  • Objective: This study was conducted to investigate the effect of dietary onion (Allium cepa) extract (OE) supplementation on growth performance, apparent total tract retention (ATTR), blood profile, carcass characteristics and meat quality in broilers. Methods: Four hundred male broiler chicks (Ross 308, 3-d old) were randomly allocated to four dietary treatments for 28 d feeding trial. Each treatment has five replications with 20 birds each. Four dietary treatments were designated according to the OE supplementation levels (0 as control, 5, 7.5, and 10 g of OE per kg of basal diet respectively). On d 28, a total of 20 birds from each treatment were subjected for ATTR, serum biochemical assay, carcass characteristic and organ weight measurement. Results: Overall weight gain of OE 7.5 g/kg group was higher (p = 0.04) than control group. The ATTRs of dietary energy (p<0.01) and ether extract (p = 0.04) linearly increased with increasing levels of dietary OE. However, no difference in ATTR of dry matter and crude protein was evident. Furthermore, serum IgG concentration increased linearly (p<0.01) and quadratically (p = 0.03) with increasing OE supplementation. No differences in carcass dressing weight and amount of abdominal fat by treatments were observed. Also, the weight of organ including immune organ was not different among the treatments. The TBARS values of 10 d stored breast meat decreased linearly (p<0.01) and quadratically (p<0.01) with increasing dietary OE levels. The meat color was also affected, with lower (p<0.01) redness score in meats from OE supplemented groups. This study showed that dietary OE improved broiler weight gain presumably by increasing feed intake and ATTR of both energy and ether extract. The dietary OE increased serum IgG level and meat anti-oxidation capacity. Conclusion: This study implies that the recommended level of dietary OE supplementation could be beneficial for improving broiler performance and meat quality.

  • This trial was conducted to determine the effects of including canola protein concentrate in diets fed to broiler chickens on nutrient digestibility and broiler performance (0-21 days). A total of 180, day-old, male broiler chicks weighing an average of 52.8${\pm}$0.6 g were assigned to one of six dietary treatments in a completely randomized design. The control diet was based on corn and soybean meal and contained 15% canola meal. The experimental diets contained 3, 6, 9, 12 or 15% canola protein concentrate added at the expense of canola meal. There were five birds per pen and six replicate pens per treatment. Feed and water were available ad libitum throughout the 21-day experiment. Chromic oxide (0.35%) was added to all diets as a digestibility marker and was fed throughout the experimental period. The digestibility of dry matter, energy and phosphorus increased linearly (p<0.01) with increasing levels of canola protein concentrate. Although nutrient digestibility was higher for birds fed diets containing canola protein concentrate, these improvements did not translate into improvements in broiler performance. Weight gain was unaffected (p = 0.24) by level of canola protein concentrate. Feed intake was significantly increased (p<0.01) with the result that feed conversion tended to be poorer (p = 0.07) for birds fed diets containing canola protein concentrate. Mortality was also unaffected (p = 0.56) by dietary treatment.

  • The feeding value of maize cob meal was investigated in a trial involving one hundred and forty Arbor Acre day-old chicks raised to eight weeks of age. The maize cob meal which contained 32.5% fibre, 2.5% protein and had a gross energy value of 2,550 kcal/kg, was incorporated into the experimental diets at either 0, 2.9, 5.8, 11.6 or 23.2% level. All diets were formulated to contain 3,200 kcal/kg of metabolizable energy and approximately 22% protein by varying the proportions of maize and whole cooked soyabean meal in the diets. The inclusion of maize cob meal up to 11.6% in the diet did not significantly (p>0.05) affect body weight gains, feed consumption and utilization, as well as carcass yield and dressing percentage. However, at the 23.2% level of maize cob meal inclusion, body weight gains, feed utilization and carcass yields were significantly (p<0.05) reduced. The use of maize cob meal reduced feed cost for raising birds and either maintained or improved gross profit returns with up to 11.6% level of inclusion in the diet. It was concluded that maize cob meal can be included up to 11.6% in the diet of broiler chickens provided dietary energy concentration is maintained at 3,200 kcal of metabolisable energy per kilogramme of feed by using high energy density feed ingredient such as boiled whole seed soyabean meal.

  • Purpose: The purpose of this study was to explore the perimenstrual discomforts and dietary intake levels among normal women. Method: A prospective and descriptive study examined 38 women aged 23 46years of age. The data collection period lasted from April 1 to June 30, 2003. The participants were asked to keep a diary recording perimenstrual symptoms and food intake for 50 days. Results: There was a significant difference in physical symptoms of perimenstrual discomforts (F=6.95. p=.001). but there was no significant difference in dietary intake level according to three different phases of a menstrual cycle. The significant dietary intake variables correlated to PMS included energy, protein, Vitamin E, Vitamin $B_2$, niacin, Vitamin $B_6$, folic acid, phosphorus, iron, and zinc. They were negatively related to perimenstrual discomforts. Conclusion: Balanced diet intake will be necessary for not only the perimenstrual discomforts but also the general health promotion of the entire population. The dietary and nutritional assessment should be done prior to nursing interventions, and nutritional counseling and education should be given based on individual differences. In a further study, the effects of dietary composition on specific symptoms will be replicated with a large sample, and development of a diet intervention program for perimenstrual discomforts is recommended.

  • The aim of this investigation was to collect the baseline data about growth, dietary behaviors, nutrient intakes and dietary quality of children at child care centers for planning nutritional management program. The dietary intakes were measured by weighing method for intakes at child care centers and by dietary records by children\\`s mothers for intakes at home. The weight and height were measured and calculated z-scores by using standard of the same age groups. The children were 163 boys and 168 girls and the mean age were 55.6 months(12-78 months) and 56.0 months(16-78 months). respectively. The Z-score for height(0.33) and weight(0. 11) showed that the growth of children were above average. Nutrients intakes such s energy, protein, fiber, iron, sodium, potassium, vitamin A, vitamin B$_1$, vitamin C, niacin of boys from lunch and snack at day care centers were significantly higher than those of girls, and the meals at child care centers provided 20-37% of RDAs. The daily energy intakes were 1332.2kcal(83.1% RDA), protein 44. 26g(109.3% RDA), calcium 437.73mg(72.4% RDA), iron 7.24mg(72.4% RDA), vitamin A 459.6RE(113.1% RDA),vitamin B$_1$ 0.74mg(93.4% RDA), vitamin B$_2$0.79mg(79.7% RDA), niacin 7.66mg(69.9% RDA) and vitamin C 56.84mg(142.1% RDA). The nutrients which more than 50% of subjects ate less than 75% RDA were calcium, iron, niacin, and vitamin B$_2$.The average mean adequacy ratio was 0.80 and mean dietary variety score was 22.42, and those are positively correlated to % RDA of nutrient intakes. In summary, the children using child care centers consumed most nutrients below level of RDA and the nutritional management program at child care center is required to enhance the nutritional status of them. • The purpose of this study was to assess dietary intake and food habits of low-income person aged 60 years or eldary. The hundred fifty persons from the suburbs of Jeonju were surveyed between August 1 to 20,1979. Results were as follows: Family environment Approximately 90% of elderly persons surved, lived with their children and grand-children: 5.2% together as a couple; and 4.4%, widowed, lived alone. Nearly 40% of the households has a average monthly incomes of W40,000 to W100,000. Average food expediture accounted for 50 to 70% of total monthly income, thus indicating that the subject families belonged to the lowest socioeconomic level. As pocket money, 74.5% of male subjects had more than W5,100 per month. whereas, 51.4% of female had less than W5,000. Anthropometric measurements: 97.6% of subjects has heights greater than 90% of the Korean standard for their age group, whereas 45.2% of the subjects were 60 to 89% of standard weight. 88% had an arm circumferences only 60 to 89% of the standard. Nutrient intake: Intake of the majority of nutrients was below the recommended allowances, especially for energy, protein, calcium and iron. The energy input ratio of carbohydrate: protein: fat was 73.1-80.9. 13.3-15.8: 4.5-11.5, showing very heavy dependence on carbohydrates for energy needs. The contribution of animal protein was 24.3% of total protein intake, indicating an improper protein diet. Other factors influenced on the nutrient intake: Poor teeth, illness, and poor appetite were always associated with inadequate intake of energy and nutrients. The larger the family size, the lesser intake of nutrients was observed among those elderly.

  • The purpose of this study was to develope a computer program to help with gross diagnosis of protein-energy balance and feeding management practice and with the prediction about the risk possibility of productive disease such as reproductive and metabolic disorders by evaluating fat, protein, and milk urea nitrogen (MUN) from individual cow milk in dairy herd Somatic cell counts also represent the condition of udder health. The principal flow charts of this program was to check on herd management, sampling the composite milk, analysis the milk composition, conversion of data from milking equipment to program, input and analysis of data in program, and report. This program is compatible with window 95/98 system. The major analytical elements of this program were presented as; the profile of herd lactation curve analysis of the test-day milk production level, the distribution of somatic cell count, the fat to protein ratio to evaluate body energy balance, and the interpretation of dietary protein-energy balance by milk protein and MUN contents for individual cows. This program using milk fat, protein, MUN, and somatic cell counts will serve as a monitoring tool for the protein-energy balance and the feeding management practice, and for distribution of mastitis in individual cows. It will also be used to manage the nutritional and reproductive disorders and mastitis at the farm level.

  • Changes in nutritional and health status brought on by a two-year balanced diet were assessed with anthropometric measurements as well as hematological and lipid profiles in 56 healthy young men. Recommended dietary allowances (RDA) were adjusted with estimated daily weighted activity factor. The weighted resting energy expenditure factor of the subjects was 2.37 $\pm$ 0.05. Compared with RDA, all nutrient intakes were adequate and 56% of energy was supplied by carbohydrates, 18% by protein and 26% by fat. The vitamin and mineral intakes except vitamin B-2 were higher (26.46-129.88%) than RDA. Vitamin B-2 intake was 92.15 \ulcorner 14.16% of RDA. There was no seasonal variation on nutrient intakes. Height was increased and systolic blood pressure was decreased by balanced diet for two years. Body weight, diastolic blood pressure and body mass index (BMI) were unchanged. The level of hemoglobin and hematocrit was not changed, the level of plasma protein was decreased and the level of plasma total cholesterol and albumin was increased. These results suggest that a balanced diet can increase height and complement health status achieved through vigorous exercise, even in adults, and that the level of Korean RDA for energy is adequate to maintain existing body weight.

  • Recently, a lot of epidemiological studies revealed that low HDL-cholesterol level was a better predictor of risk for coronary heart disease than total cholesterol. This study investigated the anthropometric parameters, clinical blood indices, and dietary factors influencing serum HDL-cholesterol level by using a cross-sectional study for Korean female college students. The subjects were 94 female college students. They were divided into three groups according to their serum HDL-cholesterol levels, low HDL-cholesterol (<50 mg/dL, n=20), medium HDL-cholesterol (50 $\leq$, < 60 mg/dL, n=39) high serum HDL-cholesterol groups (60 $\leq$ mg/dL, n = 35). This study examined their demographic data and dietary intake throughout a questionnaire. Clinical blood indices were measured using an automatic blood chemistry analyzer (Selectra E), after 12 hours of fasting. BMI, body weight, fat mass, and waist circumferences were significantly increased according to low serum HDL-cholesterol levels. Serum lipid analysis showed a significantly higher level of TG, LDL-/HDL-Ratio, atherogenic index in the low HDL-cholesterol group. Serum levels of GPT, uric acid and alkaline phosphatase in the low HDL-cholesterol group were significantly higher than in the other group. The average consumption of energy was 1627 kcal and 77.76% of estimated energy requirement (EER). The mean ratio of calories from carbohydrate: protein: fat was 57:15:28. The low HDL-cholesterol group was significantly higher than the other groups in eggs, fat and oils consumption. Interestingly, milk and diary products consumption of low HDL-cholesterol group was half (p < 0.05) of those of the other groups. In conclusion, serum HDL-cholesterol levels appeared to be decreased by increasing BMI, fat mass, waist circumference, and serum TG level. In addition, some dietary factors seemed to be related to serum HDL-cholesterol levels. However, further research is needed to elucidate the exact relationship between serum HDL-cholesterol level and dietary factors.
