A Study on Physicochemical and Sensory Characteristics of Ssanghwa Tea

  • This study tried to analyze sensual properties by classifying the thermal water extract of the main material used in Ssanghwa tea. Through this study, we wanted to develop popular Ssanghwa tea and further carry out basic research for the development of various menus using it. The ingredients for the Ssanghwa tea were washed under running water, then dehydrated and put in a pot as 2L of purified water. Ssangwha tea were heated at 100℃ for 10 minutes, then lowered the temperature to 75℃ and boiled down to 200 ml for 110 minutes. This study evaluated sensory characteristics of four types of commercial products and the five types manufactured by the description analysis. Quantitative analysis of the commercial Ssanghwa tea showed significant differences between samples in seven of the total 13 sensory characteristics except OG(Smell of grass), OC(Oriental medicine smell), TG(Umami), RT(Thick), RC(Rough) and RS(Tub-Tub) (p<0.05). In particular, differences between samples were evident in CT(Transmittance), CB(Brownness), TW(Sweet taste) and TB(Bitter) (p<0.001), which appeared to be the main differentiated features of appearance, aroma and taste for commercial Ssanghwa tea. 차를 이용한 수돗물 간접 음용시 수돗물 중 미네랄 함량 변화 연구 (Study on the Changes of the Mineral Contents in Tap-water Drinking with Diverse Teas)

  • 본 연구에서는 수돗물을 끓이는 과정에서의 잔류염소와 소독부산물 제거 특성과 더불어 차를 이용하여 끓였을 때 인체 필수 미네랄 성분의 용출특성에 대해 조사하였다. 현재까지 대부분의 연구가 차를 이용하여 끓였을 때 유해 중금속의 흡착 제거에 초점을 맞추었다면, 본 연구에서는 차를 이용하여 끓였을 때 인체 필수 미네랄 성분의 용출특성에 대해 조사함으로써 보다 건강하고 안전하게 수돗물을 음용하는 방법에 대해 제언하고자 하였다. 조사결과 잔류염소농도 0.7 mg/L 수돗물을 약 20분 가열시 모두 제거되었으며, 소독부산물(THMs, HAAs, CH) 농도는 65%까지 감소하였다. 시판 차 5종(옥수수, 보리, 둥굴레, 현미, 결명자)을 이용하여 끓였을 때 인체 필수 미네랄 6종(칼슘, 칼륨, 나트륨, 마그네슘, 황, 인)의 단위중량당용출량 총합은 결명자차가 최대 9.6 mg/g으로 가장 높았으며, 현미차의 용출량은 1.6 mg/g으로 상대적으로 낮았다. 특히 다른 미네랄에 비해 체내에서 정상혈압유지, 세포물질대사, 효소작용 등 중요역할을 담당하는 칼륨의 용출량이 상대적으로 높은 것으로 조사되었다. 또한 차를 이용하여 수돗물을 끓여 마시는 것만으로도 일부 미네랄성분은 한국인 영양권고 섭취량의 최대 40%까지 섭취 가능한 것으로 조사되었다.

A Physiological Stimulating Factor of Water Intake during and after Dry Forage Feeding in Large-type Goats

  • When ruminants consume dry forage, they also drink large volumes of water. The objective of this study was to clarify which factor produced when feed boluses enter the rumen is mainly responsible for the marked increase in water intake in the second hour of the 2 h feeding period in large-type goats fed on dry forage for 2 h twice daily. Six large-type male esophageal- and ruminal-fistulated goats (crossbred Japanese Saanen/Nubian, aged 2 to 6 years, weighing $85.1{\pm}4.89kg$) were used in two experiments. In experiment 1, the water deprivation (WD) control and the water availability (WA) treatment were conducted to compare changes in water intake during and after dry forage feeding. In experiment 2, a normal feeding conditions (NFC) control and a feed bolus removal (FBR) treatment were carried out to investigate whether decrease in circulating plasma volume or increase in plasma osmolality is mainly responsible for the marked increase in water intake in the second hour of the 2 h feeding period. The results of experiment 1 showed that in the WA treatment, small amounts of water were consumed during the first hour of feeding while the majority of water intake was observed during the second hour of the 2 h feeding period. Therefore, the amounts of water consumed in the second hour of the 2 h feeding period accounted for 82.8% of the total water intake. The results of experiment 2 indicated that in comparison with the NFC control, decrease in plasma volume in the FBR treatment, which was indicated by increase in hematocrit and plasma total protein concentrations, was higher (p<0.05) in the second hour of the 2 h feeding period. However, plasma osmolality in the FBR treatment was lower (p<0.05) than compared to the NFC control from 30 min after the start of feeding. Therefore, thirst level in the FBR treatment was 82.7% less (p<0.01) compared with that in the NFC control upon conclusion of the 30 min drinking period. The results of the study indicate that the increased plasma osmolality in the second hour of the 2 h feeding period is the main physiological stimulating factor of water intake during and after dry forage feeding in large-type goats.

동충하초 및 부추 혼합 물추출물의 항산화 및 암세포 증식억제 효과 (Anti-oxidant and Anti-proliferative Effects of Water Extract Mixture of Cordyceps Militaris and Allium Tuberosum)

  • 본 연구에서는 동충하초 및 부추를 열수추출한 후, 최적배합비율을 선정하여 혼합 물추출물을 제조하고 이에 대한 이화학적 특성 및 생리활성 효능을 검증하고자 하였다. 동충하초 및 부추 혼합 물추출물을 제조하였을 때 소비자들이 가장 선호하는 비율은 70:30이었으며, 이취제거를 위한 첨가물로 10% 사과농축액을 사용하여 최종 혼합 물추출물을 제조하였다. 최적 혼합 물추출물의 이화학적 특성을 확인한 결과로 pH는 4.28±0.12로 약산성이었고, 총 산도는 0.19±0.05%로 나타났다. 당도와 탁도는 9.1°Brix 및 1.48을 나타내었다. 동충하초 및 부추 혼합 물추출물의 항산화능은 DPPH radical 소거능, 환원력 및 ABTS radical 소거능을 통하여 확인하였고, positive control와 유사하거나 다소 낮은 우수한 활성을 나타내었다. 또한, 동충하초 및 부추 혼합 물추출물을 LNCaP 및 RC-58T/h/SA#4 인체 전립선 암세포에 처리한 결과 1% 희석액부터 농도의존적으로 세포성장이 억제되는 경향이 나타났고, 형태학적 관찰에서도 농도의존적으로 세포의 형태학적 변화가 유도되는 것으로 확인되었다. 이상의 결과를 통하여 동충하초 및 부추 혼합 물추출물은 동충하초 단일추출물과 비교하여 항산화 및 암세포 성장 억제효능이 높은 것으로 나타나, 단일 추출물보다는 적합한 비율로 혼합한 추출물이 기능성음료를 제조할 때 높은 활성을 나타낼 것으로 판단된다.

Nutrient intakes and medication use in elderly individuals with and without dry mouths

  • BACKGROUND/OBJECTIVES: The nutrition of the elderly depends on various factors. Oral health, especially oral dryness, can be an important risk factor. In this study, we attempted to determine whether dry mouth is associated with compromised nutrient intakes. SUBJECTS/METHODS: A total of 120 participants aged 65-86 yrs (mean age: 69 ± 1 y) were included in this study. Demographic and health-related characteristics, living status, meals, number of medications, medical conditions, chewing ability, and quality of life, the Oral Health Impact Profile (the OHIP-14) were assessed. We performed one day 24-hr recall assessment for nutrient analyses. The differences of the means between the dry-mouth and non-dry-mouth groups were analyzed. Elderly subjects with xerostomia-induced dry mouth were classified as those who reported at least one dryness symptom on a questionnaire. RESULTS: A significant difference in population distribution was observed among the elderly who took medications for hypertension, diabetes and osteoporosis and was significantly higher in the dry-mouth group (70.2%) than in the non-dry-mouth group (44.4%) (P = 0.005). Compared with the non-dry-mouth group (50.8%), a significantly higher proportion (73.7%) of participants in the dry-mouth group took multiple medicines (≥ 4 medications) (P = 0.019). The intakes of vegetable fat, vitamin E, folate and water in the dry-mouth group were lower than in the non-dry-mouth group. The intakes of fluoride and ω-3 fatty acids were significantly lower in the dry-mouth group than in the non-dry-mouth group. CONCLUSION: The participants in the dry-mouth group exhibited low nutrient and water intakes. It is recommended that the elderly with dry mouth should drink sufficient water and receive targeted and specific nutritional guidance to prevent malnutrition.

Momordica charantia extract supplementation tend to affect improvements in body composition and metabolic parameters on tennis players: A pilot study

  • Dietary supplements derived from natural sources are an essential factor in optimizing athletic performance. It has been proposed that the extract of Momordica charantia (M. charantia) that is known as a bitter melon can be potentially used as a novel supplement for health promotion. This pilot study aimed to examine the effects of the M. charantia extract when administered in the form of a sports drink, and we evaluated changes in body composition and metabolic factors in tennis players after 4-week consumption of the extract. Eight male college tennis players were instructed to consume an M. charantia extract 6 times per day (3 in the morning and 3 in the afternoon, and the total daily intake was 600 ml). Collected data were analyzed using paired t-tests to examine the changes over time after consumption of the M. charantia extract. The results revealed a significant increase in the trunk muscle mass, basal metabolic rate, and daily calorie intake (p < 0.05). Levels of protein, minerals, and total body water showed an increased tendency (not statistically significant), whereas intracellular water and extracellular water showed a decreased trend. Furthermore, fat-free mass, skeletal muscle mass, and muscle mass showed an increased tendency. In conclusion, consumption of the M. charantia extract caused an increase in parameters related to protein, muscle mass, and metabolism. It seems that follow-up studies related to fatigue, inflammation, and stress hormones related to the M. charantia extract consumption would be needed.

한국산 다류(茶類)의 항(抗)지아민 영향에 관한 연구 (A Study on the Antithiamin Effects of Korean Teas)

  • 우리나라에서 시판되고 있는 각종 다류(인삼차 2종, 인삼 extract 2종, 인삼분말, 생강차, 오미자차, 홍차, 인스턴트 홍차 2종)중의 antithiamin activity (ATA)와 탑닌함량을 정량하였 다. 한펀, Wistar계의 이유기의 숫쥐 30마리를 인스턴트홍차, 인삼차 B 인삼extract B와 Lipton tea 및 물 투여구(대조구)의 5군으로 나누어 일정향의 지아민을 첨가한 기본사료로 사육하면서 등물의 증체량, 사료 및 음료섭취량, 식이효율을 매주마다 측정하였고, 4주후 24시간 동안 각 투여구의 동물뇨중의 지아민의 함량을 비교하였다. 본 실험에서 사용한 다류중 ATA는 홍차 및 인스턴트 홍차 A가 가장 높았고, 인삼차 A와 오미자차는 비교적 낮았다. 일반적으로 ATA가 높은것은 탄닌의 함량도 많았고 ATA가 낮은 것은 탄닌의 함량도 낮은 경향이었으나, 같은 종류의 차라할지라도 ATA와 탄닌의 함량은 매우 상이하였다. 한편 동물실험에서 증체량은 인삼차 B와 인삼 extract B 투여구가 물, Lipton tea, 인스턴트 홍차 B 투여구에 비해 낮았으나 유의적인 차는 없었으며, 사료 및 음료섭취량, 식이효율도모든 실험구에서 유의적인 차가 없었다. 그리고 뇨중의 지아민 함량은 대조군에 비해 Lipton tea, 인삼차차 B, 인삼 extract구에서 높았고, 인스턴트 홍차 A구는 낮았으나 유의적인 차이는 없었다.

형방지황탕(荊防地黃湯)의 임상적 활용 (The Clinical Utilization of Hyungbangjihwang-tang)

  • 1. Objective The purpose of this study is to examine the characteristics and the improvement in the symptoms of the patients who administrated Hyungbangjihwang-tang. 2. Methods We examined 793 case report forms(CRFs) from six oriental medical hospitals and three regional oriental medicine clinics. These CRFs are recorded from november 2007 to july 2008. All constitutions of cases were diagnosed not only by Sasang constitution experts but also through clinical experiences. The traits of the patients and the effects of their treatment were examined. 3. Results and Conclusion 1. The chief complaints in which the patients showed improvement were Headache, fatigue, lumbago, dyspepsia. 2. The ordinary symptoms in which the patients showed improvement were insomnia, fatigue, constipation, dyspepsia, headache. 3. The average food intake of the patients was normal(65.2%) and their feces had intermediate hardness (semi-soft). The color of their urine was either clear or yellow. 4. The amount of the patients' sweat was appropriate (39.1%) Their water intake was approximately normal, and they preferred drinking the cold water. 5. Among the diseases that the patients previously had chronic gastritis(19.6%) had the highest frequencies. 4. Conclusion: The above results show that Hyungbangjihwang-tang can be considered beneficial to headache, fatigue, lumbargo, insomnia, constipation, dyspepsia patients whose food intake is normal, whose sweat level is either appropriate, who prefer to drink cold water, and who are suffering from chronic gastritis.

Evaluation of the Potential of Commercial Vitamin Drinks to Induce Tooth Erosion

  • Background: The market for vitamin drinks is expanding both in Korea and worldwide. However, it was difficult to find studies regarding the possibility of tooth erosion induction due to vitamin drinks. The purpose of the present in vitro study was to evaluate the effect of tooth erosion caused by a few commercial vitamin beverages on bovine teeth enamel in terms of erosion depth and fluorescence loss. Methods: Three experimental groups (vitamin drinks), a positive control group (Coca-Cola), and a negative control group (mineral water) were established. Each group consisted of 5 specimens obtained from sound bovine teeth. The pH and titratable acidity of beverages were measured. Specimens were immersed in the beverages and artificial saliva for 6 and 18 hours, respectively. This cycle was repeated for 5 days. The depth of the tooth loss caused by tooth erosion (erosion depth) and maximum loss of fluorescence (Max ${\Delta}F$) were measured using the microscope and quantified light-induced fluorescence-digital, respectively. For the statistical analysis, the Kruskal-Wallis test and ANOVA were used to compare the erosion depth and Max ${\Delta}F$ of the enamel surfaces. In addition, Spearman correlations were estimated. Results: The pH of the three vitamin beverages ranged from 2.65 to 3.01, which is similar to that of the positive control group. All beverages, except mineral water, had sugar and acidic ingredients. Vitamin drinks and the positive control, Coca-Cola, caused tooth erosion lesions, and showed significant differences in erosion depth compared to mineral water (p<0.05). The vitamin beverages with low pH were associated with high erosion depth and Max ${\Delta}F$. Conclusion: Vitamin drinks have the potential to cause tooth erosion.

진드기의 수분조절 생리와 진드기 방제전략 (Osmoregulatory Physiology in Ixodidae Ticks: An Alternative Target for Management of Tick)

  • 진드기는 박테리아, 바이러스, 원생동물 및 균류를 포함한 다양한 병원체를 전달할 수 있는 감염병매개체이다. 진드기는 불리한 환경조건에서도 생존할 수 있는 능력이 있으며, 흡혈이 필수적인 절지동물의 진화적 산물로써 비흡혈 기간이 장기간 지속되는 경우에도 생존이 가능하다. 특히, 높은 온도와 낮은 습도 환경에서도 견딜 수 있는 수분 조절 메커니즘과 내열성의 생리적 특징은 진드기가 전 세계적으로 분포하도록 한 중요한 요인이다. 진드기의 침샘, 말피기관, 후장 그리고 뇌를 포함하는 여러 기관이 관여하는 물과 이온의 획득 및 배출은 복합적인 메커니즘에 의해 조절된다. 진드기가 수분을 확보하는 주요 경로는 흡혈과정 또는 공기 중 수증기를 직접 포집하는 방식이며, 이와 더불어 진드기가 자연조건에서 맺힌 물방울을 직접 마시며 수분을 보충한다는 것이 최근 본 연구진의 연구를 통해 밝혀졌다. 물방울에서 획득된 수분은 진드기 침샘의 포도상 부위(유형 I) 또는 중장을 통해 체내로 흡수된다는 것이 형광물질 추적을 통해 확인되었다. 이 연구 결과는 진드기 방제 및 병원체 전파 억제를 위한 전략 개발에 새로운 방향을 제시하였다. 본 종설에서는 진드기 방제를 위한 잠재적 표적인 진드기의 수분조절 및 표피 배설의 생리적 메커니즘을 종합적으로 다룬다.
