WTO DDA 농업협상과 유가공산업의 대응방향 (Policy Implications of the Korean Dairy Industry in WTO DDA Agricultural Negotiation)

  • The Korean dairy sector has experienced the negative impact with the market liberalization for dairy products as a result of the UR Agreement on Agriculture. Futhermore the current WTO DDA agricultural negotiation seems to make the greater negative impact on the Korean dairy sector. It is because that the ongoing negotiations on agriculture will likely result in further reductions of domestic support as well as reduction of tariffs and expansion of the market access. Therefore it's time for us to prepare the effective measures coping with the movement of the further dairy market liberalization. The main purpose of the study is to summarize and illustrate some of the major issues in the current WTO negotiation on agriculture. Also the paper presents some policy implications and missions so as to minimize the negative impacts of agricultural trade liberalization on the Korean dairy sector.

한국의 기능성 유제품 표시제도 개선방안 (Amendment Scheme of Labeling Regulation for Functionality of Dairy Products)

  • The labeling for functionality of food or food components are recognized globally and are essential for the growth of dairy product industry. To expand the functional claims of dairy product especially fermented milk product, the regulations restricting the labeling of functionality should be amended as soon as possible. The labeling regulations of functionality and efficacy for processed and functional foods in related Acts and subordinated statues such as definition, scope of claims, etc. were reviewed and the problems existed in the system were identified. The definition and classification of efficacy for processed food in Food Sanitation Act were analyzed to revise the labeling regulation of dairy product. A draft of amended labeling regulation for the functionality of dairy product is proposed, which provides consumers with appropriate information of beneficial effects on health purpose for human body structure and function. In order to develop the dairy products and related industries, these contents should be considered when the annexed Table 14 in the Enforcement Rule of the Processing of Livestock Products Act is amended.

발효유제품에서 박테리오파지의 특성, 검출과 제어 (The Characteristics, Detection and Control of Bacteriophage in Fermented Dairy Products)

  • This study was to review the classification, detection and control of bacteriophage in fermented dairy products. Bacteriophage has lytic and/or lysogenic life cycles. Epidemiologically speaking, detected major phages are c2, 936 and p335. Among them p335 has been the largest concern in dairy industry. Traditionally, various analytical technologies, such as spot, starter activity, indicator test, ATP measurement and conductimetric analysis, have been used for the phage detection. In recent years, advanced methods such as flow cytometric method, petrifilm, enzyme linked immunosorbent assay (ELISA) and multiflex PCR diagnostic kit have been deveoloped. The phage contamination has been controlled by using heat, high-pressure treatment, and the combinations of heat and pressure, and/or chemical. Also some starter cultures with phage-resistant character have been developed to minimize the concentration of phages in dairy product. Bacteriophage inhibition media such as calcium medium was also mentioned. To prevent the contamination of bacteriophage in dairy industry, further researches on the detection and control of phage, and phage resistant starters are necessary in the future.

유가공 산업에서의 바이오필름 형성과 제어관리: 총설 (The Formation and Control of the Biofilm in Dairy Industry: A Review)

  • Biofilms are aggregates of microorganisms present in a self-produced matrix of extracellular polymeric substance (EPS) adhered to a surface. Formation of a biofilm in the environment on farms and in dairy plants comprises several stages: attachment, growth (development), and detachment. Generally, biofilms are harmful to humans and need to be controlled. Stainless steel (SS) surfaces that are untreated or are scratched comprise substrata that are especially vulnerable to biofilm formation; therefore, SS surfaces should be polished and sanitized. Various approaches are available for the destruction of biofilms; cleaning-in-place (CIP) is the method mainly used in dairy plants. Further study on optimum detergents, cleaning conditions, and methods for this purpose is needed.

국내 유가공산업의 R&D활성화를 위한 연구 동향과 방향 (Research Trends and Future Directions for R&D Vitalization of Domestic Dairy Industry)

  • 최근 한반도를 둘러싼 주변 환경이 크게 변화하는 가운데 특히 중국의 유제품 소비가 급증하고 있기 때문에 국내유가공산업은 향후 50년을 설계해야 하는 중요한 기로에 서 있다. 소비 측면에서 유제품의 시장 동향을 살펴보면 신선우유 소비는 감소하고, 발효유 등 유가공품 소비는 증가하고 있다. 원유사용량은 2010년 1,939천 톤을 예상되며, 반면 우유 공급량은 예년도 원유수요량으로 판단할 때 35천 톤 가량 공급 부족이 예상된다. 현재 다자간 협상 중인 미국 및 EU와 FTA 협정이 발효될 경우, 낙농산업분야의 상당한 피해가 예상되고, 수입 개방에 따라 국산 원유의 생산 감축으로 이어질 것이다. 현재 유가공업체가 농가에서 수취하는 원유는 미생물 함량과 체세포수가 매우 낮은 양질의 우유이기 때문에 초고온살균법 대신 유럽처럼 우유 고유 풍미 및 영양성분을 유지한 저온살균우유 생산을 유도하는 정책적 연구가 필요하다. 국내 치즈 시장은 65,423톤 규모로 시장 규모는 매년 확대되고 있으나 대부분을 수입에 의존하고 있는 실정이다. 자연치즈 산업 활성화와 더불어 반드시 해결할 문제로서 부산물(유청) 처리와 "목장형유가공(On-Farm Processing)"의 활성화이다. 이를 위해 규제를 완화하고 몇 가지 당면 문제를 해결한다면 대형 유가공업체와 동반성장이 가능하다고 생각된다. 국내 발효유 시장은 꾸준히 성장을 기록한 유일한 품목으로서 위, 간, 장 건강을 위한 기능성 발효유 제품의 매출이 크게 성장하였다. 인체에 유용한 프로바이오틱 유산균을 이용한 발효유 제품의 연구 개발은 중요한 연구 테마이다. 초유는 위장관 감염증의 치료나 예방에 사용될 수 있는 면역우유 제조에 사용될 수 있으며, 포유동물의 초유를 이용한 다양한 우유 제품의 연구 개발도 가능하다. 우유를 나노분자가공방법과 기능성나노식품소재의 첨가로 제품의 영양과 기호성을 향상시킬 수 있는 우유 제품을 개발할 수 있을 것이다. 국내 기능성 유제품의 효능 및 효과에 대한 표시기준 개정이 유가공업계가 안고 있는 최대의 당면 문제이다. 원유 수급 불균형은 구조적인 문제로서 우유의 적극적인 용도 관리가 선진국형 관리 체계로 바뀌어야 한다. 즉 내수용, 수출용, 수급 조절용으로 세분하는 것이다. 그리고 행정의 전문화를 위해 낙농연구 개발 지휘본부(control tower)의 설립을 건의하는 바이다. 외국의 "낙농위원회(Dairy Board)"처럼 수출용 유가공제품의 연구 개발을 전체적으로 총괄 지휘할 수 있는 기관이 필요하다. 마지막으로 유가공분야 인재육성 정책을 적극 검토해야 한다. 유가공 전공자 및 기술자에 대한 유학 또는 연수 기회를 확대함으로써 학생들의 의욕과 사기를 진작시켜야 한다.

Milk-Derived Growth factors as Neutraceuticals

  • Colostrum has lots of bioactive components and many growth factors including insulin-like growth factors, transforming growth factors and epidermal growth factor. Colostrum and milk derived growth factors widely mediate the growth of overall development and could be used as treatment of gastrointestinal disorder, wound repair process, bioacrivity in the neonatal GI tract and induction of oral tolerance. It is possible that milk derived growth factors as potential neutraceuticals for the specific consumers may have a great role in future food industry.

Research advances in reproduction for dairy goats

  • Considerable progress in reproduction of dairy goats has been made, with advances in reproductive technology accelerating dairy goat production since the 1980s. Reproduction in goats is described as seasonal. The onset and length of the breeding season is dependent on various factors such as breed, climate, physiological stage, male effect, breeding system, and photoperiod. The reproductive physiology of goats was investigated extensively, including hypothalamic and pituitary control of the ovary related to estrus behavior and cyclicity etc. Photoperiodic treatments coupled with the male effect allow hormone-free synchronization of ovulation, but the kidding rate is still less than for hormonal treatments. Different protocols have been developed to meet the needs and expectations of producers; dairy industries are subject to growing demands for year round production. Hormonal treatments for synchronization of estrus and ovulation in combination with artificial insemination (AI) or natural mating facilitate out-of-season breeding and the grouping of the kidding period. The AI with fresh or frozen semen has been increasingly adopted in the intensive production system, this is perhaps the most powerful tool that reproductive physiologists and geneticists have provided the dairy goat industry with for improving reproductive efficiency, genetic progress and genetic materials transportation. One of the most exciting developments in the reproduction of dairy animals is embryo transfer (ET), the so-called second generation reproductive biotechnology following AI. Multiple ovulation and ET (MOET) program in dairy goats combining with estrus synchronization (ES) and AI significantly increase annual genetic improvement by decreasing the generation interval. Based on the advances in reproduction technologies that have been utilized through experiments and investigation, this review will focus on the application of these technologies and how they can be used to promote the dairy goat research and industry development in the future.

한국 유가공업의 발전과 전망 - 발효유 (Development of Korean Dairy Industry - Fermented milk products -)

  • Lactic acid bacteria had been widely utilized in fermented foods such as fermented dairy products, traditional sauces, kimchi, fermented sausages, medicines or probiotic feed additives for a long time. LAB are also widely distributed in the mammalian gastrointestinal tracts, oral cavity, vagina, and various foods or soils. The most familiar examples of using LAB would be the fermented milk products, and those had become one of the favorite foods in Korea f3r more than 34 years of history. The main benefits of the fermented milk products were originally the improvement of the balance of intestinal flora to control diarrhea and congestion disorders, and gradually, they were chosen by the consumer preference of the taste. The very beginning of the fermented milk products in Korea was the Yakult type products in 1971, and it was the commencement of the solid foundation of the dairy industry and the understanding beneficial effect of probiotic yogurt. After middle of 80's, stirred type fermented milk products had been firstly produced, and it was the time that the domestic dairy industry took root in Korea. From 90's, functional fermented milk products were produced, and drink type yogurt sales a mount increased drastically, and these products began to be chosen not only with the values of nutrition but also with physiological functions. The health claims are classified into intestinal health, gastric health and hepatic health. The prospects for the Korean market are as follows; The majority of leading products would be the premium functional yogurt products as it was last year. It is because the sales of lower cost products shows slow-down, and industries tend to increase the commercial advertisements of premium functional yogurt products through mass media. These tendencies would make the market situation become more competitive.

Negative association between high temperature-humidity index and milk performance and quality in Korean dairy system: big data analysis

  • The aim of this study was to investigate the effects of heat stress on milk traits in South Korea using comprehensive data (dairy production and climate). The dataset for this study comprised 1,498,232 test-day records for milk yield, fat- and protein-corrected milk, fat yield, protein yield, milk urea nitrogen (MUN), and somatic cell score (SCS) from 215,276 Holstein cows (primiparous: n = 122,087; multiparous: n = 93,189) in 2,419 South Korean dairy herds. Data were collected from July 2017 to April 2020 through the Dairy Cattle Improvement Program, and merged with meteorological data from 600 automatic weather stations through the Korea Meteorological Administration. The segmented regression model was used to estimate the effects of the temperature-humidity index (THI) on milk traits and elucidate the break point (BP) of the THI. To acquire the least-squares mean of milk traits, the generalized linear model was applied using fixed effects (region, calving year, calving month, parity, days in milk, and THI). For all parameters, the BP of THI was observed; in particular, milk production parameters dramatically decreased after a specific BP of THI (p < 0.05). In contrast, MUN and SCS drastically increased when THI exceeded BP in all cows (p < 0.05) and primiparous cows (p < 0.05), respectively. Dairy cows in South Korea exhibited negative effects on milk traits (decrease in milk performance, increase in MUN, and SCS) when the THI exceeded 70; therefore, detailed feeding management is required to prevent heat stress in dairy cows.
