Developement of a Design Manual for Kitchen Facility in Foodservice Outlets: A Case Study on a Seolleongtang Specialized Restaurant (푸드서비스시설의 주방 설비 산정 매뉴얼 개발: 설렁탕 전문 식당 사례 적용)

  • Concerns regarding work and food safety in foodservice operations are growing. The purpose of the study is to suggest guidelines for designing foodservice facilities, including school foodservices and Korean restaurants. A case of a franchise restaurant specializing in a Korean food item, Seolleongtang, was used to explain the facility design. The contents of the manual included ways to determine space allocation, calculate the application of utilities and the diameters of supply utility pipelines, and suggestions on how to decide on air conditioning equipment. The standards of the American Gas Association and the Japan Foodservice Equipment Association (JFEA) were applied to design the restaurant space. The JFEA standards and knowledge based on experience and statistics were applied to calculate the usage of utilities like fuel and water. The standards of JFEA and the Society of Heating, Air-Conditioning, and Sanitary Engineers of Japan were applied to calculate the diameters of the water supply and drainage pipelines. For the setting of the heating, ventilation, and air conditioning systems, three ways to carry out the calculation of effective ventilation were explained, as well as options to dicide the standard parameters of the duct and ventilation fans. This manual can contribute to the design of effective and efficient foodservice facilities and help secure the work safety of foodservice employees thereby ensuring food safety.

A Development of Washoff Model for Suspended Solids in Urban Areas (도시유역의 부유고형물 유출평가를 위한 쓸림모형 개발)

  • Suspended Solid (SS) is one of the main pollutants and discharges with attached other pollutants such as heavy metal and toxic substance. It is very important to estimate and forecast the release characteristics of SS for water quality improvement. The current studies assumed that SS release rate is proportional to the rain intensity and suggested exponential washoff models. These models related to the shear force of flow. In this study, a new washoff model is suggested based on relation with SS release rate and mean flow rate of the basin surface which is closely related to the shear force. The proposed model is applied to the Goonja drainage district in Seoul, Korea. The new washoff model simulates the SS discharge more accurately in the various rainfall types. The model can be widely applied to the real problems such as the management of non-point source pollutant and the design of treatment facilities.

  • 우리나라의 경우 근래에 들어 도시지역 내배수시설에 대한 문제점들을 개선하기 위하여 정비사업이 활발히 이루어지고 있으나 시설물에 대한 과거 자료의 데이타베이스(database)화가 전무한 실정이며 정비사업을 시행함에 있어서 체계적인 정비사업 시행이 이루어지지 않고 있다. 따라서 본 연구에서는 내배수시설의 수리$\cdot$수문 해석 모듈을 이용하여 우수배제 목적의 합리적 근거를 마련하고, 현재 표본지역의 중요지점에서만 관측되는 불명수에 대하여 근거별로 불명수를 배분하는 불명수 산정모형과 도시 유출 모형을 이용하여 차집관거별로 발생하는 CSOs 발생량을 추정하는 도시 유출 모형 연계 모형을 구축하여 통합한 내배수시설 노후도 평가 모델을 개발하였다. 또한, 시설물 개량사업의 효율성을 높이기 위하여 수리$\cdot$수문 해석 모듈과 노후도 평가모델이 연계된 최적 개$\cdot$보수 scheduling 모델을 구축함으로써 최적개량 의사결정 시스템을 구축하였으며, 구축된 시스템은 실제 사업지역에의 적용성을 검토하여 GUI(Graphical User Interface)를 통한 의사결정 시스템인 내배수시설 유지관리시스템을 구축하였다.

  • The urban expansion and the modernization of the urban infrastructure need a new technology to manage the facilities. The sewer management, one of the urban infrastructures, requires geographical information systems(GIS) for this purpose, and can be supported by the expert system. Consequently, non-professionals can use this system conveniently. In this study, the search and retrieving capacity of the relational database management system(DBMS) and the chain topology generator of the vector-based GIS were integrated into the sewer management system together with the expert knowledge. This system can predict the sewer volume charge by the simulation, and automate these procedures. This system is also user-friendly by using the user-interface. Finally, the system was applied to one of the Seoul drainage districts and tested.

  • Multi water-loop system is the efficient customer centered facilities of water supply by utilizing the multi water resources. Multi water-loop system is divided into various types. The system is classified potable and non-potable type. Mostly, the potable type utilizes surface water and ground water. However, the non-potable type utilize the multi water resources, such as rain water, sea water, reclaimed water, etc. Selective intake is possible when characteristics of region, physiographic condition and purpose of use are considered. For instance, downtown type, new-city type, agriculture type, island type are available. For development and application of these multi water-loop system, standardization is needed. For standardization, several methods are given; design principles, selection and composition method of multi water-loop system structure, BIM/GIS application method, safety inspection method. Consequently, a road map of design standardization method can be established. In this road map, there are three parts for the standardization of multi water-loop system. Three parts are the considerations, base material and ways of standardization. Design standardization become close when this road map followed by someone who plan the multi water-loop system. In this way, loop system's development is more efficient and economic. In hereafter research, each type's characteristic will be analysed and standardization methods can be established.

  • The purposes of this study are to understand residents' needs in regard to living space and to suggest how to provide layout options for the infill, based on their needs, so that the residents can change their living space to suit their own need. This study analyzed residents' needs in terms of living spaces through literature reviews on apartment remodeling and related previous studies. The results are as follows: First, the residents remodeled the various infill, and remodeling works are then classified into five infill groups according to the flexible features: 1) structural elements, such as flooring, ceilings, interior walls, and windows/doors; 2) equipment elements, such as lighting and electricity, electrical wiring, heating arrangements, and water supply & drainage systems: 3) finishing material elements, such as finishing materials for floors, walls, and ceilings, skirting boards, moldings, and art walls; 4) furniture elements, such as built-in wardrobes, storage closets, and kitchen cabinets; and 5) bathroom facility elements such as faucets and sinks. Second, based on the remodeling features, four ways to provide options can be suggested. 1) options are provided for each room; 2) options are provided in connection with structural elements; 3) options are provided for each finishing material element; and 4) options are provided with the combinations of different bathroom facilities.

  • 최근 전 세계적으로 국지적 집중호우의 강도 및 발생빈도가 증가하고 있고, 이로 인한 인명 및 재산피해가 증가하고 있는 추세이다. 특히 도시유역의 침수는 설계빈도를 초과한 강우가 짧은 지속기간에 집중되었을 때 관로의 통수능력을 초과하게 되어 발생하거나, 주변 하천의 수위상승으로 인한 배수효과로 인해 발생된다. 따라서 기상이변으로 인한 침수피해를 체계적이고 종합적으로 방지할 수 있는 수방대책 수립이 필요하다. 본 연구에서는 서울시 주요 침수유역의 관망 및 펌프장의 수방 대응능력 및 수준을 정량적으로 평가하고자 한다. 이에 서울시의 과거 침수사례를 조사하여 상습침수 구역에 대한 침수 해석범위를 결정하였고 내수침수모의를 위한 적정 홍수해석모형으로 SWMM모형을 선정하였다 또한 수문 기상자료, 지형정보자료, 수방시설 현황 자료 등 각종 기초자료를 조사 및 구축하고 과거 큰 호우사상을 대상으로 관망과 펌프장의 시설능력을 평가를 수행하였다. 평가 결과 대부분 우수관망의 통수능력 한계로 인한 침수가 발생한 것으로 확인되었다. 이러한 분석을 통해 관망 및 펌프장 시설의 개선, 확충 및 설계 기준을 새롭게 제시하고 유역별 홍수취약정도에 따른 수방기준 차별화를 통해 침수피해를 방지할수 있는 수방대책 기준을 제시할 수 있을 것으로 사료된다.

  • In general, the hollow jet valve, the fixed cone valve had been used for the urgency released or maintenance of the flow rate. Nowadays, the butterfly valve, the gate valve are applied in economic performance and operation maintenance more than the hollow jet valve, the fixed cone valve. However, in the case of butterfly valve, it should be required the strict application standard to the cavitation coefficient because the structural axis and disk were situated in pipe channel and the occurring the shock problem by Karman Vortex. And, the judgment data for choice were slight lowdown in water supply and drainage facilities standard or Japanese penstock technology standard, various standard of KOWACO etc. Therefore. there were investigated the valve inside phenomenon (cavitation, disk chattering, vibration) by velocity of flow and the stability examination of body by high velocity of flow through flow scale model test using the numerical analysis and PIV to establish the applicable extensibility of the butterfly valve for the urgency released valve.

Survey on the Elementary School Lunch Program in Seoul Area (서울지역 국민학교 학교급식 실태에 관한 조사 연구)

  • This study was conducted a comprehensive survey of 39 elementary schools operating school lunch program in Seoul area. The purpose of this study was to investigate the realities of school lunch program. This method of the research was based on the interview survey with dietitian working at each school with prepared questionnaire. The survey was conducted for 16 days from Dec. 5 to Dec. 20., 1990. The results of this study were as follows ; (1) The average numbers of children supplied with food were 1,244 for each school. It was about 44.3Bb of the students enrolled in the school. The average feeding cost was 738 won per a child for a day. (2) Only one school was operating nutritional education as a regular educational program, and others were operating nutritional education off and on. (3) All nutrient intake except energy were higher than the RDA for school lunch program. (4) The ratio of animal food was 46.2%, and that of vegetable food was 53.8%. (5) The ratio of schools without sterilizer cabinet came to 56.4%, and that of schools without warmer was 97.4%. (6) The facilities for drainage, lighting, ventilation, anti-rat of a cookery were comparatively good.

A Study on Geotechnical Stability of the Sludge Mixed Soil (슬러지가 혼합된 지반의 공학적 안정 특성에 관한 연구)

  • The dyeing sludge can be weakened by inflow of rainfall or absorption of moisture after it is buried in a waste landfill. This study tested the dyeing sludge and earth/sand mixture to check the problem when the dehydrated dyeing sludge is buried in a waste landfill. When the dyeing sludge was left idle with high water content inside a landfill with poor draining for a long period, the water permeability decreased to around 3/100 level and the compressibility increased by 1.4 times compared to the dyeing sludge at a dyeing factory. The study result indicated that it was important to reduce the water content inside the landfill for stability. Also, the facilities to secure the drainage path and eliminate leachate were needed.
