Quality Characteristics of Dolsan Leaf Mustard Kimchi Added with Seasoning of Sea tangle and Lentinus edodes (다시마와 표고버섯 혼합조미농축액 첨가에 따른 돌산갓김치의 품질특성)

  • To increase the marketability of Dolsan leaf mustard Kimchi, seasonings were prepared by sea tangle and Lentinus edodes. Gat Kimchi A (GK-A) and Gat Kimchi B (GK-B) were prepared by addition of complex seasoning with Sea tangle (CSS), complex seasoning with Lentinus edodes (CSL), respectively and evaluated the quality characteristics. GK-A contained high minerals and dietary fiber and showed the effect of delaying pH-lowering and acidity-rising. There were no significant differences in salinity test after 70 days. Reducing sugar of test groups was higher than control. During the fermentation, Leuconostoc sp. was grown in GK-A and GK-B than control. Growth of control's Lactobacillus sp. increased 20 days after. Up to 30 days, lightness of control was high. Yellowness were increased browning potential in GK-B, 20 days after. From the initial to 10 days, Hardness of GK-A showed higher than the others. glutamic acid and aspartic acid content of GK-A was higher significantly than the others in the entire fermentation period (p<0.05). At 0, 10, 30 days, sweet-tasty amino acids of GK-A showed a significantly higher level than the others (p<0.05). From 10 days to 40 days of fermentation, the sensory evaluation of GK-A is better than the other groups. Comprehensively reviewed the above results, the conclusion is as follows: CSS made with sea tangle as a main ingredient. GK-A by seasoning the CSS to 90 g GK-A is expected as a new Dolsan leaf mustard products that can provide flavor and nutrition to the consumer at the same time.

Conjoint Measurement of Tourists' Preferences for Dolsan Leaf Mustard Kimchi(Brassica juncea) across Gender (남녀 관광객의 돌산 갓김치에 대한 선호도에 미치는 영향 요인의 컨조인트 평가)

  • The purpose of this study was to identify tourist product factor combinations which confer the highest utility to tourists and to establish the relative importance of factors in terms of their contribution to total utility across gender. Among 250 questionnaires, 230 questionnaires were utilized for the analysis. $X^2$ analysis, Conjoint model, Max. Utility model, BTL model, Logit model, K-means cluster analysis, and one-way anova analysis were used for this study. The findings from this study were as follows. First, the Pearson's R and Kendall's tau statistics showed that the model fitted the data well across gender. Second, it was found that total respondents and three clusters regarded taste price as the very important factor across gender. Third, it was found that the male and female tourists most preferred product with light red color, shaped package, and highly pungent taste sold at a cheap price in factory. Fourth, it was found that the male tourists most preferred simulation product with light red color, shaped package, and highly pungent taste sold at a cheap price in factory. The female tourists most preferred simulation product with light red color, shaped package, and mild taste sold at a cheap price in factory. Finally, the results of the study provide some insights into the types of effective product designs that can be successfully developed by marketers.

Effect of Lactic Acid Bacterium on Antioxidative and ACE inhibitory activity in Dolsan Leaf Mustard Kimchi (유산균 농도가 돌산갓김치의 항산화효과 및 ACE 저해활성에 미치는 효과)

  • The bacterial strain was isolated from the 4th day's fermented Dolsan Leaf Mustard Kimchi(DLMK) at $20^{\circ}C$/TEX>. It was used as Kimchi starter, and then its physiological activity was investigated for 50 days at $4^{\circ}C$/TEX> and $10^{\circ}C$/TEX> The physiological activity of DLMK was examined for both antioxidative and Angiotensine Converting Enzyme(ACE) inhibitory activity. In the starter-inoculated DLMK(1 X $10^{10}$ CFU/mL) at 4 and $10^{\circ}C$, the optimal ripening period was more shortend than that of control(without starter) up to about 5.6 and 5 times, respectively. The maximal antioxidative activity in the starter-inoculated DLMK(1 X $10^{10}$ 10 CFU/mL) at 4 and $10^{\circ}C$ were 67% and 75%, respectively. The yield of cell concentration per day($lnX_{max}$/$t_{max}$) and the yield of antioxidative activity per day($P_{max}$/t$t_{max}$) had a linear relationship. Also, the yield of antioxidative activity per day was increased with increasing the concentration of inoculated bacterium. By adding 1 X $10^{10}$ CFU/mL at 4 and $10^{\circ}C$, the ACE inhibitory activity of DLMK was maximal. The rates of inhibiting activities were 52% and 76%, respectively. Consequently, physiological activities were significantly affected by the inoculation concentrations of starter, but bacterium itself was not appeared the physiological activity. We assume that the bacterium metabolizes certain materials in DLMK and released compounds such as glucosinolates or its metabolized forms from DLMK show the antioxidative and ACE inhibitory activity.

  • This study investigated housewives' perception of local special foods in Gwangju and Jeonnam in Gang Jin. Of 150 questionnaires sent, there were 114 responses. The most perceptible local special foods in Gwangju and Jeonnam area are as follows: Watermelon in Gwangju (100.0%), Pear in Naju (90.0%), Rice in Suncheon (40.0%), Gorosoe in Gwangyang (76.7%), Hongeo in Mopko (63.3%), Dolsan leaf mustard Kimchi in Yeosu (100.0%), Sweet Persimmon in Jangseong (86.7%), Salted bamboo sprout in Damyang (46.7%), Apple in Gokseong (90.0%), Butterfly rice in Hampyeong (63.3%), Gorosoe in Gurye (56.7%), Onion in Muan (96.7%), Peach in Hwasun(40.0%), Dallmaji rice in Yeongam (50.0%), Oyster mushroom in Jangheung (63.3%), Green tea in Boseong(96.7%), Heuksanhongeo in Sinan (53.3%), Loess sweet potato in Haenam (83.3%), Kukija in Jindo (60.0%), Laver in Wando (76.7%), Tohajeot in GangJin (73.3%), Citron in Goheung (90.0%), and Gulbi in Yeonggwang (100.0%). The most perceptible area and local special foods in Gwangju and Jeonnam area were in the following order: Green tea in Boseong (17.37%), Tohajeot in GangJin (15.97%), Watermelon in GwangJu (10.0%), Pear in NaJu (9.3%), and Loess sweet potato in Haenam (9.3%).
