의적으로 점수가 높았다. KHEI 점수에 따른 일반적 특성을 파악하기 위하여 KHEI 점수를 4분위수로 나누었으며 남녀 모두 연령대와 가구소득이 Q1그룹에서 Q4그룹으로 갈수록 유의적으로 높았으며, 현재 흡연 비율은 유의적으로 낮았다. 남성은 교육수준과 경제활동상태에서 Q1그룹에 비해 Q4그룹이 대학교 졸업이상 비율과 경제활동 참여율이 유의적으로 높았다. 여성은 음주여부, 우울증여부, 외식횟수에서 Q4그룹이 Q1그룹보다 현재 음주, 우울증 유병자비율과 1일 1회이상 외식 비율이 유의적으로 낮았다. 식품안정성에서는 남녀 모두 Q1그룹이 Q3그룹보다 '식품안정군'이 유의적으로 낮았다. 대사증후군과 관련된 영양소 섭취 실태에서 남녀 모두 Q1 그룹의 에너지 필요 추정량 미만 섭취자 비율이 유의적으로 높았으며, 탄수화물, 단백질, 비타민 C, 칼슘, 비타민 B1, 비타민 B2, 니아신은 평균필요량 미만 섭취자 비율이 유의적으로 높았고, 식이섬유소는 충분 섭취량 미만 섭취자 비율이 유의적으로 높았다. 남성의 공복혈당은 Q3그룹이 Q1그룹보다 유의적으로 높았다. 여성의 BMI는 Q4그룹이 Q2그룹보다 유의적으로 낮았으며, 수축기 혈압은 Q3그룹이 Q1그룹보다 유의적으로 높았다. 여성의 총콜레스테롤은 Q4그룹이 Q1그룹보다 유의적으로 높았다. 대사증후군 위험요인에서 남성의 고중성지방혈증 유병률은 Q1그룹이 Q4그룹보다 유의적으로 높았으며, 고혈당 유병률은 Q3그룹이 Q1그룹보다 유의적으로 높았다. 여성의 고혈압 유병률은 Q3그룹이 Q1그룹보다 유의적으로 높았으며 대사증후군은 Q2그룹이 Q1그룹보다 유의적으로 높았다. KHEI 점수에 따른 대사증후군 위험요인과 대사증후군 연관성 연구결과, 남녀 모두 KHEI 총점수가 높을수록, 20-29세가 50-59세에 비해 대사증후군 위험요소 및 대사증후군의 발생위험이 유의적으로 낮았다. 교육수준, 소득수준, 흡연, 음주, 우울증 여부는 성별에 따라 다른 양상을 보였다. 교육수준에서 남성은 저HDL콜레스테롤혈증, 고혈당의 발생위험이 유의적인 차이를 보였으며, 여성은 우울증이 있는 경우가 없는 경우보다 고중성지방혈증은 1.81배, 고혈당은 1.90배, 대사증후군은 2.50배로 발생위험이 유의적으로 높았다. 남녀 모두 소득수준이 '하'일 때 '상'에 비해 고중성지방혈증, 대사증후군의 발생위험이 유의적으로 높았으며 특히, 여성은 복부비만, 고혈당, 고혈압을 남성은 저HDL콜레스테롤혈증 발생위험이 유의적으로 높았다.

Use of Prebiotics, Probiotics and Synbiotics in Clinical Immunonutrition

  • It is a recent observation that about 80 per cent of the body's immune system is localized in the gastrointestinal tract. This explains to a large extent why eating right is important for the modulation the immune response and prevention of disease. In addition it is increasingly recognized that the body has an important digestive system also in the lower gastrointestinal tract where numerous important substances are released by microbial enzymes and absorbed. Among these substances are short chain fatty acids, amino acids, various carbohydrates, poly-amines, growth factors, coagulation factors, and many thousands of antioxidants, not only traditional vitamins but numerous flavonoids, carotenoids and similar plant- and vegetable produced antioxidants. Also consumption of health-promoting bacteria (probiotics) and vegetable fibres (prebiotics) from numerous sources are known to have strong health-promoting influence. It has been calculated that the intestine harbours about 300,000 genes, which is much more than the calculated about 60,000 for the rest of the human body, indicating a till today totally unexpected metabolic activity in this part of the GI tract. There are seemingly several times more active enzymes in the intestine than in the rest of the body, ready to release hundred thousand or more of substances important for our health and well-being. In addition do the microbial cells produce signal molecules similar to cytokines but called bacteriokines and nitric oxide, with provide modulatory effects both on the mucosal cells, the mucosa- associated lymphoid system (MALT) and the rest of the immune system. Identification of various fermentation products, and often referred to as synbiotics, studies of their role in maintaining health and well-being should be a priority issue during the years to come.

Role of Endocrine Disrupting Chemicals in the Occurrence of Benign Uterine Leiomyomata: Special Emphasis on AhR Tissue Levels

  • Although benign uterine leiomyomata (LMA) is the most common reproductive tumor in premenopausal women, its etiology is largely unknown. We aimed in the present study to demonstrate the potential role of environmental factors with estrogenic activity in tumor etiology by focusing on the role of aryl hydrocarbon receptor (AhR) which mediates the effects of many environmental endocrine disruptors and contributes to the loss of normal ovarian function in polluted environments. This case-control study aimed to compare the interactions between AhR and lifestyle factors in a clinical setting for the first time among 138 newly diagnosed LMA patients and 138 normal controls who lived in Tehran and Mashhad, respectively, during the last 10 years. To conduct immunohistochemical studies using appropriate monoclonal antibodies, 30 cases were selected retrospectively from 2009-2011 from the pathology departments of two university hospitals in Tehran. Although the levels of sex steroid receptors were similar in adjacent myometrium and uterine leiomyomas of all cases, AhR was significantly overexpressed (p=0.034, OR=1.667) in uterine LMA and this overexpression was correlated with living in Tehran [(p=0.04, OR=16 (1.216-210.58)], smoking[P=0.04, OR=2.085 (1.29-3.371)], living near polycyclic aromative hydrocarbon producing companies [p=0.007, OR=2.22 (1.256-3.926)] and eating grilled meat [p=0.042, OR=1.28 (1.92-3.842)]. Our study contributes to the understanding of the effects of EDCs on AhR levels as well as women's health and points out possible risk factors for the development and growth of uterine LMA. It seems that the development of LMA could be the result of interactions between hormonal and environmental factors.

Sarcopenia: Nutrition and Related Diseases

  • "Sarcopenia", sarcopenia is an old age syndrome, and used to describe the reduction of skeletal muscle. Initially, it was thought that sarcopenia was only a senile disease characterized by degeneration of muscle tissue. However, its cause is widely regarded as multifactorial, with neurological decline, hormonal changes, inflammatory pathway activation, declines in activity, chronic illness, fatty infiltration, and poor nutrition, all shown to be contributing factors. Skeletal muscle mass can be measured by a variety of methods, currently, the commonly used methods are dual-energy X-ray scanning (DXA), computer tomography (CT), magnetic resonance imaging (MRI), etc. Muscular skeletal disorders can also be assessed by measuring appendicular skeletal muscle (ASM), particularly muscle tissue content. At the same time, sarcopenia refers to skeletal muscle cell denervation, mitochondrial dysfunction, inflammation, hormone synthesis and secretion changes and a series of consequences caused by the above process and is a progressive loss of skeletal muscle syndrome, which can lead to the decrease of muscle strength, physical and functional disorders, and increase the risk of death. Sarcopenia is mainly associated with the aging process, but also related to other causes such as severe malnutrition, neurodegenerative diseases, and disuse and endocrine diseases associated with muscular dystrophy, and it is the comprehensive results of multi-factors, so it is difficult to define that sarcopenia is caused by a specific disease. With the aging problem of the population, the incidence of this disease is increasingly common, and seriously affects the quality of the life of the elderly. This paper reviews the etiology and pathogenesis of myopathy, screening methods and diagnosis, the influence of eating habits, etc, and hopes to provide reference for the diagnosis and treatment of this disease. At present, adequate nutrition and targeted exercise remain the gold standard for the therapy of sarcopenia.
