  • Today, wastes of much quantity by fast industrialization and increase in population, population concentration etc. of modem society are increasing. Much oyster shell is breeding by character and conduct of oyster-industry for a long time among them. Oyster shell which breed by-product in oyster cultivating industry that specific gravity of domestic seashore cultivating industry is high is causing environmental problem by problem and so on hindrance, nature spectacle's waste and health hygiene on administration if it is pollution of district along the coast fishing ground, number of public ownership being stored in open area in seashore. About new material just-in-time through recycling and he of oyster shell by these problem wide that study. Go forward more and investigate special quality that is oyster shell's physical chemistry red in this research and oyster shell oyster shell which cause several environmental problems developing ability agricultural chemicals that use this encapsulating micro by ability carrier that is environmentally application possibility examine wish to.

굴젓의 정미성분(呈味成分) ( I ) -굴젓숙성중(熟成中)의 유리(遊離)아미노산(酸)의 변화(變化)- (The Taste Compounds of Fermented Oyster, Crassostrea gigas ( I ) -Changes of Free Amino Acids during the Fermentation of Oyster-)

  • Changes of free amino acids as taste compounds during the fermentation of oyster were analyzed by amino acid autoanalyzer. In fresh oyster, taurine, glutamic acid and alanine were abundant amino acids and the amounts of taurine (731mg%, on moisture and salt free base), glutamic acid (365mg%) and alanine (345.4mg% ) were 63.8% of the total free amino acids. Cystine, isoleucine, phenylalanine, leucine and histidine were detected as less abundant free amino acids and the amount of those amino. acids ranged from 5. 5mg% (cystine) to 32.9mg% (histidine). The free amino acids analyzed in this experiment were not changed in composition hut changed in amounts during 124 days of fermentation. Aspartic acid and leucine were continually increased during 124 days of fermentation. Lysine, histidine, threonine, serine, glutamic acid, tyrosine and phenyalanine were increased unlit 68 days of fermentation and than decreased gradually. The increase of arginine, glycine, valine and isoleucine were fluctuated. Taurine were dramatically decreased during the 124 days of fermentation. It is believed that glutamic acid, alanine, lecuine, serine, Iysine and threonine play an important role as taste compounds in fermented oyster because those amino acids were most abundant in fermented oyster.

  • Studies on detoxification of Paralytic Shellfish Poison (PSP)-infested oyster, Crassostrea gigas were carried out using available processing resources. Changes of paralytic shellfish toxin components and specific toxicity during canning process were also investigated with high performance liquid chromatography (HPLC). Toxic oysters collected at Hachong in Koje Bay were used for experimental samples. The toxicity of oysters with range of 185-778 ug/100g was reduced below the quarantine limit of 80 ug/100g or not detected level by the mouse bioassay after canning process. The mole $\%$ of toxin components in the shucked oyster was in the order of 25.1 mole $\%$ of gonyautoxin 1, 19.2 mole $\%$ of gonyautoxin 3, 17.2 mole $\%$ of gonyautoxin 4 and 14.6 mole $\%$ of gonyautoxin 2. This sample had tracing amounts of Cl, C2, saxitoxin and neosaxitoxin. In the case of specific toxicity, the major toxins were consisted of gonyautoxin 1-4. The sum of gonyautoxin 1, 2, 3 and 4 was 80% of total toxicity of oyster. Saxitoxin and decarbamoylsaxitoxin were the more thermostable than any other toxin components.

전기분해 해수의 활어패류 살균 효과 (Germicidal Effect of Electrolyzed Seawater on Live Fish and Shellfish)

  • To secure the biological safety of live fish and shellfish for raw consumption, the germicidal effects of electrolyzed seawater were evaluated. Upon direct exposure to electrolyzed seawater, coliform group bacteria were killed and decreased to undetectable levels after 1 day. The physicochemical characteristics of the seawater were stable during the test period. A byproduct of chlorine disinfection, trihalomethane, was not generated by the electrolysis of seawater. Vibrio parahaemolyticus infection in a live fish was effectively resolved by electrolyzed seawater and became undetectable after 12-36 h of treatment. Bioaccumulation of coliform group and fecal coliform bacteria in live oysters Crassostrea gigas was removed within 18 h of treatment. This study demonstrated that electrolyzed seawater is an effective and safe germicidal agent for the traditional retail market and can help to prevent outbreaks of foodborne disease associated with the consumption of raw fish and shellfish.

충무연안의 Vibrio parahaemolyticus와 V. alginolyticus의 분포 (DISTRIBUTION OF VIBRIO PARAHAEMOLYTICUS AND V. ALGINOLYTICUS IN THE COAST OF CHUNG-MU)

  • 충무연안의 한실포에서 인평포에 이르는 굴${\cdot}$홍합 양식장(Fig.1)을 중심으로 1975년 7월부터 1976년 9월까지 매월, 해수, 이토, 굴 및 담치에서 V.parahaemolyticus와 V. alginolyticus의 분포를 조사한 결과를 요약하면 다음과 같다. 1. 해수, 이토, 굴 및 담치, 420개 시료에서 parahaemolyticus 51균주와 V. alginolyticus 160 균주를 분리하였다. 2. 월별분리율은 7월-9월에 가장 높았다. 3. 시료별 parahaemolyticus의 분리율은 이토$(28\%)$, 해수$(24\%)$, 담치$(5\%)$ 및 굴$(4.2\%)$의 순이였다. 4. 조사지점별 분리율은 station 1 과 5가 다른 조사지점에 비해 가장 높았다. 5. 분리된 211 균주의 형태적 생리적 생화학적성상은 전형적인 parahaemolyticus 및 V. alginolyticus와 및 일치하였다.

굴에 기생하는 Amoeba에 대하여 (AMOEBA INFECTION IN OYSTER (CRASSOSTREA GIGAS))

  • 거제만의 수하식 양식굴에서 난소의 이상발육과 팽융된 부분이 관찰되었다. 1978년 $9\~10$월과 1979년 10월에 조사한 결과는 다음과 같다. 1) 7개지점중 화도와 송구에서만 $6.3\~13.3\%$ 검출 되었다. 2) amoeba에 기생된 굴의 무게는 $6.2\~7.0g$이다. 3) 기생된 굴은 수심에 관계없이 상${\cdot}$${\cdot}$하층에서 다 검출되었다. 4) 난세포에서만 검출되며 amoeba의 크기는 $3\~23\mu$이다. 5) 난세포내에는 $1\~3$개체의 amoeba가 가장 많이 검출되었다. 6) amoeba는 PAS 염색 e양성이며 Eosin에 잘 염색된다. 7) amoeba의 형태와 성상이 Swayer가 보고한 Acanthamoeba sp.와 유사했다. 8) 순수배양하여 형태변화를 봐 고정하고저 한다.

Changes in the Free Amino Acid Content of the Shucked Oyster Crassostrea gigas Stored in Salt Water at 3℃

  • Shucked oysters were soaked in an equal weight of salt water and stored at $3^{\circ}C$ for 7 days. Changes in the free amino acid content of the whole body and in the adductor muscle were evaluated by a practical distribution method. With the exception of aspartic acid and tyrosine, no significant changes in free amino acids or ammonia were observed in whole-body shucked oysters during the storage period. In contrast, the majority of free amino acids in the adductor muscle decreased significantly. Most of these free amino acids were detected in considerable amounts in the surrounding salt water after 7 days of storage. Both the weight of the whole body and the salinity of the surrounding salt water decreased significantly during the storage period. These results suggest that free amino acids were eluted from the cutting surface of the adductor muscle and indicate that the free amino acid content per shucked oyster and in the adductor muscle, decreases during cold storage.

  • 본 실험에서는 상품화된 단백질 분해효소를 이용한 굴 및 홍합에 대한 최적 가수분해 조건에 대하여 조사하였다. 가수분해도, 유리아미노태 질소, 핵산관련물질, 유리아미노산 및 관능검사로 가수분해물들의 특성을 조사한 결과 굴의 경우 MKC-HT proteolytic, alcalase 0.6L 및 thermoase가, 홍합의 경우 acid-fungal protease와 thermoase가 각 가수분해물 제조시 가장 효과적인 단백질 분해효소임을 확인하였다.

Bioaccumulation of Polychlorinated Biphenyls (PCBs) and Organochlorine Pesticides in Manila Clams (Ruditapes philippinarum) Collected from the Mid-western Coast of Korea

  • Bioaccumulation of polychlorinated biphenyls (PCBs) and organochlorine pesticides was studied in sediment dwelling bivalves, Manila clams (Ruditapes philippinarum), collected from the midwestern coast of Korea. As witnessed by the dominance of tetra- to penta-chlorinated congeners in sediments and the penta- to hexa-chlorinated congener dominance in clams, the profile of PCBs in the sediments and Manila clams differed. Lipid and organic carbon-normalized biota-sediment accumulation factors (BSAFs) were determined for organochlorine pesticides. BSAFs of $\beta$-hexachlorocyclohexane ($\beta$-HCH) and $\Sigma$DDTs were in the range of 0.06~1.36 and 0.31~1.06. No clear relationships were found between BSAFs of $\Sigma$DDTs in Manila clams and the concentrations of DDTs in the associated sediment. The accumulated PCBs and organochlorine pesticides were compared in Manila clams and oysters (Crassostrea gigas) collected from 3 sites. Highly chlorinated PCBs were more commonly found in oyster tissues than in clam tissues. The reasons for the different accumulation pattern of organic pollutants in the two organisms are discussed.

동물성 수산식품 중의 Sterol 조성과 Cholesterol ${\Delta}^7$-dehydrogenase의 존재에 관한 연구 (Studies on the Composition of Sterol and the Presence of Cholesterol ${\Delta}^7$-dehydrogenase in Marine Animal Products)

  • Levels of sterols including ${\Delta}^7$-dehydrogenase isolated from the tissues of marine animal products (20 species) were determined on 1.5% OV-17 columm of gas-liquid chromatography. The composition showed that the mussels and clams contained various sterols in their tissues : cholesterol, brassicasterol. 24-methylenecholesterol with some minor components such as 22-trans-norcholesta-5,22-dien-3${\beta}$-ol, 22-cis-dehydrocholesterol, 22-trans-dehydrocholesterol, desmosterol, 7-dehydrocholesterol, campesterol, stigmasterol, ${\beta}$-sitosterol, isofucosterol, and 7-dehydrocholesterol which could be converted into vitamin $D_3$ in the skin tissue of animal was present in the muscle of oyster, Crassostrea gigas. On the other hand, the others including gastropoda were predominantly composed of cholesterol. The minor sterols such as 24-methylenecholesterol, stigmasterol and ${\beta}$-sitosterol in the fish intestines are supposed to be derived from dietary plankton. Cholesterol ${\Delta}^7$-dehydrogenase which could convert cholesterol into ${\Delta}^7$-dehydrogenase was present in the pickles of Tricurus haumela intestine.
