쌀가루를 이용한 쌀식빵 영양성분분석 (Nutritional Compositions of Rice Bread with Different Rice Flours)

  • This study analyzed the general components of rice bread with 75% rice content such as water, crude ash, crude protein, crude fat and carbohydrate, and its nutrients such as vitamin C, vitamin A, vitamin E content, minerals, amino acids, and fatty acids. The contents of crude protein were high and those of crude fat were low with the contents of crude ash, crude protein, and crude fat being 1.61, 18.50, 0.04 g/100 g respectively. Vitamin A was not detected and the contents of vitamin C and vitamin E were 3.85 and 3.04 mg/100 g, respectively. The calcium, potassium, magnesium, iron and sodium contents were 222.0, 117.90, 24.12, 2.30, 555.90 mg/100 g respectively. Rice bread contains 9 essential amino acids such as valine, leucine, isoleucine, methionine, threonine, lysine, phenylalanine, histidine, and arginine. The analysis of rice bread fatty acid showed 58.04 mg/100 g of saturated fatty acid, 26.31mg/100 g of monounsaturated fatty acid and 15.64 mg/100 g of polyunsaturated fatty acid. The total essential fatty acid content was 15.49 mg/100 g. With the rising interest in processed rice products, well-being, and diet, it is necessary to develop processed rice foods that are nutritional and low in calories using rice powder that is nutritionally better than flour.

하늘타리의 이화학적 조성 (Physicochemical Composition of Trichosanthes kirilowii Maximowicz)

  • 하늘타리는 한약재로 많이 사용되지만 이들의 일반성분에 대한 연구가 부족한 실정이다. 따라서 한약재로 사용되는 각 부위 중의 일반성분을 조사한 결과 괄루실의 경우 탄수화물 70%, 조단백질이 13%, 조지방 5%, 조섬유소 6%, 조회분 6%의 함량을 나타냈다. 또한 괄루인은 탄수화물 62.59%, 조단백질이 12.75%, 조지방 14.80%, 조섬유소 6.5%, 조회분 3.36%의 함량을 나타냈고 괄루근은 탄수화물 89.40%, 조단백질이 4.10%, 조지방 0.50%, 조섬유소 3.5%, 조회분 2.50%의 함량을 나타내었다. 괄루실과 괄루인은 15종류의 아미노산을 함유하고 있으며, 그중 괄루실에는 폐닐알라닌과 글리신이 많은 함량을 나타내었다. 괄루인에는 루신이 없는 대신 라이신이 검출되었으며, 괄루근에서는 14종의 아미노산이 검출되었다.

  • To furnish basic data for the utilizatin of camellia(Camellia japonica L.) seeds as a raw material of industrial products, major chemical components of camellia and defatted camellia seeds were investigated. The moisture, crude ash, crude fat and crude protein contents of camellia seeds were 4.06%, 1.83%, 65.75% and 8.44%, respectively. Defatted camellia seeds indicates that it contains 10.31% moisture, 5.28% crude ash and 17.49% crude protein while no crude fat was detected. The curde ginseng saponin, crude saikosaponin and red ginseng saponin contents of camellia seeds were 108.0mg%, 0.4mg% and 40.3mg%, respectively. Total amino acid contents of camellia seeds and defatted camellia seeds were 7,851mg% and 13,002mg%, respectively, and the major amino acids were glutamic acid, arginine, aspartic acid and leucine. The ratio of essential/total amino acid of camellia seeds was 0.29.

Prediction of Chemical Composition in Distillers Dried Grain with Solubles and Corn Using Real-Time Near-Infrared Reflectance Spectroscopy

  • This work was conducted to assess the use of Near-infrared reflectance spectroscopy (NIRS) as a technique to analyze nutritional constituents of Distillers dried grain with solubles (DDGS) and corn quickly and accurately, and to apply an NIRS-based indium gallium arsenide array detector, rather than a NIRS-based scanning system, to collect spectra and induce and analyze calibration equations using equipment which is better suited to field application. As a technique to induce calibration equations, Partial Least Squares (PLS) was used, and for better accuracy, various mathematical transformations were applied. A multivariate outlier detection method was applied to induce calibration equations, and, as a result, the way of structuring a calibration set significantly affected prediction accuracy. The prediction of nutritional constituents of distillers dried grains with solubles resulted in the following: moisture ($R^2$=0.80), crude protein ($R^2$=0.71), crude fat ($R^2$=0.80), crude fiber ($R^2$=0.32), and crude ash ($R^2$=0.72). All constituents except crude fiber showed good results. The prediction of nutritional constituents of corn resulted in the following: moisture ($R^2$=0.79), crude protein ($R^2$=0.61), crude fat ($R^2$=0.79), crude fiber ($R^2$=0.63), and crude ash ($R^2$=0.75). Therefore, all constituents except for crude fat and crude fiber were predicted for their chemical composition of DDGS and corn through Near-infrared reflectance spectroscopy.

국민영양조사를 이용한 영양소별 주요 공급식품에 관한 연구 -I. 에너지, 단백질, 지방, 탄수화물 및 조섬유 - (Study for Major Nutrients Sources of Foods by Korean Nutrition Survey -I. Energy, Protein, Fat, Carboydrate and Crude Fiber-)

  • This study was nudertaken to investigate the major food sources of energy, frotin, fat, carbohydrate and crude fiber based on the data from the National Nutrition Survey in 1993. Results were summarized as followed : the most important source of energy was rice providing 52.9% of total energy intake. Instant noodle, pork, bread and beef were major sources of energy in order. Protein sources were rice, beef, pork, egg and pollack in order. And the primary sources of fat was pork and the rank next to pork were soybean oil in large city, instant noodle in small city and rice in rural. Rice contributed the most to total carbohydrate followed in order by instant noodle, bread, apple and kimchi. Crude fiber was impartially provided from various foods such as kimchi, red pepper powder, apple, red pepper and radish. Number of foods providing 90% of nutrient intake were 41 for energy, 43 for protein, 32 for fat, 19 for carbohydrate and 29 for crude fiber. Among region, mean amount of nutrients intake didn't show any significant differences(p>0.05). In conclusion, rice was found to be the most important sources of various nutrients.

국내산 및 중국산 도토리 가루의 성분분석에 관한 연구 (Comparative Studies for Component Analysis in Acorn Powders from Korea and China)

  • This study was examined the chemical components and total phenol content in acorn powders of Korea and China. Korea acorn powder produced from consists of 6.85% crude protein, 3.57% crude fat and 3.33% crude ash. China acorn powder consists of 1.83% crude protein, 0.41% crude fat and 0.40% crude ash. The composition of unsaturated fatty acid of Korea acorn powder was slightly lower than China acorn powder, but there was no significant difference. The amino acid content of Korea acorn powder was higher than that of China acorn powder. Total phenol content of that Korea acorn powder was 20 mg/g, and that China acorn powder was 3.2 mg/g.

  • To investigate constituents of Lentinus edodes grown on various, quantitative analyses of ash, crude protein, crude fiber, crude fat, water, nonsoluble nitrogen of the mushrooms were carried out by ordinary methods. The crude fat of the mushroom grown on chestnut tree(1.82%) was greater than that grown on oak (0.76%) or alder (1.17%) tree. The crude fiber of the mushroom grown on oak tree (12.50%) was greater than those grown on alder and chestnut trees, 9.85% and 8.52%, respectively. The crude protein, ash, nonsoluble nitrogen and water contents of the mushrooms grown on the three different trees were similar.

저지방 프레스햄의 제조와 품질특성에 관한 연구 (Studies on Preparation of Low-Fat Press Ham and Its Quality Properties during Storage)

  • This study was conducted to investigate the possibility for low fat press ham which was made without fat added. Four kinds of press ham were prepared ; Apork 70%, fat 0% ; low fat press ham), B(pork 60%, fat 10%), C(pork 55%, fat 15%) and D(pork 50%, fat 20%). The press ham samples were stored at 4$\pm$2$^{\circ}C$. The physic chemical properties of press hams were analyzed during storage 60 days at 4$^{\circ}C$. The contents of moisture(71.3%) and crude protein (23.4%) of low press ham were higher than those of other products, and crude fat content (2.8%) was remarkably lower(p<0.5). The water holding capacity of press ham was higher than other products. Hunter's L(61.6) and b-value(5.9) of low fat press ham were lower than other products, but a-value(11.7) was higher. Hardness (70.2 dyne/cm), springiness(85%), chewiness(0.49kg), gumminess (2.0kg) and brittleness (0.7kg) of low fat press ham were higher than those of other products, but cohesiveness was lower than D product. Aroma and texture of low fat press ham were inferior to other, but taste and palatability of that were superor.

미나리의 단백질의 및 아미노산 조성 (Protein and Amino Acid Composition of Water Cress Oenanthe stolonifera DC)

  • This study was attempted to compare the nutritive value of leaf with stem of the water cress Oenanthe stolonifera DC. in order to improve the eating habits and as a part of studying on the effective curing nutrients for the damaged liver. The contents of moisture crude proteinon the effective curing nutrients for the damaged liver. The contents of moisture crude protein crude fat and crude ash were 90.40% 2.85%, 0.42% and 0.74% in leaf while the contents of moisture crude protein crude fat and crude ash were 95.15% 0.77% 0.09%, and 0.64% of moisture crude protein crude fat and crude ash were 95.15% 0.77% 0.09% and 0.64% in stem respectively. The quantitative fractionation of proteini of both leaf and stem ranked albumin the highest content followed globulin prolamin and glutelin in order. It has been sh-own by SDS-polyacrylamide gel electrophoresis that water extractable protein of leaf 11 bands but those of stem were not detected. The scope of molecular weight for the main protein of water extractable protein of leaf was between 34.700 and 45,000. The amounts of extractive-nitrogen from leaf and stem of the water cress were 241.02mg% and 271.67mg% respec-tively. The amounts of free amino acid-nitrogen from the leaf and stem were 89.02mg% and 32.02mg% respectively. In free amino acid-nitrogen from the leaf and stem were 89.02mg% and 32.02mg% respectively. In free amino acid composition of both leaf and stem the major components were aspartic acid and glutamic acid. In total amino acid composition of water cress leaf aspartic and glutamic acid were the major components. Whereas alanine and thr-eonine were the major components in stem The assessment of water cress leaf and stem with chemical score. EAAl Rl showed that the values of stem were lower tendancy than those of leaf. Limiting amino acid of leaf was tryptophan while that of stem was lysine.

Treadmill 운동과 DNA 및 칡 Catechin 섭취가 흰쥐 생체내 지방조성과 항산화 활성에 미치는 영향 (Effect of the Treadmill Exercise and the Intake of DNA and Crude Catechin (from Puerariae thunbergiana Roots) on the Body Fat Composition and the Antioxidant Activity in Rats)

  • 본 연구는 운동부하와 DNA 및 칡 crude catechin의 급여에 의한 생체내 성분 변화를 알아보기 위하여 흰쥐를 대조군, 운동부하군, 운동부하+DNA 및 운동부하+DNA+crude catechin 첨가군으로 나누어 사육하였다. 각각 0.4% DNA와 0.1% 칡crude catechins을 해당 횐쥐에 급식시켰으며, 운동부하군은 Treadmill에서 20 m/min의 속도로 6주 동안 운동시켰다. 사육실험종료 후 체중 증체량과 체지방무게를 먼저 칭량한 후, 항산화활성과 체지방조성을 kit assay를 이용하여 측정하였다. 6주후 각 군간의 최종 체중에는 유의적인 차이가 없었으나 간장, 부고환주위지방 및 신장주위지방은 운동부하군, 운동부하+DNA 첨가군 및 운동부하+DNA+crude catechin 첨가군이 대조군에 비해 유의하게 낮은 값(p<0.05)을 나타냈다. 또, 혈중 phospholipid, cholesterol 및 triglyceride농도는 운동부하군, 운동부하+DNA 첨가군 및 운동부하+DNA+crude catechin 첨가군이 대조군에 비해 유의하게 낮았으나(p<0.05), HDL-cholesterol은 유의하게 높은 값을 나타냈다. GPT 활성은 각 군간에 유의차가 없었으나, GOT활성은 운동부하를 처리한 군에서 적은 수치를 나타냈으며, TBA가는 각 군간에 유의 차가 없었다. 또, 혈중 NEFA 수준은 운동부하+DNA+crude catechin 첨가군이 대조군에 비해 유의하게 높은 값을 나타냈다.(p<0.05). 이상의 실험에서 운동과 더불어 crude catechin 섭취가 유의한 차이를 나타내지는 않았지만 혈청지질의 성분의 향상에 보조역할을 할 것으로 사료된다.
