Analysis of Regional Food Specialities Status in Korea during the Japanese colonial period through 『Specialities of Joseon (朝鮮の特産)』 (『조선(朝鮮)の특산(特産)』으로 보는 일제강점기 식품 특산물 현황 분석)

  • This study examined the status of food specialties in Korea during the Japanese colonial period through 『Specialities of Joseon (朝鮮の特産)』. The book recorded a total of 164 areas and 317 specialties, focusing on five railway lines and branch lines on the Gyeongbu, Honam, Gyeongui, Gyeongwon, and Hamgyeong. Among the specialities, 211 species were included, excluding overlapping ones. The food specialties accounted for 100 kinds in 159 regions or 47.4 percent of the specialties. There were 47 food specialties in 47 areas of the Gyeongbu Line, 21 food specialties in 20 areas of the Honam Line, 32 food specialties in 40 areas of the Gyeongui Line, 26 food specialties in 15 areas of the Gyeongwon Line, and 33 food specialties in 42 areas of the Hamgyeong Line. Among the specialties, the amount of fish and their workpiece was overwhelmingly the largest. Next came processed goods of fruits, grains, and vegetables. In modern factories, corn, tomatoes, blueberries, and sardines were made of processed goods. Factories have been constructed for glass noodles, sugar, and soju. Specialities and processed goods produced in each region were brought to Japan during the Japanese colonial period.

Amino Acids Digestibility of Corn Distillers Dries Grains with Solubles in Broiler Chickens (육계에서 옥수수 주정박의 아미노산 소화율 조사)

  • To investigate the effects of dietary substituent of corn distiller's dries grains with solubles (CDDGS) on the amino acid digestibility of broiler diet, twenty four Ross broilers (6-wk-old) were used in this study. Basal diet (CP 19%, ME 3,150 kcal/kg) was formulated on corn-soybean meal and two levels of CDDGS (6 and 12%) were supplemented to basal diet. CDDDS levels (0, 6 and 12%) and 4 different sites of chicken intestines (distal end of jejunum, the middle part of the ileum, the distal end of ileum and the distal end of the rectum) were evaluated factorial as $3{\times}4$ three arrangement. Statistical analysis did not show any significant interaction between dietary treatments and the sites of the intestines in amino acid digestibility (P>0.05). There was no significant difference among the sites of chicken intestines in the digestibility (P<0.05). The digestibility of lysine (essential amino acid) and glycine (non-essential amino acid) decreased at increasing supplementation of CDDGS (P<0.05). There was no significant difference on the digestibility of other amino acids studied. In conclusion, the result of this work showed that CDDGS can use as alternative resources in broiler diets.

Assessment of BiomassProduction and Potential Energy of Major Bioenergy Crops (바이오에너지 작물의 에너지자원으로서 잠재적 가치 평가)

  • To evaluate the potential value of the major bioenergy crops which are wheat, canola, barley, corn, and sweet potato in Korea, we investigated the production of biomass and calorific value of crops, and also compared input and output factors among bioenergy crops during the cultivation period. There was difference between the biomass values in Agricultural and Forestry statistical yearbook(2006) and the one investigated in this experiment, also there was difference in crops and in species. Among the crops investigated, sweet potato(Jinhongmi, Yulmi) was shown the highest amount of biomass production and corn(Gangdaok) was shown the highest amount of the total biomass which is the total aboveground biomass at harvest. Oilseed canola which is presently a major source of bio-diesel had highest calorific value as $6,673{\sim}6,725cal\;g^{-1}$. Wheat and corn grains which are source of bio-ethanol were in the range of $3,879{\sim}4,317cal\;g^{-1}$. Gangdaok(Corn) produce the highest total calorific value in unit cultivating area among the crops as $8,263kcal\;m^{-2}$. Corn was shown that the input and output factors were the highest level among bioenergy crops during cultivation period. Sweet potato also was shown that output factor was the highest level though its input factors were average level. It is needed to be investigated more crops for collecting the higher potential value of bioenergy production further considering small land area and its effective utilization in Korea.

Comparison of Oven-drying Methods for Determination of Moisture Content in Feed Ingredients

  • An accurate assessment of moisture content in feed ingredients is important because moisture influences the nutritional evaluation of feedstuffs. The objective of this study was to evaluate various methods for moisture content determination. In Exp. 1, the weight loss on drying (LOD) of corn, soybean meal (SBM), distillers dried grains with solubles (DDGS), whey permeate, whey powder, spray-dried porcine plasma (SDPP), fish meal, and a mixed diet of these 7 ingredients were measured by oven drying at $135^{\circ}C$ for 2 h. Additionally, the samples were dried at $105^{\circ}C$ for 3, 6, 9, 12, or 15 h. The LOD contents of the DDGS, whey permeate, and whey powder measured by drying at $135^{\circ}C$ for 2 h were greater than the values measured by drying at $105^{\circ}C$ for 3 h (p<0.05). All samples except SDPP (p = 0.70) dried at $105^{\circ}C$ for 6, 9, 12, or 15 h caused more LOD compared with the samples dried for at $105^{\circ}C$ for 3 h (p<0.05). The LOD contents of the individual ingredients were additive when dried at $105^{\circ}C$ regardless of drying time. In Exp. 2, moisture contents of corn, SBM, wheat, whey permeate, whey powder, lactose, and 2 sources of DDGS (DDGS1 and DDGS2) were measured by the Karl Fischer method, oven drying at $135^{\circ}C$ for 2 h, and oven drying at $125^{\circ}C$, $115^{\circ}C$, $105^{\circ}C$, or $95^{\circ}C$ for increasing drying time from 1 to 24 h. Drying samples at $135^{\circ}C$ for 2 h resulted in higher moisture content in whey permeate (7.5% vs 3.0%), whey powder (7.7% vs 3.8%), DDGS1 (11.4% vs 7.5%), and DDGS2 (13.1% vs 8.8%) compared with the Karl Fischer method (p<0.05). Whey permeate and whey powder were considerably darkened as the drying time increased. In conclusion, drying samples at $135^{\circ}C$ for 2 h is not appropriate for determining the moisture content in whey permeate, whey powder, or DDGS as well as the mixed diet containing these ingredients. The oven-drying method at $105^{\circ}C$ for 5 to 6 h appears to be appropriate for whey permeate and whey powder, and at $105^{\circ}C$ for 2 to 3 h for DDGS.

Effect of solid grain media on the mycelial growth of Pleurotus ostreatus and its biofunctional activity (곡물배지가 느타리버섯의 균사배양과 생리활성에 미치는 영향)

  • Effect of solid grain media on the mycelial growth of Pleurotus ostreatus and its biofunctional activities were investigated using seven kinds of grains. Foxtail millet and barley were good for growth of hypha of P. ostreatus. However, growth of the mycelium was very slow in the solid grain media containing wheat, corn and brown rice. Mycelial growth of P. ostreatus according to water content of solid grain media was good at 25% to 30%. Mycelial growth of P. ostreatus according to heating-time and temperature of solid grain media was good for 30 min at $121^{\circ}C$. Anticancer activities against lung cancer cell line of the myceial extracts from P. ostreatus grown on several grain media were strong in the corn, defatted soybean, brown rice, barly and black bean in order. Fibrinolytic activities of the myelial extracts were strong in order defatted soybean, wheat, foxtail millet, barley, brown rice and black bean. The mycelial extracts were showed good antibacterial activities against Pseudomonas aeroginosa and Staphylococcus aureus.

Performance Evaluation of PCR Kits for Detecting Genetically Modified Crop Ingredients (유전자 변형 작물 성분 검출용 PCR Kit의 성능 평가 연구)

  • The different social reflections about the benefits and the potential risks of genetically modified (GM) crops have evolved with .different reactions in different countries. Many countries including Korea are working toward setting down new guidelines. Korea requires companies to label all food that contains more than 3% GM ingredients. One of the rapid and convenient detection methods of GM ingredients is amplification of the introduced DNAs by polymerase chain reaction (PCR). Many PCR kits for this purpose are commercially available. The objective of this study was to evaluate performance of commercialized GM crop detection kits. The results showed that 6 out of 15 kits tested did not meet the requirements even purposed by the manufacturers themselves in terms of stability, reproducibility, and detection limits, suggesting a potential quality control problem in their design stage or production line. The evaluation also suggests that, although the duplex and triplex detection kits allowed unambiguous detection in a single PCR reaction, the monoplex detection kits were the most sensitive to the detection of GM ingredients. The detection limits also differ between soybean and corn. Results from this study will be useful in the development of sound qualitative tracking systems of GM ingredients for monitoring throughout the cultivation of GM crops, their trans-boundary movement, and food production using GM grains as well as for complying with government guidelines associated with GM crops.

Importance of National Crop Productivity in View of CO2 Balance (탄산가스 배출과 국내 작물 생산성의 중요성)

  • Crop production in a country is very crucial not only in a country's crop self-sufficiency, but also in carbon recycle. Crop can capture and store the emitted $CO_2$ by cereal food consumption. However, imported cereal food is not concerned in carbon recycle and this hinders the accurate estimation of carbon recycle. Korea imports major grain products including wheat, corn, soybean, and rice and about 90% of the grain composition consists of carbohydrate, protein and lipid. Carbon portions in carbohydrate, protein and lipid are 45, 53, and 77%, respectively. When the carbon portions are digested and converted into $CO_2$ completely, one ton of rice, wheat, corn, and soybean can release 1.51, 1.63, 1.56, and 1.56 tons of $CO_2$ to the atmopshere, respectively. Based on this premise, the evolved $CO_2$ calculated from imported grains for the last 4 years in Korea was over 21 MT of $CO_2$. This amount is equivalent to 4.8 billion US dollars in the conception of carbon tax. These results suggest that a decrease in a cereal import(i.e, an increase in a country's crop self-sufficiency) can lower $CO_2$ release to the atmosphere.

Migration and Enrichment of Arsenic in Rock-Soil-Crop Plant System in Areas Covered with Black Shale and Slates of Okchon Zone (옥천대 흑색셰일 및 점판암 분포지역 암석-토양-농작물 시스템에서의 As및 관련 원소들의 분산과 이동)

  • The Dukpyung and the Chubu areas were selected to investigate the migration and enrichment of arsenic and other toxic elements in soils and crop plants in areas covered with black shales. Rock and soil samples digested in 4-acid solution (HCI+HNO$_3$+HF+HC1O$_4$) were analyzed fer arsenic and other heavy metals by ICP-AES and ICP-MS, and plant samples by INAA. Mean concentration of As in Okchon black shale is higher than those of both world average values of shale and black shale. Especially high concentration of 23.2 mg/kg As is found in black shale from the Dukpyung area. Mean concentration of As is highly elevated in agricultural soils from the Duk-pyung (28.2 mg/kg) and the Chubu areas (32.6 mg/kg). Arsenic is highly elevated in rice stalks and leaves from the Dukpyung (1.14 mg/kg) and the Chubu areas (1.35 mg/kg). The biological absorption coefficient (BAC) of As in plant species decreases in the order of rice leaves>com leaves>red pepper>soybean leaves=sesame leaves>corn stalks>corn grains.

Effects of Combining Feed Grade Urea and a Slow-release Urea Product on Characteristics of Digestion, Microbial Protein Synthesis and Digestible Energy in Steers Fed Diets with Different Starch:ADF Ratios

  • As a result of the cost of grains, the replacement of grains by co-products (i.e. DDGS) in feedlot diets is a common practice. This change produces diets that contain a lower amount of starch and greater amount of fibre. Hypothetically, combining feed grade urea (U) with slow release urea (Optigen) in this type of diet should elicit a better synchrony between starch (high-rate of digestion) and fibre (low-rate of digestion) promoting a better microbial protein synthesis and ruminal digestion with increasing the digestible energy of the diet. Four cannulated Holstein steers ($213{\pm}4$ kg) were used in a $4{\times}4$ Latin square design to examine the combination of Optigen and U in a finishing diet containing different starch:acid detergent fibre ratios (S:F) on the characteristics of digestive function. Three S:F ratios (3.0, 4.5, and 6.0) were tested using a combination of U (0.80%) and Optigen (1.0%). Additionally, a treatment of 4.5 S:F ratio with urea (0.80% in ration) as the sole source of non-protein nitrogen was used to compare the effect of urea combination at same S:F ratio. The S:F ratio of the diet was manipulated by replacing the corn grain by dried distillers grain with solubles and roughage. Urea combination did not affect ruminal pH. The S:F ratio did not affect ruminal pH at 0 and 2 h post-feeding but, at 4 and 6 h, the ruminal pH decreased as the S:F ratio increased (linear, p<0.05). Ruminal digestion of OM, starch and feed N were not affected by urea combination or S:F ratio. The urea combination did not affect ADF ruminal digestion. ADF ruminal digestion decreased linearly (p = 0.02) as the S:F ratio increased. Compared to the urea treatment (p<0.05) and within the urea combination treatment (quadratic, p<0.01), the flow of microbial nitrogen (MN) to the small intestine and ruminal microbial efficiency were greater for the urea combination at a S:F ratio of 4.5. Irrespective of the S:F ratio, the urea combination improved (2.8%, p = 0.02) postruminal N digestion. As S:F ratio increased, OM digestion increased, but ADF total tract digestion decreased. The combination of urea at 4.5 S:F improved (2%, p = 0.04) the digestible energy (DE) more than expected. Combining urea and Optigen resulted in positive effects on the MN flow and DE of the diet, but apparently these advantages are observed only when there is a certain proportion of starch:ADF in the diet.

Pollen analysis from Osong Archaeological Site, Chungbuk Province: Vegetation and Environmental Implication (충북 청주시 오송지구 유적 발굴지의 화분분석: 색생과 퇴적환경 고찰)

  • Holocene vegetation and climate changes were assumed on the basis of pollen records from Wonpyeong Trench II-3 of the Osong archaeological site, Cheongju, Chungbuk Province, Korea. An organic matter beared in coarse sediments appeared to be low throughout the succession. Although an occurrence of pollen grains is not high, some dominant and principal taxa may indicate vegetation changes response to climate changes in central inland area of the Korean Peninsula. The age determination can be estimated with indirect way by comparing with previous age-controlled pollen studies. It is assumed that the former last glacial conifer forests had been changed into open mixed conifers and deciduous broadleaved forest during the early Holocene period. Warmer and more humid climate conditions, during the mid-Holocene, might have allowed the hardwoods including deciduous- and evergreen-broadleaved trees, and warm-preferring pine tree to flourish. Subsequently, the former forests were replaced by mixed of conifer and deciduous broadleaved forest owing to deterioration of climate conditions during the late Holocene. Human activity is also detected by agricultural indicators, such as buckwheat and large pollen grains comparable to corn, in upper most pollen profile. During this time, the forests in studied area were primarily affected by human disturbance rather than natural environment.
