제주도내 6개부락 공동목장 야초지에 대한 방목기의 건물수량 , 일반조성분 및 식생구성율의 변화 (Changes in Dry Matter Yield , Chemical Composition , Botanical Composition of Native Pasture during the Grazing Period at Six Co-operative Village Farms Situated)

  • 濟州道內 6個部落 共同牧場 野草地를 對象으로 野草의 生産性과 植生比率이 家畜 增體에 미치는 效果를 究明하기 위해 1981년 5월부터 동년 11월까지 調査, 分析한 結果는 다음과 같다. 1. 乾物收量은 7月收穫보다 10月收穫에서 2培二上 높았으며 모든 牧場이 같은 趨勢였다. 2. 野草의 祖蛋白質 含量은 7월보다 10월에서 낮았으며 粗纖維는 그 반대였다. 3. 牧場別로 볼 때 1일 增體量이 높은 河源과 海安牧場이 野草의 組蛋白質 含量이 가장 높았고 增體率이 제일 낮은 吾羅牧場에서 組蛋白質 含量이 낮았다. 4. 本 野草地에 分包된 全植生中 잔디가 56.61%로서 가장 높았으며 그 다음은 고사리 16.44%, 억새 3.76% 순위였다. 科別로는 禾本科가 72.08%. 登科 1.81% 고사리과 16.49%, 기타 9.62%였다. 5. 1일 增體率이 높은 河源牧場은 禾本科와 登科의 比率이 높았고 增體率이 낮은 吾羅와 龍崗牧場은 독생이 있는 고사리 比率이 높은 것으로 나타났다.

대추 품종별 영양성분 및 생리활성 분석 (Nutritional Compositions and Physiochemical Properties of Domestic Jujube (Zizyphus jujube Miller) Varieties)

  • This study investigated the nutritional compositions and physiochemical properties of three domestically cultivated jujube fruits (Boeun, Sangwhang, and Bokjo). Nutrient contents were analyzed by freeze-drying the jujube fruits. The results showed that the proximate compositions of the three jujube cultivars ranged from 7.85~13.52% for moisture, 4.65~5.24% for crude protein, 1.29~2.38% for crude ash, 0.17~1.09% for crude lipid, and 7.66~16.63% for crude fiber. The above proximate contents of jujube cultivars were significantly different. Mineral contents of Al, Fe, Mg, Ca, Na, and K in the three jujube fruits were also determined. Mn, Cu and Zn were not detected in any of the varieties. The content of Al was higher in Sangwhang, while Boeun had higher contents of Ca and K. The total polyphenol, ABTS values, and hypoglycemic effect were slightly higher in Boeun as compared to the other varieties. Taken together, Boeun could be an important source of natural antioxidant as a functional food.

작두콩 첨가 된장의 이화학적 특성 (Physicochemical Characteristics of Soybean Pastes Containing Sword Bean)

  • 작두콩 된장의 품질특성을 알아보기 위해 재래식 방법으로 제조한 된장에 작두콩을 8.0% 첨가한 된장(J2)과 재래식 쌀 된장에 작두콩을 6.0% 첨가한 된장(J4)을 제조하여 시판된장(K1-K6) 및 일반 재래 된장(J1, J3)과의 시험분석을 하였다. 수분, 회분 등 일반성분결과, 시료간 차이는 없었으나, 조단백질 함량과 protease 활성은 다른 시료에 비해 콩함량이 높은 J1과 J2가 높게 나타났으며, amylase 활성과 환원당 함량은 쌀을 첨가하여 제조한 J3과 J4가 다른 시료보다 높게 나타났다. 또한 아미노태 질소 함량은 시판된장인 K5와 K6에서 각각 668.34mg%와 642.64mg% 함량을 나타내어 다른 시료보다 높게 측정되었으며, 색도는 시료간에 유의적인 차이가 있었으며 작두콩 첨가가 색도에 큰 영향을 미치지는 않았다.

부산 태종대 굴통머리 미역(Undaria pinnatifida)의 화학적 특성 및 항산화 효과 (Chemical Characteristics and Antioxidant Effects of Sea Mustard Undaria pinnatifida from the Gultongmeori Area, Taejongdae, Busan)

  • We investigated the nutritional characteristics and antioxidant effects of sea mustard Undaria pinnatifida fractions from Gultongmeori in Taejongdae, Youngdo, Busan. Based on dry weight, the moisture, crude protein, crude lipid, crude ash, and crude fiber contents were 34.98%, 11.55%, 0.43%, 17.82%, and 3.45%, respectively. To evaluate the antioxidant effect, we used radical scavenging (DPPH and ABTS), reactive oxygen species (ROS) production measurement, and DNA oxidation assays. Total flavonoid and phenol contents were higher in the n-hexane fraction than in other fractions. The n-hexane fraction was more effective at scavenging free radicals than other fractions as assessed using DPPH and ABTS assays (P<0.05). The ROS production assay showed that all sea mustard fractions decreased H2O2 induced cellular ROS production compared to that seen in the control (P<0.05); however, the n-hexane fraction reduced cellular ROS production to a greater extent than the other fractions. Furthermore, the n-hexane fraction from Gultongmeori significantly inhibited genomic DNA oxidation. These results indicate that the antioxidant effect of sea mustard is associated with its high flavonoid and phenol content. This study proposes that processed food products supplemented with sea mustard can be developed as functional foods to promote health in the local population.

도라지 분말이 설기떡의 일반성분 및 품질특성에 미치는 영향 (Effects of Roots Powder of Balloonflowers on General Composition and Quality Characteristics of Sulgidduk)

  • The general composition like moisture content, and the physical and sensory characteristics of the steamed rice cake added with powder of roots of balloonflowers were as follows. The moisture content in the roots was 4.13${\pm}$0.01%, crude protein 9.24${\pm}$0.11%, crude fat 3.07${\pm}$0.04%, crude fiber 33.82${\pm}$0.01%, and crude ash 8.16${\pm}$0.02%. The moisture content of the cake was decreased with increase of the root’s powder added. In physical characteristic, the hardness of the cake was increased with increase of the powder. The control cake was the highest in the cohesiveness. The springiness tended to be increased with increase of the powder. The gumminess was higher with increase of the powder, being 530.33% in the control and 284.44% in the sample with 12.0% powder added. The adhesiveness was decreased with increase of the powder. The color change was significantly decreased with increase of the powder. With increase of the powder, the value a was decreased, while the value b showed to be increased. In a sensory test, the favorite degree to color, flavor, bitter taste, moistness, soft-ness and overall acceptability was measured to get the follow result. To color, the lot with 6% of the balloonflower powder added showed the highest accept-ability with the same highest result also to flavor and bitter taste. The moistness and the softness were revealed as the highest at the control, and the chewiness was also highest at the lot with 3% of the powder added. The overall acceptability was highest as 5.75 at the lot with 6% of the powder added, coming out to be higher in order of the 3% added-lot, the control, the 9%-lot and the 12%-lot.

강일옥 옥수수의 영양성분, 카로티노이드 함량분석 및 생리활성 평가 (Assessment of Nutritional Components, Carotenoid Content and Physiological Activity of Maize Hybrid for Grain 'Kangilok')

  • 본 연구는 마치종 황색 알곡 품종으로 등록된 강일옥 옥수수 알곡의 처리별 시료 및 속대의 일반성분, 생리활성 검정, 색소 함량을 분석하여 기초자료로 제공하고자 수행되었다. 강일옥 옥수수를 알곡, 거피된 알곡, 알곡 껍질 및 속대로 분리하여 일반성분 분석 결과, 수분함량은 거피된 알곡이 12.04%로 가장 높았고 알곡 껍질의 조회분, 조지방, 조단백질 함량은 각각 3.19%, 8.59%, 12.01%로 강일옥 옥수수 처리별 시료 중 가장 높은 함량을 나타내었다. 강일옥 옥수수 처리별 시료의 무기성분 함량을 분석한 결과, 칼슘, 칼륨, 마그네슘, 철, 망간 및 인의 6종이 검출되었으며 공통적으로 검출된 주요 무기성분은 칼륨과 인이었다. 강일옥 옥수수 속대의 칼륨 함량이 114.33 mg/100 g으로 가장 높았으며 알곡 껍질의 인 함량이 2412.40 mg/100 g으로 가장 높게 측정되었다. 강일옥 옥수수 처리별 시료의 항산화 활성 검정 결과, 강일옥 옥수수 속대 추출물의 DPPH radical 소거능은 93.05%, ABTS radical 소거능은 79.88%로 처리별 시료 중 가장 높게 측정되었으며 알곡, 거피된 알곡 및 알곡껍질 추출물의 DPPH 소거능은 모두 70% 이상으로 우수한 항산화활성을 나타내었다. 강일옥 옥수수 처리별 시료의 항염 활성 검정 결과, 강일옥 옥수수 처리별 시료 추출물은 Raw264.7 대식세포의 생존율에 영향을 미치지 않은 것으로 나타났으며 NO 생성량은 모든 시료 처리군에서 LPS 단독 처리군(con(+))에 비하여 유의적으로 NO 생성을 억제 하는 것으로 나타났다. 강일옥 옥수수 처리별 건조분말시료의 카로티노이드 색소 함량을 분석한 결과, 모든 시료에서 ${\beta}$-carotene은 검출되지 않았고, lutein과 zeaxantin은 알곡과 알곡 껍질에서 검출되었으며 거피된 알곡과 속대에서는 검출되지 않았다. 강일옥 옥수수 알곡의 lutein과 zeaxantin의 함량은 각각 $115.30{\mu}g$/100 g, $50.92{\mu}g$/100 g이었으며 알곡껍질의 lutein과 zeaxantin의 함량은 각각 $37.98{\mu}g$/100 g, $19.27{\mu}g$/100 g이었다.

Shrimp By-product Feeding and Growth Performance of Growing Pigs Kept on Small Holdings in Central Vietnam

  • The effect studied was that of the feeding of shrimp by-product meal, as a source of eicosapentaenoic and docosahexaenoic acid, on growth performance and fatty acid composition of adipose tissue in growing pigs kept on small holdings in Central Vietnam. Shrimp by-product meal was exchanged with ruminant meal so that the diets contained either 0, 10 or 20% shrimp byproduct meal in the dry matter. The diets were fed on 6 different small-holder farms. The farmers fed a base diet according to their personal choice, but were instructed as to the use of shrimp by-product and ruminant meal. The diets were fed to the pigs from 70 to 126 days of age. There were three animals per treatment group per farm. The diets without and with 20% shrimp by-product meal on average contained 0.01 and 0.14 g docosahexaenoic acid/MJ of metabolisable energy (ME). Due to the higher contents of ash and crude fiber, the shrimp by-product meal containing diets had lower energy densities than the control diets. Eicosapentaenoic acid was not detectable in adipose tissue; the content of docosahexaenoic acid was generally increased after consumption of shrimp by-product meal. In spite of the concurrent high intakes of ash and crude fiber, the feeding of shrimp by-product meal had a general stimulatory effect on growth performance of the growing pigs. The intake of docosahexaenoic acid or its content in adipose tissue was not related with average daily gain. It is suggested that shrimp by-product meal may contain an unknown growth enhancing factor.

Nutritional Value of Rice Bran Fermented by Bacillus amyloliquefaciens and Humic Substances and Its Utilization as a Feed Ingredient for Broiler Chickens

  • An experiment was conducted to increase the quality of rice bran by fermentation using Bacillus amyloliquefaciens and humic substances and its utilization as a feed ingredient for broiler chickens. The experiment was carried out in two steps. First, the fermentation process was done using a completely randomized design in factorial with 16 treatments: i) Dosage of B.amyloliquefaciens ($2.10^8cfu/g$), 10 and 20 g/kg; ii) Graded levels of humic substances, 0, 100, 200, and 400 ppm; iii) Length of fermentation, three and five days. The results showed that the fermentation significantly (p<0.05) reduced crude fiber content. The recommended conditions for fermentation of rice bran: 20 g/kg dosage of inoculums B. amyloliquefaciens, 100 ppm level of humic substances and three days fermentation period. The second step was a feeding trial to evaluate the fermented rice bran (FRB) as a feed ingredient for broiler chickens. Three hundred and seventy-five one-day-old broiler chicks were randomly assigned into five treatment diets. Arrangement of the diets as follows: 0%, 5%, 10%, 15%, and 20% level of FRB and the diets formulation based on equal amounts of energy and protein. The results showed that 15% inclusion of FRB in the diet provided the best bodyweight gain and feed conversion ratio (FCR) values. In conclusion, the nutrient content of rice bran improved after fermentation and the utilization of FRB as a feed ingredient for broiler chickens could be included up to 15% of the broiler diet.

Validation of Prediction Equations of Energy Values of a Single Ingredient or Their Combinations in Male Broilers

  • A set of prediction equations to estimate the nitrogen-corrected apparent metabolizable energy (AMEn) of individual ingredients and diets used in the poultry feed industry was evaluated. The AMEn values of three energy ingredients (maize, sorghum and defatted maize germ meal), four protein ingredients (soybean meal, maize gluten meal 60% crude protein, integral micronized soy and roasted whole soybean) and four diets (three containing four feedstuffs, complex diets, and one containing only corn-soybean meal, basal diet) were determined using a metabolism assay with male broilers from 1 to 7, 8 to 21, 22 to 35, and 36 to 42 days old. These values were compared to the AMEn values presented in the tables of energy composition or estimated by equation predictions based on chemical composition data of feedstuffs. In general, the equation predictions more precisely estimated the AMEn of feedstuffs when compared to the tables of energy composition. The equation AMEn (dry matter [DM] basis) = 4,164.187+51.006 ether extract (% in DM basis)-197.663 ash-35.689 crude fiber (% in DM basis)-20.593 neutral detergent fiber (% in DM basis) ($R^2=0.75$) was the most applicable for the prediction of the energy values of feedstuffs and diets used in the poultry feed industry.

Estimating Apparent Nutrient Digestibility of Diets Containing Leucaena leucocephala or Moringa oleifera Leaf Meals for Growing Rabbits by Two Methods

  • This study aimed to evaluate the nutrient digestibility of growing rabbits fed diets with different levels of either Leucaena leucocephala (LLM) or Moringa oleifera (MOLM) leaf meals and also to compare total collection and $TiO_2$ marker methods for estimating digestibility. A total of 30 California growing rabbits ($1.81{\pm}0.19kg$ live weight on average) were randomly distributed into five experimental groups of six rabbits each and were housed in individual cages. The groups were control, 30% LLM, 40% LLM, 30% MOLM, and 40% MOLM. All groups received pelleted diets for two weeks; diets also contained 4 g/kg titanium dioxide as dietary marker. Daily feed intake was recorded during the whole experimental period and total feces were collected daily and weighed individually during four days. The results showed that there were no difference (p>0.05) in feed, dry matter (DM), organic matter (OM), crude protein (CP), digestible energy, and crude fiber (CF) intake between the control group and the other experimental groups. The apparent digestibility values of DM, OM, CP, CF, acid detergent fiber, and gross energy were the highest for control group (p = 0.001), meanwhile MOLM diets had generally higher nutrient digestibility coefficients than LLM diets. Increasing the inclusion level of leaf meal in the diet from 30% to 40% improved the digestibility of CF from 45.02% to 51.69% for LLM and from 48.11% to 55.89% for MOLM. Similar results for apparent nutrient digestibility coefficients were obtained when either total collection or indigestible marker method was used. In conclusion, the digestibility of MOLM containing diets were better than LLM diets, furthermore $TiO_2$ as an external marker could be used as a simple, practical and reliable method to estimate nutrients digestibility in rabbit diets.
