To supply basic data for systemic nutrition education, perception of nutrition education and nutrition knowledge was investigated in elementary school students (4~6th grade) in Chungnam province. Forty-six percent of students had a normal level of interest in nutrition, and 43.8% of students had a normal level of nutrition knowledge. Male students (56.1%) and female students (43.7%) wanted nutrition education via lectures in class (p<0.001), with a significant difference based on gender. In addition, most students wanted 'cooking' as nutrition education content, with a significant difference based on gender (p<0.001). Approximately 59% of students (boys 53.7% and girls 64.6%) responded that the reason not to practice the contents of nutrition education is 'not interested' (male 44%, female 34.1%) (p<0.05). For necessity of nutrition education, 38.1% of subjects answered 'normal', and 42.8% of students responded that nutrition education is not helpful since there is no interest. On the contrary, necessity of nutrition education was recognized by 30.8% of male students and 30.8% of female students for prevention of obesity and health life with a balanced diet, respectively. Students (66%) wanted a nutrition teacher, and 33.2% of male students wanted nutrition education once a month, whereas 34.5% of female students wanted it once a week (p<0.01). And 54.8% of students responded that current frequency of nutrition education is adequate. The average score of nutrition knowledge for female students was higher than that of male students, and a higher grade received a higher score of nutrition knowledge. The level of nutrition knowledge was not relevant to the actual score of the individual. Based on this result, it is necessary to activate and expand nutrition education in elementary schools to emphasize the importance of nutrition education. Additionally, future nutrition education should be more available to practice in life as well as improvement of nutrition knowledge. Investigation into nutrition knowledge according to gender and grade is necessary for continuous and systemic nutrition education.

This study analyzed Naver, Daum, Google, YouTube, and Twitter using TEXTOM for two years and four years as of January 18, 2020. The results are as follows. First, the total number and volume of keyword search data related to youth and diet were slightly higher after COVID-19, showing that interest increased due to COVID-19. Second, as a result of frequency analysis, 'education' was the highest before COVID-19, and 'health' was the highest after COVID-19, showing that interest in health is increasing due to the increased importance of health and immunity due to COVID-19. Third, as a result of frequency weight analysis of the top 50 keywords, 'education' showed the highest frequency before COVID-19, and 'acne' after COVID-19. Fourth, the results visualized using word cloud showed that the keywords 'education' before COVID-19 and 'health' after COVID-19 appeared the largest and boldest, showing the highest frequency and importance. As a result of the above results, we were able to use the text mining method to apply it to eating habits, and we used materials visualized as a highly readable word cloud in units such as eating problems in adolescence and balanced meal planning and selection in the home economics curriculum to improve the teaching of the class. The direction of proper eating habits education, including using it as a medium, was presented.

In recent times, many people have problems of nutritional imbalance; lack or surplus intake of a specific nutrient despite the variety of available foods. Accordingly, the interest in health and diet issues has increased leading to the emergence of various mobile applications. However, most mobile applications only record the user's diet history and show simple statistics and usually provide only general information for healthy diet. It is necessary for users interested in healthy eating to be provided recommendation services reflecting their food interest and providing customized information. Hence, we propose a menu recommendation method which includes calculating the recommended calorie amount based on the user's physical and activity profile to assign to each food group a substitution unit. In addition, our method also analyzes the user's food preferences using food intake history. Thus it satisfies recommended intake unit for each food group by exchanging the user's preferred foods. Also, the excellence of our proposed algorithm is demonstrated through the calculation of precision, recall, health index and the harmonic average of the 3 aforementioned measures. We compare it to another method which considers user's interest and recommended substitution unit. The proposed method provides menu recommendation reflecting interest and personalized health status by which user can improve and maintain a healthy dietary habit.
With the rapid expansion of the economy, consumers' interest in health has also grown and the consumption of health foods is also growing at a rapid rate. However, because of the lack of understanding and Information about health foods, there is growing discontentment societally and in relation to the consumers' individual health. This study was conducted to get consumers to use the health food soundly and provide useful information to consumer behavior researchers of health food by researching consumers' past consumption experience and recognition of health foods. 662 people over the age of 20 in the Seoul area were sampled for this study. Through the results of this study, it was revealed that 71.5% of the respondents said they consumed health foods in the past year. The people surveyed said they thought they were health on the whole(3.72) and were slightly concerned (3.30) with their health. Lastly. the results of the studying the recognition of health food, respondents believe that health foods help to maintenance of good health(3.63) recover from fatigue(3.59), prevent of disease(3.32). They also believe that it is not harmful to the body(2.85) but were concerned about additives(3.24) and side effects(3.24) The study also found consumers to think that health foods are expensive(4.03) but is not of the highest quality(2.84) and that the dosage is not exact(2.84). In addition. they believe the labeling to be accurate(2.89), the ads to be exaggerated(3.88). information about the products to be lacking(3.71) and finally refund or exchange to be difficult(3.85).
The purpose of this study was to investigate the interests in food and nutrition information of internet users, and find the major problems associated with the use of internet information. Of 660 internet users, including 152 professionals, 127 white-collars, 130 college students, and 29 others, 66.4% had accessed the internet to obtain information. Of the subjects, 71% had used the internet to obtain nutrition information, 91.3% of which answered that they would keep using the internet for this purpose. The area of greatest interest and need of the professional users, in relation to nutrition information from the internet, was 'recipe and menu' (p<0.001). Whereas, the white-collars were most interested in nutrition information for 'diet for weight control' and 'diet'(p<0.001). Students were most interested in nutrition information related to 'diet' and 'diet for weight control'(p<0.001). Due to the variety of interests and applications of different users, there is a need to develop specialized nutrition information sites for internet users to easily obtain reliable and valuable information.

BACKGROUND/OBJECTIVES: The main objective of this study was to evaluate the effects of a high cholesterol (HC) dietary challenge on cholesterol tissue accumulation, inflammation, adipocyte differentiation, and macrophage infiltration in guinea pigs. A second objective was to assess whether macronutrient manipulation would reverse these metabolic alterations. MATERIALS/METHODS: Male Hartley guinea pigs (10/group) were assigned to either low cholesterol (LC) (0.04g/100g) or high cholesterol (HC) (0.25g/100g) diets for six weeks. For the second experiment, 20 guinea pigs were fed the HC diet for six weeks and then assigned to either a low carbohydrate (CHO) diet (L-CHO) (10% energy from CHO) or a high CHO diet (H-CHO) (54% CHO) for an additional six weeks. RESULTS: Higher concentrations of total (P < 0.005) and free (P < 0.05) cholesterol were observed in both adipose tissue and aortas of guinea pigs fed the HC compared to those in the LC group. In addition, higher concentrations of pro-inflammatory cytokines in the adipose tissue (P < 0.005) and lower concentrations of anti-inflammatory interleukin (IL)-10 were observed in the HC group (P < 0.05) compared to the LC group. Of particular interest, adipocytes in the HC group were smaller in size (P < 0.05) and showed increased macrophage infiltration compared to the LC group. When compared to the H-CHO group, lower concentrations of cholesterol in both adipose and aortas as well as lower concentrations of inflammatory cytokines in adipose tissue were observed in the L-CHO group (P < 0.05). In addition, guinea pigs fed the L-CHO exhibited larger adipose cells and lower macrophage infiltration compared to the H-CHO group. CONCLUSIONS: The results of this study strongly suggest that HC induces metabolic dysregulation associated with inflammation in adipose tissue and that L-CHO is more effective than H-CHO in attenuating these detrimental effects.

Modulation of biotransformation enzymes is one mechanism by which a diet high in fruits and vegetable may influence cancer risk. Inhibition of cytochrome P450s (CYP) and concomitant induction of conjugating enzymes are hypothesized to reduce the impact of carcinogens in humans. Thus, exposure to types and amounts of phytochemicals may influence disease risk. Like other xenobiotics, many classes of phytochemicals are rapodly conjugated with glutathione, glucuronide, and sulfate moieties and excreted in urine and bile. In humans, circulating phytochemical levels very widely among individuals even in response to controlled dietary interventions. Polymorphisms in biotransformation enzymes, such as the glutathione S-transferases (GST), UDP-glucuronosyltransferases (UGT), and sulfotransferases (SULT), may ocntribute to the variability in phytochemical clearance and efficacy; polymorphic enzymes with lower enzyme activity prolong the half-lives of phytochmicals in vivo. Isothiocyanates (ITC) in cruciferous vegetables are catalyzed by the four major human GSTs: however reaction velocities of the enzymes differ greatly. In some observational studies of cancer, polymorphisms in the GSTMI and GSTTI genes that result in complete lack of GSTM1-1 protein, respectively, confer greater protection from cruciferous vegetable in individuals with these genotypes. Similarly, we have shown in a controlled dietary trial that levels of GST-alpha-induced by ITC-are higher in GSTMI-null individuals exposed to cruciferous vegetablse. The selectivity of glucuronosyl conjugation of flavonoids is dependent both on flavonoid structure as well as on the UGI isozyme involved in its conjuagtion. The effects of UGI polymorphisms on flavonoid clearnace have not been examind; but polymorphisms affect glucuronidation of several drugs. Given the strong interest in the chemopreventive effects of flavonoids, systematic evaluation of these polymorphic UGTs and flavonoid pharmacokinetics are warranted. Overall, these studies suggest that for phytochemicals that are metabolized by, and affect activity of, biotransformation enzymes, interactions between genetic polymorphisms in the enzymes and intake of the compounds should be considered in studies of cancer risk. Genetic polymorphisms in biotransformation enzymes may account in prat for individual variation in metabolism of a wide range of phytochemicals and their ultimate impact on health.
Fourier transform-near infrared (FT-NIR) spectroscopy is a simple, rapid, non-destructive technique which can be used to make quantitative analysis of chemical composition in grain. An interest in total dietary fiber (TDF) of grain such as rice has been increased due to its beneficial effects for health. Since measuring methods for TDF content were highly depending on experimental technique and time consumptions, the application of FT-NIR spectroscopy to determine TDF content in milled rice. Results of enzymatic-gravimetric method were $1.17-1.92\%$ Partial least square (PLS) regression on raw NIR spectra to predict TDF content was developed Accuracy of prediction model for TDF content was certified for regression coefficient (r), standard error of estimation (SEE) and standard error of prediction (SEP). The r, SEE and SEP were 0.9705, 0.0464, and 0.0604, respectively. The results indicated that FT-NIR techniques could be very useful in the food industry and rice processing complex for determination of TDF in milled rice on real time analysis.

Recent amendment on the Food Sanitation Act in Korea mandated the Minister of Food & Drug Safety to secure the scientific basis for management and reevaluation of standards and specifications of foods. Especially because the current food safety control is limited within the scope of 'Farm to Market' covering from production to retail in Korea, safety control at the plane of true 'Farm to Fork' scope is urgently needed and should include 'total diet' of population instead of individual food items. Therefore, 'Total Diet Study (TDS)' which provides 'closer-to-real' estimates of exposure to hazardous materials through analysis on table-ready (cooked) samples of foods would be the solution to more comprehensive food safety management, as suggested by World Health Organization and Food and Agriculture Organization of the United Nations. Although the protection of diets from hazards must be considered as one of the most essential public health functions of any country, we may need to revisit the value of foods which has been too much underrated by the meaningless amount of some hazardous materials in Korea. Considering the primary value of foods lies on sustaining life, growth, development, and health promotion of human being, food safety control should be handled not only by the presence or absence of hazardous materials but also by maximizing the value of foods via balancing with the preservation of beneficial components in foods embracing total diet. In this regard, this article aims to provide an overview on TDS by describing procedures involved except chemical analysis which is beyond our scope. Also, details on the ongoing TDS in Korea are provided as an example. Although TDS itself might not be of keen interest for most readers, it is the main user of the safety reference values resulted from toxicological research in the public health perspective.

The aging process is multifactorial and results from the combined effects of inherited(genetic) and acquired factors including life style, food habits, physical activity, and diseases. That give rise to the various approaches in aging. We are trying to study biological changes with aging, In detail we are focused on gene and protein function accompanied by normal or abnormal aging process, especially our efforts are aimed at revealing the functional relationship of proteins in aging as a final product of gene. We expect that proteomic approach to the study of protein function involved in aging should give us variety of integrated data to understand biological changes of long lived lives, We have applied expression proteomics to rat liver bred in dietary restriction or in at libitum to elucidate the effects of food habit on aging. Expression proteomics shows us protein profile in a selected tissue or cells as a whole and gives us the information about protein expression level, posttranslational modification and degenerative modification of expressed proteins. Comparative analysis of young and old rat liver by two dimensional gels shows that gene expression of several proteins was down regulated in old rats and some protein expression level is increased with aging. Dietary restriction slows down these changes of gene expression and in some proteins there's no difference in protein expression level at same ages in comparison with rats bred in at libitum. About forty protein was identified by peptide mass fingerprint with MALDI-TOF and rest of the protein of interest is in the course of identification, Also we are trying to make mitochondrial and cytosolic proteom reference map. These suborganelle proteom map will gives us the information about low abundance proteins and cellular localization of proteins. Proteomics is a growing methodology to study biological system. High throughput qualitative and qualitative aspect of this approach will gives us large amount of integrated information and speed up our understanding about biological system
