창원지역 일부 비만아의 식습관과 식행동 및 영양지식에 대한 조사연구 ( 1 ) (A Study Food Habits , Food Behaviors and Nutrition Knowledge among Obese Children in Changwon ( 1 ))

  • The purpose of this study was to obtain basic data of nutrition education for obese children and to examine food habits, food behaviors, and nutrition knowledge. A convenience sample of 84(male:62, female:22) obese children was selected from "98 Children Nutrition Camp". The survey design employed a structured questionnaire. The results of this study were summarized as follows. 1. The percentage of the subjects who overestimated their body weight was higher in female compared to male. Only 35.9% of highly-obese subjects considered them as 'very fat'. The experience of weight control was higher in female than in male, and it was also higher moderately- or highly-obese subjects compared to mildly obese. 2. 64.3% of subjects reported that they regularly eat breakfast. The percentage of the subjects who indicated that they eat at regular meal time or they eat very irregularly was highest in the highly-obese subjects. 3. 34.5% of subjects reported that they eat very fast. The eating speed was slower in female compared to male, and in obese subjects. 55.4% of subjects reported that didn't eating out. 4. 80.9% of subjects had snacks, and most of them had snack between lunch and dinner. The reason the subjects eat snack was hunger. The most favorite snack was cookies. 5. The most preferred and distasteful food was meats(32.1%) and vegetables(67.1%), respectively. 6. The score of food behaviors was relatively low in most subjects. 7. The level of nutrition knowledge was in order of fair(83.1%), poor(9.6%), excellent(7.3%), and was higher in male compared to female. Consequently the results of this study showed to disagreement among food habits, food behaviors and nutrition knowledge, and feel keenly the necessity of education connecting of these. This education had to be practical education to change food behaviors.

성서에 언급된 과실에 관한 연구 (A Study on The Fruits Mentioned in the Bible)

  • This paper is intended to find out what kinds of fruits are mentioned in the Bible and how they were used in those days. It has also analyzed in what terms they are expressed in the Korean Version of the Bible and studied agricultural regulations involved in the religion, and allegorical uses of the fruits. Olives were the primary fruit in the economy of the ancient times, followed by figs and vines. In addition, there are mentioned in the Bible almonds, apples, dates. mulberries and pomegranates. Olive trees have been grown for more than six thousand years. The Hebrew word. Zayit is mentioned in the Bible more than fifty times. Olive trees are not so beautiful in themselves but as they give us humans abundant reap and a lot of oil, they have been thought to be beautiful. Olive trees grow well on the seaside in the salty air and fog. Vines began to grown as early as in the Bronze Age(the period of 3000 to 2000 B.C.). In Northern Greece, grape seeds were found to belong to the year 4500 B.C. or so. The vine gardens produced raisins and wine as well as vines. Figs are the fruit which are first mentioned in the Bible(Genesis 3:7) and they were the precious product of the Palestine people, which is described in Deuteronomy 8:8. Figs are sweet and watery and can easily quench thirst on hot summer days. They were used for cookies and wine in the raw or dried state. An apple, which is tappuah in Hebrew, is mentioned as 'Sagwa' six times in the Revised Korean Version, and in the Korean Joint Version it is twice mentioned as 'Sagwa' and as 'Neungum' four times. In ASV and KJV, 'apple' appears eleven times. which is because' the apple of eye' is translated in the 'Nun-dong-ja(the pupil of the eye)'In the Korean Version. 'Sagwa(apple)'of Proverb 25:11, the Song of Songs 2:3, 2:5, 7:8, 8:5 and Joel 1 :12 have been thought to be doubtful. because apple trees cannot be grown in the areas mentioned in the Bible. Some maintain that the apples in the Bible refer to apricots(Prunus armeniaca, Citrus medica L.) or golden oranges (Citrus sinensis L. Obsbeck) which is confusing. In the Revised Korean Version, 'Salgu(apricots)' appears eight times while ASV and KJV translate almond into 'Salgu'. So since translating a genuine apricot into 'Salgu' can be confusing, a great care should be taken in the translation into Korean. Some hold that as some papyri arround the year 1200 B.C. describes pomegranate, apple, olive and fig trees growing on the Nile delta, tappuah rightly refers to 'Sagwa(apple)' In the Korean Joint Version, Sagwa and Neungum are used together to refer to the same fruit, which should be avoided. It is desirable to use the same word for the same thing. Sagwa' showing up six times In the HeL.Ised Korean Version should all be replaced by 'Neungum' Dates symbolized peace and abundance were used for food in the raw or dried state, and were made into honey. Pomegranates can be eaten in the raw state and be used for sherbets and wine. Juice made of promegranates can be mixed with wine and drunk.

거주지 주변의 식품환경과 비만의 관련성 연구: 2013 전국사업체조사와 2013-2014 국민건강영양조사 자료를 이용하여 (Associations between Exposure to Unhealthy Food Outlets Within Residential District and Obesity: Using Data from 2013 Census on Establishments and 2013-2014 Korea National Health and Nutrition Examination Survey)

  • Objectives: Environmental, social and personal factors influence eating patterns. This study aimed to investigate the relationship between unhealthy food outlets within a residential area and obesity using nationally representative Korean survey data and data from the Census on Establishments. Methods: Data on the food intakes and socioeconomic variables of a total of 9,978 adults aged ${\geq}19$ years were obtained from the 2013-2014 Korea National Health and Nutrition Examination Survey. Geographic locations of restaurants were obtained from the 2013 Census on Establishments in Korea. Administrative area was categorized into tertiles of count of unhealthy food outlets based on the distribution of number of unhealthy food outlets among all urban (Dong) and rural (Eup or Myun) administrative districts in Korea. Multilevel logistic regressions model were used to assess the association between the number of unhealthy food outlets and obesity. Results: People living in the district with the highest count of unhealthy food outlets had higher intakes of fat (45.8 vs. 44.4 g/day), sodium (4,142.6 vs. 3,949.8 mg/day), and vitamin A (753.7 vs. $631.6 {\mu}gRE/day$) compared to those living in the district with the lowest count of unhealthy food outlets. A higher count of unhealthy food outlets was positively associated with frequent consumption of instant noodles, pizza, hamburgers and sandwiches, sweets and sour pork or pork cutlets, fried chicken, snacks, and cookies. Higher exposure to unhealthy food outlets was associated with increased odds of obesity (1st vs. 3rd tertile; OR 1.689; 95% CI 1.098-2.599). Conclusions: A high count of unhealthy food outlets within a residential area is positively associated with the prevalence of obesity in Korea. The results suggest that food environmental factors affects the health outcomes and interventions aiming to restrict the availability of unhealthy food outlets in local neighborhoods may be a useful obesity prevention strategy.

마이크로웨이브 조사를 통한 알러지 저감 밀 오프리의 제과 가공적성 개선 (Enhancement of Cookie Quality by Microwave Treatment of Allergy Reaction-reduced "Ofree" Wheat Flour)

  • 본 연구에서는 알러지 반응 저감의 특성을 가지고 있는 오프리 밀가루를 이용하여 적절한 물리적 방법을 통해 제과적성을 개선시키고자 하였다. 오프리 밀가루는 높은 단백질 및 글루텐 함량을 가지고 있어 쿠키를 제조하였을 때 가공적성이 낮은 특징을 가지고 있다. 밀가루에 대한 마이크로웨이브 조사는 글루텐의 형성에 영향을 미친다는 보고에 따라, 본 연구에서는 오프리 밀가루에 마이크로웨이브 조사를 통해 제과 가공적성을 개선하고자 하였다. 그 결과, 마이크로웨이브조사는 오프리 밀가루의 단백질의 함량 및 글루텐 함량에는 영향을 미치지 않았지만 이를 이용하여 쿠키를 만들었을 때 퍼짐성과 균열정도가 개선되는 것을 확인 할 수 있었다. 이는 마이크로웨이브조사가 글루텐 형성에 영향을 미쳐 반죽점도를 감소시켜 쿠키의 가공적성이 개선되는 것을 확인 할 수 있었다. 하지만 과도한 열처리는 단백질의 변성을 유도하여 오히려 가공적성을 감소시켰고, 이에 따라 사용목적에 따른 적절한 처리조건을 규명하는 것이 필요하다. 따라서 이러한 연구결과를 통해 높은 단백질 및 글루텐함량을 가지고 있는 밀가루를 대상으로 적절한 마이크로웨이브와 같은 물리적 처리를 통해 가공적성을 개선하여 활용도를 높일 수 있을 것으로 예상된다.

  • Objective The purpose of this study was to investigate health and life style of pediatric outpatients who visited the oriental hospital. Methods The study was composed of 363 students from elementary school, middle school and high school who visited the pediatrics department in $\bigcirc\;\bigcirc$ university oriental medicine hospital between 2005 and 2006. Results 1. The group wasconsisted with 56% of male and 44% of female student and for the age distribution, 7.4% were elementary school students, 55.6% were middle school students, and 36.9% were high school students. 2. Usually the eldest child tends to visit hosipital more than the younger ones. 3. More than a half of those students' parent had University education or beyond that. 4. There were more students who had below the level of the height-weight curve than in the higher level. 5. The average study hours of the students were 3.67 hours. An average sleep hours was 6.18 hours. An average exercise hour was 1.16 hours and an average time for watching TV was 1.71 hours. 6. Many students had hard time to concentrate on the studying for a long time. 7. For the question about the reason why they got the poor grade, they answered because of the lower concentration, and they didn't put much effort on the studying. The most they concern about was their grade. 8. Most of the students who visited the clinic said they did not feel refreshed when they woke up in the morning, and, many of them said that they don't feel okay. 9. More than an half of the students wear glasses. 10. More than an half of the students answered that they often catch a cold when the weather changes a lot. 11. A lot of them had some digestive problems. 12. As they getting older, they said they often feel back pain and shoulder pain. 13. Many students felt irritated and got mad easily. Many of them felt bored about their study and stressed out because of their tests and the university entrance exams. 14. Most of the female students answered that they have irregular period or cramps. 15. 21% of them usually skip breakfast. 16. Many students enjoyed snacks. Most of them enjoyed snacks after school. As they go into higher grade, they would like to eat at night especially cookies, bread and fruits. Conclusions Further studies with larger sample size of students will be neededfor accurate results, and it would be better if we can compare the conditions of the students before treatments and after those.

감과육 및 껍질의 유용성분 및 가공이용에 관한 연구 (Studies on Valuable Components and Processing of Persimmon Flesh and Peel)

  • 감과육과 곶감 제조시에 폐기되는 많은 양의 감껍질의 유효성분을 비교 조사하였다. 감껍질은 과육부보다 조단백질, 조지방 및 조회분 함량이 높았으며 그 중 조지방 및 조단백질의 함량이 크게 높았고 가용성 탄닌의 함량은 과육이 다소 높았다. 총당의 함량은 과육부의 함량이 크게 높았으며 구성당의 조성은 껍질부가 과육부보다 glucose와 fructose가 각각 약 절반씩 함유되어 있었으며 sucrose의 함량은 상대적으로 낮게 나타났다. 전아미노산 함량은 껍질부가 과육부보다 높은 함량을 나타내었으나 유리아미노산은 과육부가 껍질부보다 오히려 높았다. 감과육의 주요 지방산은 oleic acid, palmitic acid 및 linoleic acid 였으며 감껍질은 oleic acid, linoleic acid 및 palmltic acid의 순으로 많았으며 특히 불포화지방산의 함량이 높았다. 과육분말 및 껍질분말을 이용하여 당과자를 제조하였으며 $5{\sim}10%$ 첨가할 경우 기호성이 인정되었으며 곶감떡의 경우 감 절편(slice)제품은 $10{\sim}20%$ 첨가시 기호도가 향상되었으나 껍질은 기호도가 낮았다. 감과육분말을 이용하여 개발한 죽제품의 경우 과육 3%외에 쌀가루, 찹쌀가루, 옥수수전분, 탈지분유 등을 첨가하였을 때 기호도가 높게 나타났으나 껍질로서는 죽제품의 개발이 어려웠다.

조선시대 왕실의 소선(素膳) 이용에 관한 연구: 『조선왕조실록』, 『춘관통고』를 이용하여 (A Study on the Use of Soseon in Joseon Dynasty Based on Literature Review: Based on 『The Annals of Joseon Dynasty』, 『Chungwantonggo』)

  • 본 연구는 조선왕실의 기록 문헌을 이용하여 소선 사례의 빈도, 식재료, 상차림 및 조리법 등에 관하여 알아보고자 하였다. 『조선왕조실록』 데이터베이스를 활용하여 조사한 소선 사례는 186개가 나타났다. 의례별 사례 빈도는 흉례가 전체 의례의 61.82%로 가장 많았고, 길례(21.51%), 빈례(11.29%), 가례(5.38%)순으로 나타났다. 소선 사례 횟수는 조선 전기(68.82%)가 조선 후기(31.18%)에 비해 높게 나타났다. 소선 식재료 목록을 살펴본 결과, 곡류는 밀가루, 메밀가루, 점이 있고, 두류는 황대두, 포태, 전시가 있으며, 해조류는 다시마, 김, 미역 등이 있었다. 버섯류는 표고, 석이가 있고 양념류로는 겨자, 참기름, 실임자 등이 있었다. 길례와 흉례의 소선 상차림의 주요 음식은 주식이 밥, 면, 부식류는 탕과 채, 적, 개장, 후식류는 유밀과와 산자, 다식, 정과, 떡, 과일로 나타났다. 주요 음식의 경우 밀가루, 두부, 해조류, 버섯, 잣, 참기름, 꿀 등의 식재료를 이용하여 조리되었다. 특히 두부, 밀가루, 해조류 등은 불교적 내용과 관련하여 문헌에서 언급되었다. 본 연구 결과는 소선이 조선시대로 전승되면서 불교의 영향을 받은 채식 문화의 형태란 것을 보여주며, 조선시대 왕실의례의 불교음식문화 연구를 위한 기초자료로 활용될 수 있을 것으로 기대된다.

초등학생들의 식행동 분석에 따른 어린이 요리책 개발에 관한 연구 - 일부 초등학교 5, 6학년을 중심으로 - (A Study on the Development of Cookbooks for Children Based on the Dietary Behaviors of Elementary School Students - Focused on the 5th and 6th Grades of Elementary School -)

  • 초등학교 아동들의 식습관 개선을 위한 영양 교육용 자료로 어린이용 요리책을 개발하고자 본 연구를 수행하였다. 강원도 일부 초등학교 5, 6학년 학생 90명(남자 45명, 여자 45명)을 대상으로 식행동을 분석한 결과, 아침 식사를 매일 먹는 아동은 48.9%, 아침을 결식하는 이유는 48.9%가 '시간이 없어서'라고 응답하였다. 아침 식사 시 주로 먹는 음식은 한식(67.8%)이었으며, 집에 혼자 있을 때 식사를 해결하는 방법은 42.2%가 '먹고 싶은 것을 만들어 먹는다'고 응답하였다. 간식 섭취 실태를 보면 '하루에 1~2회' 간식을 먹는 아동이 52.2%로 가장 많았고, 주로 먹는 간식의 종류는 과일류(46.6%), 아이스크림류(22.2%), 빵이나 과자(21.1%), 패스트푸드(11.1%)로 조사되었다. 아동들은 전반적으로 채소류를 싫어하고, 육류를 좋아하며, 좋아하는 식품은 비교적 다양한 편인데 반해 싫어하는 식품은 몇 몇 식품에 편중되고 기호가 더 뚜렷하였다. 선호하는 조리법으로는 볶음(27.8%), 튀김(25.6%), 국이나 찌개(21.1%)가 선택되었다. 아동의 96.7%가 최소한 1회 이상의 요리 경험이 있었으며, 요리를 해 본 이유로는 그냥 '요리를 해 보고 싶어서'가 64.4%로 가장 많았다. 지금까지 요리해 본 음식으로는 라면(68.8%), 계란 후라이(53.3%), 볶음밥(37.8%), 샌드위치(18.9%)의 순서로 조사되었다. 이러한 식행동 분석 결과를 토대로 아동을 위한 요리책은 크게 '혼자서 잘해요', '초간단 간식 만들기', '내 솜씨를 뽐내요'의 세 부분으로 나누어 각각 5~6개의 메뉴로 구성하여 개발되었다. 요리책은 조리 과정 사진과 열량 및 영양소 함량, 균형 잡힌 한 끼 식사를 구성하는 방법, 적절한 1인 분량에 대한 정보를 제공하였다. 또한 위생과 안전, 계량 방법, 음식물 쓰레기 분리 및 뒷정리 등 요리 활동에 필요한 기본적인 지식을 습득할 수 있도록 하였다. 개발된 요리책은 아동 스스로 요리 활동에 참여하게 함으로써 결식이나 편식 등의 잘못된 식행동을 개선하고, 올바른 식생활을 영위하는데 필요한 기본적인 영양지식을 제공하는 등 영양 교육 자료로써의 효과가 있을 것으로 기대된다.

일부도시국민학교취학아동의 보건생활에 관한 실태조사연구 (A Study on Health Aspects of Daily Life of Elementary School Children in an Urban Area)

  • This study was carried out for the objectives to collect the basic informations on the health behaviors of the elementary school children in an urban area in Korea. Seven hundred students were drawn to fill in the designed questionnaire which carries variety of Questions on health re-lated behaviors in general, eating habits, disease history, mental health, and sex education. Questionnaire were filled in by their parents. Major findings are as follows: ① 55.7% had habits of washing the hands before eating whereas 59.8% trashing their hands after toilet. The others had no idea of washing hands before eating and after toilet. ② 26,5% had habits of brushing the teeth twice a day 54.7% only once in the morning, and 2.6% once only in the evening. Thus, the idea of prevention from decayed teeth seems to be lacking among the school children. ③ Bathing habits were also inquired to get 40.3% of bathing more than once a week, 43.1% once every two weeks, and the rest of 16.6% once every one to three months. ④ 41.7% keep the regular bedding time whereas 58.3% irregular. Physical exercises were con-ducted by 76.6% on the ground while 23.5% did not practice any physical exercises at all. Of those physical exercises, rope skipping occupied 37.5%, and the other 66.9% consisted of 14 different kinds of individual type physical exercises such as gymnastic exercise. The main reasons for not enjoying exercises were different by sex; boys largely complained the inadequacy and lack of gymnastic facilities and girls felt in short of friends who could join the exercises. ⑤ 31.9% of the school children had been taking not much of food while 28.3% had unbalanced diets. Of these unbalanced diets, meat occupied 33.2% to be the priority to have an order of the following items such as vegetables, bread or noodle, and fishes as next to each. For eating habits, 88.5% take simple snack such as bread (38.4%, cookies, fruits, and candies in order. 25.8% of the children were provided such snacks or their parents regularly. Breakfast was sufficiently taken by 45.0% whereas 8.4% had never sufficiently. As to the lunch, 63.6% had sufficiently while 16.8% insufficiently. 70.6% take breakfast with all family members together and 30.4% separately. Correlation of sufficient taking of breakfast and eating together of tile family member's seems to be significant when we compare 72.5% of sufficient takers who enjoy breakfast together with the family members with 55.6% of insufficient takers who enjoy it with the family. This finding allows the investigator to point out the importance of table circumstances for children's eating. ⑥ The most common disease was catching a cold (38.8%), and the second was stomach trouble to be followed by the frequency of car sickness, headache, and skin infection. Doctors are consulted only by 23.9% when they are sick whereas 59.7% resorted to the drug stores. The lower the educational attainment of the parents, the lower the rate of visiting clinics. ⑦ 36.7% of their parents pointed out the problems of personality guidance as the most difficult thing at home 71.3% of their parents worried about and unsatisfied with their children's personality traits. Of these complains of the parents, impatience stood at the top to be tabulated at 24.1%, and 21.1% indicated narrow-mindedness. In line with this primary socialization at home, the most crucial problem seems to be related with the lack or recognition of the parents'own role when we find only 43.1% of the parents understood the importance of their own role for the home education of children; the latter group attributed tile responsibility of personality formation to the children themselves. ⑧ As to the sex educational aspects, 30.9% of children have ever asked about the physiology of reproduction or sexual matters to their parents, of those parents only 17.0% could give the constructive responses to the inquiries of the children. In companies on with these data, 25.6% recognized their own role in sex education for their own children while the large segments of the parents (51.1%) attributed the responsibility of sex education to tile low level of 38.3% who recognized the importance of sex education in the school curriculum and 25.1% of the parents insisted to wait until they get to know naturally about sex. 38.1% of the parents said they had some knowledge on sex from books while 16.9% through mass media. The next groups had common senses of sex from their own parents, school friends and other sources.

풍기지역 식문화 양상에 관한 연구 (A study on dietary culture in Poongki region)

  • To understand the dietary culture in Poongki region which was established as Kamrokchon of a folk community, the transmission pattern of the traditional dietary life was investigated by questionnaire to 383 housewives, and the results are as follows : 1) Daily diet : Among 65 traditional main dishes of 6 areas including Kyungsangdo, D’cokguk of Kyungsangdo was consumed most frequently, 87%. General consumption rate based on origin of food was 33.3% of Kyungsangdo, 21.2% of Chungchongdo, 13.1% of Kangwondo, 11.9% of Hwanghaedo, 1.1% of Pyungando and Hamkyungdo, respectively. Among 243 traditional minor dishes, Doenjangjjigye and Kochuchang of Kyungsangdo were most consumed as rates of 91.6%, 89.3%, respectively. General consumption rate based on origin was in order of 38.4% of Kyungsangdo, 19.3% of Chungchongdo, 14.9% of Kwangwondo, 10.4% of Hamkyungdo, 8.7% of Hwanghaedo and 8.3% of Pyungando. 2) Special diet : Among 66 traditional D’ocks, Injeolmi of Hamkyungd was consumed most freguently, 58%. General consumption rate based on origin was in order of 26.3% of Hwanghaedo, 17.6% of Kyungsangdo, 16.1% of Kwangwondo, 16.0% of Hamkyungdo, 13.0% of Pyungando and 11.0% of Chungchongdo. Among 27 cookies, Kangjeong of Hamkyungdo was consumed most frequently 46.7%. General consumption rates based on origin was in order of 55.7% of Hamkyungdo, 22.7% of Kyungsangdo, 2.4% of Pyungando, 5.8% of Kwangwondo, 3.0% of Chungchongdo and 0.4% of Hwanghaedo. Among 19 refresh drinks, Kamju of Kyungsangdo was consumed most frequently, 76.0%. General consumption rate based on origin was in order of 74.3% of Kyungsangdo, 7.8% of Chungchongdo, 6.9% of Hamkyungdo, 5.9% of Hwanghaedo and 5.1% of Kwangwondo. 3) Ceremonial diet : Myyeogguk and Baeksulgi for the 100-Days ceremony and Hynbab and Baeksulgi for the First Birthday were used mainly. Cooking ware; Among 95 varieties, Doma and Jangban are used most(62.7%) and Pulmae, Poonju and Budulgori are never used. Nine sorts besides Jeongoltle are used as a rate of less than 1%. About 25% of total subjects were the immigrants from other areas. Some of them were moved in due to Chunggamrok. In conclusion, the usage of the traditional food is thought to be maintained well despite of the rapid change to incustrialized society because the native Kyungsangdo foods are combined with foods from the neighboring Kwangwondo, Chungchongdo and northern area.
