초등학교 1학년 학동들의 구강보건지도활동 지침기준을 위한 조사연구 (Study on the Activity of Oral Health Instruction of First Grade in an Elementary School)

  • This research reached conclusions to prepare indications for activity of Oral health Instruction of the first grade in an elementary school by several items of Oral examination and investigation. 1. The frequency of brushing their teeth of the children that were examined was generally two times a day(64.42%) : it showed that it was the highest after breakfast (30.08%), and hardly any brushed their teeth after lunch(6.36%). 2. Most of the toothbrushes used were for children(97.46%), and the proper time to change their toothbrushes was less than two months(65.25%), but 31.37% of them used their toothbrushes for more than three mouths. 3. They usually used toothpaste. Those using toothpaste were 64.41%. By the way, for adults was the percentage 31.36%, and for those including fluorine it was 74.58%. 4. They mainly ate cookies, beverages, (coke, cider, etc.), fruit, bread, milk and so on for their dessert. 5. Most students had dental plaque (95.76%) : 14.4% of then had calculus and 23.73% had gingivitis. 6. The results of disclosing showed that twelve anterior teeth were colored. The Mandible was comparatively more severe than the Maxillary in the colored -degree. the low -right - laterial incisor was the most severe and the right central incisor was the most severe of the Maxillary. 7. The pressure of tooth - brushing showed that half of the students brushed their teeth severely. The width of the brushing movemtnts was more than 8mm for 51.70%, 5-8mm for 33.05% and less than 5mm for 15.25% Therefore 66.5% of them were shown to move their brushes insufficiently or oppositely. 8. When they brushed, the children who opened their mouth while brushing were more than those who kept their mouth closed.

춘천지역 일부 유치원 원아의 식습관 및 생활습관에 관한 조사 (Eating behavior and life habits of kindergarten children in Chuncheon area)

  • The purpose of this study was to investigate the eating behavior and life habits of kindergarten children 5 to 7 years old in Chuncheon area. This study was conducted in December, 1996. Anthropometric indices(height, weight, skinfold thickness, mid-arm circumference) were measured and body mass index(BMI), Rohrer index, arm fat area were calculated to estimate children’s body fatness. Also the eating behavior and life habits were determined tv using questionnaire method. The results were as follows: Body fat rate of the children was almost normal according to Rohrer index and BMI. There was significant difference in birth weight between male and female. The problems of the eating behavior were frequent skipping breakfast and eating-out. The rate of the children who took snacks 2 times a day was 46.9%. Most children tended to take sweet snacks such as ice-cream, chocolates, cookies, and they tended to prefer meats and fishes to vegetables. The rate of breast feeding was 28.3% and the rate of weaning foods prepared at home was 61.1%. Many children preferred indoor activities such as watching TV, toy furniture play, building block to outdoor activities such as roller-skating, cycling, jogging in their spare time. The rate of the children who took exercise regularly was 15%. Children tended to eat kimbap, fried chicken, ramyeon more frequently in various instant foods. The intake rates of fruit juice and barly tea were relatively high and children's favorite fruits were watermelon and mandarin orange. From this results, skipping breakfast, frequent eating-out and the monotony of food preference appears to cause imbalance in nutrient intakes of the children and to have bad influence on children’s health. Accodgingiy, the comprehensive nutrition education and proper modification program should be needed for the children and their parents to correct the eating behavior and life habits. The reasonable exercise programs are needed to motivate outdoor activities of the children, and the importance of breast feeding and weaning foods should be emphasized to lactating women and pregnant women.

A Study on the Discrimination and the Real State of High Calorie Foods with Low Nutrition Values in Children's Snacks sold within Green Food Zone

  • This study surveys the state of 'children's snacks' sold within the Green Food Zone and that of High Calorie Foods with Low Nutrition Value (HCFLNV). The main purposes are the analyses of foods in accordance to KFDA Program for HCFLNV and an analysis of differences in HCFLNV that are dependent on relevant factors such as food types, school types, origins, the scale of manufacturing company, area and price. Based on the analyses, educational and political implications have been sought that will form nutritious dietary habits, contribute to the prevention of obesity, and improve health in child consumers. The methodologies of this study are literature studies and surveys. The results of this study can be summarized as following. First, the number of children's snacks is 517 items of total 645 gathered within 150 Green Food Zones. Candies are the most popular item, next are cookies, chocolates, and breads. Second, in the real state survey there are 186 HCFLNV (36.0%) among children's snacks sold within Green Food Zone. Based on the survey results, the marking of HCFLNV on the package of children's snacks and the extension of the ban of HCFLNV sales to all stores within the Green Food Zone are strongly suggested. This provides preliminary data related to children's snacks and food safety. With enforcement of the Special Act on the Safety Management of Children's Dietary Life, the rate of HCFLNV has decreased and the child snack product environment in stores has improved. However, it is necessary to supervise low-priced snacks and promote an awareness of HCFLNV along with the child consumer education of food safety is needed.

대구지역 중학생의 고열량.저영양 식품 섭취와 인지도 (Consumption and Perception of High Caloric, Low Nutrient Dense Foods by Middle School Students in Daegu)

  • The purpose of this study was to investigate the consumption and perception of high caloric-low nutrient dense foods in middle school students in the Daegu. Among 550 questionnaires distributed to students in Daegu, 528 (256 boys and 272 girls) were analyzed. A little higher than 80% of students ate snacks everyday, and 43.4%, 29.0%, and 8.1% ate snacks once, twice, and three times or more per day, respectively. Snacks and foods most frequently consumed were ice cream, fried noodles, drinks, cookies, and baked goods. Energy supply from snacks was 104.8~356.9 Kcal/intake while that from meal substitution foods was 520.7~980 Kcal/intake. Students' knowledge score of high caloric-low nutrient dense foods was $6.51{\pm}3.02$ out of 10 points. Sixty percent of students did not read nutrition labels, but 67.9% of them thought that they need nutrition education by nutrition teachers. Students recognized the criteria of high caloric-low nutrient dense foods as well as proper food selection for essential educational items, It was concluded that effective education should be implemented in middle schools by nutrition teachers for students to develop good habits in selecting snacks and foods.

수도권 대학생들의 고급 아이스크림에 대한 구매 성향과 이에 따른 판매 전략 (Purchasing Type and Sale Strategies for High Quality Ice Creams of University Students in Seoul.Kyonggi Area)

  • This study surveyed university students in the Seoul and Kyonggi areas about their purchasing types and sale strategies for high quality ice cream products. The desire to buy new high quality ice cream was "moderate" (35.4%) followed by "quite a lot" (29.4%), showing that the students' interests and their desires for new high quality ice cream items were high. Among things to consider when buying ice cream, 39.2% answered that "taste" was most important, When the subjects were asked if they planned on revisiting an ice cream shop chain. 38.6% answered "quite a lot" or "very much" reflecting that their opinion on the image and service of the ice cream shop chain were very good. As for the influence of seasons on their purchasing of ice cream products, three times more students responded "quite a lot" or "very much" at 51.6% compared to "somewhat little" or "very much" (17.8%), showing that the subjects were responsive to seasonal influences, The subjects were also three times more likely (73.0%) to visit a cafe-type high quality ice cream store chain, Therefore such cafe-type chains are a way to increase sales and to overcome seasonal influences on purchasing. Finally the favorite food to eat with ice cream was cookies (51.3%).

전북 지역 한국 대학생과 중국 유학생의 식행동 및 생활 습관 비교 (Comparison of Dietary Behaviors and Lifestyles of Korean University Students and Chinese International Students in the Jeonbuk Area)

  • The study was conducted to investigate the dietary behaviors and lifestyles of Korean university students and Chinese international students in the Jeonbuk area. Self-administered questionnaires were collected from 241 Korean university students and 198 Chinese international students. Statistical data analysis was completed using SPSS v. 12.0. Breakfast-skipping among subjects was very common, and the most frequently given reason for skipping this meal was 'lack of time'. More than 85% of Korean male students and 75% of Korean female students reported regularly eating lunch in university canteens or restaurants around campus, whereas 86% of Chinese male students and 82% of Chinese female students regularly ate their lunches in university canteens or at home. About 62% of Korean male students, 72% of Korean female students, 48% of Chinese male students, and 70% of Chinese female students responded that they do not regularly eat dinner, the main reasons cited for this being 'irregularity of lifestyle' and 'part-time work'. Snack intake by the subjects was high. Beverages were the snack item most frequently consumed by Korean and Chinese male students, whereas cookies and fruits were most frequently consumed by Korean and Chinese female students. About 28% of Korean male students and 44% of Chinese male students were smokers, respectively. Half of Chinese female students drank alcohol once or twice a week. About 42% of Korean male students and 65% of Chinese male students played sports, respectively. Dietary behaviors and lifestyles of Korean and Chinese students tended to be very similar. Chinese students performed more health-oriented activities in comparison to Korean students. In conclusion, a practical and foreigner-friendly nutritional education program should be devised in order to correct the dietary behaviors and health-related lifestyles of Korean and Chinese students.

초등학교 6학년 아동을 대상으로 한 영양표시 교육의 효과 평가 (Assessment of Nutrition Label Education in Sixth Grade Elementary School Students)

  • This study was conducted to assess the effects of nutrition label education in children. The students of three randomly selected sixth-grade classes at an elementary school participated, were classified into a control group, an indirect (written message to parents) education group, and a direct (teaching children) education group. Nutrition label education was conducted in the latter two groups but not in the control group. There were no significant differences between pretest and posttest scores for nutrition knowledge or in the dietary attitudes of the control group and indirect education group. Improvements in test scores for nutrition knowledge and dietary attitudes were observed only in the direct education group. There were significant positive changes in the indirect and direct education groups, such as selecting snacks (cookies) by considering the fat content. Moreover, after the lessons, the percentage of children who chose white milk (regular milk, calcium-enriched milk, and low-fat milk) significantly increased in the direct education group. This study suggests that conducting nutrition label education helps children improve their nutrition knowledge and leads to positive changes in dietary attitudes and eating behaviors. In particular, a direct nutrition education method is more effective than an indirect method such as a written message to parents. Therefore, it is suggested that systematic and constant 'nutrition label education' be performed by nutrition teachers in elementary schools to establish healthy eating habits based on choosing nutritious snacks and processed foods.

인삼 잎(Ginseng leaf)을 첨가한 머핀의 품질 특성 (Quality Characteristics of Muffins Added with Ginseng Leaf)

  • The purpose of this study was to evaluate the quality properties of muffin added with different concentration (0, 1, 3, and 5%) of ginseng leaves powder, which is discarded in the process of ginseng. Density of muffin was the highest at 1.45 g/mL in control, and pH (7.41) was at the highest level as well. There was no tendency at the bottom and upper dimensions according to addition of ginseng leaf powder. The height and baking loss rate of the muffins increased with increase in the powder concentration, but there were no significant differences. The weight of muffins did not show constant tendency, according to addition ratio of ginseng leaves powder. The degree of lightness and yellowness of muffin decreased as the concentration of the powder increased, whereas no significant difference in the redness was found with increased powder concentration. The factors of hardness and chewiness were higher at the control group and cohesiveness was the highest at 0.65 in 3% group, but springiness and gumminess did notshow significant differences. DPPH free radical scavenging activity of muffins was significantly increased with increasing ginseng leaves powder (p<0.05). For the sensory evaluation in 1% group, the intensity of color, smell, taste, softness, and moistness was the lowest, whereas the overall acceptability score of color, smell, taste, chewiness, and moistness was the highest. Thesensory properties of muffin linearly decreased as the concentration of ginseng leaves powder increased. Taken together, the results of this study suggest that ginseng leaf powder is a good ingredient for increasing the consumer acceptability and functionality of cookies.

Partitioning Behavior of Selected Printing Ink Solvents between Headspace and Chocolate Cookie Samples

  • Static Headspace Gas Chromatographic analysis was used to study the partitioning behavior of five organic printing ink solvents between chocolate cookie/air systems. Three cookie sample formulations varied with respect to chocolate type and overall percentage of constituents. Major considerations involved differences in fat content and type and resulting variability in chemical and physical structure. Each of the solvents studied (ethyl acetate, hexane, isopropanol, methyl ethyl ketone, toluene) represents a general class of printing ink solvents based on predominate functional group. Values of the partitioning coefficient (Kp) were determined at equilibrium using measured quantities of both solvent and cookie sample in closed systems at temperature of 25, 35, and $45^{\circ}C$. In each of the three cookies at the three test temperatures, toluene always exhibited the greatest value of partitioning to cookie and hexane always exhibited the least. Results also showed that the partitioning behavior of solvents is generally inversely related to temperature and that solvent affinity, though constant for a particular cookie type over all test temperatures, varies significantly among the three cookie types. The preference of each of the five solvents for each cookie sample was also found to vary with temperature. No correlation was found between the extent of partitioning and cookie formulation or physical characteristic of solvent. The Hildebrand parameter, related to ${\Delta}Hmix$ (heat of mixing), may be used to describe differences in partitioning based on the overall potential of a solvent/cookie interaction to occur. The potential for interaction is dependent upon the chemical structure of the cookie sample and thus the availability of 'active-sites' required for a given solvent.

초등학생의 간식 구매실태 및 관련 생태학적 요인분석 (A Study of the Frequency of Food Purchase for Snacking and Its Related Ecological Factors on Elementary School Children)

  • In order to investigate food purchase frequency of elementary school children and its related ecological factors, 431 4th, 5th and 6th grade elementary school children and their mothers, living in Seoul and Daejon, small city and rural area of Chungnam Province, were participated in this study. The subjects and their parents were surveyed by a self-recording questionnaire about food purchase frequency and some ecological factors. Average height and weight of the subjects by gender and grade were similar to or a little bit more than the 1998 Korean Growth Standard. According to relative body weight, 30.6% and 10.8% of the subjects belonged to under-weight and obesity categories, respectively. Of the subjects, 46.9% used PC telecommunication or internet, 53.8% of them used it for less than an hour per day, and 46.4% watched TV for 2 to 4 hours a day. About 42% of the subjects spent 500 Won or less daily to buy snacks. A half of the subjects took snacks once a day because of hunger. Mothers' nutrition knowledge score was averagely 8.16 out of 13 full score and the average attitude score was 43.22 out of 50 full score. Foods purchased more than once a week were milk and yoghurt, cookies, ice-cream, ramyun, and gum in order. Family income, parents' education level, mothers' nutrition knowledge and food attitude score, students' snacking frequency and TV watching time showed significant correlations with purchase frequencies of some individual food items. In conclusion, the elementary school children considered taste most important rather than nutrition in buying snacks and most frequently bought carbohydrate foods and concentrated sugars except milk. Ecological factors such as mothers' nutritional knowledge and food attitude, TV watching time and snacking frequency had influenced the children's food purchase frequency. Accordingly, it is necessary to educate both children and their mothers about good food purchase and the importance of snacking.
