A Comparative Study on Nutritional Composition of Native and Hybrid Pork in Korea (재래종과 개량종 돼지고기의 영양성분 비교 연구)

  • The purpose of this study was to investigate the nutritional composition of native and hybrid pork in Korea. Three different parts (ham, loin and belly) of both native and hybrid pork were used. The results were as follows The moisture content from Korean native pork was about 60.28%, while that from the loin of hybrid one was 69% and decreased in the order of him, loin, and belly The highest protein content of 19.71% was found in Korean native pork loin, and Korean native pork ham had a significant amount of protein of 17.80% and hybrid one had 13.14% (p< .05). The highest crude lipid, 34.44%, was found in hybrid pork belly, Korean native pork ham had a significant amount of 5.43% and hybrid pork had 2.33% (p< .05). The highest carbohydrate content of 13.28% was found in the Korean native pork belly. The amount of ash was in the order of loin, ham and belly in Korean native pork. Among the minerals, K was found the most in Korean native pork ham (654.82mg) and hybrid one (747. 35mg) (p< .05). Fe was higher in the Korean native pork ham (23.03mg), loin (15.86mg) and belly (10.80mg) compared to the hybrid pork ham (19.04mg), loin (11.63mg) and belly (7.61mg). That was significant ham, loin(p< .01) and belly(p< .05). The main free amino acids of the native and the hybrid pork in Korea were alanine, aspartic acid and lysine. While the cholesterol content was found to be high in the order of ham, belly, and loin in the Korean native pork, in the order of belly, fresh ham and loin in the hybrid pork. The cholesterol contents in ham were significantly different between the Korean native pork(789.32$\mu\textrm{g}$) and the hybrid pork (538.84$\mu\textrm{g}$) (p< .01).

The Antioxidant and Nitrite Scavenging Activity of Wild Grape(Vitis coignetiea) Wine (머루와인의 항산화성 및 아질산염 소거능)

  • Total anthocyanin and color intensity contents of wild grape wine were $4.3{\pm}0.3%$ and $10.2{\pm}0.8%$, respectively. The contents of total phenols and flavonoid in wild grape wine were $18.8{\pm}3.9$ mg/100 g, $0.5{\pm}0.2$ mg/100 g, respectively. Total mineral content in wild grape wine was $22.6{\pm}0.2$ mg/100 g and the 10 minerals of the potassium content ($5.3{\pm}0.2$ mg/100 g) was the highest. Electron donating abilities of wild grape juice at concentration of 1,000 ${\mu}L/mL$ were $90.4{\pm}1.8%$. Reducing power of wild grape wine at concentration of 1,000 ${\mu}L/mL$ were 0.932. The electron donating abilities and reducing power were increased significantly by increased the sample concentration in the reaction mixture. The nitrite scavenging ability was dependent on pH of reaction mixture and sample concentration. The nitrite scavenging ability of wild grape win was $76.3{\pm}1.3%$ at concentration of 1,000 ${\mu}L/mL$ under pH 1.2.

A study on nutritional intakes in middle income adults based on data from the 5th Korean National Health and Nutrition Examination Survey (제5기 국민건강영양조사 자료를 이용한 중산층 성인의 영양소 섭취실태 연구)

  • Purpose: This study was conducted to evaluate nutritional status in middle-class adults compared with low income or high income adults according to gender difference. Methods: Data from the 2012 Korea National Health and Nutrition Examination Survey was used. A total of 7,082 adults aged from 30 to 64 were included and classified according to household income level into three groups. Dietary data was collected using 24-hr recall methods. Results: Most nutrients including energy, protein, vitamins, and minerals such as iron and calcium differed according to income levels. Iron intake of middle-class men was higher than that of the lowest income group, whereas that of middle-class women was similar to that of the lowest income group. In addition, no significant difference in carbohydrate, protein, fat, thiamin, and niacin intakes per 1,000 kcal and iron intake was found between the middle and high income group only in male subjects. In summary, our results showed that the relationship between nutritional status and income level as a socioeconomic parameter could vary according to gender difference. Conclusion: According to our results, it could be suggested that not only the lowest income people but also middle class women should be concerned in development of nutritional policies. Gender difference should be considered. It is a very meaningful implication for application to policy for obesity prevention or intervention.

Mineral Contents of Hot Water Extracts and Shell of Shellfishes from Western Coast of Korea (서해안 조개류의 껍질과 열수 추출물의 무기질 함량)

  • Yields of shells, appearance of the shellfishes, mineral contents of the shells and their hot water extracts were determined in six shellfishes such as corb shell(CS). short neck clam(SNC). taste clam(TC), ark shell(AS). top shell(TS) and oyster(OY) from the western coast of Korea. Yields of shells in shellfishes were 70.I~80.5% but yields of TC was the lowest as 40.7%. The highest among weight of the shell the shellfishes was the TS(26.2g) and the lowest weight was TC(5.6g) Colors of CS, SNC, TC. AS. TS and OY were yellowish brown, brown, black. greenish brown and gray. respectively. Ca content of the shell of shellfishes was 36.23~38.78% and the content of K and Na were 0.23~4.54% and 1.48~l.59%, respectively. Contents of Na, Mg, Fe. Mn, Zn, Cu. P and S were in the range of 0.01~0.21%. It also contained heavy metals, such as Pb(1.90~7.75 ppm), Cd(0.5~4.50 ppm), As (1.40~4.30 ppm), Se (0.2~l.50 ppm). Cr(1.00~8.30 ppm) and Hg(0.002~8.2 ppm), Ca content in hot water extracts of shell of shellfish was the highest in TC(2,448 mg/100 g), and the lowest in SNC(115 mg/100 g). K content in TC extracts was the highest with the levels of 952 mg/100 g. P content of TC and SNC were 201 and 0.36 mg/100 g, respectively. The contents of Pb, As, Se and Cr were the highest in the extracts of TC and were 110. 40. 90, 20 $\mu$g/100 g, respectively. But Cd was not detected in the extracts of SNC.

Comparison of Mineral and Vitamin Intakes According to the Stage of Change in Fruit and Vegetable Intake for Elementary School Students in Chungnam Province (충남지역 초등학생의 채소와 과일 섭취 행동 변화 단계에 따른 비타민과 무기질 섭취상태 비교)

  • The purpose of this study was to compare the mineral and vitamin intake according to the stage of change in fruit and vegetable intake. The subjects consisted of 256 students, 122 males and 134 females, who are fourth, fifth and sixth grade in an elementary school located in Yeongi-Gun, Chungnam province. The dietary intake wasexamined by 24 hr dietary recall for 1 day and by food record for 2 days from April 19 to May 01, 2007. Stage of change of intake of fruits and vegetables of the students was categorized into three groups: precontemplation, contemplation and preparation, and action. The subjects at the stage of action took kimchi and vegetables more frequently, and also took more vitamin C as well. But the subjects at other two stages did not show any difference in the intake of any food group and nutrients. Percentage of the male subjects who took less than EAR did not show any significant difference by stage of change in all the nutrients. However, there was gradual decrease in the percentage of female taking less than EAR of vitamin C and vitamin B2. The result concludes that vitamin C intake significantly increase gradually as the stages of behavioral change of fruit and vegetable intake proceed although almost all vitamins and minerals tended to increase.

Varietal Difference of Chemical Composition in Pigmented Rice Varieties (유색미 화학성분의 품종간 차이)

  • The composition of fatty acids, minerals, total dietary fiber and vitamin $B_1,\;B_2$, in pigmented rice varieties were determined. Proximate composition and color were also compared among pigmented rice varieties. Crude protein contents of black rice were higher than those of red and white rice, especially, C3GHi line had the highest protein content. There were no significant differences in lipid and crude ash contents between pigmented and white rice. Black rice showed lower Hunter value L and b value compared with red, green and white rice. But, Green rice showed lower Hunter value a compared with black rice. Green rice showed the higher contents in total dietary fiber, vitamin $B_1\;and\;B_2$ compared with white and black rice. The major fatty acids of pigmented rice were palmitic acid, oleic acid and linoleic acid. The contents of oleic acid was similar to that of linoleic acid in white rice. Oleic acid contents was lower than linoleic acid in black rice, but higher in red rice. Most mineral contents of pigmented rice except Fe, Zn and Mn were higher than those of white rice. Especially, Green rice had the highest mineral content.

Effects of Varying Dietary Zinc Levels and Environmental Temperatures on the Growth Performance, Feathering Score and Feather Mineral Concentrations of Broiler Chicks

  • This study aimed to investigate the effects of dietary zinc (Zn), environmental temperatures and Zn${\times}$temperature interaction on growth, feathering score and mineral composition of broilers. A total of 256 d-old Avian male broiler chicks were randomly allocated to a $4{\times}2$ factorial arrangement with four corn-soybean meal basal diets (containing 44 mg Zn/kg) supplemented with 0, 40, 60 mg/kg Zn (Diets 1, 2 and 3, respectively; 0.8% Ca for these three diets) and non-Zn supplementation, 1.6% Ca (Diet 4) and two temperature conditions (low: 26, 24, $22^{\circ}C$ vs. high: 30, 28, $26^{\circ}C$). All birds were given feathering coverage scores for back, breast, wing, under-wing and tail. The wing and tail were further evaluated for the occurrence and severity of defect feathers. Feathers were then pooled for mineral composition analysis. The results showed that in high temperature conditions, broilers fed Zn-unsupplemented, 0.8% Ca ration (Diet 1) had significantly (p<0.05) lower ADFI and ADG (wk 1-6) than birds under low temperature conditions. However, when the birds were fed 40 and 60 mg/kg Zn supplementation (Diets 2 and 3), the ADFI and ADG in both temperature conditions were not significantly different. In low temperature conditions, the ADFI, ADG (p<0.05), all feather coverage (p<0.01) and tail defect scores (p<0.001) of birds fed Diet 4 (excess Ca) were significantly poorer than those fed Diet 1. More Ca (p<0.05) was retained in the feathers of broilers fed Diet 4 under high temperature conditions. Broilers fed the Zn-unsupplemented ration (Diet 1) had significantly higher feather phosphorus (p<0.01) and potassium (p<0.05) concentrations than those fed the 60 mg/kg Zn-supplemented ration (Diet 3). A reduction of feather phosphorus (p<0.01) and potassium (p<0.05) and higher manganese (p<0.05) concentrations were observed in Diet 4 broilers as compared to those fed Diet 1. Under high temperature conditions, broilers had lower iron (p<0.05) and higher manganese (p<0.05) concentrations in feathers. Broilers kept in high temperature conditions had a higher Zn requirement and 40 mg/kg Zn supplementation was sufficient for the birds to achieve optimum growth. Supplemental Zn ameliorated the adverse effect of high temperature on growth and occurrence of tail feather defects. Excess Ca disrupted Zn metabolism to exert a detrimental effect on growth performance and normal feathering and this was elucidated in the birds kept in low temperature conditions.

Analysis of Nutritional Compositions of the 7 kinds of Edible Wild Grasses (7종 식용야생초의 영양성분 분석)

  • The study was carried out to investigate the proximate composition, amino acids, dietary fiber, ascorbic acid and minerals contents of seven edible wild vegetables; an Evening Primerose($S_1$), a Spiderwort($S_2$), the Flower of a Convolvulus($S_3$), So Ru Jaeng Yi($S_4$), Shoe Bi Rum($S_5$), O Yi Pul($S_6$), Jip Sean Na Mul($S_7$). Results as summarized as follows: 1. The moisture contents of samples were determined as 64.43~88.30% The largest amount of them was contained in a Spiderwort($S_2$) and the smallest was in a Jip Sean Na Mul($S_7$), 2. The crude protein contents of samples were determined as 2.71~8.10%. The largest amount of them was contained in a O Yi Pul($S_8$), the smallest was in the Spiderwort($S_z$). 3. A relatively large amount of total amino acids were determined in samples. The abundant amino acids existed in the samples were Glutamic acid(10%), Lysine(8%), Leucine(8%) and the content of Methionine was very low. The highest level of them was found in the Convolvulus($S_3$), 4,419.6 mg% and the lowest was Shoe Bi Rum($S_5$), 2,393.1 mg% 4. The Ascorbic acid contents of samples was determined as 55.99~31.8O mg. The highest level of them was found in the Jip Sean Na Mul($S_7$) and the smallest was in the Primerose($S_1$) 5. The mineral contents of samples were determined. A relatively large amount of K, Ca and Mg were found in the samples. Especially the level of Iron was higher than that of any other vegetables. 6. The contents of dietary fiber were determined as 31.8~79.9%. The highest level of them was found in the Convolvulus($S_3$) and the lowest was in the Spiderwort($S_2$). The highest level of them was found in the Convolvulus($S_3$) and the lowest was in the Spiderwort($S_2$). From the above mention, we can say that the contents of protein, fat, fiber, total amino acids and iron were abundant in wild grasses than that of any other wild and cultured vegetables. The contents of ascorbic acid, potassium, calcium and magnesium were similar and the moisture is significantly low compared with any other vegetables.

Dietary Problems among Middle-Aged Japanese Men

  • Balanced intake of appropriate nutrients is the key to sustaining and promoting health as well as preventing and treating diseases. It is not always easy, however, to take balanced nutrition and various related factors must be taken into consideration. This report provides a summary of studies that have examined the nutrient intakes of Japanese middle-aged men and the relationship of this intake to drinking, job-related separation from families, and health practices. The alcohol consumption of Japanese middle-aged men has more than tripled in the last forty years. When nutrient intake was examined in relation to alcohol consumption, it was discovered that the maximum acceptable alcohol consumption was approximately 23 grams (about two drinks) of pure alcohol, provided the level of nutrient intake for drinkers was equal to that of non-drinkers. The alcohol energy ratio was approximately 5%. It was also discovered that middle-aged men's eating habits deteriorate when they relocate to new posts without their families and live by themselves. Compared to those living with their families, a higher proportion of those living alone have unfavorable eating habits including skipping breakfast or lunch, having a late lunch, and eating and drinking after dinner until bedtime. When Breslow's seven health practices, nutrient intake, and consumption weight by food group were examined, it was discovered that the group that had many beneficial eating and living habits consumed plenty of legume, pulses, fruit, green yellow vegetables and milk products. Their intake of vitamins and minerals was high and the results of a physical examination proved to be excellent. According to nutrition surveys conducted in Japan, China, the United Kingdom and the United States using a 24-hour recall method with common protocols and strict controls to ensure high levels of accuracy and cross-study validity, the Japanese had the highest cholesterol intake and the lowest dietary fiber intake among the four countries. Also, the alcohol energy ratio of the Japanese exceeded 8%, the highest among the four countries, while their intake of magnesium and iron was the lowest These results indicate that it is necessary to enhance nutritional education for middle-aged men and to reinforce the social environments in which they live and work in order to promote proper diet and nutrition in Japan. In vitro antibacterial activities of Pozzolan as a dietary silicate minerals supplementation to animals (가축에 대한 보조사료 규산염제로서 포졸란의 in vitro 항균 효과)

  • The purpose of this study was to investigate in vitro antibacterial activities of pozzolan against super bacteria and intestinal bacteria. There were four treatment groups: 1) CON, pozzolan free control group; 2) DP0.3, microbial culture medium prepared by mixing distilled water and 0.3% of pozzolan powder; 3) DP0.5, microbial culture medium prepared by mixing distilled water and 0.5% of pozzolan powder; and 4) PE, microbial culture medium prepared with pozzolan powder extracts without adding distilled water. The count of Lacctobacillus casei was significantly higher in the DP0.3 group compared to CON (P<0.05). However, it showed no significant difference compared to other treatment groups. Numbers of Clostridium butyricum, Escherichia coli, and Salmonella typhimurium were significantly lower in pozzolanic treatment groups compared to CON (P<0.05). Clostridium butyricum and Salmonella typhimurium counts were significantly different among DP0.3, DP0.5, and PE groups (P<0.05). Counts of E. coli were also significantly between DP0.5 and PE groups (P<0.05). Counts of MRSA and VRE were significantly lower in pozzolanic treatment groups compared to CON (P<0.05). MRSA counts were significantly different among DP0.5, DP0.3 and PE groups. VRE counts were significantly higher in the order of PE > DP0.3> DP0.5> CON (P<0.05). These results suggest that pozzolan could be used as a dietary silicate supplement and a natural antibacterial agent for livestock if its antimicrobial activity against super bacteria and harmful bacteria in the intestine is confirmed.
