  • There is more than one way to conduct scientific research. In addressing the concern for educating the gifted in science towards achieving objectives of fostering their research skill, its elements need be explored and discussed by first admitting that various methodologies and features coexist in the name of scientific research. This study explores the various features of research skill presented as scientific process skills focusing on the students' experimental designing. Of course, there are several other domains included facets of research skill, such as problem finding, scientific knowledge, and self-efficacy. A Diet Cola Test (DCT) (Fowler. 1990) for digging into science process skills as an elements of research skills was administered to 705 students from 3rd to 10th grade, who enrolled the gifted education centers in Korea. Date was interpreted and analyzed based on the focus of Science education perspectives and research methods related to creative thinking and problem-based learning. But I eschew establishing and generalizing fixed constitutes of research skill from this research.

Assessment of Nurses' Nutritional Knowledge and Educational Needs Regarding Stroke Specific Diet Regimens (간호사의 뇌졸중 관련 영양지식 및 영양교육 요구도 조사)

  • Purpose: Although the prevalence rate of chronic diseases is rapidly increasing due to an unhealthy diet in Korea, nurses may not have enough nutritional knowledge to educate their patients. This study investigated the level of nurses' nutritional knowledge for chronic diseases as well as for strokes, and the needs for nurses' nutritional education. Methods: This research is a descriptive research conducted from April to August of 2014, on 242 nurses who work with stroke patients, in two tertiary general hospitals in the city of Seoul, South Korea. Results: The average nutritional knowledge score of our subjects was $19.9{\pm}2.51$ (range 12-24). The correct response rate was 83% which was higher than expected. However, many nurses (31-66%) answered incorrectly on items such as 'Drinking low-fat milk is better than whole milk', and 'Seasoning with a large amount of soy sauce instead of salt can reduce sodium consumption'. We also found that nurses who received continuing education regarding nutrition scored higher than those who did not (p=.020). There was no correlation between nutritional knowledge and the need for nutritional education (r=.034, p=.601). Conclusion: The level of nutritional knowledge of the nurses was relatively low and irrelevant to the completion of nutrition courses during university or duration of experience. Rather, the relevance was higher when the nurse received nutrition-related training after graduating from university. Our results imply that continuous nutritional education is necessary for hospital nurses.

Effect of Dietary Cadmium Levels on Nutrient Digestibility and Retention of Iron, Copper and Zinc in Tissues of Growing Pigs

  • This experiment was conducted to investigate the effect of cadmium levels on weight gain, nutrient digestibility and the retention of iron, copper and zinc in tissues of growing pigs. A total of one hundred and ninety-two crossbred pigs (barrows, Duroc$\times$Landrace$\times$Yorkshine, 27.67$\pm$1.33 kg of average initial body weight) were randomly allotted to four treatments. Each treatment had three replicates with 16 pigs per pen. The corn-soybean basal diets were supplemented with 0, 0.5, 5.0, 10.0 mg/kg cadmium respectively, and the feeding experiment lasted for eight-three days. Cadmium chloride was used as cadmium source. The results showed that pigs fed the diet containing 10.0 mg/kg cadmium had lower ADG and FCR than any other treatments (p<0.05). Apparent digestibility of protein in 10.0 mg/kg cadmium-treated group was lower than that of other groups (p<0.05). There was lower iron retention in some tissues of 5.0 mg/kg and 10.0 mg/kg cadmium treatments (p<0.05). However, pigs fed the diet 10.0 mg/kg cadmium had higher copper content in most tissues than that of any other groups (p<0.05). There was a significantly increase of zinc retention in kidney of 10.0 mg/kg cadmium additional group (p<0.05) and zinc concentrations in lymphaden, pancreas and heart of 10.0 mg/kg cadmium treatment were lower than those of the control (p<0.05). This study indicated that relatively high cadmium level (10.0 mg/kg) could decrease pig growth performance and change the retention of iron, copper and zinc in most tissues during extended cadmium exposure period.

Weight change pattern and weight control behavior among middle school girls (일부 지역 여중생의 체중변이양상과 체중조절행위에 관한 연구)

  • The aim of this study was to determine the extent to which sociodemographic and health related life-style variables explain body weight distribution and to understand weight contol behavior. To study this study 298 students were selected, it was consisted of obesity group(101) and control group(197). The average age of subjects was 14.2 and the prevalence of obesity was 2-3 per class as 5.6% among 1,793. 71% among same subject was showed higher weight pattern than last one year, ovesity group which was obesity both in 93 and 94 was 34%. Correlation between body weight(under weight/obesity) and independent variables including sociodemographic factor and health- related life style tested through Multiple Classification Analysis was very significant, explained 36% of the total variance. Sociodemografic and hereditary factors such as education level, age of father and physical features of parents, life style factors as exercise preference and perceived health status showed highly contribution to body weight. Concretely, there were showed a higher obesity prevalence tendency when education level and age of father was high, physical features of parents was obesity. In otherwise, there were showed a higher underweight prevalence tendency when education level and age of father was low. Experience rates of weight control was 53% generally, 84% in obesity group, and 11% in underweight group. There were utilized weight control behaviors through diet method mainly in obesity group, diet and exercise methods in underweight group. There were showed that underweight group are prefer exercise to obesity group. Conclusionally, These findings suggest that education, age, physical features of parents, exercise preference and perceived health status is important factors related to body weight among middle school girls. Therefore, there will be considered as valuable factors when we practice health education and consultation related to body weight. Furthermore it is necessary to provide of various informations about weight control and to develop systematic weight control program.

Mealtime Behavior and Food Preferences of Children with Autism Spectrum Disorder and Nutrition Education Needs Perceived by Special Education Teachers (특수교사가 인식하는 자폐범주성장애 아동의 식행동 및 식품기호도와 영양교육 요구도)

  • The purpose of this study was to provide basic information on the development of nutrition education programs to improve the mealtime behavior of children with autism spectrum disorder (ASD) by investigating the mealtime behavior and food preferences of children with ASD through the perception of special education teachers. Surveys were given to 108 special education teachers in special education schools in Korea regarding the demographic characteristics, nutrition education support needs, mealtime behavior, and food preferences of children with ASD. Most of the special education teachers responded that nutrition education in special schools had not been conducted properly and nutrition education for ASD children is necessary. Mealtime behavior analysis classified the behavior into three clusters: cluster 1, 'less problematic mealtime behavior'; cluster 2, 'general feature of autism'; cluster 3, 'difficulty in self-directed diet'. The age, eating habits, and food preferences were different according to each mealtime behavior cluster. Therefore, it will be necessary to develop a nutrition education program based on the characteristics of mealtime behavior.

Evaluation of Food Intake and Diet Quality in High School Students (고등학생의 식품섭취 실태 및 식사의 질 평가)

  • To assess the food intake and diet quality of high school students who live in Chuncheon area, a dietary survey using 24-hour recall method was conducted with 318 subjects. $71.4\%$ of total food intake was in the form of plant foods and the rest on the form of animal food. Diet quality was assessed by food group pattern, dietary diversity score(DDS), and dietary variety score(DVS). When counting the major food groups consumed, $37.1\%$ of subjects had a DDS of 3 and $48.4\%$ of subjects had a DDS of 4. When investigating the consumption pattern of the major five food groups, only $14.5\%$ of subjects consumed foods from all five groups. On average, subjects habitually consumed 26.7 different foods daily, with the mean score of diet variety for males (27.3) being significantly higher than for females (25.8) . Correlation coefficients between nutrient adequacy ratio (NAR) and DVS ranged from r=0.39 for vitamin $B_2$ to r=0.61 for phosphorus. NAR also improved as the number or foods or rna groups consumed increased (p<0.001). Associations between the NAR and high level of DVS was more positive than those between the NAR with DDS. When assessing the dietary quality of subjects using DDS and DVS, many people appeared not to have a desirable food intake. Therefore, to lead them to have nutritionally balanced diet, educating students and their parents on nutrients and suggesting guidelines for a desirable diet is considered to be essential so that they can intake from all of major food group and have various foods in their diet.

The Effects of Aerobic Exercise Training on Blood Lipid Profiles, Fibrinolytic Activities, and Nitric Oxide Levels in High-fat-diet induced Rats (유산소 운동이 고지방 식이 흰쥐의 지방량, 혈중지질, 혈전용해능 및 산화질소에 미치는 영향)

  • Although exercise training has been utilized to improve vascular function in animals and humans, the impact of moderate intensity exercise training on fibrinolytic activities and nitric oxide (NO) bioavailability has not been well documented. Therefore, the purpose of the current study was to examine the impact of moderate intensity aerobic exercise training on fat mass, blood lipid profiles, fibrinolytic activity, and NO levels in high-fat-diet induced rats. The body weight, fat mass, blood lipid profiles, fibrinolytic activity, and nitrite/nitrate were measured pre- and postexercise (10 weeks) training. The body weight and fat mass reduced significantly in the exercise (EX) group compared to the control (CON) group. Blood lipid profiles and low-density lipoprotein were unchanged in the EX group compared to the CON group. However, triglyceride and free fatty acid were significantly lower in the EX group compared to the CON group, and high-density lipoprotein was significantly greater in the EX group compared to the CON group. In addition, fibrinolytic activity and nitrite/nitrate were significantly greater in the EX compared to the CON group. These results suggest that 10 weeks of the moderated intensity aerobic exercise training improves blood lipid profiles, fibrinolytic activity, and the nitrite/nitrate ratio, which may improve vascular health and reduce obesity-related cardiovascular disease risks in high-fat- diet induced rats.

Diet Composition of Skinnycheek Lanternfish, Benthosema pterotum in the Coastal Waters of South Sea, Korea (한국 남해에 출현하는 깃비늘치(Benthosema pterotum)의 위내용물 조성)

  • The diet composition of skinnycheek lanternfish, Benthosema pterotum were collected by bottom trawl net in the South Sea of Korea during 2021 (February, May, August, and November) and 2022 (February, April, August, and November). The size of the specimens ranged from 16 to 73 mm in total length. B. pterotum were mesopelagic carnivores that mainly consumed euphausiids and copepods. Its diets included small quantities of amphipods, shrimps, mysids, etc. We calculated the trophic level as 3.16 for B. pterotum. The individuals of small size class (<40 mm) fed mainly on copepods. In the next size classes (40~45 mm, 45~50 mm, 50~55 mm), copepods' proportion decreased and euphausiids increased. In the largest class (55~60 mm and ≥60 mm), the proportion of euphausiids' decreased, and shrimps increased. As the body size of B. pterotum increased the mean weight of prey per stomach (mW/ST) tended to significantly increase (One-way ANOVA, P<0.05).

Nutritional Education for the Diabetic Children (A case study) (당뇨병역에 있는 아동의 영양 교육 사례)

  • Since diet is an essential component of the treatment for diabetic mellitus, a progressive educational plan was designed to educate diabetic children for the proper selection of their foods. Seven suspicious children were chosen according to the previous oral glucose tolerance test and present blood glucose levels (fasting and postprandial 2 hours). The education program includes the basic nutrition study, learning of the five basic food groups. familiarization with the food exchange lists. calorie calculation and menu planning, and follow-up evaluation by checking every day -food intake. The duration of the education was five weeks. The levels of fasting blood glucose and postprandial -2 hours blood sugar of the seven children were significantly reduced after the 5-weeks education:FBS:from 92-125mg% to 67-80mg%, pp-2hours BS: from 130-169mg% to 69-90mg%. The children have felt much better with profound self-confidence after to program . Their oral glucose tolerance test levels were also significantly decreased after the 5-weeks education in comparison with those of one year ago.

Development and Evaluation of Nutrition Education Media for Breast Cancer (유방암 환자를 위한 영양교육매체 개발 및 평가)

  • This study was conducted to develop and evaluate nutrition education media for breast cancer. The booklet was developed and consisted of breast cancer and diet, breast cancer and nutrition, breast cancer and food safety and Ingredients and recipes for breast cancer. The questionnaire requested information related to demographics, importance and satisfaction of evaluation for nutrition education media, evaluation of each chapter, and satisfaction of educational media. The data were analyzed using SPSS for Windows(version 12.0). The results were summarized as follows. The importance score for nutrition education media was higher than the satisfaction score. As a result of IPA analysis, quadrant I included 'comprehension', 'appropriateness of media', 'emphasis of the point'. Quadrant II classified with 'appropriateness of terms', 'interest', 'authenticity', 'appropriateness of illustrations'. Quadrant III included 'appropriateness of color and calligraphy', 'simplicity'. Quadrant IV classified with 'appropriateness of examples', 'concreteness'.
