강릉지역 중학생의 식품섭취 평가에 관한 연구 (A Study on the Evaluation of Food Intake of Middle School Students in Kangneung)

  • 본 연구는 강원도 강릉시에 위치한 중학교 2학년 남녀 학생들을 대상으로 3일간 식사 기록법을 이용하여 이들의 식품섭취실태를 파악하고 식품섭취에 의한 식사의 질을 평가하여 중학생들의 식생활 향상에 기여하고자 수행되었다. 연구결과를 하면 다음과 같다. 하루에 섭취한 총 식품량은 1028.5g으로서 식물성식품이 773.7 g(75.2%), 동물성식품은 254.9 g(24.8%)이었다. 하루 섭취한 식사중에서 5가지 주요 식품군(유제품군, 육류군, 곡류군, 과일군, 채소군)중 유제품과 과일군을 섭취하지 않은 경우가 전체의 52.7%로 가장 많았고 다음으로 유제품군만이 제외된 식사(18.1%), 과일군만이 제외된 식사(16.4%)순으로 나타났으며 가장 이상적인 5가지 주요 식품군을 모두 섭취한 경우는 전체의 10.2%로 나타났다. 한가지 이상의 식품군을 섭취하지 않았을 경우 유제품군과 과일군의 비율이 비교적 높게 나타났다 하루에 섭취하는 주요식품군별 총 식품가지수는 남녀 모두 채소류가 11.1가지로 가장 많았고 다음으로는 육류, 곡류, 과일류, 유제품류순으로 나타났고, 식품섭취 가지수는 남녀별로 유의한 차이가 없었다. 또한 총 식품수를 나타내는 총식품 점수는 하루에 21~25가지의 식품을 섭취하는 사람이 전체의 26.5%로 가장많았고, 그 다음으로는 16~20가지 (19.0%), 11~15가지 (15.0%)로 높게 나타났다. 섭취하는 주요 식품군의 수(DDS)와 하루에 섭취하는 총 식품가지수(DVS) 간에는 상관성을 보여 섭취하는 식품군의 종류가 다양해지면 섭취하는 식품의 가지 수가 증가되었다. 식품섭취의 다양성을 나타내는 식품군점수(DDS), 총식품점수(DVS)와 영양소 섭취상태(MAR, NAR)와의 관계를 살펴보면 DDS가 3인 경우 MAR 값은 0.68이며 DDS가 증가함에 따라 MAR 값이 유의하게(p<0.001) 증가하여 DDS가 4, 5인 경우 MAR값은 각각 0.79, 0.85로 증가하였다. 대상자들의 식품군 점수(DDS)에 따른 각 영양소의 적정섭취비(NAR)는 9가지 영양소 모두에서 어느 정도 차이는 있으나 DDS가 증가함에 따라 NAR이 유의하게(p<0.001) 증가하는 경향을 보였으며 DDS, DVS는 NAR로 나타낸 모든 영양소의 섭취상태와 유의적인(p<0.001) 양의 상관관계를 보였다. 따라서 섭취하는 식품의 종류가 많을수록 영양소의 섭취수준은 향상됨을 알 수 있었다. 또한 DDS보다 DVS에서 높은 상관계수를 나타내어 식품군의 다양성보다는 전체적인 식품의 종류가 많을수록 식사의 질이 더 향상됨을 알 수 있었다. 이상의 결과들을 종합해 볼 때 조사된 대상자들의 적지 않은 학생들이 유제품군과 과일군을 섭취하지 않고 있었으므로 이로 인한 청소년들의 성장과 건강에 좋지 않은 영향을 기칠 것으로 우려된다. 또한 섭취하는 식품의 종류가 많을수록 영양소의 섭취수준은 향상되었으며 이는 주요식품군 점수보다 총 식품점수에서 높은 상관관계를 나타내며 식품군의 다양성보다는 전체적인 식품의 종류가 많을수록 식사의 질이 더 향상됨을 알 수 있었다. 따라서 옆 양적으로 균형 있는 식사를 하기 위해서는 주요식품군을 모두 섭취하고 섭취 식품 가지수가 많은 식생활을 하도록 학생과 학부모를 대상으로 영양교육 및 식사지침 제시가 절실히 필요할 것으로 생각된다.

Nutritional status of Korean elderly with dementia in a long-term care facility in Hongseong

  • BACKGOUND/OBJECTIVES: This study investigated nutritional status of the elderly with dementia in a care facility with the aim of improving the meal quality of the facility. SUBJECTS/METHODS: Data were collected from 30 dementia patients aged more than 65 years in a long-term care facility in Hongseong. The data were obtained from questionnaires and medical records. The food intake data was obtained using food photographs and the nutrient intakes were calculated using the CAN-Pro 5.0. The data were compared with the dietary reference intakes for Koreans (KDRIs). The nutrient density, diet quality such as nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ), as well as dietary diversity score (DDS) were evaluated. The data were analyzed using SPSS statistical programs. RESULTS: The average daily energy intakes for men and women were much lower than the estimated energy requirements of the KDRIs. The average intakes of energy and most nutrients in the general diet group were significantly higher than those of the other two groups. Significant differences in diet quality and diet diversity were observed according to the meal type groups. The NARs of some minerals (calcium, iron, and zinc) and vitamins (vitamin $B_6$ and folic acid) were less than 0.5 in all study groups. The NARs of protein, iron and MAR of the general diet group were significantly higher than those of the liquid diet group. The DDS scores of meats, fruits and diary food group were very low in all meal type groups, meaning that the diet qualities of the study subjects were not appropriate in all meal type groups. CONCLUSIONS: The food intakes of the study groups showed some limitations by a direct comparison with KDRIs because of the very low physical activities of the study subjects. The diet quality and diet diversity indices suggest the need for improvements in the nutritional quality in all types of diet. Overall, new intervention strategies targeting facility residents with dementia in Korea are needed as soon as possible.

대학생의 체형인식에 따른 영양소 섭취 상태 및 식사의 질 평가 (A Study on Nutritional Status and Dietary Quality of University Students by Body Image)

  • This study was performed to investigate the satisfaction of body image, dietary habits, nutrition intake and dietary quality according to body image of university students (n = 290). The subjects (male = 178, female = 112) were classified to lean, normal and overweight/fat groups according to body image. The weight, body fat and body mass index (BMI) was significantly higher in the students who recognized their body image as 'overweight/fat'. The satisfaction of body image, interest of weight control and experience of weight control were significantly higher in students who recognized their body image as 'normal' in both the male and female subjects. The intakes of nutrients, dietary habits and life styles were not different according to body image. In the male subjects, the niacin intake density, the nutrient adequacy ratio (NAR) of vitamin B1 and the dietary diversity score (DDS) in the students who recognized their body image as 'overweight/fat' were significantly lower than in students who recognized their body image as 'normal' and 'lean'. In female subjects, no significant differences in nutrient intakes, NAR, MAR and DDS were observed according to body image. Future studies with a larger sample size are needed for further assessment of the relationship between nutritional status/diet quality and body image in university students.

Dietary intakes of adolescents from food insecure households: analysis of data from the 6th (2013-2015) Korea National Health and Nutrition Examination Survey

  • BACKGROUND/OBJECTIVES: This study aimed at evaluating the dietary intakes of Korean adolescents affected by food insecurity, in comparison with those who were food secure. SUBJECTS/METHODS: The study used one day 24-hour dietary recall data from the $6^{th}$ Korea National Health and Nutrition Examination Survey. The study subjects consisted of 1,453 adolescents of whom 695 were middle school-aged and 758 were high school-aged. Food security status was assessed using the 18-item questionnaire. Nutrient intake was evaluated in terms of nutrient density, insufficient intake, and excessive intake for selected nutrients, in addition to meeting the appropriate range for total energy intake and energy intakes from carbohydrate, sugar, protein, fat, and saturated fatty acids. Food intake was evaluated in terms of food group servings and dietary diversity score (DDS). RESULTS: The percentages of food insecurity were 11.1% for middle school-aged adolescents and 16.8% for high school-aged adolescents. Food insecure middle school-aged adolescents had higher intake of carbohydrate (P = 0.006) but lower intake of fat (P = 0.010) and saturated fatty acids (P = 0.005) than their food secure counterparts although the intake of both groups was in the recommended ranges. Nutrient intake among high school-aged adolescents was generally similar regardless of food security status. Both food secure and insecure adolescents showed insufficient intake of vitamin A, vitamin C, and calcium, and excessive sodium intake. They additionally had low prevalence of meeting appropriate intake ranges for energy, carbohydrate, and sugar. Food intake in terms of food group servings and DDS was also similar regardless of food security status among both age groups, with low intakes of foods from fruit and dairy groups. CONCLUSIONS: Except for a few nutrients among the middle school-aged adolescents, dietary intakes among Korean adolescents did not differ by food security status in this study.

중.노년층에서 연령증가에 따른 영양소 및 식품섭취의 양적, 질적 변화에 대한 종단적 연구 (A Longitudinal Study on the Change of Nutrients and Food Consumption with Advance in Age among Middle-aged and the Elderly)

  • The purpose of this study is to investigate diet quality and changes in nutrient and food intake with increase in age. Subjects were 69 patients(28 males, 41 females) living in Jeon-ju city, over middle-aged, and they were the same patients studied 4-7 years ago in a previous study. Dietary survey with one day 24-hour recall method was used. Energy, calcium, vitamin A and vitamin B$_2$intakes were lower than the RDA and vitamin C was in excessive status in pre-test and post-test. In food groups examrned, the consumption of potatoes, beans, vegetables, seaweeds, beverages, seasonings, oils, fish & shells and milks was increased amount than 4-7 years before but the consumption of cereals(p<0.01), sugars, seeds, fruits, processed food, meats and eggs was decreased. Diet quality was assessed by %RDA, nutrient adequacy ratio(NAR), mean adequacy ratio(MAR), dietary diversity score(DDS), meal balance and food group pattern. In %RDA, those proportion of appropriate intake in post-test in were higher than those in pre-test. For most nutrient except vitamin A, the levels of NAR in post-test were higher than in pretest. The MAR, an index of overall dietary quality, was 0.77 for pre-test and 0.83 for post-test(p<0.05). When we counted the major food groups consumed(KDDS), 62.3% of subjects had a KDDS of 3 in pre-test and 42.0% of subjects had a KDDS of 4 in post-test. Based on these results, in terms of variety and balance, total diet quality was improved with advancing of age.

Dietary quality differs by consumption of meals prepared at home vs. outside in Korean adults

  • BACKGROUND/OBJECTIVES: Eating out has been reported to have negative effects on nutritional status. However, eating out can include meals prepared at home and eaten outside. Conversely, meals eaten at home can be brought from outside, as take-out and home deliveries have become common in Korea. Thus, we tested whether or not meal preparation location influences daily diet quality. SUBJECTS/METHODS: From the Korea National Health and Nutrition Examination Survey (KNHANES) 2007-2009, 4,915 Korean adults (20-64 years) were classified into two groups: home-made meal group (HMG), who ate ${\geq}2$ meals per day prepared at home (n = 4,146), and non-home-made meal group (NHMG), who ate ${\geq}2$ meals per day prepared outside home (n = 769). Daily diet quality was determined by energy intake, nutrient intake, Dietary Variety Score (DVS), and Diet Diversity Score (DDS). RESULTS: Compared to the HMG, the NHMG was more likely to consist of men, single, employed, educated and of a higher economic status (all, P < 0.01). The NHMG showed higher energy intakes (1,776 vs. 2,116 kcal/day) with higher percentages of energy from protein (15 vs. 23%) and fat (14 vs. 16%) and lower intakes of dietary fiber, phosphorus, potassium, niacin, and vitamin C (all, P < 0.01) than the HMG, with some variations among age groups. The NHMG tended to consume foods prepared by frying and grilling and had more one-dish meals such as bibimbap, noodles, and dumplings but also showed higher dietary diversity. CONCLUSIONS: It should be noted that home-made meals do not necessarily guarantee a healthy diet, and the effects of meal preparation location on nutritional status might vary depending on socio-demographic characteristics.

고등학생의 식품섭취 실태 및 식사의 질 평가 (Evaluation of Food Intake and Diet Quality in High School Students)

  • 본 연구는 춘천지역에 살고 있는 고등학생들의 식품 섭취와 식사의 질을 평가하기 위하여 318명의 조사대상자들에게 24시간 회상법을 이용하여 식이조사를 하였다. 총 식품섭취량 중에서 식물성 식품의 섭취비율은 $71.4\%$이고 나머지는 동물성 식품으로 섭취하였다. 식사의 질은 식품군 섭취유형과 주요식품군 점수(DDS) 및 총 식품점수(DVS)에 의해 평가하였다. 주요식품군 섭취 평가에서 전체 조사대상자 중 DDS가 3인 경우의 비율은 $37.1\%$이고 4일 때는 $48.4\%$로 나타났다. 5가지 주요식품군을 모두 섭취한 경우는 $14.5\%$에 불과하였다. 또한 하루에 섭취하는 평균 식품가짓수는 26.7가지인데 남학생은 27.3가지, 여학생은 25.8가지로 남학생의 비율이 유의하게 높았다. 영양소 적정섭취비와 총 식품점수와의 상관관계에서는 비타민 $B_2$의 0.39에서부터 인의 0.61까지 범위의 상관계수를 보였다. 또한 영양소 적정섭취비도 섭취 식품수나 주요식품군 섭취가 증가함에 따라 유의하게(p<0.001) 증가하였으며, NAR과 DDS의 관계에서보다 NAR과 DVS와의 관계에서 더 높은 양의 상관관계를 보였다. DDS와 DVS를 이용하여 대상자들의 식사의 질을 평가하였을 때 많은 학생들은 바람직한 식품 섭취를 하지 못했음을 알 수 있었다. 그러므로 영양적으로 균형있는 식사를 하기 위해서는 주요식품군을 모두 섭취하고 섭취식품 가짓수가 많은 식생활을 하도록 학생과 학부모를 대상으로 바람직한 식생활을 위한 영양교육 및 식사지침 제시가 절실히 필요할 것으로 생각된다..0종으로 감소되었다. 우점잡초의 변동은 무비구에서 명아주, 바랭이, 여뀌순위였고, 지렁이분 150kg\10a 시비구에서는 쇠비름, 바랭이, 여뀌 순위로, 450kg/10a 시비에서는 여뀌, 새포아풀, 바랭이 순위로, 600kg/10a 시비구에서는 여뀌, 바랭이, 쇠비름 순위였다. 이상의 시험결과를 보아 제주지역에서 Creeping bentgrass의 점유율과 밀도를 최대로 증대시킬 수 있는 지렁이분 적정시비량은 10a당 $450\~600kg$으로 추정할 수 있다.든 영역의 실생활 활용도가 낮게 나타났다.용이 가능할 것으로 생각된다.100kg/ha와 화학비료 100kg/ha 혼합하거나 톱밥발효돈분만 N 400kg/ha 까지가 적정 수준이다.EX>$b^{\ast}(\pm,\;yellowness/blueness)$ 값은 반응기질보다 유의적으로 가장 높은 55.1을 나타내었다(p<0.05).준에서 유의적인 차이가 있었다. 허리와 엉덩이 둘레는 남자는 $86.3\pm19.9cm$$90.0\pm90.8cm$, 여자는 $84.2\pm12.4cm$$96.8\pm6.72cm$로 남녀간에 유의한 차이는 없었으나 WHR이 여자의 경우 0.8이상이 되어서 심혈관계 질환의 위험 범위에 속하는 수준이었다. 삼두근의 두겹 두께는 남녀 각각 $20.2\pm8.58cm,\;22.2\pm4.40mm$으로 남녀간에 유의한 차이는 없었다. 조사대상자의 식습관 상태는 전체 대상자의 $84.4\%$가 대부분이 하루 세끼 식사를 규칙적으로 하고 있었으며 식사속도는

대사증후군 환자의 양적 및 질적 식사섭취상태 평가 (Quantitative and Qualitative Assessment of Dietary Intake in Metabolic Syndrome Patients)

  • The purpose of this study was to compare the quantitative and qualitative assessment of dietary intake between patients with metabolic syndrome (MetS) and healthy subjects and to investigate dietary factors related to MetS. Anthropometric measurements, blood analysis, and dietary intake as assessed by 24-hour recall were conducted in MetS patients (n=15) and healthy subjects (n=25). In order to assess the quantity and quality of dietary intake, daily nutrient intake, nutrient density, nutrient intake to dietary reference intake (DRI), nutrient adequacy ratio (NAR), food intake, dietary diversity score (DDS), and dietary variety score (DVS) were analyzed. The statistical differences between MetS patients and controls were analyzed using the SAS software program. Daily energy intake and food intake were not significantly different between the two groups (2,154.3 kcal vs. 1,872.9 kcal; 1,280.0 g vs. 1,261.6 g). There were also no significant differences in daily nutrient intake, nutrient intake ratio to DRI, NAR, or DVS between the MetS group and the control group. However, daily intake of eggs and milk in MetS patients was significantly lower than in the control group (9.0 g/day vs. 30.3 g/day, p<0.05; 0 g/day vs. 49.7 g/day, p<0.05). These results indicate that low intake of eggs and dairy products may be related to the development of MetS.

중국 학령기 아동과 청소년의 학교급식과 가정식 점심식사의 질 비교: 2011년 '중국건강영양조사' 자료 분석 (Dietary Quality Comparison of the School and Home Lunches Consumed by Chinese School-Age Children and Adolescents: Analysis of the 2011 China Health and Nutrition Survey)

  • Objectives: The number of schools offering school lunches has increased in China. This study examined the dietary quality of the lunches consumed by Chinese school-age children and adolescents, with a focus on comparing school lunches with home lunches. Methods: The first weekday 24-hour dietary recall data of 6~17-year-old students (n=1,084) from the 2011 China Health and Nutrition Survey were analyzed. The subjects were divided into the school lunch group and the home lunch group, and the dietary quality of lunches was compared between the two groups among 6~11-year-old students (n=634; 177 in the school lunch group and 457 in the home lunch group) and 12~17-year-old students (n=450; 144 in the school lunch group and 306 in the home lunch group), respectively. Frequently consumed foods, amount of food group intake, food group intake pattern, Dietary Diversity Score (DDS), and Dietary Variety Score (DVS) were examined. Results: The most frequently consumed foods in both lunch groups were rice and pork. An excessive intake of meat and insufficient intake of seafood were noted in both lunch groups. The school lunch group showed a lower level of vegetable consumption than the home lunch group (P=0.017 in 6~11-year-old students, P=0.003 in 12~17-year-old students). Although more students ate meals with a better dietary pattern in the school lunch group than the home lunch group, there were no significant differences in DDS and DVS between the two groups. Conclusions: Overall, the dietary quality of lunches was not superior in the school lunch group compared to the home lunch group. This suggests that much room remain for improving dietary quality of school lunches in China.

중국 연변 조선족 성인과 한국 구리지역 성인의 영양소 및 식품섭취 비교 평가 (Comparative Assessments of Dietary Intake of Korean-Chinese and Koreans)

  • This study was conducted to assess dietary intake and quality obtained by 24-hour recall method between Korean-Chinese in Yanbian, China(Korean-Chinese) and Koreans in Kuri, Korea(Koreans). The subjects consisted of 730 Korean-Chinese and 696 Koreans. Mean daily energy intake of Korean-Chinese was 1,788kcal and that of Korean was 1,844kcal. Proportions of energy intake from carbohydrate, fat, and protein were 62.6: 16.9: 14.2 for Korean-Chinese and 65.4: 16.3: 14.4 for Koreans. Nutrient intake levels of Koreans were higher than those of Korean-chinese in most nutrients. Calcium and vitamin $B_2$ intakes as percent of Korean RDA were less than 60% in Korean-Chinese. Koreans consumed calcium and vitamin A in the level less than 80% of Korean RDA. Iron intake level of Korean females was less than 75% of Korean RDA. Korean-Chinese consumed 90.4% of food from plant origin, and Koreans consumed 82.5% of food from plant origin. Mean dietary diversity score(DDS) of Korean-Chinese, $3.00{\pm}0.39$, was significantly lower than that of Koreans, $3.73{\pm}0.76(p<0.05)$. Mean dietary variety score(DVS) of Korean-Chinese, 13.6, was significantly lower than that of Koreans, 20.1(p<0.001). According to these results, some adults in the both Korean-Chinese and Koreans did not consume enough nutrients, especially calcium and vitamin $B_2$ intake for Korean-Chinese and calcium and vitamin A intake for Koreans. Dietary qualities of Korean-Chinese subjects and Korean females were not adequate. In the future, further research to promote dietary quality of Koreans including Korean-Chinese must consider the results of this study.
