비타민 C 및 E 급여가 한우 거세우 육의 지방산화 및 육색 안정성에 미치는 영향 (Effects of Dietary Vitamin C and E on Lipid Oxidation and Stability of Color in Hanwoo Steer Beef)

  • 본 시험은 vitamin C와 E 급여가 한우 거세우 쇠고기의 보존에 미치는 영향을 규명하기 위하여 실시하였다. 시험구는 대조구(비타민 C 비급여 및 미타민 E 20IU/kg feed), 비타민 C 급여구(비타민 C 0.1%/kg feed 및 비타민 E 20IU/kg feed), 비타민 E 급여구(비타민 E 200IU/kg feed) 및 비타민 C와 E 혼합 급여구(비타민 C 0.1%/kg feed 및 비타민 E 220 IU/kg feed)의 네 처리구로 나누어 출하전 90일 동안 사양시험을 실시하였고, 도축 후 5$^{\circ}C$에서 정장하면서 1, 3, 5, 7 및 10일째 배최장근의 pH, TBARS, 표면색, 육색소 분포, 보수력, 가열감량, 육즙손실 및 포장감량을 조사하였다. pH는 저장기간이 경과함에 따라 증가하였고, 비타민 C와 E 혼합 급여구가 저장 전 기간동안 높게 나타났다. 지방산패도는 저장기간이 경과함에 따라 증가하였고, 비타민 급여구가 대조구보다 낮았고, 특히 비타민 C와 E를 혼합하여 급여하였을 때 지방산패도가 낮았다. Hue angle은 저장기간이 경과함에 따라 높아졌고, 특히 대조구가 비타민 급여구보다 상당히 증가 하였다. Metmyoglobin 함량은 저장기간이 경과 할수록 증가하였고, 특히 대조구가 비타민 급여구보다 유의적(p<0.05)으로 높았다.Oxymyoglobin 함량은 저장기간이 경과하면 감소하였으나, 비타민 E 또는 C와 E 혼합 급여구가 대조구보다 유의적(P<0.05)으로 높았다. 이는 비타민 C와 E를 급여하면 쇠고기의 육색을 안정화시키는 것으로 사료된다. 보수력은 저장 7일째까지는 처리구간에 유의적인 차이는 없었고, 가열감량은 저장기간별로는 차이가 없었으나, 비타민 E 급여구 또는 비타민 C와 E 혼합 급여구가 대조구 및 비타민 C 급여구보다 저장 전기간 동안 유의적(P<0.05)으로 높았으며, 육즙손실과 저장감량은 저장기간이 경과함에 따라 증가하는 경향을 나타내었다. 그러므로 본 시험결과에 의하면 사료 중에 비타민 C 0.1% 또는 사료 kg당 비타민 E 220 IU를 첨가하면 지방산화가 지연되고, 또한 사료 중에 비타민 C 0.1%와 사료 kg당 비타민 E 220 IU를 함께 첨가해주면 육색이 안정화되는 것으로 사료된다.

Effect on Milking Performance of Vitamin-Trace Element Supplements to Early Lactation Italian Brown Cows Grazing Ryegrass (Lolium multiflorum) Pasture

  • The objective of this study was to examine the effects of concentrates containing different levels of a vitamin-trace elements premix on milk yield and composition of dairy cows. The trial, which lasted 14 weeks, was conducted from January to March and used 45 multiparous Brown cows in the early phase of lactation. Cows (n = 15 per treatment) were randomly allocated to three dietary treatments: the first group (control, C-0) was fed pelleted concentrate containing background vitamins and trace elements that supplied 1.0 times cows' daily requirements; the second group were fed the same concentrate, but containing 2.5 g/kg of vitamin and trace mineral premix per kg of concentrate (C-2.5); the third group were fed the same concentrate, but containing 5 g/kg of vitamin and trace mineral premix per kg of concentrate (C-5). The daily ration included ad libitum chopped oat hay, and the cows also had 8 h/d grazing on a ryegrass (Lolium multiflorum) pasture. During the performance trial, cow milk yield was daily recorded and individual milk samples were analysed for milk composition and to determine milk renneting properties. Cows fed the intermediate premix level (C-2.5) in diet showed the highest fat-corrected milk production (p<0.05) compared to other groups. None of the milk quality parameters studied were influenced by dietary treatment, except for milk rheological parameters (rennet clotting time and curd firmness) that were positively improved in cows fed the C-2.5 diet (p<0.05). The findings from this study show that intermediate level of vitamin-trace elements premix in concentrate can be advantageously used in grazing dairy cows without negative effects on yield and quality of milk produced.

남자 고등학생 흡연장의 영양상태 판정 및 흡연관련 요인분석 -1.식이 섭취 실태와 체내 지질 및 항산화 비타민 영양상태- (Assessment of Nutritional Status and Factors Related to Smoking in Adolescent Males -1.Dietary Intakes and Nutritional Assessment of Serum Lipids and Antioxidant Vitamins in Adolescent Male Smokers-)

  • This study was done to investigate the effect of adolescent smoking on dietary intakes and nutritional status of serum lipids and antioxidant vitamins. Subjects were 82 somkers whose average pack-year was 0.73, and 85 nonsmokers of male technical high school students in Seoul. Anthropometric measurement was performed and % body fat was also analyzed by Bioelectrical Impedance Fatness Analyzer(GIF-891). Dietary intakes and habits were examined through questionnaires and nutrient intakes were analyzed by Computer Aided Nutritional (CAN) analysis programs. Serum TG and total cholesterol levels were measured by Spotchem sp-4410 and serum HDL-cholesterol levels were measured by test kit. serum vitamin C level was measured by 2,4-dinitrophenylhydrazine method and serum levels of vitamin A and vitamin E were measured by HPLC. All data were statistically analyzed by SAS PC package program. There was a significant difference in body fat percentage and systolic blood pressure while other anthropometric measurements were not different between smokers and monsmokers. Caloric intakes(2335㎉) in adolescent smokers tended to be higher than that of nonsmokers (2,175㎉) but the difference was not statistically significant. Intakes of protein(76.67g) and niacin(16.49㎎) in adolescent male smokers were significantly higher(P<0.05) than those of nonsmokers although other nutrient intakes were not significantly different. Analysis of serum lipids showed that serum HDL-cholesterol level of smokers was significantly different. Analysis of serum lipids showed that serum HDL-cholesterol level of smokers was significantly lower(p<0.05) than that of nonsmokers, whereas other lipid levels were not significantly different. Serum vitamin C level was also significantly lower(p<0.05) in adolescent smokers than in nonsmokers. In addition, serum vitamin E level, which was 7.85㎎/1 in smokers, was lower than that of 9.20㎎/1 in nonsmokers(p<0.05) while serum vitamin A level was not significantly different between the two groups. These results indicate that cigarette smoking in adolescence decreases serum levels of HDL-cholesterol, vitamin C and vitamin E even thoughth their smoking history is very short. 고등학생 흡연자와 비흡연자의 1일 영양소 및 간식 섭취 (The Daily Intakes of Nutrients and Snacks of High School Smokers and Non-Smokers)

  • This study investigates the relationship of smoking on daily intake of nutrients and snacks in the Chungnam and Daejeon high school students. Up to date scientific nutrition education and counseling programs in the regular school system is needed for a professional nutrition education teacher. The primary objective of this study was to provide useful information to nutrition education teachers. A survey was conducted with 400 high school students in the Chungnam and Daejeon areas. 381 out of 400 questionnaires were analyzed with SPSS 12.0K. The subjects were composed of 49.8% male, 50.1% female and 40.9% regular high school students, 59.1% business high school students and smokers 43.1%, non-smokers 56.9%. 43.4% of smokers had been smoking since middle school. On analysis of daily nutrient intakes, 16 out of 19 nutrients except animal calcium, Vitamin A and Vitamin C were much more consumed by the smoking group than the non-smoking group non-significantly. Especially vegetable fat and Vitamin E were higher in the smoking group than the non-smoking group (p<0.05). The intake ratio of carbohydrates: protein: fat was similar in the two groups (smoking group 55:15:29, nonsmoking group 56:15:28). Intakes of Vitamin B1 and potassium in comparison with the Korean dietary reference intakes(KDRI) were under 50% in both groups. However, sodium was taken over 200% compared to KDRI in both groups. Intakes of Vitamin C in the smoking group were as low as 76.5% in comparison to KDRI. Smokers need to increase the intakes of Vitamin C considering that smokers need to intake Vitamin C two times than non-smokers. Nutrient intakes from snacks in the smoking group were higher than the non-smoking group. Nutrients that originated from snacks which took over 20% among daily nutrient intakes were 12 nutrients(energy, fat, carbohydrate, calcium, P, Fe, K, Vitamin $B_1$, Vitamin $B_2$, Vitamin C, Vitamin E, dietary fiber) in the smoking group compared to 7 nutrients(energy, vegetable protein, fat, carbohydrate, calcium, Vitamin $B_2$, Vitamin C) in the non-smoking group. The smoking group was significantly paying more money for snacks each month than the non-smoking group was(p<0.01). Periods of consumption were irregular in the smoking group(p<0.05) and the smoking group was used to taking snacks in the morning compared to the non-smoking group. The smoking group preferred sweets and high calorie food over other snacks in comparison of the non-smoking group. The nonsmoking group had better eating habits than the smoking group.

음양 체질 식사가 비만 성인의 대사증후군 지표 개선에 미치는 영향 (Effect of the Yin-Yang Constitution Diet on Metabolic Syndrome Biomarkers in Obese Adults)

  • The study classified 83 obese adults by constitution and had them follow a strict diet according to their constitution in order to see if the Yin-Yang method would be effective on the metabolic syndrome, which is one of the main causes of death in Korea. Overall, the application of both Yin and Yang methods improved the following factors: weight, body fat percentage, systolic blood pressure, diastolic pressure, neutral fats and total cholesterol. In particular, the Yin constitution group of men showed more improvements than the Yang constitution group. Furthermore, waist circumference and the prevalence rate of systolic blood pressure, diastolic pressure, total cholesterol and metabolic syndrome were decreased noticeably. Total energy intake was increased in both men and women after the constitutional diet, along with the increase of nutrient intake, such as dietary fiber, vitamins and minerals, among others. Among various nutrients, vitamin A, vitamin C, thiamine, vitamin B6, folic acid, calcium, phosphorus, potassium, magnesium and iron intake were increased noticeably after the constitutional diet. In addition, subjects' intake of all nutrients, except for magnesium, satisfied the nutrition intake standards. Further, the nutrients adequacy ratio (NAR) and the mean adequacy ratio (MAR) improved for both men and women. The intake of potatoes, starch, greens and mushrooms increased noticeably, whereas the intake of meat, dairy, drinks and alcohol decreased after the constitutional diet. For the Yin constitution, the intake of Yin foods noticeably decreased, where as the intake of Yang foods decreased for the Yang constitution. In conclusion, the constitutional diet effectively improves the metabolic syndrome. Among many nutrients, the intake of dietary fiber, vitamins A, C and E, potassium and magnesium is positively associated with the improvement of metabolic syndrome biomarkers.

허혈성 심질환 환자의 영양소 섭취실태에 대한 환자-대조군 연구 (A Case-Control Study for Dietary Intakes of Patients with Coronary Heart Disease)

  • This study was carried out to see dietary intakes of patients with coronary heart disease since we don't understand their dietary patterns even though the mortality and prevalence rate of coronary hear disease are increasing in this country. We studied 75 coronary heart disease patients and 150 randomly selected controls, matched for age, sex, height and weight, in a population based study. All subjects completed a questionnaire that included disease history, diagnosis time, current treatment, etc., a 24 hour dietary recall, and measurement of height and weight. Compared to controls, patients had less likely to drink alcohol and smoke cigarette (p<0.05). The energy intake of patients was significantly lower than that of controls, but the intakes of fiber, $\beta$-carotene, sodium, folate, vitamin C, potassium in male patients and those of vitamin C and sodium in female patients were significantly higher than those of controls (p<0.05). Mean adequacy ratio and dietary variety score of patients were also higher than those of controls (p<0.05). Patient group's consumed less cereals than controls, but more vegetables, milk products, and nuts in male patients and fruits, beans and seasonings in female patients compared to controls'. There were not significant differences of lipid compositions between two groups, except linolenic acid. These data suggest that patients with coronary heart disease in Korea had better dietary nutrient intakes compared to healthy controls, which might be helpful to prevent recurrence of coronary heart disease.

강화도 장수 노인의 식습관 점수별 식생활태도 및 영양상태 조사 (A Study on Dietary Pattern and Nutritional Status of the Long-Lived Elderly People by Food Habit Index in Ganghwa-gun Area)

  • This study was carried out to assess the food habit index of the long-lived elderly who were aged over 85 years living in Ganghwa-gun. A survey was conducted during December 2003. Dietary nutrient intake data was obtained through the 24-hr recall method. The subjects were 96 (32 males, 64 females) aged people and divided into three groups based on food habit index scores. Such as group A: good $16\∼20$, group B: fair $11\∼15$, and group C: poor $5\∼10$. The three groups of the subjects were 90.7 years of age and $21.3\;kg/m^{2}$ of BMI on average. Healthy eating index scores of the subjects were $9.4\%$ in group A, $54.2\%$ in group B and $36.5\%$ in group C. Their level of education were lower and their levels of living standards tended to have been middle and lower of the middle class. The percentage of living together with their families or spouses in all groups were over $60.0\%$ and the rates of the subjects who have responsibility for their meal preparations were also very high in all groups. Most subjects tended not to drink nor smoke, and spend $8\~10$ hours for their sleep. The percent of number of diseases in group A was lower than in groups B and C. Their dietary habits such as taking three meals a day regularly have shown that they have good eating habit in general. There was a positive correlation between the eating behaviors and nutrient intakes. The protein, animal protein, fat, PUFA, vitamin E, vitamin $B_{2}$, niacin, P and K intaks in group A were significantly higher than that of the groups B and C. For group A of good food habits aged had no sufficient intake of Ca and vitamin A than the Korean RDA and long-lived elderly of group C in Ganghwa areas had worse nutrients intakes, especially Ca, vitamin A, vitamin $B_{2}$ and vitamin E. Study on the obesity and nutrition status of housewives in Seoul and Kyunggi area

  • This study was conducted to evaluate the rate of obesity of 212 women (age 45-60 years) in Seoul and the Kyunggi area through analysis of BMI and the dietary life factors related to obesity using a survey on dietary habits, dietary assessment, and nutrient intake. The height of the underweight group was taller than normal. The height of the obese group was equal to that of the normal group, but the weight was 8.5 kg greater than the normal group. Women in the underweight group consumed meals irregularly, and only 33.4% ate breakfast. Additionally, the rate of overeating was low in the underweight group, and milk, dairy products (yogurt, etc.), fruit, and fruit juice were consumed more than once a day. It was found that 62.1% of the women in the obese group never ate out, and the rate of eating one serving of fruit, drinking one cup of fruit juice, and eating various kinds of foods was high. The average point of women's dietary life was $21.9{\pm}2.9$, and 12.7% of all women responded that their dietary life was good. However, in the obese group, only 6.9% of the women reported that their dietary life was good. Evaluation of snacking habits revealed that the underweight group consumed a high level of carbonated drinks and ice cream, whereas for in the obese group, 24.1% of the women consumed milk and its products and 5.6% regularly consumed fast and fried foods. Evaluation of nutrient intake revealed that the consumption of energy, protein, vitamin A, vitamin $B_1$, $B_2$, $B_6$, niacin, vitamin C, and vitamin E was high in all of the groups, but the intake of folic acid in the underweight group was lower than the required level. Overall, 24.1% of the women in the obese group were found to have metabolic diseases, mostly hypertension (43%). In conclusion, a balanced diet to avoid excessive nutrient intake is needed to prevent obesity.

Sunflower Seed Sprout의 성분조성에 관한 연구 (A Study on the Composition of Sunflower Seed Sprout)

  • The proximate composition, pH, vitamins and minerals in sunflower seed sprout were investigated to furnish basic data for utilization in health food or processed food. The pH of sunflower seed sprout was 5.70. The contents of moisture, crude protein, crude fat, crude ash and crude fiber of sunflower seed sprout were 94.7%, 1.3%, 0.3%, 1.3% and 1.6%, respectively. The vitamin A, vitamin B$_1$, vitamin B$_2$, vitamin C and niacin contents in sunflower seed sprout were 114.411. U%, 0.06mg%, 0.05mg%. 5.90mg% and 0.80mg%, respectively. The contents of Ca, P, Fe, Na, K, Mn, Cu, Zn and Mg in sunflower seed sprout per 100g were 80.00mg, 4.85mg, 3.63mg, 8.25mg, 180.90mg, 1.35mg, 0.43mg, 1.85mgand 66.35mg, respectively. The crude ash and crude fiber content of sunflower seed sprout were 3 or 4 times higher than those in the sprout of radish seed, mung bean, soybean or alfalfa, respectively.

대구지역 임신부의 식품 및 영양섭취실태 (The Dietary Intake of Pregnant Women in Daegu Area)

  • This study was carried out to figure out the dietary intake of pregnant women in Daegu area. A total of 467 pregnant women was recruited at two hospitals in this area to collect the information on dietary intakes, general characteristics, and anthropometric measurements using an interview. Forty-seven women (10.1%) were in the first trimester, 101 women (21.6%) in the second trimester, and 319 women (68.3%) in the third trimester. The mean age, prepregnant weight and height of subjects were not significantly different among the trimester groups. The mean daily nutrient intakes of energy, fat, protein, carbohydrates, phosphate, sodium, vitamin B$_1$, vitamin B$_2$, and vitamin C were significantly different among the trimester groups, but the other nutrients were not different. For the calcium and iron, the percentage of subjects consumed less than 75% of the Korean RDA was over 80%, and for other nutrients such as energy, vitamin B$_1$, and vitamin B$_2$ over 50% of subjects consumed less than 75% of the Korean RDA in the first trimester. The correlations between nutrient intakes and weight gain during pregnancy showed different patterns among the trimester groups. The mean adequacy ratio and dietary variety scores were not significantly different among the trimester groups. The amount of food intake from cereals and cereal products were higher during the second and the third trimester compared to the first trimester, but those of the other food groups were not significantly different. In conclusion, nutrient intakes of the pregnant women for iron, calcium and some vitamins were inadequate and nutritional management programs for these nutrients are necessary.
