Study on the Development of Traditional Fast Food -Beandaeduk- (전통식에 입각한 한국적인 fase food의 개발정착에 관한 연구)

  • The objective of this study was to access the effects of sensory and physical properties of Beandaeduk on 7 different combination methods (three were combined with mung bean and different proportions of water; four were combined with mung bean and various cereals with constant water), and 3 storage periods (0, 1 and 3 weeks at $-18^{\circ}C$). This experiment was consisted of sensory evaluation I (appearance, texture, taste, flavor and overall preference), II (color, moisture, volume, hardness, elasticity, viscosity and ratio materials, off-flavor and oder) and physical analysis of each sample, and questionaire survey of Beandaeduk. In sensory evaluation I except flavor, significant differences (p<0.05) were found among different combination methods of sample. Also significant differences (p<0.05) were found in sample for storage periods, except appearance. In sensory evaluation II, only moisture and oder of samples were significantly different (p<0.05) for storage periods, and there were significant differences (p<0.05) in samples among different combination methods, except elasicity. Stepwise regression for storage periods in sensory I showed that texture and taste were important factors in overall preference of sample. In the questionaire survey, preference and adding materials of Beandaeduk were different according to province. Half of respondents preferred to get instant Beandaeduk and instant mung bean powder.

  • This paper presents development of program for generator maintenance scheduling. The maintenance scheduling of generating units is a dynamic discrete combinatorial optimization problem with constraints to determine the optimal maintenance periods of each generating units for a given planning periods. The developed program is designed so as to provide the maintenance schedule satisfying the operating reserve margin levelization and the procurement of proper reliability. In order to verify the effectiveness of the developed program, the numerical study has been performed with the practical data in 2005.

  • This study was performed to analyze the morphological changes of synapses during early postnatal periods. Neonatal rats were grouped by 3, 7, 14, 21, 28 and 42day old, and observed the ultrastructural pattern of the synapses in the neostriatum by transmission electron microscope. 1. The number of synapse, the length of postsynaptic thickening and the amount of synaptic vesicles markedly increase during postnatal development 2. The proportion of asymmetric and curved synapses gradually increase by developmental periods. From the above results, it is suggested that the size of synapse increase during post-natal period, and asymmetric synapse are formed from the symmetric type and curved synapse are formed from the plane type.

  • Kang-Nung sik-hae is a traditional Korean fermented fish product which has remained in existence in Kang-Nung district. In order to preserve the traditional culture of Kang-Nung sik-hae and develop it as a commercial product, the property changes of sik-hae were investigated at different fermentation temperatures and periods. The chemical changes during the fermentation of squid(Todarodes pacificus) sik-hae were studied at different fermentation temperatures and periods. The amounts of proximate compositions and salinity did not change significantly at all fermentation temperatures and periods. The value of pH decreased with increasing storage period at all fermentation temperatures except at $5^{\circ}C$, whereas that of lactic acid at all fermentation temperatures increased. The amount of total arginine increased slightly up to 10-day of storage and decreased after that. The amount of $NH_2-N$ increased rapidly up to 15-day of storage at all temperatures and increased slightly after that. The amount of TMAO decreased significantly at $15^{\circ}C\;and\;20^{\circ}C$ and slightly at $5^{\circ}C\;and\;10^{\circ}C$, whereas that of TMA increased significantly at $20^{\circ}C$ up to 5-day of storage and decreased slightly after that. At all experimental temperatures except $5^{\circ}C$, the amount of TMA increased or fluctuated in proportion to the increase in fermentation periods. Inosine and hypoxanthine were the main components of nucleotides and their related compounds during the fermentation of sik-hae. Summarizing the above results, the optimum fermentation period of sik-hae was concluded to be 15-days at all experimental temperatures except $5^{\circ}C$.

  • The present paper is a histological study of neurosecretory cells in the brain and the thoracic ganglion with the gonadal development in Palaemon serrifer. The reproductive cycle includes the successive stages of the growing period (February-March), the mature period(April-May), the ripe and spent periods(June-August) and the degenerative and resting periods(September-January). The neurosecretory cells are grouped into four types based on Matsumoto(1958) : A-,A'-, B- and E-cells. A- and A'-cells are $80-90{\mu}m,\;B-cell\;is\;30-40{\mu}m$ and E-cell is $10-15{\mu}m$. A- and B-cells are the positive to CHP and AF, while B-cell is the positive only to AF. The secretory grannules of a A-cell are transported to the axon, and at the same time they are discharged through the peripheral membrane. Of the four neurosecretory cells, A- and I-cells show the difference of secretory activity according to the gonad developmental process. In the female, A-cells show secretory activity for the ripe and spent periods, while I-cells show for the mature, ripe and spent periods. In the male, A-cells show secretory activity for the mature, ripe and spent periods, while I-cells show for the growing, mature, ripe and spent periods.

Effect of Temperature on Development and Reproduction of the Emma Field Cricket, Teleogryllus emma(Orthoptera: Gryllidae)

  • To establish the indoor-rearing system of the emma field cricket, Teleogryllus emma, the effects of temperature on development and reproduction of the emma cricket have been studied. The influence of temperature on developmental periods of emma field cricket was investigated under the eight temperatures of 15, 18, 21, 25, 27, 29, 31 and $35^{\circ}C$, under $60{\pm}5%$ R.H. and 16L:8D photoperiod. The developmental periods of T. emma nymphs had a range of 124.8 days to 44.4 days at the temperature of $21^{\circ}C$ and $35^{\circ}C$, respectively. At $15^{\circ}C$ and $18^{\circ}C$, however, all tested individuals died before emergence. The highest survival rate was 90% at $25^{\circ}C$, but there were no statistically significant differences among the temperatures. The adult weight increased with increasing temperatures although the weight at $35^{\circ}C$ was decreased. In addition, the influence of temperature on reproduction of emma field cricket was investigated under three temperatures $22^{\circ}C,\;25^{\circ}C\;and\;28^{\circ}C$, under $60{\pm}5%$ R.H. and 16L:8D photoperiod. The longevity of female/male adults were 65.8/79.2 days, 68.5/67.8 days, 46.8/57.4 days at the temperature $22^{\circ}C,\;25^{\circ}C\;and\;28^{\circ}C$, respectively. The preoviposition periods were 32.5 days at $22^{\circ}C,\;22.9^{\circ}C$ days at $25^{\circ}C$ and 22.1 days at $28^{\circ}C$. The highest average fecundity per female was 737.3 at $25^{\circ}C$.

Comparison of mycelial growth and fruiting bodies yield according to substrate in Flammulina velutipes (팽이버섯의 배지조성에 따른 균사 배양 및 자실체 수량 비교)

  • The experiments were conducted to provide information on the chemical concentrations and cultural characteristics in the periods of hyphal incubation, primordial formation, and fruiting bodies yield of winter mushroom, Flammulina velutipes at the mixture ratio of the raw materials. Substrates were analyzed for pH, total carbon (T-C), total nitrogen (T-N), and C/N ratio. In case of Flammulina velutipes, yield of fruiting bodies were 190.5 g/850 ml in the substrates, [Corn-cob + Rice bran + Soybean curd residue (75:20:5)], which was increased 20.4% more than the control, [Douglas fir sawdust + Rice bran (75:25)]. But the periods of hyphal incubation took 28 days, which was 7 days longer than the control. Also, in the substrates [Douglas fir sawdust + Rice bran + Soybean curd residue (75:20:5)], the yields was 172.7 g/850 ml and the periods of hyphal incubation was 21 days.

Sedimentary Excess Barium from a Core of the Northwest Pacific Ocean: Geochemical Proxy

  • A geochemical study on a hemipelagic core sediment taken from the northwest Pacific Ocean (eastern edge of the Shikoku Basin) was conducted to use of excess barium (Ba(ex)) for evaluate the paleoceano-graphic changes. Also, the excursion of sedimentary Ba(ex) was compared with those of biogenic opal, carbonate and organic carbon content in the sediment during the last glacial and interglacial periods. The calculated Ba(ex) derived from the major and minor element shows a distinctive glacial-interglacial variations, and the mass accumulation rate (MAR) of Ba(ex) shows coincident variations with the MARs of biogenic fractions. Especially, strong positive correlation (r$^2$=0.85) between the MAR of Ba(ex) and the MAR of biogenic carbonate is recognized. Based on the strong positive correlation(r$^2$=0.85) between the MAR of Ba(ex) and the MAR of carbonate content, we estimated the degree of carbonate dissolution rate during the glacial and interglacial periods. Assuming the proportional variation and the refractory nature of barium exist between two factors, the variation of index Ca/Ba ratio in sediment indicates the degree of carbonate dissolution. Sedimentary Ca/Ba ratios index clearly show a striking fluctuation between the glacial and interglacial periods with higher positive correlation during glacial and lower correlation during interglacial. This fact indicates enhanced carbonate dissolution during interglacial period. Thus, the sedimentary Ca/Ba ratio in sedimentary records can be used as one of the useful tools for estimation of the relative degree of carbonate dissolution. The excursion of Ba(ex) and the sedimentary Ca/Ba ratio follows the typical pacific carbonate dissolution type(enhanced dissolution during interglacial and reduced dissolution during glacial time) as suggested by previous work (e.g., Wu et al., 1990). Variation in sedimentary Ca/Ba ratio thus strongly supports that glacial-interglacial fluctuation in carbonate dissolution has been prevailed in the northwest Pacific Ocean.

A Study on Physique and Maximum Growth Age of Korean Youth in an Urban Area (일부 도시지역 청소년들의 성장 발육과 최대 성장 발육 연령에 관한 연구)

  • In order to assess the physical growth and development, and nutritional status of primary, middle and high school students in the city of Seoul, physiques of 4, 041 persons(Male : 2, 096, Female: 1, 945) were measured from March 1 to July 31 in 1995 and variouis physical and nutritional indices, maximum growth age related to them were calculated. The results are as follows: 1. Physical Growth and Development The growth of body height showed straight linear development among male in the ages 7~16 and among female 7~14, and after that showed slower development. The age of cross over between two sexes was between 11.5 to 12.5 years of age. The maximum growth age was between 11 and 12 years of age(7.28cm) in male and between 11 aqnd 12 years of age(9.77cm) in female. In terms of body weight, it also showed straight linear development among male in the ages 7~16 and among female 7~14, and after that showed slower development. The maximum growth age was between 11 and 12 years of age(7.64kg) in male and between 11 and 12 years of age(8.l9kg) in female. In terms of chest girth, it showed two step development among male in the age of 7~13 and 13~17, and among female in the age of 7~14 and 14~17. The age of cross over between two sexes was 11 and 12 years of age. In terms of sitting height, it showed two step development in the age of 7~14 and 14~17 of both sexes and the age of cross over between two sexes was between 10.5 to 14.5 years of age. The maximum growth age was between 11 and 12 years of age(3.64cm) in male and between 11 and 12 years of age(5.98cm) in female. 2. Maximum Growth Age of Physical Growth and Development In body height, MGA was 10.59 for male and 10.34 for female which showed that MGA for both sexes appeared in similar periods. In body weight, MGA was 10.30 for male and 10.30 for female which showed that MGA for both sexes appeared in similar periods. In chest-girth, MGA was 14.74 for male and 11.60 for female which showed that MGA for female appeared about 3 years earlier than for male. In sitting height, MGA was 11.69 for male and 11.38 for female which showed that MGA for both sexes appeared in similar periods. Maximum growth ages of physiques appeared in order of body height 〉 body weight 〉 sitting height 〉 chest-girth.

Study on Standstill Conditions in Kaizen Activity: Through Case Studies of Two Companies in their Long-Term Efforts

  • Multiple prior studies stress that continued Kaizen activity is conducive to building and maintaining competitive advantages of manufacturing companies. Meanwhile, it remains unclear as to what kind of management factors may exert impact on sustainment of Kaizen activity. This paper discusses a study conducted on the cases of two manufacturing lines, where such activity has been continued for more than ten years. At first, it was discovered that study period was divided into different periods. It was also found out that 'standstill conditions' which prevent smooth progress of activity exist in many periods, and that such conditions are hard to avoid. The study went on to categorize progress of activity in each period into different patterns, including at which points standstill conditions occurred, thereby, circumstances of standstill conditions were made clear. This paper verified a detailed process of Kaizen activity development in each period and the relationship between that detailed process and points of occurrence of standstill conditions. Thought was also given to factors and actions for smooth development, and effects brought about by overcoming such challenges. Lastly, consideration was given to the future perspectives of the study for elucidating how better Kaizen activity may be managed for continuation.
