Comparison of Meat Quality Characteristics of Wet- and Dry-aging Pork Belly and Shoulder Blade

  • The physicochemical characteristics and oxidative stability of wet-aged and dry-aged pork cuts were investigated at different aging periods (1, 7, 14 and 21 d). Samples were assigned into four groups in terms of shoulder blade-wet aging (SW), shoulder blade-dry aging (SD), belly-wet aging (BW), and belly-dry aging (BD). SD showed significantly higher pH at 21 d of aging than the other samples. Wet-aged cuts had significantly higher released water (RW) %, lightness ($L^*$) and shear force compared to the dry-aged meats. Sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) analysis showed greater degradation of proteins for dry-aged cuts than the wet-aged cuts. At the end of aging, wet-aged cuts showed significantly lower thiobarbituric acid-reactive substances (TBARS) value than the dry-aged samples, indicating higher oxidative stability for wet-aged pork cuts. However, dry-aging led to higher degradation of proteins resulting in increased water-holding capacity (WHC) and decreased shear force value.

  • The Kuem-River, one of the largest rivers in Korea, is the primary water source for more than 4 million people in Kongju city and surrounding area. To study the effect of stormwater runoff to CSOs, twelve monitoring sites were selected in two large cities (City of Kongju and City of Buyeo) near the Kuem-River. Monitoring was reformed by collecting grab samples, measuring flow rates during dry and wet seasons during over two rainy seasons. Generally the flow rate of wastewater in combined sewers was rapidly decreased after 23:00 P.M. and gradually increased from 06:30 A.M. in all sites during the dry season. The concentrations of pollutant increase approximately 5 to 7 fold for TSS and 1.5 to 2.5 fold for BOD during the rainy season. Monitoring and statistical analysis show that the groundwater contributes on sewage volume increase (average 25-45% more) during dry periods and the stormwater runoff contributes approximately 51-72% increase during rainy periods. Generally the concentrations of combined sewage were more polluted during the first flush period than after the first flush during a storm event.

Post-conditioning Periods and Seed Orientation Affects the Vigor of Cucurbit Seeds with Dry-heat Treatment (건열처리에 따른 박과채소종자의 활력 회복)

  • We investigate the effect of post-conditioning periods and seed orientation on the vigor of cucurbit seeds with dry heat treatment (DHT). All the dry-heat treated seeds exhibited varying degree of seed vigor decreases. In general, pumpkin seeds showed less vigor decreases than the bottle gourd seeds. When the dry heat treated seeds were germinated after post-conditioning for 0, 30, and 120 days, the percentage of germination was enhanced by increasing the period of post-conditioning and the efficiency of post-conditioning differed by crop and cultivar. In both bottle gourd and pumpkin, the vigor of seeds placed in vertically upward and horizontal orientations was higher than that of the seeds placed in the vertically downward orientation. The results suggested that the vigor of dry-heat treated seeds could be improved by applying the proper post-conditioning and seed orientation.

Ingestive Behavior of Heifers Supplemented with Glycerin in Substitution of Corn on Brachiaria brizantha Pasture

  • The objective was to evaluate the ingestive behavior of crossbred heifers finished on a Brachiaria brizantha cv. Marandu pasture receiving four levels of glycerin in their supplementation. Thirty-six crossbred heifers with average initial weight of $264.83{\pm}3.83kg$ and 20 months of age were distributed into a completely randomized design with four treatments and nine replications: control (0%), 4.82%, 10.12%, and 15.56% glycerin in the dry matter. The grazing time reduced linearly (p<0.05), whereas the time spent on activities like rumination, idleness, trough and total chewing time were quadratically affected (p<0.05). Bite rate and number of bites/day were quadratically influenced (p<0.05). The number of bites/swallowed cud and the number of bites/minute, however, increased linearly (p<0.05). Although the time spent on each cud and number of chews per cud were not affected (p>0.05).The number of rumination periods reduced linearly (p<0.05), whereas the number of grazing, idle and trough periods, and the times per grazing, idle, rumination and trough periods were quadratically affected (p<0.05). The feed and rumination efficiencies of the dry matter, non-fibrous carbohydrates, pasture dry matter and concentrate were quadratically affected (p>0.05) whereas the feed efficiency of neutral detergent fiber reduced linearly (p<0.05). Addition of glycerin in substitution of corn in supplements for animals managed on pastures does not influenced feed intake, but reduces the grazing time and increases the idle time. The supplementation also improves feed and rumination efficiencies.

Pollutant Control using the Separation Wall between Stormwater and Sewage in a Combined Sewer System (우오수분리벽을 이용한 합류식 하수관거의 오염물질 제어효과)

  • This research is to determine the stormwater effects on sewer concentrations by measuring and comparing the flow and pollutant concentrations during dry and rainy periods in the existing BOX type combined sewer pipes. The monitoring was carried out in two sites, which are the Daesachen outfall having PE separation wall in BOX type combined sewer pipes and the Yongunchen outfall not having seperatioin wall. The average flow-weighted BOD concentraion in Yongunchen outfall is 2-fold lower than in Daesachen outfall because of the dilution effect from ravine water. However, the pollutant mass loading is 16 fold higher in Yongunchen outfall than in Daesachen outfall because of more flows. According to the research, the separation wall controls 52% pollutant mass during a storm period (11.5 mm/hr rainfall intensity). Therefore, the Yongunchen combined sewer system (CSS) need separation wall to control and to prevent more pollutant input in stream. In Daesachen area, the maximum sewer flow rate during a storm period measured about 10 fold bigger than average sewer flow during dry periods. Also the concentrations between rainy and dry periods increase approximately 33 fold for BOD and 120 fold for SS. In Yongunchen area, it increases about 9 fold for the maximum flow rate, 18 fold for BOD and 22 fold for SS during a storm. Therefore, the research is concluded that the separation wall between stromwater (or ravine water) and sewage can decrease the dilution effect in CSS and control the pollutant loading.

Changes in Sensory Compounds during Dry Aging of Pork Cuts

  • The effects of dry-aging on changes in taste compounds and electronic taste sensing traits of pork were investigated. Ten pork belly and shoulder blade cuts were divided into wet-aging and dry-aging treatments and stored for 21 days at $2^{\circ}C$. The contents of nucleotides and free amino acids, and electronic tongue analysis were investigated at different aging periods (1, 7, 14, and 21 days). The contents of inosine and hypoxanthine of dry-aged pork cuts increased more rapidly, and they were significantly (p<0.05) higher than wet-aged pork cuts. Total free amino acids of dry-aged pork cuts were also significantly (p<0.05) higher than those of wet-aged pork cuts after 21 days of aging. Consequently, umami intensity of dry-aged pork cuts increased more rapidly and the values were significantly (p<0.05) higher than those of wet-aged pork during 21 days of aging. Results suggested that the better palatability of dry-aged pork cuts might be due to higher umami intensity in relation to higher contents of inosine, hypoxanthine, and free amino acids.

  • This experiment was carried out to investigate the effects of the first harvesting times and regrowth periods after the fist harvest on grass regrowth, dry matter (DM) yield and botanical composition in pasture mixtures during 1987 and 1988. For the test, a split plot design with 3 replications was treated with 3 different first harvesting times (vegetative, stem elongation and heading stage) and 3 different regrowth periods (20, 30 and 40 days) after first harvest. Although the total DM yield of grasses was decreased slightly with earlier cutting, the regrowth DM yield and the regrowth plant height was increased significantly with earlier cutting (p < 0.05). Also, the 30 days of regrowth periods was contributed greatly to the regrowth and the DM yield. The percentage of legumes Tmainly red clover) in botanical composition was increased with later initial harvest anrl longer regrowth period after first harvest. Based on the results, it is suggested that good grass regrowth and seasonal distribution could be achieved by the earlier harvest at fist and the regrowth period of 30 days after first harvest in spring.

Effects of Aging Methods and Periods on Quality Characteristics of Beef

  • The objective of this study was to determine effects of aging methods (wet-aged, dry-aged, and packaged dry-aged) during 60 d on quality traits and microbial characteristics of beef. Wet-aged beef was packed by vacuum packaging and stored in a 4℃ refrigerator. Dry-aged beef was used without packaging. Packaged dry-aged beef was packaged in commercial bags. Dry-aged and packaged dry-aged samples were stored in a meat ager at 2℃-4℃ with 85%-90% relative humidity. Meat color, crust thickness, aging loss, cooking loss, Warner-Bratzler shear force (WBSF), texture profile analysis, Torrymeter, meat pH, water activity, volatile basic nitrogen (VBN), thiobarbituric acid reactant substances (TBARS), and microbial analysis were measured or performed every 15 d until 60 d of aging time. Meat color changed significantly with increasing aging time. Differences in meat color among aging methods were observed. Aging losses of dry-aged and packaged dry-aged samples were higher than those of wet-aged samples. Wet-aged beef showed higher cooking loss, but lower WBSF than dry-aged and packaged dry-aged beef. VBN and TBARS showed an increasing tendency with increasing aging time. Differences of VBN and TBARS among aging methods were found. Regarding microbial analysis, counts of yeasts and molds were different among aging methods at the initial aging time. Packaged dry-aged and dry-aged beef showed similar values or tendency. Significant changes occurred during aging in all aging methods. Packaged dry aging and dry aging could result in similar quality traits and microbial characteristics of beef.

  • Differences in need occurrence and competition were investigated among five types of rice(Oryza sativa L.) cultivation. Dry weights of weeds in between transplanting and/or seeding and heading date showed in the decreasing order of dry direct-seeded, flood direct-seeded, machine transplanting with 10-day-old seedling, machine transplanting with 30-day-old seedling, and conventional hand transplanting. A similar trend was obtained with application of weedy followed by weed-free. Weed-free periods allowed to decrease by 20% dry weight of rice were 3 weeks after transplanting(WAT) in transplanting cultivations, 5 weeks after seeding(WAS) in wet direct-seeded rice, and 7-8 WAS in dry direct-seeded rice. On the other hand, weedy periods as determined by the same criterion were 9 WAT in conventional hand transplanting and machine transplanting with 30-day-old seedling, 7 WAT in machine transplanting with 10-day-old seedling, 8 WAS in dry direct-seeded rice, and 6 WAS in flood direct-seeded rice.

Changes in the Contents and Composition of Dietary Fiber during the Growth of Soybean Sprout (콩나물 성장중에 식이섬유 함량과 조성의 변화)

  • This study was conducted to determine changes in th contents and composition of dietary fiber during the growth of soybean sprout. Soybean was soaked in water at $25^{\circ}C$ for 2hrs and cultivated at 2$0^{\circ}C$ for 7 days under dark condition. The soybean sprouts were divided into cotyledon and axis and sampled every 24hrs. The analysis methodlogies used were Van Soest's NDF, AOAC's ADF and lignin and Prosky's IDF, SDF, TDF. The weight of 100 sprouts increased gradually from 20.26g to 90.12g during the growth periods. The weight increased to 344.9% of the original weight. The germination rate was 100% after soaking at $25^{\circ}C$ for 2hrs. Root length increased gradualy from 0.6cm at 1st day to 17.2cm at 7th day. The crude ash and crude fat contents showed no significant change in the cotyledon and axis. The crude protein contents increased in the cotyledon and axis, whereas the total carbohydrate content didn't have general tendency. The insoluble dietary fiber(IDF), soluble dietary fiber(SDF) and total dietary fiber(TDF) contents of cotyledon were no significantly different from 20.01%, 1.45%, 21.46% at 1st day to 22.75%, 2.07%, 24.82% at 7th day on dry basis. In axis those contents increased from 23.19%, 1.97%, 25.16% at 1st day to 32.78%, 3.02%, 35.80% at 7th day, respectively. The neutral detergent fiber(NDF) contents of cotyledon and axis increased from 4.35% to 6.39% and from 6.44% to 26.60% respectively on dry basis. The acid detergent fiber (ADF) contents of cotyledon and axis increased from 2.84% to 4.91% and from 2.5% to 4.7%, but there were no significantly different in the hemicellulose and lignin contents on dry basis. The hemicellulose and lignin contents of axis increased with culture periods from 1.70% to 4.41% and from 0.20% to 2.11%, respectively. The cellulose contents increased from 4.54% to 20.35% on dry basis.
