  • In this study, the interest of female high school students's(N=500) for weight control, as well as nutrient intake status, were analyzed. The mean age, height, and weight of the subjects were, 19.3 years, 162.2 cm and 55.4 kg respectively. Mean BMI was $21.1 kg/m^2$. According to BMI, the percentage of underweight, normal weight, overweight, and obese were 18.5 %, 60.3%, 11.3%, and 11.3% respectively. By the BMI criteria, 60.3% of the subjects were normal weight while the rate of self-recognition was 41.5%. The degree of satisfaction regarding self-body image was only 17.1% and 60.9% showed an interest in weight control. The reason for weight reduction were appearance(65.1 %) and health(24.2%). The body areas where subjects wanted to lose weight included the thighs(32.9%) and whole body(29.3%). They believed the most effective weight control strategy was exercise(81.1 %) and the strategies they used were diet(59.1 %) and exercise(40.4%). Energy intake was 1,733.4 kcal which was 86.7% of the estimated energy requirements(EER). Calcium, vitamin $B_2$, and vitamin C intakes were less than EAR by 34.4%, 40.4%, and 59.6% respectively. The intake of dietary fiber was 5.1 g only 21.1 % of the adequate intake(AI). In summary, high school females interested in weight control have significantly less calcium intake than their peers. The correlations between interest in weight control and weight and BMI were significant(p<0.001). The results of this study suggest that to achieve optimal growth, improved diets that include calcium, vitamin $B_2$, and vitamin C are recommended. High school females interested in weight control should especially be targeted for education on calcium intake.

  • It has been reported that cigarette smoking increases free radical generation, which can also increase lipid peroxides and deplete antioxidants. The purpose of this study was to determine whether cigarette smoking and other lifestyle choices may affect serum lipid peroxide concentrations, serum antioxidant concentrations such as tocopherol and vitamin C, and serum antioxidant enzyme activity such as glutathione peroxidase and superoxide dismutase. Dietary intakes were assessed by 24-hour recall and survey questionnaires from 48 male non-smokers and 52 male smokers. Overnight fasting blood was collected and measured for individual antioxidant status. The daily vitamin C intakes of smokers tended to be lower than those of non-smokers, and the intakes of both groups were under the Recommended Daily Allowance (RDA). Vitamin E intake was sufficient for smokers and non-smokers. Serum lipid peroxide concentrations were no difference among all subjects. The serum $\alpha$-tocopherol concentrations of all subjects were in a normal range, and they were highest in mild smokers (p<0.05). Mean serum vitamin C levels were lowest in heavy smokers (p<0.05). The activities of serum glutathione peroxidase and superoxide dismutase were not significantly different in smokes and non-smokers. In conclusion, smoking did not increase oxidative stress in heathy young men. However, it is desirable for heavy smokers to consume more vitamin C than the RDA sine their serum vitamin C concentrations are relatively low.

  • The purpose of this study was to investigate the mutual relationship between food preference and nutrient intake status of high school students, based on the their personal characters which are sex, age, family type, number of family, mother's age, occupation, and school career. 439 students were selected with random stratified cluster sampling method. The study used a self-administrated questionnaire and 24-hour recall method for 5 days as instrument tools. Statistical methods applied to analyze the data were frequency, percent, Willcoxon Rank-sum test, Kruskal-Wallis test, ${x^2}-test$ by contingence table, and Spearman's correlation coefficient in non parametric statistical methods. Some of interesting results are as follows : 1. The correlation between sex and the set of characters of mother's age, school career and income is highly significant. However there is no any significant difference on the kinds of job and the types of family. 2. The relation between the preference of main dishes and the nutrient intake show a significant difference except to the noodles. This marks that preference of main dishes shows a direct proportion with the nutrient intakes except for the fat, vitamin A, vitamin C. 3. The preference of animal food marks a direct proportion with the nutrients such as energy, protein, fat, fiber, phosphorus, iron, vitamin $B_{1}$, vitamin $B_{2}$, and niacin 4. The preference of vegetable food gives some influence on the nutrient intake but the preference of soup is insignificant, the preference of Kimchi is in reverse proportion, and the preference of vegetable marks a direct proportion with the nutrient intake. 5. The preference of snacks marks a direct proportion with all kinds of nutrients intake except for the vitamin A, and vitamin C.

  • The study was performed to investigate the relationship of regular exercise to body composition and nutrient intakes of male college students by comparing anthropometric measurements and one-day dietary intakes by 24-hour recall of physical education (PE) majors and non-major male college students. The subjects were 253 students residing in the Gyeonggi area. Only 64.1% and 32.1% of PE majors and non-major students exercised over 4 times a week and PE major students did stronger exercise than the non-major students did. Mean BMI and WHR (Waist Hip Ratio) of the two groups were not different. But percentages of body fat and lean body mass in PE major students were lower and higher, respectively, than those of non-major students. PE major students consumed significantly more energy and other nutrients except iron, niacin, vitamin C, and vitamin E than non-major students. Nutrients consumed less than KRDA was calcium in PE major students and energy, calcium, zinc, vitamin $B_{12}$, folate, and vitamin C in non-major students. Mean adequacy ratio (MAR) of PE major students (1.00) was significantly higher than that of non-major students (0.94). Index of Nutritional Quality (INQ) of all nutrients except vitamin A of PE major students was also significantly higher than that of non-major students. Nutrients below 1.00 in INQ of both groups were calcium, zinc, vitamin B2, and folate. Our data supports that regular exercise may positively influence on body composition and increase diet quality in male college students. Therefore, an educational program focused on regular exercise along with proper dietary behavior would be needed.

  • The purpose of this study was to investigate the nutritional status of antioxidant vitamins in relation to serum malondialdehye(MDA) level in postmenopausal women with common occurance of cardiovascular disease(CVD). Data about general characteristics including smoking, drinking and exercise status, dietary intake and serum level of antioxidant vitamins, and serum MDA level were collected from eighty-five postmenopausal women. Mean serum MDA level was 1.62$\pm$0.03nmol/ml, and general characteristics and serum lipid profiles were not significantly different among the three group: low MDA(<1.45nmol/ml), midium MDA(1.45-1.74nmol/ml) and high MDA($\geq$1.74nmol/ml). Total mean vitamin A intake was 472.8$\pm$37.7RE, 68% of RDA, vitamin C intake was 134.3$\pm$8.7mg, 192% of RDA and vitamin E intake was 8.6$\pm$0.5mg, 86% of RDA for Korean. In takes of antioxidant vitamins from the diet were not significantly different among the three groups. However significant negative correlation(r=-0.242, p<0.05) was observed between vitamin E intake and serum MDA level in total subjects. Total mean serum vitamin A, $\beta$-carotene and vitamin C level were 0.59$\pm$0.01$\mu\textrm{g}$/ml, 0.25$\pm$0.01$\mu\textrm{g}$/ml and 9.02$\pm$0.28$\mu\textrm{g}$/ml, respectively. Total mean serum vitamin E and vitamin E/total cholesterol level were 9.15$\pm$0.42$\mu\textrm{g}$/ml and 4.09$\pm$0.17$\mu\textrm{g}$/mg, respectively. Serum antioxidant vitamins levels were not significantly different among the three groups. However serum vitamin C and E level were negatively correlated to serum MDA level. We can conclude that it will be helpful for postmenopausal women with common occurance of CVD to improve nutritional status of antioxidant vitamins by increasing intakes of antioxidant vitamins, especially vitamin C and E. • Objectives: Recommended Menu (RM) prepared according to the Target Pattern expected to meet the dietary reference intake (DRI) of nutrients. Nutritional adequacy of RM in 'DRI for Koreans 2015' were analyzed to verify whether such expectation was fulfilled. Methods: Dishes in RM are categorized by 5 food groups, and number and types of dishes for main meal and between-meals were analyzed. The energy and 12 nutrients (protein, dietary fiber, Ca, P, Fe, Na, K, vitamin A, thiamin, riboflavin, niacin and vitamin C) contents in 10 RMs were calculated using the food composition table (CD) in 'DRI for Koreans'. Energy, energy contribution ratio, and nutrient contents in 10 RMs for 18 age groups were evaluated based on the 'DRI for Koreans 2015'. Results: Number of dishes per meal were 4.83, and representative table setting consisted of cooked rice + soup (or stew) +3 side dishes. Energy contents of RM were 75~109% of estimated energy requirement (EER). None of the RM met the DRI of all 12 nutrients examined. Calcium was the most insufficient nutrient. Only 1-2 years' RM met the DRI, all the other RMs did not meet the calcium DRI. Dietary fiber and potassium contents were also insufficient in most RM. In adult male's RM, only 1 nutrient, i.e. calcium did not meet the DRI, but in female adult's RM, 5~6 nutrients did not meet the DRI. Energy contribution ratio of carbohydrate, protein, and fat in RM were 59.0~70.4%, 15.7~17.5%, 12.1~23.5%, respectively. And 4 RMs out of 10 exceeded the upper limit of acceptable macro-nutrient distribution range (AMDR) of carbohydrate and 3 RMs out of 10 RM were below the lower limit of fat AMDR. Contribution ratio of nutrients were ${\geq}40%$ by food groups were as follows: grain group in energy and carbohydrate; meat fish egg legume group in fat, protein, and niacin; vegetables group in dietary fiber, vitamin A, and vitamin C; milk dairy products group in calcium. Conclusions: RM prepared according to the Target Pattern did not meet nutritional adequacy as expected. Especially calcium, potassium, and dietary fiber contents are needed to be increased in many RMs. Further, energy content in RM needs to be adjusted for fat sugar food group assigned in Target Pattern and condiment.

  • Objectives: Use of dietary supplements containing vitamins and minerals is growing in Korean adults, especially in pregnant and lactating women. Vitamin and mineral supplements are available in different composition and in a wide range of contents. The purposes of the study were to examine nutrient composition and content of vitamin and mineral supplements for pregnant and lactating women and assess their appropriateness as dietary supplements. Methods: Information on the name, manufacturer, nutrient composition, and usage of vitamin and mineral supplements for pregnant and lactating women were obtained from the homepage of the Food Safety Information Portal managed by the Ministry of Food and Drug Safety, and Korean Index of Medical Specialties. A total of 264 products were identified. Results: Among 264 products, 26.1% were single nutrient products, and 73.9% were multinutrient products. The most commonly included nutrient was iron (70.1%), folic acid (66.3%), vitamin $B_{12}$ (45.8%), vitamin C (38.6%), and vitamin $B_6$ (38.6%). Although more than 50% of products contained nutrients less than 150% of Recommended Nutrient Intakes or Adequate Intakes for daily use, some products contained inappropriately high amounts of nutrients. When a maximum daily dose of supplements was taken as described on the label, iron in 73 products (39.5%), folic acid in 14 products (8.0%) were likely to be consumed in amounts greater than Tolerable Upper Intake Levels. Most products were assessed as inappropriate for pregnant women due to the possibility of excessive intake of vitamins or minerals when compared with Dietary Reference Intakes. Conclusions: Pregnant and lactating women need to carefully select dietary supplements containing adequate amounts of vitamins and minerals. Nutritionists should provide guidelines regarding selection of appropriate vitamin and mineral supplements for pregnant and lactating women.

  • This study was performed to assess diet qualities by sexes and ages of adults over thirty years old in Jeon-ju area. Diet survey with one day 24-recall method was used done for 382 subjects(129 males & 253 females). Survey sample was divided into six groups by sex and age groups: male 30-49, male 50-64, male 50-64, male 65-79, female 30-49, female 50-64 and female 65-79 years. Diet quality was assessed by NAR(Nutrient Adequacy Ratio), MAR(Mean Adequacy Ratio), INQ(Index of nutrition quality), KDDS(Koreans Dietary Diversity Score), Meal Balance, DVS(Dietary Variety Score), DQI(Diet Quality Index). The 5-point DQI assessed the important dietary guidelines for Koreans. The averages of energy, protein, P, vitamin B$_1$, vitamin B$_2$, niacin and vitamin C intakes were higher than 70% of RDA. The averages intakes of Ca and vitamin A were very lower than RDA all groups. The averages of MAR were 0.78, 0.81, 0.83 in male 30-49, 50-64, 64-79 years, 0.73, 0.77, 0.71 and in female 30-49, 50-64, 65-79 years, respectively. The averages of MAR in female 30-49 years and female 65-79 years were significantly lower than the averages MAR of male 65-79 years. The averages of Sugars and Beverages intakes were significantly higher in male 30-49 years than others. Animal food intake ratio(% total food intake) in the male 65-79 years(16%) was significantly higher than male 30-49 years(11%). The averages of Nutrition intakes were higher in male compared to female. The subjects who consumed all of the major five food groups were 5% in male 30-49, 17.8% in male 50-64, 25.0% in male 65-79 years, 18.9% in female 30-49, 23.7% in female 50-64, 11.5% in female 65-79 years. The averages of KDDS were 3.5, 3.9, 3.9, 3.8, 3.8, 3.5, respectively. The averages of Meal Balance were 8.6, 9.1, 9.1, 8.3, 8.4, 7.8, respectively. The averages of DVS 20.1, 19.9, 19.9, 20.5, 19.0, 17.2, respectively. The averages of DQI were 1.7, 2.2, 2.1, 2.0, 2.1, 1.7, respectively. 81.8% of the subjects had KDDS scores of 2 to 4 and 87.3% of the subjects has Meal Balance scores 4 to 10. In contrast, 89.8% of the subjects had DQI scores of 0 to 3. In view of these facts there are few who observed the five dietary guidelines for Koreans. There findings suggest that dietary qualities were associated with nutrient intake the relation factors may vary by sex and age of adults over thirty years old in Jeon-ju area. Common problems were lack of Ca, vitamin A and dairy products intakes. Therefore adults over thirty years old in Jeon-ju area need the important nutrient management such as Ca, vitamin A. • Dietary components can modulate stress, inflammatory indicators, and health risk. This study examined the relationship among diet, metabolic disease risk, and perceived stress in Korean adult females using the 2017-2018 Korea National Health and Nutrition Examination Survey. A total of 4,353 adult women aged 19-64 years were classified into four groups according to perceived stress level: very high stress group (VHSG, n=225), high stress group (HSG, n=1,079), moderate stress group (MSG, n=2,532), and low stress group (LSG, n=517). Data collection included the sociodemographics, anthropometrics, blood profile, and dietary survey. After adjusting for covariates, those in the VHSG had a higher body mass index (p=0.013) and obesity rate (p=0.053) with a shorter sleep time than the LSG group. The VHSG also tended to have a higher plasma LDL-cholesterol, hsC-reactive protein and lower levels of HDL-cholesterol, vitamin A, and vitamin E than the low stress group. High stress subjects demonstrated increased breakfast skipping frequency (p<0.0001), decreased fiber intake (p=0.001), potassium (p=0.041), and vitamin A (p=0.011) than the low stress ones. Therefore the perceived stress level was associated with the inflammatory indicators, obesity, and lack of anti-inflammatory or antioxidant nutrients. The dietary components may be an important mediator of stress and metabolic disease.

  • The aim of this investigation was to assess the difference of health behaviors, dietary patterns and nutrient intakes between smokers and nonsmoker from 435 free living elderly in Kyunggi province. The study subjects were interviewed to collect general characteristics and health behaviors such as smoking, exercise, alcohol consumption, and food habits by questionnaires and nutrient intakes by a 24-hour recall, and weight, height, waist, hip, and blood pressure were measured. The percentages of smoker were 52.3% in males and 12.1% in females. Current smokers were fond of alcohol, salty or hot food, tended to have meals irregularly and insufficient sleep, and were inactive lifestyle compared to nonsmokers. Smokers consumed fewer servings of vegetables, fruits, and beans and their products. Women who smoked consumed less energy, carbohydrates, and vitamin E than nonsmokers, and their nutrient adequacy ratio of protein, iron, phosphate, niacin, vitamin B1, and vitamin C were significantly lower than nonsmokers. There were no differences of nutrient intakes and nutrient adequacy ratio between smokers and nonsmokers in male subjects. In conclusion, elderly smokers tended to have less healthy life style, food habit, and dietary nutrient intakes which may influence the deleterious effects of smoke components on cancer and coronary heart disease risk, thus health education program should include nutrition education as well as smoking cessation.
