초등학교 급식에서 배출되는 음식물쓰레기의 환경교육적 활용(I) - 음식물쓰레기 현황 및 환경교육적 활용 분석을 중심으로 - (A Study on Practical Applications of Environmental Education related to Food Waste Collected from Elementary School Foodservices(I))

  • This study was conducted as a preliminary step to establish a model for the practical application of environmental education related to food wastes collected from elementary school foodservices. Methods of treatment and present recycling status of food wastes in elementary schools in Kyonggido were surveyed. The consciousness of dieticians who have been serving for elementary school foodservices was also analyzed through the survey questions concerning environmental education for the reduction and recycling of food wastes. The results derived from this survey were as follows: The major portion of food wastes from elementary school foodservices was constituted with vegetables and soup, and an average amount of food wastes per day was highest in June and July. Therefore environmental education related to reduction of wastes was needed in the first semester of school terms, and the possible reduction of food wastes achieved through the proper planning of school foodservice menu was also needed. In most cases food wastes were collected and treated by animal growing farmers or composted by machines in school. In operating composting machines microorganism inoculant was mostly used but dieticians pointed out the problem of a nasty odor, insects, and high energy consumption. This situation means it has not been operated efficiently and suggests an efficiency problem of machine composting in elementary schools because composting itself is based on the aerobic digestion and high temperature fermentation which kills insects and harmful microorganisms. Elementary school dieticians in Kyonggido were aware that food wastes cause main pollution problem, and that food wastes are valuable resources which can be recycled, and recycling of food wastes is inevitable. But more than half of the schools surveyed have not been reused food wastes in school, so a proper model for recycling and reuse of food wastes in school grounds was thought to be needed. Environmental education programs related to food wastes have not been peformed in more than half of the schools surveyed. It was concluded that the following three plans will be helpful to reduce school food wastes. First, environmental education should be enforced, second, teachers' and dieticians' intensive teaching concerning food wastes should be needed, and finally establishment of a model for recycling and reuse of food wastes in school grounds and its application to environmental education would offer a valuable field experience to school students.

보건소 영양사의 직무 특성 및 일반적 특성과 직무만족도의 관련성에 관한 연구 (A Survey on job characteristics and relationships between general characteristics and job satisfaction of the dietician in community health center)

  • This study was carried out to investigate the job characteristics and relationships between general characteristics and job satisfaction of the dietician in community health center. The subjects were 40 dieticians who responded to the questionnaire distributed at the annual education program in 1997. Statistical data analysis was completed using SAS package program for frequencies, means, $x^2$-test, ANOVA and Duncan's multiple range test. The results of this study can be summarized as follows. 45.0% of the dieticians were 26 to 30 years old, four-year-course university graduates were 75.0% and daily workers were 72.5% The level of the job satisfaction of the dietician in community health center was the highest in the relationship with colleagues. The other parts of job satisfaction such as effects of nutrition counselling and education, value achievement as a dietician, general work and supervision by supervisors were above average, The general characteristics such as the age, the level of education, employment conditions, working hours per week and total length of service were significantly to all fields of job satisfaction except general work.

학교급식에서의 잠재적 위험 식품과 위생 및 안전점검에 대한 영양(교)사의 인식 (School Dietitians' Perceptions of Potentially Hazardous Food and Inspection of Food Safety and Sanitation)

  • The purpose of this study was to identify school dieticians' perceptions on the Potentially Hazardous Food (PHF) and the inspection of food safety and sanitation conducted by Provincial Office of Education. Questionnaires were distributed to 400 school dieticians in elementary schools in Seoul and Gyeonggi Province, and 217 responses were collected. The majority of respondents (64%) defined PHF as food that easily decays at room temperature and over half of the respondents considered Korean cooked vegetables as a PHF. In addition, 4% of respondents completely excluded PHFs from their menus. Forty five percent of the respondents selected CCP rule 7 (delivery and distribution process) and 34% selected CCP rule 6 as the most difficult of the CCP rules to follow. Also, perceptions concerning food safety inspection and sanitation were not high in terms of validity, objectivity, and reliability among the evaluation criteria. The study results suggest that PHF as well as Potentially Hazardous Menu (PHM) definitions and guidelines should be re-established in consideration of traditional Korean food culture and the preparation of Korean foods.

HACCP 적용 학교 급식소의 조리종사자 대상 위생교육 프로그램 개발 (Developing Food Safety Education Program for Employees at School Foodservice Implementing HACCP)

  • Objectives: This study was performed to develop a food safety education program for school foodservice employees and evaluate its effectiveness. Methods: Food safety education programs were made into two levels; one for new employees in school foodservice and another for employees in charge of Critical Control Point (CCP) monitoring. The programs were for 40-minute-long lecture using PowerPoint. The effectiveness of these programs were assessed based on eleven evaluation items by school foodservice dieticians (n=30) and the Hazard Analysis Critical Control Point (HACCP) specialist (n=13). All statistical analyses are conducted by SPSS package program (ver 20.0). Results: According to the results of evaluating the food safety education program by dietitian and HACCP specialist, the overall satisfaction score was 4.14, evaluated by 5 point scale. There were no significant difference in results of evaluation between dieticians and HACCP specialists. The score of 'it is helpful to work' and 'pictures, images and charts are pertinent to study' were higher than others while the score of 'education contents is pleasant and interesting' and 'screen is pleasant and interesting' were the lowest among all evaluation items. Conclusions: To increase the school foodservice quality, employees should be offered regular food safety education and training through effective education media including prerequisite program and HACCP manual for school foodservice.

병원 위탁급식의 질적 향상을 위한 병원과 위탁회사 영양사간의 급식업무에 대한 중요도 및 수행도 조사 (A Study on the Importance and Performance of Foodservice Tasks between Dietitian from Hospitals and Contract Managed Foodservice Companies)

  • This study compared he importance of food service, views to the performance, management objectives, and recognition gap about the contract contents towards the dietetic departments of hospitals that manage the patients' food service and managers of contract managed companies, and dieticians. It conducted questionnaires and survey towards the vice director and dieticians of 17 hospitals, over 500 beds, and the persons responsible for contract managed companies and dietitians who were in charge of food service. The hospitals showed significantly(p<0.05) higher the importance scores in menu planning, the distribution of meal, sanitation management, and leadership than those of the contract managed companies. In the difference of hospitals and contract managed companies about performance, it appeared high in the contract managed companies. In the importance of the foodservice management objective, the hospital had significantly(p<0.05) higher scores in the management of client's satisfaction and quality improvement element through management innovation than those of the contract managed companies. In the importance of contract term, the contract method, expense, and payment condition of commission fee were significantly(p<0.05) high scores in the contract managed companies, compared to the hospital.

제주지역 학교급식 관리자의 조직문화 및 조직몰입에 따른 직무만족도 분석 (Analysis of School Foodservice Managers' Job Satisfaction by Organizational Culture and Commitment in Jeju)

  • The purpose of this study was to examine the job satisfaction of foodservice managers at schools in Jeju, Korea, according to the organizational culture and commitment of the school foodservice and administrative departments. The subjects included 144 (98.6%) dieticians from Jeju schools. The data were analyzed by descriptive analysis, reliability analysis, factor analysis, ttests, ANOVA, and Pearson's correlation coefficients, using the SPSS Win 12.0 program. In terms of organizational culture, the dieticians perceived the 'human relations model' and 'internal process model' as the strongest types for the school foodservice departments and administrative departments, respectively. However, for both types, a gap existed between the organizational culture that was perceived and that which was expected. In particular, the subjects expected that the 'human relations model' and 'open systems model' were the most important organizational culture types. In terms of the subjects' organizational commitment scores, loyalty and pride scored highest whereas unity scored lowest. For the level of job satisfaction, the performed work itself scored highest and was deemed most important. Additionally, organizational culture was positively correlated to the factors affecting organizational commitment and job satisfaction. Finally, the surveyed managers had high demands for a human relations-oriented organizational culture to enhance job satisfaction.

제주지역 학교급식 조리종사자의 HACCP 관련 지식 및 수행도 분석 (The Analysis of the School Foodservice Employees' Knowledge and Performance Degree of HACCP System in Jeju)

  • 본 연구는 학교급식 조리종사자들의 HACCP 관련 지식과 수행도에 대한 분석을 통하여 현재 학교급식에서 HACCP의 적용 실태를 파악하고, 조리종사자에게 필요한 교육 내용 및 방법을 규명하여 향후 학교급식에서 보다 체계적인 HACCP 시스템이 실행될 수 있는 방안을 모색하기 위한 기초 자료를 제공하고자 시도되었다. 영양사의 연령은 30대가 60.8%로 절반 이상을 차지하였고, 경력은 10${\sim}$15년 미만이 31.9%, 학력에 있어서는 4년제 대학 졸업자가 60.4%로 나타났는데, 이는 영양교사화로 인하여 전문학사 자격소지 영양사들이 방송통신대학 및 4년제 대학교의 편입을 통하여 학사자격을 취득하였기 때문인 것으로 분석된다. 고용상태는 정규직영양사가 62.6%로 나타났고 근무학교는 초등학교가 50.5%로 절반을 차지하였으며, 급식유형은 도시형이 59.3%이고, 급식관리 방식은 단독관리가 80.2%로 나타났다. 조리종사자의 연령은 만 41${\sim}$50세가 60.7%, 근무기간은 5${\sim}$10년 미만 (34.2%), 학력은 고졸 (77.2%), 고용상태는 비정규직 조리사 (42.2%)가 가장 많았고, 조리종사자의 53.3%가 자격증을 소지하고 있었다. 위생교육 실시횟수는 주 1회 이상 (48.4%)이, 교육방법은 구두교육 (40.7%)의 비율이 가장 높았고, 위생교육에서 HACCP이 차지하는 비중은‘많이 포함된다’가 53.8%로 나타났다. 조리종사자의 대부분 (98.1%)이‘위생교육 경험이 있다’고 응답하였고 HACCP 이해정도에 있어서는‘잘 이해한다’가 47.0%로 나타났으며 HACCP 관련 교육현황에서 모든 항목에 대하여 92% 이상의 높은 교육 실시율을 보였다. 조리종사자의 HACCP 지식수준은 평균 84.2점 (100점 만점)으로 나타나 보통 이상의 수준인 것으로 나타났으며 급식유형 (p < .001), 근무기간 (p < .05), 학력 (p < .01), 고용상태 (p < .001), 자격증 유무 (p < .001), 학교별 (p < .01)에 따라 유의한 차이를 보였다. 또한 영양사의 교육 실시 횟수가 많을수록 (p < .01), 조리종사자가 교육 경험이 있고 (p < .01), 교육 경험횟수가 많을 경우 (p < .05), HACCP에 대하여‘매우 잘 이해한다’고 응답한 경우 (p < .05)에 지식 수준이 유의적으로 높았다. 조리종사자의 HACCP 수행도는 평균 4.40점 (5점 만점)으로 잘하고 있는 것으로 나타났고, 영양사의 조리종사자의 HACCP 수행도에 대한 인지도 평균은 4.13점으로‘잘한다(4점)’에 근접한 것으로 조사되어, 영양사의 인지도가 유의적으로 낮았다 (p < .001). 조사대상자의 수행도는 급식유형 (p < .05), 고용상태 (p < .05), 자격증유무 (p < .01), 학교별 (p < .01)에 따라 유의한 차이를 보였다. 위생교육 실시횟수가 증가할수록 (p < .01), 교육방법에서 실연교육인 경우 (p < .05)에 수행도가 유의적으로 높았고, 조리종사자가 교육 경험이 있고 (p < .01), HACCP에 대하여‘매우 잘 이해한다’고 응답한 경우(p < .001) 유의적으로 높은 수행도를 보여주었다. 이러한 결과를 토대로 살펴볼 때, 학교급식에서 위생교육을 실시하는 영양사의 인지도와 교육받은 내용을 실천에 옮겨야 하는 조리종사자의 실제 수행도간의 차이를 올바르게 인식하여 효과적인 HACCP 교육매체 개발 및 교육방법의 활용, 조리종사자의 수준 등을 고려한 체계적인 교육실시를 통한 위생관리가 이루어져야 할 것으로 사료된다.

사업체 급식의 HACCP 제도 도입을 위한 인지도 조사 (Recognition Study on Introduction of HACCP to Industry Foodservice)

  • 본 연구는 서울 시내 사업체 급식소의 영양사 및 급식 관리 책임자를 대상으로 HACCP 제도 도입에 따른 사업체 급식 위생 관리에 대한 인지 및 HACCP 시스템 적용을 위해 조성되어야 할 선결 문제와 장애 요인을 알아봄으로써 효율적인 사업체 급식 위생 관리 제도를 정착, 확대시키기 위한 기초자료를 제공하고자 실시되었으며, 그 결과는 다음과 같았다. 1. 사업체 급식의 현 위생 관리 상태에 대한 조사대상자의 만족도는 대체로 만족하는 수준이었으며, 급식 관리 책임자가 영양사에 비해 만족도가 약간 높은 것으로 나타났다. 2. HACCP 제도에 대한 인지는 조사 대상자 대부분이 '알고 있다'고 응답하였으며, HACCP 적용 업소로 지정되지 못한 이유는 '우대 조치가 미약해서' 라는 응답이 가장 많아 사업체 급식에서 HACCP 적용 확대를 위해서는 여러 종류의 지원책이 필요함을 시사하였다. 또한 영양사와 급식관리 책임자 대부분이 HACCP 제도에 대한 적용 의사가 있다고 답하였으나 그 도입 시기는 '단계적으로 도입해야 한다'가 많았다. 사업체 급식에서 HACCP 제도를 도입 못하는 이유로는 두 집단 모두 '시설, 설비 부족'을 가장 큰 이유로 꼽았으며, HACCP 제도 도입시 예견되는 문제점으로는 '급식실의 시설, 설비상 문제'와 '교차 오염' 및 '온도 관리'를 지적했다. 3. 사업체 급식 식중독 사고의 주요 원인에 대한 인식에서는 영양사와 급식 관리 책임자 모두 '온도-소요시간 관리의 부재'를 각각 23.9%와 26.9%로 가장 많이 지적했다. 4. 사업체 급식에서 위생 관리가 어려운 항목은 영양사의 경우는 '가열 조리 후 온도 측정 및 소요시간 기록'을, 급식 관리 책임자는 '주방 바닥 건조 유지' 및 '작업이 바뀔 때마다 손 세척'으로 응답하였으며, 사업체 급식 위생 관리에서 가장 우선적으로 개선이 필요한 사항으로 영양사는 '기기, 시설 및 설비 개선'을, 급식 관리 책임자는 '재원 확보'라고 답하였으나 전체적으로 볼때 영양사의 개선에 대한 인식이 급식 관리 책임자에 비해 모든 항목에서 유의적으로 높게 나타났다. 사업체 급식에서 위생 관리가 잘 수행되지않는 주된 이유로 영양사는 '인식 부족'(6문항)에, 급식 관리 책임자는 '시간 부족'(9문항)에 가장 많이 응답하였다.
