Domestic animals, including ruminants, can synthesize vitamin C (VC) in their liver; as such, the dietary requirement for VC has not been confirmed in these animals. The adequacy of VC has been evaluated by quantifying VC levels in plasma, but the reported values in bovine plasma have been widely variable. Plasma VC concentration is decreased by heat stress, hepatic lesions, fattening, and infectious diseases such as mastitis in cattle. Therefore, VC supplementation is potentially beneficial for cattle with low plasma VC concentration. This review discusses the methods for determination of plasma VC concentration in cattle, VC nutrition, and the efficacy of VC supplementation in calves, dairy cattle, and beef cattle. Additionally I propose a reference range for plasma VC concentration in Japanese Black cattle.
Smoking can increase oxidative stress and thereby change the antioxidant defense system in the body. Supplementation of antioxidant vitamins might improve antioxidant status in the body. The purpose of this study was to evaluate the effectiveness of vitamin C supplementation and smoking cessation education on changes of antioxidant status and psychosocial factors related to smoking. To obtain above purposes, we investigated the effectiveness of intervention for male adolescent smokers were evalnate by assessing changes in dietary intakes, plasma antioxidant vitamin concentration, and psychosocial factors related to smoking after program completion. Subjects, male adolescent smokers, were assigned into four groups : Control group(19 students), Educ. group(19 students), Vit. C supple. group(19 students), and Educ.+Vit. C suppl. group(19 students). The Educ. group and Educ.+Vit. C suppl. group received nutrition and smoking cessation education once a week for 5 weeks. Vit. C suppl. group and Educ.+Vit. C suppl. group received 500 mg per day of ascorbic acid for 35 days. All data were collected before and after intervention. Vit. B$_2$and Vit. C intakes of all groups were increased, but the only Ca intake was increased in the Educ. group. Plasma Vit. C concentration and Ratio(plasma Vit. C/Vit. C intakes) were increased in the Vit. C suppl. group and Educ.+Vit. C suppl. group, and the Vit. C deficiency status of these groups(Vit. C suppl. group and Educ.+Vit. C suppl. group) disappeared. Showing the effects of Vit. C supplementation, plasma $\alpha$-tocopherol was increased in the Educ. and Educ.+Vit. C suppl. group, and especially high increases were seen in the Educ.+Vit. C suppl. group. Psychosocial factors related to smoking changed after the education a little. This intervention program had an impact on nutrition intakes, plasma antioxidant vitamins, and some beliefs related to smoking in male adolescent students. Various programs of nutrition and smoking cessation education and vitamin supplementation for quitting smoking must be implemented for adolescent smokers, and further studies are needed regarding sorts and amount of antioxidant nutrients and supplementation periods.
This study was undertaken to investigate iron status and related factors in female college students residing in Gyeongnam. The subjects were divided into normal (40.8%) and iron deficiency (ID) groups (59.2%) by iron status. Mean height, weight, lean body mass, percent body fat, body mass index, and wrist to hip ratio were not significantly different between the groups, but basic metabolic rate was significantly higher in the normal group than that in the ID group. The levels of hemoglobin, hematocrit, serum ferritin, transferrin saturation, mean corpuscular volume, mean corpuscular hemoglobin, and mean corpuscular hemoglobin concentration were significantly higher in the normal group than those in the ID group. However, total iron binding capacity was significantly lower in the normal group than that in the ID group. Daily intake of protein, heme-Fe, niacin, and vitamin C were significantly higher in the normal group than those in the ID group. The mean intake of protein, Fe, niacin, vitamin $B_{12}$, and vitamin C based on the Korean recommended intake (RI) were significantly higher in the normal group than those in the ID group. The mean intakes of Ca, vitamin $B_{12}$, and folate in both groups were < 75% of the Korean RI. In conclusion, increasing dietary heme-Fe and vitamin C may be helpful for preventing ID anemia in female college students.
This study was done to investigate the association of blood clinical parameters and dietary intakes with serum adiponectin level. Athropometric measurement, dietary intakes, serum lipids and adiponectin levels were examined in 160 overweight and obese women. The subjects were divided into 5 groups by quintile according to serum adiponectin level. Weight, BMI, waist circumferences and waist/hip ratio of the highest quintile group were significantly lower than those of the lowest quintile group. Serum lipid analysis showed a significant higher level of TG, LDL-cholesterol, LDL/HDL ratio, AI, and serum hs-CRP in the lowest quintile group. Similarly, correlation data also showed that serum adiponectin level was positively correlated with serum HDL-cholesterol level (p < 0.01) and was negatively correlated with BMI (p < 0.01), waist circumferences (p < 0.01), waist/hip ratio (p<0.01), systolic (p < 0.01) and diastolic blood pressure (p < 0.05), TG (p < 0.01), LDL-cholesterol (p < 0.05), LDL/HDL ratio (p < 0.05), AI (p < 0.01), Homa-IR (p < 0.01), hs-CRP (p < 0.05) and leptin (p < 0.05). Dietary intake data showed that protein intake was significantly lower in the highest quintile group compared to the lower quintile groups while intakes of vitamin C was significantly higher in highest quintile group after adjustment by BMI, waist and energy intake, In addition, the highest quintile group had higher fiber intakes than the lower quintile groups. These results might suggest that a diet high in fiber and vitamin C and low in protein for obese patients would better be recommended to improve adiponectin level. However, further research is needed to elucidate the association of dietary intakes or dietary patterns and serum adiponectin level.
This study investigated the effects of the nutrition education and exercise program on body composition, dietary intakes and physical fitness in obese women. The subjects were 44 obese women (BMI${\geq}$ 25 kg/$m^2$) who had been participating in nutrition education (1 time/week) and exercise program (3 time/week) for 12 weeks. Nutrition education was focused on low energy, high protein and low carbohydrate diet to reduce the body weight and improve the diet quality. To evaluate the effectiveness of the program, daily nutrient intakes were assessed by 24-hour recall method. Body composition, blood lipid profiles and physical fitness test were assessed before and after the intervention. After the intervention, body weight, BMI, percent body fat, soft lean mass and waist/hip ratio were significantly decreased (p < 0.001). Fasting blood sucrose, total cholesterol, LDL-cholesterol and atherogenic index (AI) were significantly decreased (p < 0.001), while HDLcholesterol was significantly increased (p < 0.001). Energy adjusted protein, fiber, vitamin A, vitamin $B_2$, vitamin $B_6$, vitamin C, vitamin E, niacin and folate were significantly increased. After the intervention, the muscle endurance, muscle strength, agility, balance were significantly increased. The changes in obesity indices (body weight, BMI, percent body fat, waist-hip ratio) were correlated with the changes of the nutrient intakes, serum lipid profiles, physical fitness. These results show that nutrition education and exercise program was effective not only for weight reduction but also for the improvement of physical strength and cardiovascular disease risk factors in obese women.
The purpose of this study was to investigate the effects of dietary habits and nutrient intakes on skin condition of female university students. The subjects were 95 female university students in Daegu. This study examined anthropometric measurements, dietary intake, food intake habits and skin condition (moisture, elasticity, sebum (U-zone, T-zone), pores, evenness and melanin pigmentation. The subjects in this study had an average age of 21.4, an average height and weight of 161.2 cm and 52.9 kg, respectively, and the average body mass index (BMI) was 20.3 $kg/m^2$. The means of skin elasticity, pores, evenness, and melanin pigmentation were within the normal range of women in their 20s and the skin moisture state was slightly lower than the normal range, which showed a dry tendency. The sebum in the U-zone and the T-zone was lower than the standard values, which showed less secretion in both areas. The subjects with high nut intake showed a better skin pore state (p < 0.05). Those with a high intake of instant foods showed a sig-nificantly low skin moisture and a significantly higher sebum rate (p < 0.05). The group with high skin elasticity and the group with less melanin pigmentation showed a significantly low animal protein intake (p < 0.05). The group with high skin elasticity also showed a significantly higher vitamin A and niacin intakes as well (p < 0.05). The group with high skin evenness showed a significantly lower animal lipid intake and a significantly higher vitamin E intake (p < 0.05). In addition, those with high skin elasticity and evenness as well as low melanin pigmentation showed a tendency of high intake of antioxidant vitamins, such as vitamin A, carotene, vitamin C or vitamin E. In summary, a moderate intake of plant-based products and also the antioxidant vitamins within such products seems to have a beneficial effect on maintaining a healthy and good skin condition.
The purpose of this study was to investigate eating behavior, nutritional status and health conditions of college students attempting a weight control. The subjects are 88 students of the Daegu area. Their weight, height, triceps, and mid-arm circumference were measured and their dietary intake and eating behavior were obtained by using questionnaires. The 24-hour recall was obtained from the subjects. The results are summarized as follows: The average height, weight and BMI of the attempt and no-attempt male and female students were 171.2cm, 70.7kg and 24.1; 170.4cm, 79.9kg and 27.5; 159.3cm, 60.9kg and 24.0; 157.7cm 60.1kg and 24.2, respectively. Energy intake of the attempt and no-attempt male and female group was 63.9%, 61.8%, 76.2% and 83.9% of RDA respectively. Protein intake of each group was 97.5%, 83.9%, 60.1% and 67.3% of RDA respectively. The following items registered a negative correlation weight and carbohydrate, weight and Na intake, weight and vitamin C intake, PIBW and Na intake, TSF and fiber intake, TSF and Na intake, TSF and vitamin C intake, MAMC and Na intake, and MAMC and vitamin C intake. A relative magnitude of factors affecting weight control was analyzed by Stepwise multiple regression analysis. Overall results about relative influence of independent variables to the dependent variable(weight control) indicated that the BMI (p<0.01) was the most significantly correlated with weight control in all subjects. The results of this study suggest that the extensive nutrition education in the weight control program should be emphasized to prevent obesity early.

Objective: Dietary nutrients may play a significant role in depressive disorders. However, sufficient evidences in epidemiological studies are limited. We investigated the cross-sectional association between dietary nutrients and the prevalence of depressive disorder in Korean adults using representative Korean data. Methods: Participants were 2,938 adults aged 19 ~ 64 years from the Korea National Health and Nutrition Examination Survey (KNHANES) conducted in 2014. Dietary intakes were assessed using 24-h recall method. Depressive disorder was assessed using Patients Health Questionnaire-9 (PHQ-9, self-depression test) as applied in 2014 KNHANES only. We defined depressive disorder as having a PHQ-9 score of ${\geq}10$, which was characterized as moderate depression and more. A multivariate logistic regression analysis was performed to estimate the adjusted odd ratios (ORs) and 95% confidence interval (CIs) of depressive disorder. Results: Among the 2,938 subjects, 170 were identified as having depressive disorder. The multivariate-adjusted regression analysis demonstrated that the risk of depression was significantly associated with riboflavin (OR = 0.44, 95% CI: 0.24-0.85, p for trend = 0.018), thiamin (OR = 0.48, 95% CI: 0.23-0.99, p for trend = 0.045), and vitamin C (OR = 0.57, 95% CI: 0.34-0.95, p for trend = 0.025) in the highest versus lowest tertiles of intake. Conclusion: The high consumption of riboflavin, thiamin, and vitamin C was associated with the low prevalence of depressive disorder in Korean adults.
An experiment was conducted with twenty crossbred male calves (7-15 days old) divided into 4 different experimental groups on the basis of body weights to study the effect of vitamin E supplementation on the serum ${\alpha}$-tocopherol concentration and immune response of the calves. All the calves were fed on milk and calf starter up to 13 weeks and afterwards, they were fed on concentrate mixture and oat hay up to 32 weeks of age. In addition, the calves in groups I, II, III and IV were supplemented with 0, 125, 250 and 500 IU feed grade DL-${\alpha}$-tocopheryl acetate, respectively. Blood samples were collected at 0 day and subsequently at 1, 2, 3, 4, 6 and 8 months of age to monitor the serum ${\alpha}$-tocopherol concentration in crossbred calves. After 24 weeks of experimental feeding, 4 animals from each group were intramuscularly inoculated with single dose (3 ml) of Haemorrhagic septiceaemia (Pasteurella multocida P52 strain) oil adjuvant vaccine. The cumulative group mean serum ${\alpha}$-tocopherol concentration (${\mu}g/100ml$) was 88.12, 210.11, 235.21 and 294.02 in-groups I, II, III and IV, respectively and differed significantly (p<0.001) among the four groups. Lymphocyte stimulation indices (LSI) did not differ among the groups significantly. The pooled mean ELISA antibody titer against Pasteurella multocida (P52 strain) was 788.02, 926.85, 1,214.00 and 1,109.51 for group I, II, III and IV, respectively, which indicated higher antibody titer in groups supplemented with vitamin E as compared to the control group. It may be concluded that vitamin E supplementation increased the ${\alpha}$-tocopherol concentration in serum and dietary supplementation of vitamin E at higher level has a humoral immune enhancing effect against killed bacterial antigen.
This study was performed to investigate the dietary characteristics and related factors of the elderly female living alone. The subjects were 70 single living elderly female residing in Bucheon city and receiving benefits from the government based social welfare programs. Seventy nine percent of the subjects had self reported monthly income less than 200,000 (won) and forty one percent of the subjects were paying more than 100,000 (won) for food expense. The number of side dishes for a meal was two or three (35.71 %) or one or two (31.40%); fifty seven percent of the subjects ate reheated left-over for lunch and 70.0% for dinner. The proportion of the single living elderly at high nutrition risk ($\geq$ 6 as evaluated with Nutrition Risk Index Score) was 77.1 %. Cereals and their products contributed most to the macronutrients like energy, protein and carbohydrates and vitamin B. In contrast vegetables and their products contributed most to the fiber, minerals (Ca and Fe) and vitamins (vitamin A, vitamin B and vitamin C). The mean total score of depression was 8.59${\pm}$2.69 (full score: 12) meaning that the extent of depression was serious.
