저장기간에 따른 자색고구마 가공식품의 색소 안정성 (Color Stability according to Storage Period of Purple Sweetpotato Products)

  • 안토시아닌 색소가 다량 함유된 자색고구마를 이용하여 음료, 와인을 제조하는 방법과 음료, 와인, 분말, 식초, 색소의 저장기간별 색소 안정성을 구명코자 시험을 수행한 결과를 요약하면 다음과 같다. 1. 자색고구마 음료는 총고형분 15.6%, 당도 $11.8\;Brix^{\circ}%$, pH 4.1이었고, 와인은 알코올 12.6%, 당도 $7.8\;Brix^{\circ}%$, pH 4.9이었다. 음료와 와인의 색소 안정성은 4개월 저장 후에도 제조 시와 별다른 차이가 없었다. 2. 자색고구마 90% + 유자 5% + 벌꿀 5%로 조제한 음료가 자색고구마 100%나 자색고구마 80% + 유자 10% + 벌꿀 10%에 비하여 기호도가 높았고, 숙성온도는 $30^{\circ}C$에 비하여 $45^{\circ}C$가 더 높은 기호도를 보였다. 3. 자색고구마의 분말과 식초, 색소는 4개월 저장 후에도 색도의 변화가 없어 높은 안정성을 보였다.

보육시설 유아들의 식행동과 식품기호도 조사를 통한 식단개발 및 평가 (Menu Development and Evaluation through Eating Behavior and Food Preference of Preschool Children in Day-Care Centers)

  • This study was conducted to develop and evaluate food menus after investigating eating behaviors and food preferences of preschool children. Parents of the preschool children In 2 Gumi City day-care centers completed questionnaires in July 2003, which were used to assess eating behaviors and food preferences of their preschool children. Analysis of the questionnaires led to the development of the menus. Menus (n=10) were developed for five different categories (two menus were developed for each category) including general menu, unbalanced menu, anemia menu, obese menu, and traditional menu. The preschool children(n=656) evaluated the menus as they were provided with each them throughout October 2003. The five score scale method was used to evaluate taste, smell, looks, texture and general preference of each menu. Results in eating behaviors showed that 70.7% of preschool children had unbalanced eating behaviors. No gender based differences in eating behaviors were found, but in regard to food preferences boys tended to prefer carbonated drinks more than girls. Results indicated that among all menus, fruit ranked highest $(3.97{\pm}0.65)$ for food preference, and vegetables ranked lowest for food preference $(2.46{\pm}0.68)$. Food preference in regard to cooking process indicated the highest preference was for fried foods $(3.80{\pm}0.68)$ and the lowest preference was for raw vegetables $(2.61{\pm}1.27)$ and namul $(2.85{\pm}1.13)$. Preference for taste ranked the highest $(4.30{\pm}0.91)$ but preference for looks recorded the lowest $(3.95{\pm}0.89)$. Of all the foods in the menus, steamed tofu rated the highest for individual food item preference, while tuna sesame leaf rice rated the lowest preference. Statistical analysis of interrelationships among food taste, smell, looks, texture and general preference were significant (p<0.0l). Results from this study suggest that various factors including food taste, smell, looks, and texture influence the food preferences of preschool children. Therefore, it is concluded that by developing a variety of appetizing menus for use at home and in day-care centers, containing varied food items and cooking methods, preschool children will be encouraged to increase their food preferences and to establish appropriate eating behaviors.

일부지역 고등학생의 구강건강실태에 관한 조사연구 (A Study of Oral Health Fact of High School Students in Certain District)

  • Objectives: This study was designed to understand the oral health fact of high school students, search for an education method and learning goal appropriate for the subjects, and utilize them as basic data to think of effective solutions for oral health care. Methods: The samples to achieve the purpose of this research are composed of 386 students in J industrial high school, OO city, Kyounggido, the number of male students 286, and female students 100. Data were statistically analyzed by frequency analysis, cross tabulation by using SPSS WIN Ver. 12.0. Results: First, The answers in terms of oral symptoms were in the order of 31.8% for gum hurt and bleeding, 31.4% for pain in teeth by drinking or eating hot and cold drinks or food, 27.1% for broken or cracked teeth, 25.7% for aching and throbbing teeth, 20.6% for unpleasant mouth smell, and 5.7% for pain of tongue and soft oral tissues. Second, In terms of behavior for oral health, 88.4% answered that they consume cariogenic snacks, while 29.2% of them, 2.5% of male and 6.3% of female enjoy consuming them but hardly brush their teeth after consumption. Third, In terms of timing for brushing teeth, the results show that 50.0% do so before breakfast, 47.9% after breakfast, 15.2% after lunch, 36.9% after dinner, 65.5% before going to sleep, and 3.5% after consuming snacks, whereas 64.2% answered that they are not aware of fluorine mouthwash. Fourth, In terms of oral health condition. proportion of children with one or more caries in permanent teeth was 71.0%, while 51.4% have $2{\sim}3$ cariogenic teeth, and 16.8% have more than 4 cariogenic teeth. Considering sex, female students have somewhat higher ratio showing 68.5% for male and 78.0% for female, but the ratio was 53.1% for male and 46.7% for female in case of $2{\sim}3$ cariogenic teeth, and 17.5% for male and 15.8% for female in case of more than 4 cariogenic teeth. 9.3% of students turned out to have decayed teeth. Fifth, In terms of oral hygiene condition, only 7.9% of them had excellent condition, and 38.4% need to improve. More specifically, 41.1% of male students and 30.6% of female students need to improve their oral hygiene condition. Conclusions: The study results suggest that School Dental health programs increase and need to be community-incorporated and comprehensive from elementary to high school.

DETERMINATION OF SUGARS AND ORGANIC ACIDS IN ORAGE JUICES USING NEAR INFRARED DIFFUSE REFLECTANCE SPECTROSCOPY

  • Beverages based on fruit juices are among the most popular commercially available drinks. There is an ever-increasing demand for these juices in the market. Orange juice is one of the most common as well as most favorite flavor. The fruit processing industries have a tremendous responsibility of quality control. For quality evaluation estimation of various components of the juice is necessary. Sucrose, glucose, fructose, citric acid and malic acid are the prime components of orange juice. Little information is available on analysis of orange juice. However, conventional and general wet chemistry procedures are currently being used which are no longer desired by the industry owing to the time involved, labor input and harmful chemicals required for each analysis. Need to replace these techniques with new, highly specific and automated sophisticated techniques viz. HPLC and spectroscopy has been realized since long time. Potential of Near Infrared Spectroscopy in quantitative analysis of different components of food samples has also been well established. A rapid, non-destructive and accurate technique based on Near Infrared Spectroscopy for determination of sugars and organic acids in orange juice will be highly useful. The current study is an investigation into the potential of Near Infrared Diffuse Reflectance Spectroscopy for rapid quantitative analysis of sucrose, glucose, fructose citric acid and malic acid in orange juice. All the Near Infrared measurements were peformed on a dispersive NIR spectrophotometer (ELICO 153) in diffuse reflectance mode. The spectral region from 1100 to 2500nm has been explored. The calibration has been performed on synthetic samples that are mixtures of sucrose, glucose, fructose, citric acid and malic acid in different concentration ranges typically encountered real orange juice. These synthetic samples are therefore considered to be representatives of natural juices. All the Near Infrared spectra of synthetic samples were subjected to mathematical analysis using Partial Least Square (PLS) algorithm. After the validation, calibration was applied to commercially available real samples and freshly squeezed natural juice samples. The actual concentrations were compared with those predicted from calibration curve. A good correlation is obtained between actual and predicted values as indicated by correlation coefficient ($R^2$) value, which is close to unity, showing the feasibility of the technique.

서울지역 거주 노인들의 만성질환에 따른 식품 및 영양소 섭취 실태 조사 (The intake of food and nutrient by the elderly with chronic disease in the Seoul area)

  • This study was carried out in order to investigate the status of food and nutrient intakes depending on the types of chronic disease of the elderly at welfare centers in Seoul. The total number of subjects was 299 elderly over the age of 60 (82 men and 217 women); they were grouped by the disease status: normal, cardiovascular disease (CVD), diabetes mellitus (DM) and arthritis patients groups. The dietary intakes were obtained by a 24-hour recall and analyzed by CAN-Pro 4.0; they were then compared with the dietary reference intakes for the Korean (KDRIs). In the results of anthropometric data according to chronic disease, the waist circumference of the normal group in males and females was lower than the other groups; in particular, the normal female group showed a lower level of waist-hip ratio, body mass index (BMI) and body fat % than those of the other groups. The arthritis group showed a higher intake of milk products than the other groups (p < 0.05); consequently, calcium intake was significantly higher than that of the other groups (p < 0.001). Vitamin A intake in the arthritis group was significantly higher than the intake in the normal and DM groups (p < 0.01). Normal and arthritis groups showed significantly higher intake of zinc and copper than the CVD group (p < 0.01). In general, about 80% of the subjects in this study revealed insufficient intakes of riboflavin, vitamin C, calcium, dietary fiber, vitamin D, biotin and potassium, compared with the estimated average requirement (EAR) or adequate intake (AI). However, sodium intake of all groups was higher than the AI of KDRIs. In conclusion, nutrient intake, according to the chronic disease, showed significant difference in some of the micronutrients, vitamin A, Ca, Zn and Cu. Therefore, we suggest that dietary guidelines, such as reducing the intake of salty foods and sweet drinks and increasing the intake of foods with sufficient calcium, vitamin D and vitamin C, are necessary to the improvement of eating habits for the elderly.

24주 추적 조사를 통한 한국인 알코올 의존 환자의 재발 예측 인자 규명 연구 (A Study on Relapse Predictors in Korean Alcohol-Dependent Patients - A 24 Weeks Follow up Study -)

  • 목 적: 본 연구에서는 알코올 의존의 재발 예측 인자로 중요하다고 알려진 사회 인구학적 변인, 음주력, 음주갈망, 치료 동기, 병식과 같은 요인들 중에 어떤 요인들이 한국인 알코올 의존의 재발을 예측하는지를 전향적으로 조사하였다. 방 법: 알코올 의존 환자 48명을 대상으로 사회 인구학적 특성, 음주력, Timeline Follow-Back(TLFB), Obsessive-Compulsive Drinking Scale(OCDS), Alcohol Urge Questionnaire(AUQ), Pennsylvania Alcohol Craving Scale(PACS), University of Rhode Island Change Assessment(URICA), Hanil Alcohol Insight Scale(HAIS)등을 조사한 후, 24주간 총 11회에 걸쳐 외래를 방문하도록 하였다. 24주 동안 조사한 TLFB자료에 근거하여 대상자 중에서 과음(일일 5standard drinking 이상)일이 나타난 경우 혹은 더 이상 추적 방문이 되지 않은 경우 모두 재발한 것으로 하여 재발군으로 분류하였으며, 그렇지 않은 경우를 비재발군으로 분류하였다. 알코올 의존의 재발을 예측할 수 있는 요인을 찾는 방법으로 SPSS PC+11.5 프로그램의 로지스틱 회귀분석을 이용하였다. 결 과: 음주를 시작한 연령, 음주로 인한 문제가 발생된 연령, 최근 1년간 1일 음주량, 최근 1년간 월 음주일수, PACS, AUQ, OCDS, URICA, HAIS와 같은 요인들 중 최근 1년간 1일 음주량과 HAIS 점수가 알코올 의존의 재발에 영향을 주는 것으로 나타났다(p<.05). 결 론: 알코올 의존 환자의 치료에서 1일 음주량이 많은 경우와 병식이 낮은 경우가 재발 가능성이 높으므로 앞으로의 치료에서 이러한 요인을 고려해야 할 것이다.

Dietary Problems among Middle-Aged Japanese Men

  • Balanced intake of appropriate nutrients is the key to sustaining and promoting health as well as preventing and treating diseases. It is not always easy, however, to take balanced nutrition and various related factors must be taken into consideration. This report provides a summary of studies that have examined the nutrient intakes of Japanese middle-aged men and the relationship of this intake to drinking, job-related separation from families, and health practices. The alcohol consumption of Japanese middle-aged men has more than tripled in the last forty years. When nutrient intake was examined in relation to alcohol consumption, it was discovered that the maximum acceptable alcohol consumption was approximately 23 grams (about two drinks) of pure alcohol, provided the level of nutrient intake for drinkers was equal to that of non-drinkers. The alcohol energy ratio was approximately 5%. It was also discovered that middle-aged men's eating habits deteriorate when they relocate to new posts without their families and live by themselves. Compared to those living with their families, a higher proportion of those living alone have unfavorable eating habits including skipping breakfast or lunch, having a late lunch, and eating and drinking after dinner until bedtime. When Breslow's seven health practices, nutrient intake, and consumption weight by food group were examined, it was discovered that the group that had many beneficial eating and living habits consumed plenty of legume, pulses, fruit, green yellow vegetables and milk products. Their intake of vitamins and minerals was high and the results of a physical examination proved to be excellent. According to nutrition surveys conducted in Japan, China, the United Kingdom and the United States using a 24-hour recall method with common protocols and strict controls to ensure high levels of accuracy and cross-study validity, the Japanese had the highest cholesterol intake and the lowest dietary fiber intake among the four countries. Also, the alcohol energy ratio of the Japanese exceeded 8%, the highest among the four countries, while their intake of magnesium and iron was the lowest These results indicate that it is necessary to enhance nutritional education for middle-aged men and to reinforce the social environments in which they live and work in order to promote proper diet and nutrition in Japan. 미취학 아동의 치아우식증과 식습관 및 간식섭취와의 관계 (A study on the correlation between the dental caries and dietary habits and snack intake of pre-school children)

  • Objectives : The purpose of this study was to correlation between the index of dental caries in primary teeth and the habits of diet and snack which are expected to influence on the index. The subjects of this study were 165 parents of the children who visited a pediatric dental hospital located in Gyeong-gi do from Jun. 15th to Sep. 26th, 2009, and the self-report questionnaire survey was performed. Methods : A questionnaire used in a previous study was revised and completed for this study and it consisted of 15 items on general characteristic, nine items on dietary habit, and five items on snack intake habit. The collected data was analyzed using SPSS program and findings are as follows Results : 1. The index of dental caries in primary teeth by ages was that children of four years old has 4~5 with 27.5%, children of five years old has 2~3 and 4~5 with 33.3% and children of six years old has 1 and 8~9 with 25.6%, showing a statistically significant(${\chi}^2$=37.72, p<.01). 2. The frequency of brushing teeth was found to have statistically significant negative correlation with the number of primary teeth with dental caries (${\chi}^2$=61.20, p<.001). 3. The frequency of taking snack was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=51.42, p<.001). 4. The desirability of dietary habit was found to have statistically significant negative correlation with the number of primary teeth with dental caries (${\chi}^2$=36.51, p<.001). 5. The frequency of taking biscuit was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=67.74, p<.001). 6. The frequency of taking bread was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=29.63, p<.01). 7. The frequency of taking caramel and candy was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=38.85, p<.001). 8. The frequency of taking soft drinks was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=52.92, p<.001). 9. The frequency of taking ice-creams was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=75.07, p<.001). Conclusions : Those findings show that the children with undesirable dietary habit and higher frequency of taking snack have higher index of dental caries in primary teeth, therefore, it is considered that the regular brushing teeth and establishment of desirable dietary habit are very important for keeping health oral cavity. It is recommended that the continuous concern and repeated learning are needed in house and group of rearing infants so that the children take foods of fruits which have function of self-purification than the food of carbohydrates which has high adhesion and level of sweetness.

함초 다당체의 항당뇨 활성 (Anti-diabetic Activity of Polysaccharide from Salicornia herbacea)

  • 함초(Salicornia herbacea)는 염습 지대에서 자생하는 명아주과에 속하는 일년초 식물로서 우리말로는 퉁퉁마디라고 불리우며, 식용과 약용으로 이용되고 있다. 건조된 함초로부터 열수 추출을 하여 조추출물(CSP)을 얻었으며 조추출물을 한외 여과하여 다당체(SP1)를 얻었다. 이렇게 얻은 조추출물과 다당체에 대해 streptozotocin (55 mg/mL/kg)으로 유발한 당뇨 쥐를 이용하여 정상 대조군(NC)과 당뇨 대조군(DC), 당뇨 조추출물군(DCSP), 당뇨 다당체군(DSP1)으로 분류하고 각각 조추출물과 다당체 2%를 6주간 공급하여 실험한 결과, DCSP군과 DSP1군에서는 대조군과 비교하여 혈당은 10%, 25%씩 감소하고, 중성 지방은 13%, 20%씩 감소하여 유의적인 수치를 나타내었다. 즉, 함초로부터 조추출물과 다당체를 획득하여 이들에 대한 항당뇨 실험을 한 결과, 조추출물과 다당체에서 혈당 저하와 중성 지방 저하의 효과를 보였는데, 조추출물보다 다당체에서 더 높은 활성을 보였다. 따라서 함초 다당체는 항당뇨 활성을 가진 바이오헬스 소재로 개발될 수 있을 것으로 기대된다.

HPLC를 이용한 식품중 식용타르색소 8종의 동시분석 (Simultaneous Analytical Techniques for Determination of 8 Synthetic Food Colors in Foods by HPLC)

  • 8종 합성착색료의 동시정성 정량법을 확립하기 위하여 고속액체크로마토그래프(HPLC)를 이용한 분석법에 관한 연구를 수행하였다. 식품에 첨가된 타르색소는 물 또는 에탄올의 혼합액으로 추출하여 진한염산으로 0.5% 염산농도가 되도록 조정하여 시료액으로 하였다. 이를 Sep-pak $C_{18}$으로 정제한 후 HPLC를 이용하여 254nm 및 각 색소별 최대흡수파장에서 정성 정량분석을 실시하였다. 식품별 회수율은 각각 청량음료 81.2-98.0%, 사탕 80.6-96.1%, 껌 79.8-96.3%, 과자 76.5-91.7%, 아이스크림 79.9-93.8%, 젤리 78.6-94.7% 이었다. 색소별 검출한계는 식용색소 청색제1호(B1) 청색제2호(B2), 녹색제3호(G3)는 $0.05{\mu}g/g$, 식용색소 황색제4호(Y4), 황색제5호(Y5), 적색제2호(R2), 적색제3호(R3), 적색제40호(R40)는 $0.10{\mu}g/g$이었다.
