Variation of protein, Oil Contents and Fatty Acid Composition of Korean Wild Soybean (Glycine soja Sieb. & Zucc.) Seeds (야생콩(Glycine soja Sieb. & Zucc.) 유전자원의 단백질, 지방 및 지방산조성 변이)

  • This study was carried out to obtain useful information and to select promising materials for the breeding of sprout-soybean by the analysis of seed characteristics and chemical composition of Korean local wild soybean lines. For this purpose, crude protein, crude oil contents and fatty acid composition of 70 lines analysed. The crude protein content of Korean wild soybean lines ranged from 35.6 to $47.9\%$, mean was $42.34\%$, and 13 lines showed high protein content over $45\%$. The crude oil content of those ranged from 2.8 to $18.0\%$, mean was $10.2\%$, and 2 low lines were below $2\%$. The fatty acid 16:0, 18:0, 18:1, 18:2, 18:3 ranged $11.1-44.6\%,\;3.0-11.4\%,\;11.1-30.6\%,\;12.4-59.5\%,\;and\;1.1-17.3\%$ respectively, and 2 extremely low fatty acid(18:3) lines were selected. Significant correlation between crude oil and fatty acids(16:0, 18:0, 18:2), and among every fatty acid compositions were recognized. Promising wild soybean lines were selected as genetic resources for sprout-soybean breeding and research genotypes; YWS 104 and YWS189 as the high protein, YWS 28 and YWS30 as the low-crude oil and low 18:3.

The Oxidation Stability of Soybean, Palm Fish oil and Lard affected by Crude Gingerol (대두유. 팜유, 돈지 및 어유의 산화 안정성에 미치는 Crude gingerol의 영향)

  • The Crude ginerol from ginger was collected to investigate the possibility of application to food products as a natural antioxidant. The antioxidant activity of gingerols according to fatty acid composi-tion of several oils, were examined by measuring peroxide value(POV). The induction period(If) of fish oil, sdybean oil, lard and palm oil was 5.0, 17.0, 38.4 and 57.6 hours respectively by measuring POV during storge at $85^{\circ}C$. The relative antioxidant effectiveness(RAE) of gingerol group was lard ; 219, soybean oil; 176, fish oil; 160 and palm oil; 146%, while the RAE of'BHT group was lard; 238, palm oil; 158, soybfan oil; 132 and fish oil; 122%.

History of edible oils and fats industry in Korea (우리나라 식용유지 산업의 발자취)

  • In Korea, sesame oil has been used as a flavor source mainly by edible oil since ancient times, and it has been used by domestic screw pressing. In the 1960's, the demand for edible oils and fats increased significantly due to the improvement of national income and changes in food consumption patterns. In the early 1970's, a few edible oil manufacturing companies with modern solvent extraction and refining plants were established. In Korea, edible oil manufacturers account for more than 85% of employees with 50 or fewer employees. In Korea, there is a very shortage of raw materials for edible oils and fats, domestic production of edible oil is decreasing year by year and import volume is continuously increasing. While importing the edible oil bearing ingredients including soybean and extracted oil in the past, recently mainly imports crude oil and refines it in Korea. Soybean oil, palm oil and tallow account for 70~90% of total imported edible oils. Due to the recent well-being trend, the demand for olive, canola and grapeseed oils as household edible oil has increased and the production of blended oil has been greatly increased. Since the late 1980's, people have recognized edible oil and fat as a food instead of seasoning ingredient and have increased their edible oil and fat intake in Korea. Since the early 2000's, refined oil and fat products produced in Korea have been exported and is increasing every year.

Oxidative stability of crude wheat germ oil (소맥배아유의 산화안정성)

  • Oxidative stability of crude wheat germ oil (WGO) was determined by the active oxygen method(Rancimat, hrs at 98$^{\circ}C$). The induction time of crude WGO was 7.6hrs as compared to 23.7hrs of crude soybean oil. However, the induction time of WGO could be extended by 2-3 times with 300ppm of mixed tocopherols and 200ppm of organic acids. The antioxidant effect of organic acids increased in the order of L-ascorbic acid > tartaric acid > citric acid > malic acid. Especially, the induction time of WGO could be extended by ca. 38hrs with 500ppm of L-ascorbic acid. This antioxiative effect of 500ppm L-ascorbic acid with mixed tocopherol(100, 200, 300 or 500ppm). It seems that the synergistic effect of L-ascorbic acid was due to the high content of tocopherols(0.4%) in WGO.

Studies on Evaluation of Spent Bleaching Clay as a Feed Ingredient in Broiler Chicks (육계의 사료원으로 식용유 정제 폐백토(Spent Bleaching Clay)의 평가에 관한 연구)

  • Studies were conducted to evaluate spent bleaching clay as a feed resource. Raw spent bleaching clay from the soybean refining process in a rotary reactor is rich in crude fat (26.0%) and crude ash (68.3%) but low in moisture (5.2%) and crude protein (0.5%). The peroxide value of spent bleaching clay was significantly higher than soybean oil (P<0.05). Also the acid value of spent bleaching clay and soybean oil were 9.72 and 0.001, respectively, it was significantly different(P<0.01). It is possible that the acidification of spent bleaching clay was prevented by artificial method. On the feeding experiment, 2.0 to 4.0% of dietary spent bleaching clay were improve body weight gain, feed intake and feed/ gain. Results indicate that spent bleaching clay may be used at 2.0 to 4.0% for broiler diets without deleterious effects on performance.

Chemical Components of Black Soybean Seeds Collected in Korea (수집 재래 검정콩의 화학적 성분)

  • The 1,081 soybean genotypes including 972 black soybeans and 109 other colored soybeans were collected in 197 locations from January to April, 1991. Seed chemical components of soybean collections in relation to growth characters were evaluated to survey germplasms for black soybean breeding for seed quality. Seeds of 1,081 genotypes collected were analyzed for crude protein, crude lipid, and total sugar contents. The crude protein content was averaged to 39.8% and ranged from 34.1% to 48.0%. The average crude lipid and total sugar contents were 20.1% and 10.1%, and the ranges of those were 14.1% to 23.8% and 8.3% to 12.1%, respectively. Higher crude protein content was shown in early soybean maturity group, whereas higher total sugar content was in late group. Black soybean collections with green seed embryo tended to be higher in total sugar content than those with yellow one. Black soybean oil is generally composed of about 22% oleic, 55% linoleic, 7% linolenic acid, and 16% the others.

A Study on Physiological Activity and Antioxidative Activity of Maesangi(Capsosiphon fulvescens) Extract (매생이 추출물의 생리 활성과 항산화 활성에 관한 연구)

  • Physiological activity and antioxidative activity of Maesangi(Capsosiphon fulvescens) extracts with distilled water or 95% ethanol were investigated. For the evaluation of physiological and antioxidative activities, some evaluation assay methods such as measurement of Hunter color value, chlorophyll a/b value, total phenolics, reducing power and thiobarbituric acid(TBA) value of soybean oil were used. Proximate composition and mineral contents of Masaengi were orders of crude protein>crude fiber>moisture>crude ash>crude lipid, and K>Ca>Mg>Na>P>Fe>Zn, respectively. In ethanol extract, the content of total phenolic compounds in Maesangi was determined to half times of that in Dasima(Laminaria). The reducing power of Maesangi-ehtanol extract was about 5 % of vitamin C and was lower than that of Dasima-ethanol extract. The TBA value of Maesangi-ethanol extract on soybean oil oxidation was about 47 % and 68.4 % to control in three and eight days oxidation, respectively. But TBA value difference was not observed significantly with the dosage below 5mL of ethanol extract.

Variation of Protein, Oil, Fatty Acid, and Sugar Contents in Black Soybean Cultivars According to Different Latitudes (재배지 위도차에 따른 검정콩의 조단백, 조지방, 지방산 및 유리당의 함량 변이)

  • This experiment was conducted to investigate the variation of crude protein, crude oil, fatty acid, and sugar contents in five Korean domestic black soybean cultivars grown at different latitudinal locations, a high latitude, Suwon ($37^{\circ}$16'N) and a low latitude, Milyang ($35^{\circ}$30'N). The crude protein content was highest in Geomjeongkong # 3 (43.9%) and crude oil content was highest in Geomjeongkong # 4 (21.8%) among the five cultivars. Crude protein and oil contents in black soybean cultivars except Geomjeongkong # 4 were not significantly different between high latitude and low latitude. In most black soybean cultivars grown at high latitude, oleic acid content was higher, while linoleic acid, and linolenic acid contents were lower compared to low latitude. Sucrose content in Geomjeongkong # 3, raffinose contents in Geomjeongkong # 3, # 4, Ilpumgeomjeongkong, and Cheongjakong, and stachyose content in Geomjeongkong # 1 grown at low latitude was higher compared to high latitude. The variations of crude protein, crude oil and fatty acid contents seemed to be affected by genotype than growing locations according to different latitude as they did not show the significant interaction between cultivars and locations. In contrast, the variations of glucose, sucrose, and stachyose contents maybe affected by environmental condition as different latitude than the genotype because they showed the significant interaction between cultivars and locations.

Chemical Composition of Lutus Seed(Nelumbo nucifera Gaertner) and Their Lipid and Protein Composition (연밥의 유지와 단백질의 구성에 관한 연구)

  • Lotus seed(Nelumbo nucifera Gaertner), known as traditional medicine as an antifebrile, antipsychotic, and cantihypertensive agent, was analyzed the chemical composition of lipid and protein. The seed com posed of 12.2% moisture, 2.3% crude lipid, 19.5% crude protein, 61.3% carbohydrate, 2.1% crude fibre, and 4.1% ash. The lipid showed iodine value of 97.9 that is lower than that of soybean oil and sesame oil, and similar to peanut oil and cotton seed oil. The fatty acid composition of the oil were the highest in content of linoleic acid which occupied 58.3% and saturated vs unsaturated fatty acid was 20.9:79.1. Especially behenic acid content, 6.9%, was higher than other plant oils. Sixteen amino acids were detected in the protein from the seed and glutamic acid content was the highest as 4.5% in dehulled kernel. The portion of essential amino acid was 31.1%.

Investigation of forage value and usability of soybean varieties for livestock

  • Soybean (Glycine max (L.) Merill) is a very outstanding material crop with high protein and oil contents. We conducted this study to evaluate forage value and usability of soybean varieties as livestock forage. Three soybeans cultivars, OT93-26, Geomjeongsaeol, and Pungwon, were evaluated for forage use in this study, and Kwangpyeongok and Yeongwoo were used as check forage corn and rice, respectively. The whole soybean plants were harvested at the R5 (beginning seed development)- and R6 (full seed)-reproductive stages for analyzing forage usability and quality. Days to harvesting of the R5 stage-OT93-26 was the shortest among the tested crops while that of Yeongwoo was 122 days. The fresh and dry matter yields of all 3 soybeans were greater at R6 stage than at R5. Crude protein of the soybean cultivars harvested had a higher compared to the rice and corn regardless of the harvesting stage. Contents of crude fiber, neutral detergent fiber and acid detergent fiber of Yeongwoo had the lowest whereas Pungwon harvested at R5 were the highest. Among the soybeans, digestible dry matter, dry matter intake, and relative feed value of R6-harvested Geomjeongsaeol and Pungwon were high more compared to those at the R5-harvested, but in case of OT93-26 those at R6 stage were inversely measured rather than those at R5 stage. In conclusion, soybean can be used as s forage with high nutritive value for livestock. Moreover, Geomjeongsaeol can be applied to develop new forage soybean varieties with high nutritive value, and R6 stage is the optimum harvesting stage in yield and quality of the tested soybeans more than R5.
