약선(藥膳)음식 개발을 위한 전통 식품재료와 한의학이론의 적용방향에 관한 연구 (A Research on the Traditional Food Materials for Developing Medicinal Food and the Direction of Applying the Theories of Oriental Medicine)

  • This study was conducted to investigate how to apply the theories of oriental medicine appropriately, which direction should be taken, and how it should be developed The results are as follows. First, to develop medicinal cuisine, it is necessary to grasp the theoretical system, considering Ohaeng and Omi, the five viscera and the six entrails, organs and body, by raising the level of understanding comprehensively about the relationship between the characteristics of each groups of Sasang Constitutions and the theories of Eumyangohaeng, and the relationship between the theory of Kimi. and food, and then to explain developed medicinal cuisine and apply those theories to inventing new ones. Secondly, to develop medicinal cuisine for health enhancement, it is also required not only to consider constitutions but also to suggest the need of knowledge for moderation in terms of regimen along with the theory of Kimi. Thirdly, to develop medicinal cuisine according to the perspective of Kimi. Theory, what should be taken into account is not only the understanding of the characteristics of food materials, but also the properties of them that the theory of Kimi, Eumyangohaeng, and Sasang Constitutions share so that it is possible to invent medicinal cuisine which is good for anybody to protect disease specific to a certain group of constitutions with, and serves as the dietary regimen customed to each constitution group. Lastly, the scientific effect of the medicinal cuisine which is developed according to the theory of Kimi., Eumyangohaeng, and Sasang Constitutions should be verified by scientific researches and clinical experiments. And it is believed to be essential for the government to make efforts to set a standard and laws to validate the medicinal effects and the process of assessment so that the systematic development can be encouraged, and to prepare guidance to food development for national health improvement.

  • 본 연구는 퓨전한식 푸드 스타일링(Food styling) 요인이 고객만족도, 재방문 의도 및 추천 의사에 미치는 영향을 분석하여 퓨전한식 푸드 스타일링(Food styling) 발전과 이를 위한 마케팅 전략을 수립하는데 목적을 두고 2013년 8월 퓨전한식 레스토랑 방문 고객을 모집단으로 하여 조사를 실시 하였으며, SPSS 21.0(Version)을 활용 하여 150부의 유효한 설문지를 최종 분석에 사용 하였다. 분석 결과, 퓨전한식 푸드 스타일링(Food styling) 속성 요인이 고객만족도, 재방문 의도 및 추천 의사에 유의한 영향을 미치는 것으로 나타났으며, 퓨전한식 푸드 스타일링(Food styling) 속성 요인은 음식과 식기, 린넨, 센터피스, 커트러리, 글라스가 고객만족도, 재방문 의도 및 추천 의사에 유의한 영향을 미치는 것으로 나타났다. 이 연구는 우리 음식의 세계화를 위한 모던한 푸드 스타일링(Food styling) 발전을 위한 방안을 제시한다.

제주향토음식에 대한 인지와 고객 행동에 관한 연구 - 제주 방문 관광객의 고객 만족, 재방문, 구전을 중심으로 - (A Study on the Customer Behavior and Recognition of Jeju Regional Cuisine - Focusing on Customer Satisfaction, Revisit Intention, and Word of Mouth among the Tourists in Jeju -)

  • 본 연구는 제주도에 찾아 온 관광객을 대상으로 제주향토음식에 대한 홍보의 정도와 인지를 파악하여 고객 행동에 미치는 영향을 파악하고자 한 연구이다. 조사한 자료에 대한 분석 방법은 SPSS+/WIN 12.0 통계패키지를 이용하여 분석하였으며, 빈도 분석(frequncy analysis) 및 기술 분석(descriptive analysis)과 다중회귀분석을 실시하였다. 분석 결과, 제주향토음식 메뉴 중 인지도도 낮고 만족도도 낮은 것은 지속적인 홍보와 조리 방법의 변화 그리고 이를 통한 신메뉴 개발을 통해서 인지도 만족도를 높이도록 관리하여야 할 것으로 사료된다. 더욱이 만족도가 높은 것은 조리방식에 있어서 구이, 조림, 회 등을 주로 만족하는 메뉴로 나타나 이에 대한 조리법의 개발도 필요할 것으로 사료된다. 홍보는 고객 만족과 재방문에 영향을 미치고, 인지는 고객 만족, 재방문, 구전에 모두 영향을 미치는 것으로 관광객을 대상으로 한 제주향토음식에 대한 인지할 수 있는 교육 체험 프로그램이 필요한 것으로 사료되며, 이를 바탕으로 제주향토음식에 대한 정보의 취득은 주변 사람의 추천이나 소문이 가장 크므로 홍보를 제주를 찾은 관광객을 대상으로 할 뿐만 아니라 도민을 상대로 한 홍보도 많이 필요할 것으로 사료된다. 차후의 연구과제로 도민을 대상으로 한 제주향토음식에 대한 인지 및 홍보에 대한 연구가 이루어져야 지역의 음식문화를 관광 상품화와 축제로 발전하기에 필요한 기초 자료로 활용할 수 있을 것으로 사료된다.

김치 및 김치 이용 프랑스 요리에 대한 현지 프랑스인의 기호도 조사 (A Survey of the French Preference for Kimchi and French cuisines with added Kimchi)

  • This study surveyed the Kimchi preference for French, potential Kimchi improvement for French market adaptation and Kimchi application for French cuisine, with the aim of spreading the recognition of Kimchi throughout the world, especially in France, by giving information and developing local types which could be expected to be suitable for utilization of French food life. The Kimchi experience of 100 persons in France was surveyed for the study. Most (72.0%) had no experience. For the preference of red Kimchi in palatable ripening period depending on sexes, women had a higher Score (M=4.04${\pm}$0.88) than men (M=3.91${\pm}$0.91) did. In the case of white Kimchi, women had a higher score (M=4.09${\pm}$0.90) than men (M=3.98${\pm}$1.01) did, also. The attraction reason of Kimchi for males was the chewing feel, healthy food and spicy taste, and for females was the chewing feel, spicy taste and healthy food orderly. However, the other side of the Kimchi improvement point was decreased fermented order, spicy taste and salinity, but improved orderly appearance. Thus, the Kimchi development point for French was keeping the crisp chewing feel, fermenting better at the fresh than ripening, reducing the fermented order and controlling the spice taste. Types of fermented food similar to Kimchi were involved in more than 80% of French cuisine, with the most common in the survey being pickled cabbage, followed by cabbage salary and fermented salted food orderly. The Kimchi utility as a raw ingredient or a seasoning for French cuisine was firstly as an accompaniment with meat cuisine, followed by appetizer, eating with cooked rice, eating with fish cuisine, orderly for males, whereas for females it was eating with cooked rice, followed by appetizer, eating with fish cuisine and eating with fried potato and orderly. Thus, the French had a similar view to Koreans regarding the accompaniment of Kimchi meat. The developed fusion Kimchi foods were 'Poitrine de porc caramelisee au miel et Kimchi', 'Blanc de barbue aux crevettes roses et Kimchii', 'Kimchi SpringRoll' and 'Potage saint-Germain aux Kimchi'. The French preference for Kimchi utility was generally a high score for the eating the cuisine in which Kimchi was added to meat cuisine.

한식 소스류를 통한 한국음식의 세계화 방안 - 세계적인 소스류 성공사례를 중심으로 - (Globalization of Korean Cuisine through Korean Sauces - Focusing on the Success of World-wide Sauces -)

  • 한국음식은 세계적으로 건강식, 영양학적으로 균형적인 음식들 중 하나이다. 미국, 중국, 일본, 태국, 베트남, 캄보디아, 싱가포르, 인도네시아, 인도, 호주, 영국, 프랑스와 이태리에서는 세계적인 소스류가 있고, 국제화에 대한 마케팅 전략도 수립하고 있다. 위에 언급한 나라에 비해 한국식 소스류의 국제화는 실제로 부족한 실정이다. 본 연구에서는 한식 소스류를 통한 한국 음식 세계화 방안으로 기존의 한국의 장류인 간장, 고추장, 된장, 쌈장을 해외에 있는 쉐프들(chefs)에게 홍보하는 방안, 고추장, 된장, 쌈장을 기본으로 한 파생소스류를 개발하는 방안, 한국 거주 외국인 쉐프들을 통하여 한식 소스류를 해외에 홍보하는 방안, 기존 한식 소스류를 해외에 홍보하는 방안으로 나누어 제시하였다. 또한 정부의 역할, 식품회사의 역할, 조리인의 역할을 제시하였다. 한식조리사들과 양식조리사들에 의한 한식소스류를 활용한 양식 한식 퓨전 메뉴개발, 스위트칠리소스, 가야 잼, 베지마이트와 같은 한국의 대표적 한식 소스류의 개발과 홍보, 기꼬망간장, 이금기소스와 같이 제품의 브랜드화가 이루어져야 한다. 또한 식품회사들에 의한 한국 고유의 소스류의 개발 지속적인 해외 홍보, 한식 프랜차이즈 레스토랑을 통한 한식의 세계화 방법도 있을 것이다. 해외에서 스타쉐프 양성, 한식 세미나, 다양한 매체를 통한 홍보 등이 정부 주도하에 이루어져야 할 것이다.

조리사 인성형성에 미친 주방환경에 관한 연구 - 서울 시내 특1급 호텔 조리사를 중심으로 - (The Study of Personality Changes about Cooks that Would Possibly Result from Kitchen Environment)

  • The purpose of this study was to examine the personality change of rooks that would possibly result from kitchen environment. It's basically meant to determine the relationship of environment to personality, by investigating how cooks felt about their own personality before and after working as a cook and conducting a self-diagnostic personality test based on theories on kitchen environment and personality. The subjects in this study were the cooks who served af top-rated hotels in Seoul, and the survey was carried out from April 8 through 12, 2002. The collected data were encoded and analyzed with SPSS 10.0 program. To identify the characteristics of the subjects, frequency analysis was implemented, and reliability analysis, T-test and ANOVA were employee. To verify the reliability of the questionnaire items, Cronbach's Alpha that represented internal consistency was calculated, and factor analysis was fulfilled to minimize related variables about cuisine environment and eliminate irrelevant ones. The findings of this study were as below: Out of total 27 cuisine environment variables, 22 ones boiled down to six factors. Factor 1 was conflicts, and factor 2 was job performance. Factor 3 was work, and factor 4 was environment. Factor 5 was facilities, and factor 6 was social. To make better cuisine environment each and every part of kitchen environment that affects cook personality should be improved, and further, what causes employee turnover should be eliminated. In the future, there is a need for broader research effort that could cover more extensive region and a wider variety of subjects other than cooks at the top-rated hotels.

한식의 기호학적 특성에 관한 연구 (Study on the Semiotic Characteristics for Korean Food)

  • This study sought to identify unique semiotic codes of Korean cuisine, including table settings, service styles, service ware selection, cooking techniques, and the logic behind menu composition. This research also aimed to verify that yangnyomjang reflects the code of Korean food culture. One of key findings from this study was that hidden codes of Korean food were found in their daily set-up for bapsang (dining table), which was found to decodify polysemic characteristics with an emphasis on harmony. These semiotic codes were influenced by the yin and yang philosophy and impact dining activities in our daily lives. Korean bapsang, composed of bap (rice), guk (soup) and banchan (side dishes), helps every individual diner share the semiotic codes of Korean cuisine within the context of paradigm and syntagm. Yangnyomjang, a major component of the Korean menu, also represents a unique code of Korean cuisine in its structure, main ingredients, production, and usage. This study also mathematically verified that a synchronic table setting of Korean cuisine provides diners with more opportunities for potential flavor combinations, compared to the Western service setting.

호텔 조리부 조직의 리더십 유형이 조직 몰입에 미치는 영향 - 직장 만족의 조절 효과를 중심으로 - (The Effects of Leadership Styles on Organizational Commitment among Cuisine Employees in Hotel - Focused on the Moderated Effect of Job Satisfaction -)

  • 본 연구의 목적은 호텔 조리부서의 유연한 조직운영을 위하여 카리스마적 리더십과 거래적 리더십이 조직 몰입에 미치는 영향에 관하여 연구하고, 더불어 리더십과 조직 몰입의 관계에서 직장 만족의 조절 효과를 검증하고자 하였다. 분석결과, 카리스마적 리더십과 거래적 리더십은 모두 조직 몰입에 긍정적인 영향을 미치는 것으로 나타났으며, 이 두 리더십의 유형 중 거래적 리더십 보다는 카리스마적 리더십이 직원의 조직 몰입을 향상시키는 것에 더 많은 효과가 있는 것으로 나타났다. 또한 카리스마적 리더십과 조직 몰입의 관계에서 직장 만족의 조절 효과가 있는 것으로 확인되어 직장 만족이 높은 조직일수록 카리스마적 리더십을 발휘하는 것이 직원의 조직 몰입을 향상시키는 것에 큰 효과가 있음을 알 수 있었다.

강원도 일부지역 외식업 조리사들의 작업관련성 근골격계 질환과 스트레스 정도 (Occupational Musculoskeletal Disease and Stress Levels of Restaurant Cooks in Gangwon Province)

  • The aim of this survey is to investigate the occupational musculoskeletal disease and stress levels of restaurant cooks and to provide a basic data of programs in order to prevent occupational diseases. A questionnaire survey was conducted on 220 subjects in Gangwon province. The results show that there was no significant difference in the degree of occupational musculoskeletal disease between male cooks and female cooks. However, western cuisine cooks were more likely to have a higher degree of occupational musculoskeletal disease than other cuisine cooks and showed a higher degree of occupational stress from work overload as well as irregular meal stresses. Cooks aged from 30 to 40 years showed a higher level of occupational musculoskeletal disease in the neck, shoulder, and hand/wrist compared to those in other age groups. The job tenure was related to the degree of musculoskeletal disease in knee. Additionally, the hours of working per day were statistically significantly related to musculoskeletal disease in the knee and to the occupational stress levels in irregular meals stress. The findings of this study suggest that it is essential to design customized education for cooks to lessen their occupational musculoskeletal diseases and stresses in order to ensure the health and safety of the culinary workers.

국내 거주 독신 외국인의 한국음식 인식 및 선호도 조사 (A Survey on the Knowledge and Preferences for Korean Food Among Unmarried Foreigners Residing in Korea)

  • This study was performed through one-to-one interviews or group sessions with single un-married foreigners living and working in Korea. A total of 150 questionnaires were distributed, and 109 were analyzed. This demographic becomes immersed in local cuisine searching for new food dishes and experiences. These foreigners were an excellent test group who came from a non-Korean domestic cuisine background and who were subsequently exposed to Korean cuisine over an extended period during which changes occurred in their diets and food preferences. We found that the longer the foreigners stayed in Korea, the more they ate Korean food and adapted to traditional dishes such as Korean stews and hot-pots. In general, Chinese, Japanese, and South-east Asians regarded Korean food as nutritious, whereas people from a western or European background considered it health conscious food. In contrast, South-east Asians, in particular, found Korean food aroma unpleasant. This study describes how diets and views of Korean food evolved in foreigners with time by providing objective opinions and data on the acceptance of Korean food by foreigners and hints the direction in which Korean cuisine should be developed to further its globalization.
