The purpose of this study was to evaluate the effect of protected fat and heat-extruded soybean meal on the lactation performance of Holstein cows. Twenty-four cows, consisting of 20 lactating cows and 4 rumen-fistulated dry cows, were randomly allocated into four groups with 5 lactating cows and 1 fistulated cow in each group. A replicated 4${\times}$4 Latin square design with four 21 day periods, including 14 days of adaptation and 7 collection days within each period was employed. The experiment was a 2${\times}$2 arrangement, with or without heat-extruded soybean meal and protected fat inclusion. The dietary treatments consisted of supplements of (a) soybean meal (the control), (b) heat-extruded soybean meal, (c) protected fat, and (d) heat-extruded soybean meal and protected fat. The results showed that there were no significant differences in feed intake, milk yield, milk protein content, milk lactose content and body weight change between the dietary treatments. However, cows supplemented with protected fat showed a significantly increased (p<0.05) milk fat yield, 3.5% FCM and total solid yield. The increase in undegradable intake protein (UIP) via heat extruded soybean meal supplement significantly decreased the urea nitrogen concentration in the blood (p<0.05). Dietary fat inclusion significantly increased the blood cholesterol concentration (p<0.01) and decreased the ruminal pH value (p<0.01). Increased dietary UIP significantly decreased the ammonia nitrogen concentration in the rumen (p<0.01), but did not significantly influence the pH and VFA molar percentage in the rumen. It appears that dietary protected fat inclusion could improve milk fat and solid content. Increased dietary undegradable intake protein through heat extruded soybean meal did not improve milk yield. But it could alleviate the adverse effect of decreased milk protein due to dietary fat supplementation. Increased UIP could also decrease the ammonia nitrogen concentration in the rumen and plasma urea nitrogen concentration in the blood.
This experiment was carried out to determine the total dietary fiber content and free sugar, fatty acid, amino acid compositions in bamboo shoot, lotus root and burdock. Bamboo shoot contained 3.05% of proteins, 0.48% of lipids, 2.45% of fibers, which were larger than those of other samples (lotus root and burdock). Burdock contained more sugars than the others as 18.64%. On a dry matter basis, total dietary fiber by Prosky AOAC method were 62.5% for bamboo shoot, 17.9% for lotus root and 41.9% for burdock. Therefore, the content of dietary fiber in bamboo shoot was the most abundant among them. Free sugar contents (glucose, fructose and sucrose) of the sample were analyzed by HPLC. Sucrose was the most abundant in both bamboo shoot and lotus root, and the content of fructose and sucrose in burdock were almost same. The major fatty acids in bamboo shoot, lotus root and burdock analyzed by GC were palmitic and linoleic acid. Also, linolenic acid were abundent only in bamboo shoot. The results of amino acid analysis showed that aspartic acid, glutamic acid and Iysine were the most abundent amino acids in the sample. Bamboo shoot contained large percentage of protein, the sweet-tasting amino acids and lipid than the other samples. Therefore bamboo shoot can be used as a flavor material because they contain plenty of the sweet-lasting amino acid and free sugar. Bamboo shoot and burdock can be used as potential source of dietary fiber because of the high content of dietary fiber in those samples.
In order to investigate the effect of dietary zinc and phytic acid levels on protein metabolism in rats, male rats of Sprague-Dawley strains weighing approximately $60\~74g$ were fed different diets which contained 0, 0.35 and $1.05\%$ phytic acid each at 3 levels of zinc(0, 30 and 1,500 ppm zinc) for 28 days. Result obtained in this experiment are summarized as follows; 1. Body weight gait food consumption food efficiency ratio and protein efficiency ratio were lower in the rats fed zinc deficient diet(0 ppm zinc) than in those consuming 30 or 1,500 ppm dietary zinc, and the additional effect of phytic acid were not observed in all of then 2. Liver weight was lower in the rats fed 30 ppm zinc diet than in those fed 0 or 1,500 ppm-zinc diet but kidney and spleen weights were lower in the rats fed zinc deficient diet than in those fed 30 or 1,500 ppm-zinc diet Among organs measured only the liver appeared to be influenced by dietary phytic acid: the more the dietary phytic acid, the more the weight of liver, 3. Fecal nitrogen was decreased in the rats fed zinc deficient diet compared with those fed 30 or 1,500 ppm dietary zinc. Urinary nitrogen was increased in the rats fed $1.05\%$ dietary phytic acid compared with those fed 0.35 or $0\%$ dietary phytic acid Nitrogen retention of rat was influenced by neither dietary zinc nor phytic acid. 4. Urea nitrogen was decreased with increasing dietary zinc levels, and creatinine and uric acid levels were increased with increasing dietary zinc concentration or with additional quantity of phytic acid. Uric acid appeared to be influenced by zinc x phytic acid interaction; especially, the presence of phytic acid in the 30 ppm-zinc diet had significant effect on uric acid content. 5. Hemoglobin concentrations and hematocrit ratio were higher in the rats fed 30 ppm dietary zinc than in those fed 0 or 1,500 ppm-zinc diet Serum zinc concentration was increased with increasing dietary zinc levels. The content of total protein albumin and BUN and the ratio of albumin to globulin in serum, and protein content in liver were influenced by neither dietary zinc nor phytic acid.
The present study was performed to investigate the effect of cereal fiber on lipid concentration of liver and serum in rats. Male Sprague-Dawley rats weighing 180$\pm$4g were divided into five groups by completely randomized block design : R, BR, B, W, and F. Each group fed a diet containing 0.7% cholesterol and a kind of cereal among rice(R), brown rice(BR), barley(B), whole wheat(W), and wheat flour(F) for 5 weeks. The results were summarized as follow : 1) Food intake. weight gain and feed efficiency ratio were not significantly different among the groups. 2) Fecal wet weight and dry weight were significantly higher in W group which fed the most amount of IDF(insoluble dietary fiber). 3) The weight of large intestine was significantly heavier in the W group compared to the others. But the weights of liver, stomach and small intestine were not significantly different among the groups. 4) Total lipid. triglyceride(TG) and total cholesterol(TC) content in liver were significantly different among the groups. The values were the lowest in the B group whose intake of SDF(soluble dietary fiber) was the highest 5) TC content in serum was not significantly different among the groups. TG content in serum was significantly lower in the rest groups than in the R group. HDL-c and free-c content in serum were significantly higher in the B group than in the rest groups. HDL-c/LDL-c, free-c/ester-c ratio were the highest in the B group but not significant. Above results show that the dietary fiber contained in cereals has physiological effects and they are different depending on fractions, IDF and SDF.
The effects of dietary n-3 fatty acids, ${\alpha}$-linolenic acid (18:3), eicosapentaenoic acid (EPA, 20:5), and docosahexaenoic acid (DHA, 22:6), on brain phospholipid content and fatty acid composition were compared in rats fed with a diet containing constant ratios of saturated fatty acid/monounsaturated fatty acid/polyunsaturated fatty acid (PUFA) and n-3/n-6. The dietary fat in each diet was added at the level of 10%. In each diet, n-3 PUFA comprised two-thirds of the PUFA and the remaining one-third was linoleic acid (18:2). Dietary fat containing linoleic acid as the sole source of PUFA was also given to the control group. The content of brain phospholipid in the three n-3 PUFA groups was significantly lower than that of the linoleic acid group. This reduction was greater in the EPA and DHA groups than in the ${\alpha}$-linolenic acid group. The decrease in phospholipid content in rats fed n-3 fatty acid-rich diets was largely due to the decrease in the phosphatidylethanolamine fraction. Each dietary n-3 PUFA was found to affect the fatty acid composition of brain phospholipids; the most pronounced alteration was observed in phosphatidylethanolamine fraction. Furthermore, the proportion of DHA in the phosphatidylethanolamine fraction tended to be higher in the DHA group than in other PUFA groups. In conclusion, dietary ${\alpha}$-linolenic acid, EPA and DHA can influence the phospholipid content, phospholipid subclass, and fatty acid composition in rat brain.

The effects of dietary supplementation of feather meal digests(FM) and its digests on the growth of broiler chicks and taurine content in the broiler meat were examined. Total of 100 broiler chickens were assigned to five dietary treatments: T1; Control, T2; feather meal(FM) 5 % diet, T3; NaOH treated FM 5% diet, T4; HNO$_3$treated FM 5 % diet and T5; synthetic taurine 0.5 % supplemented diet. Taurine content of leg muscle was significantly(P<0.01) increased by treatments. The highest increase over the control was shown by 0.5 % taurine diet(170 %), followed by FM diet(123 %), NaOH treated FM diet(122 %) and HNO$_3$treated FM diet(63 %). Taurine content of breast muscle was increased by 246 % in 0.5 % taurine diet but FM diets were not significantly different from the control. Taurine content of heart muscle was not significantly affected by dietary treatments. There were big differences in the average taurine content of the parts or organ of the control birds; 778 $\mu\textrm{g}$/g leg muscle, 79 $\mu\textrm{g}$/g breast muscle and 1482 $\mu\textrm{g}$/g heart muscle. It was concluded that taurine content of leg muscle of broiler can be increased by supplementation of feather meal. Alkaline or acid treatment FM was not effective in improving taurine enrichment of the broiler meat.
The effect of fat supplementation of high calcium (Ca) diets on the performance, intestinal pH, body composition and size and weight of organs in growing chickens were investigated in two experiments. Growing chickens tolerated a high dietary level of Ca (22.5 vs 12.1 g/kg) in the presence of 6.3 g/kg of available phosphorus without any significant effect on performance. Intestinal pH was significantly increased by the addition of excess Ca and fat which probably created the right pH for the formation of insoluble Ca soaps. Excess dietary Ca increased carcass linoleic acid concentration at the expense of palmitic and stearic acid contents, whilst the addition of sunflower oil (80 g/kg diet) to the diet increased carcass linoleic acid concentration at the expense of palmitic acid content of the carcass. Intestinal and visceral organ size and weight were not influenced by excess Ca or fat. However, there was a non significant increase in the intestinal dry weight per unit of length caused by excess dietary Ca. It was concluded that excess dietary Ca of 22.5 g/kg did not significantly influence the performance of meat chickens. However, excess Ca increased intestinal pH and altered carcass fatty acid composition. Fat supplementation did not alter intestinal pH with high Ca diets. Excess dietary fat altered carcass fatty acid composition and reduced protein content. Intestinal and visceral organ size and weights were not influenced by excess dietary levels of Ca of fat.
The purpose of this study is the systematization of the contents analysis to develop school dietary education based on the government-published textbooks for elementary school students. The components of the content are divided into several categories that include a general perspective of the pages, illustrations, table of contents, introductory remarks, summary evaluation, and etc. This study carried out as basic fundamental research to propose a theoretical framework for the elementary school dietary education. We examined and analyzed the nature and characteristics, the educational goals, and the structural framework of the contents of the textbooks. We have developed a systematic structure with 4 large content elements for dietary education as foods & cooking, nutrition & health, dietary environment & consumption, and food culture & industry. This analysis will definitely play an important role in establishing a standard framework and the curriculum contents for school dietary education in elementary school.
The dietary fiber and crude fiber contents of different thallus regions (blade, stipe, and holdfast) in three brown algae (Laminaria japonica, Ecklonia stolonifera, and E. cava) were detennined at different ages, and then compared with one another. On a dry matter basis, the soluble dietary fiber (SDF) content was highest ($10.8{\pm}0.5%$) in the holdfast of 2-year old L. japonica, and the insoluble dietary fiber (IDF), total dietary fiber (TDF), and crude fiber (CF) contents were highest in the holdfast of 2-year old E. cava at $44.5{\pm}0.7%$, $50.2{\pm}0.5%$, $6.8{\pm}0.7%$, respectively. The IDF, TDF, and CF contents of these three species were measured in the following order: holdfast > stipe > blade, and the SDF contents of L. japonica exhibited the reverse of this trend. The TDF/CF ratio of 1-year old L. japonica, E. stolonifera, and E. cava was greater than was observed in the corresponding 2-year old samples. This is, to the best of our knowledge, the first report demonstrating that the holdfasts of L. japonica, E. stolonifera, and E. cava are rich in dietary fiber contents, especially IDF, TDF, and CF.
The purpose of this study is to analyze the contents of the questionnaires used in dietary surveys and to evaluate each item in relation to the item construction strategy. Articles of which the contents were related to food, nutrition, diet, dietary behavior, and related areas. Published from 1997 to 1999 were searched fir and a total of 121 questionnaires were collected and analyzed. The questions in the questionnaires were classified into related areas and sub-areas. Among the keywords in the title of the articles, the term 'nutritional status'(or 'dietary intake status') was most frequently used. The terms such as dietary status, obesity, health, food habit, and dietary behavior were also frequency used. Major topics of the items in the questionnaires varied according to the life cycle of the subjects of the study. The topics most frequently asked in each lift cycle were as follows : overeating, snack, and food preference for preschool- and school-aged children ; anthropometry, weight control, and snack for middle and highschool students : meal skipping, smoking, and drinking for college students : disease, smoking, drinking, and exercise for adults : and smoking, drinking, disease and perceived health for the elderly. Inappropriate questions with complicated language, typographic and grammatic errors, unnecessary words, and negative questions were found. Therefore, care should be taken to construct each question so as to avoid possible misinterpretation. Also, a standardized questionnaire be developed for survey researchers.
